Advantages of Sous-vide Cooking
By using the SV96 method to cook, it will keep much more of the nutritional content
and use less additional fat than foods prepared traditionally due to the reduced
oxygen environment and low cooking temperature.
Flavours can penetrate into food thoroughly, saving flavours and reducing
harmful contents.
Because of the low cooking temperatures, food cannot be overcooked or dried
out. Meat can be tenderized completely, perfect for medium-rare cooking.
Sous-vide cooking and vacuum sealing will provide excellent cuisines.
Sous-vide cooking can precisely control cooking time and temperature,
providing the same perfect meals and the same cooking effect each time the
food is prepared.
The consistency of sous-vide cooking can save you time and effort in cooking in
traditional ways because after the food is prepared, simply let it cook in the
sous-vide machine without any supervision. When you are back, a perfectly
cooked meal awaits you.

Preparing for Sous-vide Cooking
Vacuum sealing machine ---- To remove most of the oxygen from the bags and to
ensure an airtight seal, preventing air or liquid going in. You can use a chamber
vacuum sealer or small suction vacuum sealer for different needs. We supply both
kinds of vacuum sealers.
Vacuum sealing bags ---- To pack foods in and thoroughly sealed, ensuring
that no air or liquid can go inside. Please also ensure that the vacuum sealing
bags can bear temperatures up to 100°C (212°F).
Cooking water tank or sous-vide water bath---- To fill with enough water to
cover the food and control the cooking temperature. For the immersion
circulator, ensure that the water tank can bear temperatures up to 100°C
(212°F). The sous-vide water bath is equipped with a thermostat controller inside.
Fill the bath with water first, then control the temperature and time.

machine is immersed in more than 16.5 cm (6.5 in.) of water).
To ensure proper cooking, the water tank volume should not exceed 30 L.
Detachable filter
Minerals and scale may block the pump and cause the machine to malfunction. In
order to remove minerals and scale easily, the pump is innovatively designed with a
detachable filter. In order to keep the machine in good working condition and
cleaning it properly, simply take out the filter.
Note: Check the filter before each use. If the filter is blocked with minerals and scale,
please clean it.
Operation

Note: The body of the machine should be placed inside the water bath and the
fastening handle put outwards.
5. Add water to the water bath.
Note: After filling the water bath with water, shake the machine a few times to
release the air from the propeller of the pump. Otherwise the propeller of the pump
may run without water, causing high decibel noise. Running without water for a
long time will shorten the machinelife.

11
6. Rotate the fastening handle clockwise at the back of the machine to secure the
machine to the water bath.
Note: The water level (after inserting the food) should be higher than the MIN
marking, but lower than the MAX marking on the machine.
7. Plug the power cord into the grounded socket.
8. Set the desired temperature and time (refer to the SV96feature--control panel -A.
setting button).
9. Put the food in the water bath.
Note: Before sous-vide cooking, the food must be vacuum packed first.
10. Press the Start/Stop button to start the machine.
To pause cooking, press the Start/Stop button and press again to restart. Note:
The machine will recount cooking time from the beginning.
11. After cooking, the machine will beep.
Note: The machine will beep again after 20 seconds and so on until the button
is pressed, and the preset water temperature will be maintained.
12. Take out the food from the water bath; the food is now ready for the next process.
13. After using the machine, cut off the power supply and take out the machine from
the water bath. Place the machine vertically. After the machine is dried and cool
down, keep out of reach of children.
Notes:If the cooking bag ripped while cooking, food may come out of the bag
and block the circulating channel of the machine. If this occurs, remove
the food from the water bath, change the water, and clean the filter if it is
blocked.
To avoid the machine from aging, do not immerse the machine in
water for a long time.

down.
During cleaning, do not damage the components inside the machine. Once the
components are damaged, please ask a specialist to check and repair. Do not
attempt unauthorized repairs to avoidaccidents.
Dispose of old water after each use and fill with fresh water for next time. If the
water is reused many times, some mineral substances may subside or adhere
to the surface of the components, which may affect the machine performance.
When the discharged capacity is significantly reduced, or when the machine
components have too much ash or dirt, disassemble the stainless-steel
housing (refer to the "How to Assemble and Disassemble Quickly" section) to
clean the heat tube and probe. It is recommended to clean the machine after
being used 20 times or every 100 hours of use.

Cleaning
Preparation:
A container higher than 18 cm (7 in.) and food grade vinegar (white vinegar, apple
vinegar, etc.).
Why it needs to be cleaned:
Tap water normally contains minerals. When the water is heated to a certain
temperature, scale will build up on the heater or surface of the machine. In this case,
the scale will affect the performance and the outside appearance of the machine. To
avoid this, it is recommended to clean the machine after every 20 uses, with an
accumulated working time of less than 200 hours. The machine can also be cleaned
according to your current needs based on the type of water in different places.
How to clean:
1. Put the machine in the container. Pour water in the container up to the MAX
line of the machine. Add 5 g of vinegar per 10 L of water.
CAUTION: Rinse the eyes with a lot of water if vinegar comes in contact with
them. See medical attention as required.
2. Turn on the machine, set the working temperature at 80°C (176°F) for 3 hours
(03:00), and press Start. After 3 hours, when the machine beeps, turn it OFF and
cut off power.
3. Check if the machine is clean enough. If not, add vinegar again in the
container and run the machine as indicated above in Step 2. If the machine is clean
enough, drain the vinegar from the container, wash the machine and container with
fresh water, dry them and store them appropriately.
