1. Application
The Winterhalter Gastronom dishwashing machines GS 42 and GS 72 are designed for
cleaning all kinds of tableware used in the catering trade. The machines may only be used for
this purpose and must be operated in accordance with these operating instructions.
Any deviation from the machine's intended purpose or alteration of its design without our
written consent shall exempt us from all guarantee and product liability.
2. Installation and initial start-up
The machine must be installed and connected to the customer's water supply and waste
pipes in accordance with the "Installation Instructions for Winterhalter Glass and Dish Wash-
ers".
The initial start-up and staff briefing must be performed by the Winterhalter after-sales serv-
ice team according to the "Start-up Instructions for Winterhalter Gastronom Dish and Utensil
Washing Machines". You should therefore contact the responsible Winterhalter factory rep-
resentative once the machine has been correctly connected to your supply pipes.
·Your dishwasher is not ready for start-up until all connections have been completed.

3. Safety instructions for the operator
The following instructions are designed to ensure safe operation of the machine:
·Only use the machine if you have been instructed in its operation and workings.
·Operate the machine only as described in these operating instructions.
·Do not open any panels or machine parts for which a tool is required.
·When handling detergent and clear rinse, observe the warnings printed on the re-
spective packages.
·Wear protective gloves for any jobs which have to be performed inside the tank
while the machine is in operation or during the daily shut-down process.
·In the event of faults not attributable to the on-site water or power supply, contact
the Winterhalter after-sales service.
·Do not put any safety devices (e.g. door catches, etc.) out of operation.
4. Operating and indicating elements

5. Before the wash
Before the wash can be started, the machine must be made ready for operation:
- Open the on-site shut-off valve for the water supply.
- Turn on the main switch.
- Insert the standpipe into the wash tank and turn slightly to make sure it is sealed tight.
- Check that the surface strainers are inserted correctly.
- Make sure the pump suction strainer is inserted correctly.
- Close the hood.
- Press the power switch (1) (lights up when switched on).
The tank is filled automatically
When the neccesary water level is reached, the machine is heating up to the operating tem-
perature.
During the heating process, the white indicator lamp "Heating up" (2) is illuminated. The
heating time depends on the temperature of the incoming water.
- Check whether there is sufficient clear rinse in the container, and top up if necessary.
Never let the clear rinse container get completely empty after filling it for the first time. The
amount of clear is dosed automatically. We recommend that you use our own Winterhalter
Gastronom clear rinse.
- To start with, add detergent (powder) to the heated tank water.
GS 42: approx. 150g; GS 72: approx. 240g
After adding the detergent, switch on the machine briefly by pressing the programme switch
(3) in order to distribute the powder evenly, so that it does not sink to the bottom of the tank.
Since the detergent concentration decreases steadily with the number of racks inserted dur-
ing the washing process, it is necessary to top up the detergent after approx. 10 wash cycles.

- Add approx. 100g of detergent (powder) as a top-up
- After adding, the programme should be started immediately in order to distribute the de-
tergent uniformly.
If the machine is equipped with an automatic dispenser for liquid detergent as an optional
extra, manual dosing is not necessary.
6. The wash cycle
This machine is equipped with two set programmes of different lengths.
Select programme switch "1" for slightly soiled dishes, and programme switch "2" for normal
purposes. The required wash programme is activated on closing the hood. The "Programme"
indicator lamp (7) lights up while the programme is in progress.
- Load the dishes correctly in the appropriate rack.
- Slide the rack into the machine.
- Press the appropriate programme switch (3 or 4) according to the degree of soiling.
- Close the hood to start the wash programme.
The main wash cycle, during which the dishes are cleaned intensively from above and below,
is followed by a 12s rinse with freshwater mixed with clear rinse at a temperature of 85°C.
The "programme" indicator lamp (7) lights up while the programme is in progress. Once it is
extinguished, the hood can be opened and the rack taken out of the machine.
Thanks to the specific heat of the dishes and the influence of the clear rinse added to the
rinse water, the dishes dry squeaky clean within a short time, so that there is no need to dry
them with a cloth.
Heavily soiled dishes or dishes with dried-on food remnants may require a longer wash time.
For this purpose, simply press the "manual main wash" button (5) (there is no need to press
a programme button) and the main wash cycle will be activated for as long as required. The
button lights up during operation.
Press again the button (5) and start a programme by pressing the button (3).
In exceptional cases, the rinse cycle can also be activated by pressing the "manual rinse"
button (6). However, care must be taken to ensure that this cycle is not operated for longer
than 12s, as otherwise the rinse water cools down too far.

7. After the wash
- Turn off the programme switch (3 or 4).
- Turn off the power switch (1).
- Open the hood and take the rack out of the machine.
- Remove the standpipe.
This causes the tank to be emptied.
- Close the hood again and turn on the power switch (1).
- Clean the inside of the tank by operating the "manual rinse" button (6) briefly (approx. 5-
10s).
- Turn off the power switch (1).
- Remove the rack support (only GS 42).
- Remove the surface strainers.
- Check to make sure the tank is clean. If necessary, remove any remaining dirt with a soft
scraper or brush. Then repeat the above cleaning procedure
Once the wash tank is completed emptied and cleaned:
- Remove the pump suction strainer from the machine and clean it thoroughly.
- Insert the pump suction and surface strainers.
- Insert the rack support (only GS 42).
- Switch off the on-site main switch.
- Close the on-site shut-off valve.
- Leave the hood of the machine open to allow any residual moisture inside the machine to
escape.

Machines with built-in drain pumps:
- Remove the standpipe as described above.
- Close the doors of the machine.
- Turn on the power switch (1). This switches on the drain pump, which pumps the deter-
gent solution out of the tank.
Machines with pre-rinsing devices:
- Shut off the water supply to the spray hose and then actuate the spray valve in order to
relieve the pressure in the hose.
- Clean the outer surfaces of the machine with a soft cloth and suitable cleaning agents.
We recommend the Winterhalter stainless steel cleaner and Winterhalter stainless steel
polish.
8. Faults
The machine is equipped with a "Thermo-Stop”, which causes the wash programme to be
aborted if the boiler heater continues heating for longer than 15 min. ("programme" indicator
lamp (7) flashes).
- In this case, turn the power switch (1) off and on again after a brief pause.
If the indicator lamp continues to flash, contact your after-sales service representative.
9. Special information
Please use only detergents and clear rinses which are suitable for commercial glass washing
machines. We recommend that you use our own products, which have been specially devel-
oped for our machines.
Should the tank water become exceptionally dirty on certain days due to intensive washing, it
should be drained off and the tank cleaned and refilled.
During the daily cleaning procedure, make sure that no rusty foreign bodies remain on the
floor and walls of the tank, as these can even cause "stainless steel" to rust. Such rust parti-
cles may originate from cleaning utensils or non-rustproof supply pipes.
Besides daily cleaning, the machine must also undergo thorough maintenance at least twice
a year. This should be performed by an expert (trained at the Winterhalter works).
·The machine is not hoseproof, and must not therefore be sprayed with high-pressure or
steam-jet cleaning devices.
Protect the machine from frost.

11. Optional extras
11.1 Automatic cold rinse
The boiler heater is switched off by pressing the "rinse tem-
perature" button (8), which lights up accordingly. The rinse
cycle is then performed at the water temperature in the supply
pipe.
The boiler heater is switched on again by pressing the button
a second time (light is extinguished).
11.2 Variable rinse temperature
By pressing the "rinse temperature" button (8), it is possible to
select a lower temperature for the rinse water (indicator lamp
lights up accordingly).
If the button is pressed again, the machine switches back to
the high rinse temperature, and the indicator lamp is extin-
guished.
