1 Commissioning
The commissioning of the machine and the initial instruction of the operating staff must be
carried out by the authorised dealer of Winterhalter Gastronom GmbH in your country,
according to the Instructions for Commissioning of Winterhalter Gastronom dishwashing
machines. Please contact the authorised dealer after completing the sanitary and electrical
installation of the machine.
Please note: Only after the completion of all the connection work can the machine be
commissioned.
2 Preparing machine for use (daily)
Before starting to wash, the machine must be prepared for operation. Open the stop-cock
or gate valve of the fresh water supply and switch on main switch provided on site. Ensure
that the pump sieve is correctly inserted. Turn selector switch (5) on position "3".
In the case of machines with push-button switch assembly push on/off button (5). This
opens the valve to the washtank. The tank fills automatically. At the same time the rinse
water is heated up by the boiler.
The valve to the washtank is automatically shut off when the required water level in the
tank has been reached. Only then will the tank heating element begin to heat the water
to 55 to 60 degrees C as required.
The heating time depends on the temperature of the inflowing water, this takes, with cold
water, between 20 and 40 minutes according to the size of the machine.
Check if there is enough rinse-aid in the rinse-aid container, if necessary re-fill. It is
important that the container never gets quite empty. Each wash cycle takes approx.
1 cm3of rinse-aid. The dosing is done automatically by the fitted rinse-aid dispenser.
Add detergents as predose to the hot water tank according to the tank capacity.
Please note that each wash cycle reduces the wash water concentration. Therefore an
additional dosage according to the chart below has to be effected after 10 wash cycles.
When the machine is equipped with the Detergent Sensor Wako 80, the indicator lamp
(12) lights up and shows that additional dosing is necessary.
Approximate quantity of predose and additional dosing of the Winterhalter Gastronom
detergents:

The blue dispenser, supplied with Winterhalter Gastronom detergents contains approx.
200 gr. of powder. A desertspoonful is approx. 20 gr.
In order to avoid spots in the wash tank, the detergents should be dissolved with warm
water or the machine switched on for a short period. Washing can be started as soon as
the correct temperatures are reached on the thermometers. The white pilot lamp goes
out on machines without a thermometer.
The above does not apply if you have a machine with an automatic detergent dispenser.
3 Using Machine
Fill the corresponding rack correctly with wash items, push rack into machine and close
door - with models GS 90 and 100 close the hood. Switch on the machine by turning the
programme switch.
a) With machines with a fixed wash programme (GS 7, GS 9, GS 10) press
button (programme start) for 2 sec.
b) With machines with several fixed wash programmes (GS 12) press button 1
or 2 (button 1 = 1 min. / button 2 = 2 min.) depending on the soil on the
crockery. Pressed button lights during programme cycle.
c) With machines with a variable adjustable programme switch (GS 33, GS 34,
GS 405, GS 41, GS 61, GS 62, GS 63, GS 71, GS 90, GS 100) turn
programme switch to required time cycle, depending on the soil on the
crockery
(e.g. marking 60 = 60 sec. resp. with the models GS 62, GS 63, GS 65
marking 3 = 3 min.)
The complete washing process then proceeds automatically with all machines.
The main wash, in which the crockery is intensively washed from above and below, is
followed by a rinse process of approximately 12 seconds with 85 ° to 90 °C hot fresh water
concentrated with rinse aid.
As soon as the programme switch is returned to the position "0", or with fixed wash cycle
after completing the programme time, the rack should be removed from the machi.ze (with
GS 12 light of programme button goes out). Due to the heat of the crockery and under the
influence of the rinsing water, containing foamless rinse aid, the crockery will dry within a
very short time. Drying with a cloth is therefore unnecessary.
Heavily soiled or dried food debris require an extended wash period. Therefore it is
possible to switch on the wash cycle for any required time by pressing the button "Manual
Wash", without using the programme switch. The machine will wash until the button is
pressed again. We recommend, however, after switching off of the "Manual Wash" to run a
wash and rinse cycle using the programme switch.
In exceptional, cases the rinse cycle can be released by pressing the button "Manual
rinse" for not longer than 12 seconds, as otherwise the rinse water will cool down.
4 Put out of commission (daily)
Turn selector switch to position "0".
With machines wit.h push-button assembly, switch machine off by pressing "On/Off
button". Light will go out.
Empty the tank by removing the stand pipe. Clean the tank and only after completely
emptying the tank, remove pump sieve and clean thoroughly. Check coarse sieve and
clean if necessary. Insert pump sieve again into the sieve plate.
Clean machine outside by means of a soft cloth and an appropriate care aid. We
recommend Winterhalter Stainless Steel Cleaner and Winterhalter Stainless Steel Care
Aid.
ATTENTION!
Machine is not. splash water protected. Do not clean outside with a High-Pressure cleaner.
It is advisable to leave the machine open after cleaning.
5 Special Instructions
Should the wash water be very soiled after busy periods, it is advisable to drain out the
water and refill the tank.
The pre-dosage of detergent. must also be renewed as described in Point 2.
This does not apply if you have an automatic detergent dispenser.
6 Layout of controls

(only with GS 62, GS 63, GS 65)
With machines with a fixed time cycle by pressing the
button (programme start) the wash programme will be re-
leased.
6 a Programme button 1
(only with GS12) The 1 - minute programme will be released by pressing
this button. Pressed button lights during programme
cycle.
6 a Programme button 2
(only with GS12) The 2 - minute programme will be released by pressing
this button. Pressed button lights during programme
cycle.
7 Wash temperature

9 Manual wash By pressing this button wash cycle is released and
machine will wash until this button is pressed again.
10 Manual rinse As long as this button is pressed and held, the ri.nse

11 Green pilot light The light shows that the machine is receiving power and
primary circuits are on.
White Pilot light (only with machines without thermometers). Indicates
when the light goes out that wash water has reached cor-
rect operating temperature.
12 White sensor light Indicates when the light goes on that (special equipment)
detergents must be predosed.
22 Hood opening
(only with GS100) By pressing this button the hood can be opened
electrically. (The hood can also be opened with the
manual hood lift, even when the machine is not receiving
power.)
23 Single-/Dual
wash switch
(only with GS100)
Depending on the position of this switch both wash areas
can be used simultaneously or separately.
