machineorinterruptasetme,simplyturntheknobbacktotheOFFposion.
Thespeedadjustmentknob②canbeusedtoregulatethebowlspeed.Forsuitable

Placethebowlontothemotorbaseandgentlyturnunlthebowldropsdownontothe
drivesocket.
Placethedoughscraperdownintothesmallerholelocatednearthetensionknob②.
Toaachthedoughroller,loosenthetensionknob,allowingthearm①toswingoverthe
topofthebowl.Pulluponthepin③,posiontherollerunderthearmandpushthepin
downintothecenteroftheroller.Gentlyallowthearm/rollertoreturntothesideofthe
bowl.Whenkneadingdough,lockthearmandrollerawayfromtherimofthebowlby
pullingthearmtowardsthemiddleofthebowlandghteninginplaceusingthetension
knob.

Placethebowlontothemotorbaseandgentlyturnunlthebowldropsdownontothe
drivesocket.
Placethedoughscraperdownintothesmallerholelocatednearthetensionknob②.
Toaachthedoughhook,fitthedoughhookintothelargerholelocatednearthetension
knob.Loosenthetensionknob,allowingthearm①toswingoverthetopofthebowl.
Pulluponthepin③andgentlypushdownintotheslotonthesideofthedoughhook.
Tightenthetensionknobsothatdoughhookislockedinthecenterofthebowl.When
kneadingdoughwiththedoughhook,youdonotwantthehookmovinginsidethebowl.

DoughMixing:Usetherollerandscraperforyeastdoughrecipeswithhigherhydraon.
Startthemachineonthelowestspeedwiththedoughrollerresngagainsttherimofthe
bowl.Startwithyourliquidingredientsandthenslowlybeginaddingyourflour.Asthe
doughthickens,adjusttherollerawayfromthesideofthebowlandlockinplaceusingthe
tensionknob.Thedistanceoftherollerfromtherimofthebowlisdeterminedbythe
amountofdoughyouaremixing.Youwillwanttherollertoapplygentlepressuretothe
doughasitpassesbetweentherollerandthesideofthebowlbutdonotwanttheroller
tooclosethatitpushesthedoughupandoutofthebowl.NOTE:When“locking”the
arm/rollerinplace,thearmissllabletomovetowardsthecenterofthebowl.Ifthe
amountofdoughinthebowlbeginsmovingthearm/rollerbackandforthtooharshly,
reducethespeedandadjusttherolleralilefurtherawayfromthesideofthebowl.
Followspecificrecipeforkneadingspeedandme.
CreamingBuerorMargarine:PlaceROOMTEMPERATUREbuerormargarinewith
sugarintothebowl.Therollershouldberesngagainsttherimofthebowl.Startmachine
onlowandslowlyincreasespeedtoahigh/medium(about6o’clockonthespeedknob).If
ingredientscollectinthecenterofthebowl,gentlyswingthearm/rollerintothecentera
coupleofmestoensurecompletemixing.Runforapprox.5minutesforbestresults.
(Buerandmargarinewillscktotherolleratthebeginningbutwillworkitselfoffand
creambeaufully).
Cookies:Followdireconsaboveforcreamingbuerandsugar.Oncecreamed,reduce
speedtolowandaddremainingcookieingredients.Again,ifingredientscollectinthe
centerofthebowl,gentlyswingthearm/rollerbackandforthtoensurepropermixing.If
mixingalargebatchofcookies,adjustarm/rollerslightlyawayfromtherimofthebowl
andlockinplacebyghteningthetensionknob.

Cakes:Withrollerresngagainsttherimofthebowl,combineingredientsandmixon
medium/highspeedforabout5minutesorunlmixtureiswellmixed.Rememberto
gentlyswingthearm/rollerintothecenterofthebowltoensureallingredientsare
incorporated.
WhippingCream(2‐4.5cups):Pourwhippingcreamintothestainlesssteelbowl.Withthe
rollerresngagainsttherimofthebowl,turnmachineonstarngonthelowestspeed.
Slowlyincreasespeedtomedium/high(about6o’clockonthespeeddial)andwhipunl
creamhasreachedthedesiredthickness.NOTE:Forbeerresults,thestainlesssteelbowl
maybechilledintherefrigeratororfreezerbeforeaddingthecream.
Meringue(4‐12eggwhites):Combineeggwhitesandsugarintothestainlesssteelbowl.
Withtherollerresngagainsttherimofthebowl,turnmachineonstarngonthelowest
speed.Slowlyincreasespeedtomedium/high(about6o’clockonthespeeddial)andwhip
unlthedesiredsffnessisreached.NOTE:Forbeerresults,thestainlesssteelbowlmay
bechilledintherefrigeratororfreezerbeforeaddingtheeggwhites.
MashedPotatoes(1‐5lbs):Placecookedpotatoesintothestainlesssteelbowlwiththe
rollerresngagainstthesideofthebowl.Turnmachineonstarngonthelowestspeed.
Addaddionaldesiredingredients.Applygentlepressuretothearm/rolleratthetop,
forcingpotatoestomash.NOTE:Becarefulnottoovermixyourpotatoescausingthemto
becomegummy.
Mincemeat,SausageMeat,Pate(1‐6.5lbs):Mixgroundmeatatmediumspeed(about4
o’clockonthespeeddial).Ifyouaremixinglargequanes,adjustrollerabout2inches
awayfromthesideofthebowlandlockinplacebyghteningthetensionknob.
CLEANING:Bowl,doughroller,doughscraperandspatulaaredishwashersafe!Towash
byhand,usewarmsoapywaterwithaspongeordishcloth.

thestainlesssteelbowlwiththehooklockedabout2inchesawayfromtherimofthe
bowl.Startthemachineonthelowestspeed.Asthedoughthickens,adjustarm/hook
awayfromthesideofthebowl,posioningandlockinginthemiddleofthebowl.Follow
specificrecipeforkneadingspeedandme.NOTE:Forlargequanesofdough,firstadd

fitssnugglyontothebase.
Slidethedoublebeaterbowl②downoverthesha,gentlyturnunlthebowldrops
downintoplace.Thespoutshouldbefacingthemixerarmandthebowlhandleshouldbe
facingoutovertheON/OFFknob.
Determinewhichsetofbeatersyouwilluse.Mul‐wireballoonwhisks④orthesingle
wirewhips⑤.
Tochangeoutbeaters,placethebeaterhouse③downonahardsurfacewiththe
beaterspoinngup(asshownabove).Gentlypullonthebeatersandtheywillpopoffto
revealametalprong.Takethenewbeaterandslidedownovertheprong,makingsureto
lineuptheteethonthebeaterandtheteethonthelargecentergear.Gentlysnapinto
place.Thisisthesametechniqueyouwillusetocleanyourbeater.
NOTE:Thelargegearinsidethebeaterhousing③willcomeoutforcleaningoncethe
beatersareremoved.Thegearmustbeinthehousinginorderforthebeaterstosnapinto

beforeusingthedoublewhiskbowlandbeaters.
Mul‐wireBalloonWhisks①:shouldbeusedforlightmixturesonly.Whippingcream,
eggwhites,lighticings(glazes),meringueandmarshmallows.NOTE:Thebeaterbowlis
heatsafeandboilingsugarcanbepouredintoit.
Single‐wireWhips②:shouldbeusedforsocookiedough,cakebaer,pancakebaer,
muffinbaerandbrownies.NOTE:Abasicchocolatechipcookiedoughwouldbeconsid‐
ereda“so”cookiedough.Athickcookiedoughcallingforoatmeal,nuts,seeds,chocolate
chunksandfruitshouldbemixedinthestainlesssteelbowlwiththedoughrollerand
doughscraper.
MixingInstrucons:Alwaysstartmixingonthelowestsengandslowingincreasespeed.
CookieDough:Placeroomtemperaturebuerormargarinealongwithsugarintothe
doublebeaterbowlandplacethebeaterhousingwithsingle‐wirebeatersinplace.Start
