Dear customer,
Read carefully through these operating instructions before putting the equipment into operation for the first time. It contains
important instructions on setting up, use and maintenance of the equipment. Pay special attention to the safety instructions
included in the text.
Keep these operating instructions in a safe place and ensure that they are accessible to the operating personnel at all
times. In addition to the instructions for operating, you will also find instructions and information for your servicing staff.

3 Advice on correct use of the appliance
3.1 General instructions
The appliances are only intended to be used for commercial cooking applications. That means for
cooking in pots and pans.
It should be operated and cleaned only by trained personnel. Maintenance and repair work should only
be carried out by qualified personnel.
These instructions must be announced to the employees concerned when they are trained in how to use
the appliance.
The appliance must not be left unattended when in operation! You should only operate it in a sufficient
ventilated room.
Do not install the appliance next to walls, kitchen furniture, decorations or other inflammable materials
Otherwise: fire hazard! See minimum distance in the wiring diagram with description. Pay attention to the
local fire protection regulations!
Ventilation of work space is to be ensured as per regulations.
The noise level at the workplace is below 70 dB (A).
These instructions are to be made known to the members of staff affected in the context of an operating
directive.
3.2 Security advice on operation, cleaning and repair
Overheated fats and oils can ignite spontaneously. Never leave the preparation of food unattended when
fats and oils are being used. Never extinguish burning fat and oil using water!
Some parts, like the top, the baking oven door, are very hot. Pay attention and do only touch the
operating elements and switches, protect yourself by wearing safety working clothing (work gloves) and
avoid direct contact with the skin. Pay attention if you move pots and pan s on the cooking hot plates and
if you move off of the range.
The manufacturer cannot be made liable for damage due to inexpert connection and handling; claims
under guarantee in such cases are null and void.
Before repair work is started, the equipment must be disconnected on all poles from the power (using
isolating equipment in the customer's supply, e.g. fuses).

3.3 Instructions for transport
Transport the Electric Range only in the Original Packing. Do not raise or move the appliance using the
top plate, the lower edges on the side or the door handle. Use the lower edge at the front or at the back
instead.
3.4 Installation instructions
The equipment is wired-up internally in the works as far as the power supply connector. All external
connection work must be carried out by an authorised specialist company. Let the specialists look at
these documents. The legally recognised regulations (Germany VDE, Austria ÖVE, Switzerland SEV etc.)
and the connection conditions of the local electricity utility are to be observed.
Before beginning the installation work, it should be checked that the mains voltage, mains type and the
current rating of the fuse match the values given on the type plates. An isolating device in the customer's
scope of supply that is effective on all poles must be provided, e.g. contactor fuses with at least 3 mm
contact gaps, so that the equipment is disconnected from the power supply during repair and installation
work. Connection to an equipotential bonding system is available (check effectiveness).
Do not sharply bend or pinch power supply cables or damage them on sharp edges and route them so
that they do not come in contact with hot parts. The power supply cable must be led through the
equipment, fully sheathed, from the screwed connection to the entry of the terminal box. The equipment
is intended for a permanent connection; connection via plug and socket is not permitted
4 Installation
4.1 Setting up
Do not set up the equipment next to walls, kitchen furniture, decorations or similar which are made of
flammable materials. Otherwise there is danger of fire. See connection diagram with equipment
description for minimum distance. Local fire protection regulations must be kept to absolutely!
It is absolutely necessary that the equipment be set up horizontally (use spirit level for alignment) so that
the doors can be opened and closed without any problem and that they seal tightly when closed.
Equipment with adjustable feet can easily compensate for unevenness in the floor (+/- 20 mm) by the
turning of the bottom end of the stainless steel feet. If set up on a plinth, this is to have an underlay if
needed.
4.1.1 Free-standing set-up
If the equipment is to be set up on its own, suitable means are to be used to protect it against tilting and
shifting.
4.1.2 Setting up in groups or blocks
When setting them up in groups or blocks, the equipment must be joined together by connecting
elements provided for this purpose. This is for the sake of hygiene. Observe equipment setting up sheets
or assembly diagram (data sheet in annex)
4.2 Connections
Details of connections for the media can be taken from the accompanying connection diagram and
equipment description. Check whether the size and position of the electrical connections of the customer
side correspond to the information in the connection plan, equipment description or installation plan.
The terminal box for the connections is located behind the front panel A (see data sheet). Make the
connections as shown in the annex or or in the connection diagram accompanying the equipment. The
number of the connection diagram is to be found on the type plate. Once the electrical connections have
been made, close the cover of the terminal box and screw the front panel in place again.
4.2.1 Floor-standing appliances
The connections can be made from below or from the rear from a closed installation space. With the
connection from below, the pipe length must be 50 mm above the floor surface.
4.2.2 Connection from the rear when equipment on a plinth
The penetrations are to be made according to the known DIN and VDE regulations. The connections can
be through the rear wall (see illustration for dimensions).

5 Proper Use of the Equipment
5.1 Bringing into use
Remove the protective film before bringing into use.
Clean the equipment with dilute soap solution.
Before using the oven for the first time it must be operated once for approx. 1 hours at maximum setting
without food and with closed oven door. Make sure that the appliance is only operated in a well ventilated
room!
5.2 Operation
5.2.1 Steel Hot Plates
Use only pans with smooth bottom. Rough bottoms scratch the surface when moving, otherwise the
temperature transfer with smooth and flat bottom is more effective
Turn the knob for thermostat to the right. The cooking zone heats up and the green pilot lamp lights up.
After some minutes in open circuit the heating of the cooking zone is lowered.
Initial cooking at high output settings, continuous cooking at lower setting. The required setting for
continuous cooking depends on the pan type and quantity of food to be cooked.
Turning the knob to the right you will have 4 heating zones
Heating zone I 900W
Heating zone II 1500W
Heating zone III 2200W
Heating zone IV 3500W
To switch the appliance off turn all control knobs to ”zero”.
Advises to save energy
•Use only pans with smooth bottom.
•Keep the cooking zone at the lowest setting on stand by.
•Choose a pan with a diameter fitting to the cooking zone.
•For keeping the pan warm pull it on the next cooking zone to use its after-heat.

•Do not use the cooking zone without cooking something.
5.2.2 Appliance with electric oven:
Upper and lower heating are separately adjustable by thermostat. The temperature control knob with
yellow pilot light at the top regulates the upper heating, the temperature control knob with yellow pilot light
at the bottom regulates the lower heating. In this operation mode you can only use one rack. Exception:
Roasting on the grid with a drip pan underneath. It is customary to use the middle rack. Always preheat
the oven. The set temperature has been reached when the yellow pilot lamp turns off.
Any humidity in the oven can be reduced by activating the lever on the oven door.
Appliance with electric oven (lower and upper heating, to switch on to convection heating:
•Turn the control knob to convection (II)
•Turn the control knob for upper heating to set the temperature
•During the cooking zone heats up and the green and yellow pilot lamps lights up.
•When the set temperature is reached the yellow pilot lamp turns off.
The maximum temperature with convection will be 250°C.
For baking and roasting preheat the oven, to get optimal results.
Pay attention: In case of use convection the oven will be in power even if the baking oven door is
opened.
If there are no pans and pots on the hot plates return to heating zone I to save energy and preserve from
damage. High teparature in stand by modus will be bad for the heating elements.
5.3 Cleaning
Please pay attention to the hygienic regulations which are valid in your company! These advises are no
substitutes. (Pay attention to ”Recommendations for looking after large-scale kitchen appliances made of
‘stainless steel’”!)
Attention! Do not spray the appliance with water, steam jet or high-pressure cleaners. When cleaning the
surrounding of the appliance with water, steam jet or high-pressure cleaner turn the appliance of!
Before the appliance is cleaned it must be switched off and allowed to sufficiently cool down. Parts of the
appliance or accessories that come in contact with food must be thoroughly rinsed with drinking water
after being cleaned with cleansing agent. Do not use inflammable liquids for cleaning.
To avoid trouble during operation and for reasons of hygiene, the appliance should be cleaned every day
after being used.
Cooking zone
Do not clean the cooking zone with soaped steel wool (e.g. AKO-PADS, Abbrazzo) or other scratching
things. Do not take pointed things to remove remaining food; you will only scratch the surface of the
cooking zone. Heat the cooking zone after cleaning for a short time up, let it dry. Left water causes rust.
Surface
In case of persistent dirt spray ”Combi-Clean” on the covering surface and let it work for approx. 10-20
minutes. Then clean with a coarse sponge and wipe off with clear water.
Oven
To avoid trouble during operation and for reasons of hygiene, the appliance should be cleaned every day
after being used. The side supports for the containers can be unscrewed, removed and washed in a
dishwasher. The oven base can also be removed.
Spray the support grids and the oven cavity with the special cleaning agent “Combi-Clean” and let it work
for approx. 10-20 minutes with closed oven door. Then clean with a coarse sponge and wipe off with
clear water. When you have finished cleaning the appliance open the oven door using the lever to allow
sufficient ventilation!
ATTENTION! The cleaning agent used must be free of chlorine and fluoride-containing compounds as
these halogenides can attack even high-quality stainless steel Maintenance
6 Repair and Maintenance
6.1 Repair and Maintenance
Pay attention for the cleaning (see as well encl.) and operation advices.
The Fan under the surface should be checked every week. There must be a ventilation stream out of the
air outlets under the control panel.
The appliance must be maintained once a year (minimum) by an expert (qualified by manufacturer).

6.2 Measures when not in operation for a longer period
Clean the equipment thoroughly.
Isolate the equipment from the power supply.
