read carefully through these operating instructions before putting the equipment into operation for the first time. It contains
important instructions on setting up, use and maintenance of the equipment. Pay special attention to the safety instructions
included in the text.
Keep these operating instructions in a safe place and ensure that they are accessible to the operating personnel at all
times. In addition to the instructions for operating, you will also find instructions and information for your servicing staff.

3 Instructions on Safe-handling of the Equipment
3.1 General instructions
The equipment is a technical appliance that is only intended for use in a commercial environment.
The electric frying plates and the electric grill and griddle plates are used for the commercial preparation
of meals.
The equipment is not suitable for space heating nor for the heating up of other materials – other than
those usual in frying and grilling.
Ventilation of work space is to be ensured as per regulations.
The employers' liability insurance association (BG) rules “Working in Commercial Kitchens” of the “Food
Processing Industry” expert committee of the BG Central Office (BGR 111) are to be observed when
setting up and operating equipment.
Technical modifications to the equipment by unauthorised persons without written permission from the
manufacturer completely nullify any claims under the guarantee and invalidate any claims in respect of
product liability.
These instructions are to be made known to the members of staff affected in the context of an operating
directive.
3.2 Safety instructions for operating, cleaning and repair
Overheated fats and oils can ignite spontaneously. Never leave the preparation of food unattended when
fats and oils are being used. Never extinguish burning fat and oil using water!
Some parts, such as the frying plate, the grill and griddle plates, become very hot because of the
temperatures necessary for frying and grilling. Protect yourself by only touching the control elements
provided and wearing clothing that prevents direct skin contact.
Operating and cleaning may only be carried out by personnel who have received appropriate instruction.
Maintenance and repair may only be performed by qualified specialists who have received training.
The manufacturer cannot be made liable for damage due to inexpert connection and handling; claims
under guarantee in such cases are null and void.
Before repair work is started, the equipment must be disconnected on all poles from the power (using
isolating equipment in the customer's supply, e. g. fuses).

3.3 Instructions for transport
Transport ascobloc equipment only in the original packaging. This avoids unnecessary damage and
expense.
Check equipment for damage.
Do not lift or move the equipment by gripping the top plate, the lower edges of the equipment at the sides
or the door handles. The equipment lower edge at the front and back is provided for this.
3.4 Installation instructions
The equipment is wired-up internally in the works as far as the power supply connector. All external
connection work must be carried out by an authorised specialist company. Let the specialists look at
these documents. The legally recognised regulations (Germany VDE, Austria ÖVE, Switzerland SEV etc.)
and the connection conditions of the local electricity utility are to be observed.
Before beginning the installation work, it should be checked that the mains voltage, mains type and the
current rating of the fuse match the values given on the type plates. An isolating device in the customer's
scope of supply that is effective on all poles must be provided, e.g. contactor fuses with at least 3 mm
contact gaps, so that the equipment is disconnected from the power supply during repair and installation
work. Connection to an equipotential bonding system is available (check effectiveness).
Do not sharply bend or pinch power supply cables or damage them on sharp edges and route them so
that they do not come in contact with hot parts. The power supply cable must be led through the
equipment, fully sheathed, from the screwed connection to the entry of the terminal box. The equipment
is intended for a permanent connection; connection via plug and socket is not permitted
4 Installation
4.1 Setting up
Do not set up the equipment next to walls, kitchen furniture, and decorations or similar which are made of
flammable materials. Otherwise there is danger of fire. See connection diagram with equipment
description for minimum distance. Local fire protection regulations must be kept absolutely!
It is absolutely necessary that the equipment be set up horizontally (use spirit level for alignment) so that
the doors can be opened and closed without any problem and that they seal tightly when closed.
Equipment with adjustable feet can easily compensate for unevenness in the floor (+/- 20 mm) by the
turning of the bottom end of the stainless steel feet. If set up on a plinth, this is to have an underlay if
needed.
4.1.1 Free-standing set-up
If the equipment is to be set up on its own, suitable means are to be used to protect it against tilting and
shifting.
4.1.2 Setting up in groups or blocks
When setting them up in groups or blocks, the equipment must be joined together by connecting
elements provided for this purpose. This is for the sake of hygiene. Observe equipment setting up sheets
or assembly diagram (data sheet in annex).
4.2 Connections
Details of connections for the media can be taken from the accompanying connection diagram and
equipment description. Check whether the size and position of the electrical connections of the customer
side correspond to the information in the connection plan, equipment description or installation plan.
The terminal box for the connections is located behind the front panel A (see data sheet). Make the
connections as shown in the annex or in the connection diagram accompanying the equipment. The
number of the connection diagram is to be found on the type plate. Once the electrical connections have
been made, close the cover of the terminal box and screw the front panel in place again.
4.2.1 Floor-standing appliances
The connections can be made from below or from the rear from a closed installation space. With the
connection from below, the pipe length must be 50 mm above the floor surface.
4.2.1.1 Connection from the rear when equipment on a plinth
The penetrations are to be made according to the known DIN and VDE regulations. The connections can
be through the rear wall (see illustration for dimensions).

5 Proper Use of the Equipment
5.1 Bringing into use
Remove the protective film before bringing into use.
Clean the equipment with dilute soap solution.
5.2 Operating
The knobs for the temperature controller and the indicating light for the frying plates are located on the
operating panel.
The green or yellow indicator light is on when the frying plate is on.
The yellow light goes out when the preselected temperature is reached.
Keep the frying plate in readiness at a surface temperature that is as low as possible.
If the equipment is to be taken out of use, set all knobs to “zero”.
The run-off pipe for fried waste leads to a dirt tray that lies below it (GN 1/1-65 container). The dirt tray
can be removed as required and emptied. The frying plate cannot be operated without the dirt tray.
Please note that the capacity of any dirt tray is limited.
The frying plate can operated with a fat level or for the preparation of liquid dishes by inserting
the plug supplied.
With grill and griddle plates, the plug may only be used for cleaning purposes.
5.3 Cleaning
When setting them up in groups or blocks, the equipment must be joined together by connecting
elements provided for this purpose. This is for the sake of hygiene. Observe equipment setting up sheets
or assembly diagram (data sheet in annex).
Attention! Equipment may not be cleaned using water under pressure (washing down with a water hose,
steam jet or high pressure cleaner). The equipment is to be switched off when the surroundings are
cleaned using a water or steam jet or a high-pressure cleaner!
The equipment must be switched off and sufficiently cooled down during the cleaning. Equipment parts or
accessories, which come in contact with foodstuffs, must be thoroughly rinsed with tap water after they
have been cleaned with cleaning agents. Flammable liquids may not be used for cleaning.
To avoid interruptions in usage and for hygienic reasons, the equipment should be cleaned once a day
after use.

Cover plate
With stubborn dirt on the cover plate, spray with a normal commercially available cleaner for stainless
steel and leave for about 10 to 20 minutes to take effect. Then clean with a coarse sponge and wipe off
with clean water. Do not flood the cover plate, but wipe it out with cloths.
ATTENTION! The cleaning agent used must be free of chlorine and fluoride-containing compounds as
these halides can attack even high-quality stainless steel.
6 Repair and Maintenance

Apart from that, they need no repair or maintenance – except inspections that are prescribed elsewhere.
6.2 Measures when not in operation for a longer period
Clean the equipment thoroughly.
Isolate the equipment from the power supply.

7 Faults and their Rectification
