ese instructions cover the B&S ranges of Black and Verro Noodle Cooker, Pasta Cooker, Soup Warmer,
Cheung Fun, Yum Cha and any combination thereof.
We are condent that you will be delighted with your new B&S appliance and that it will become the back-
bone of your kitchen. To ensure you receive the utmost benet from your new B&S appliance, there are two
important things you can do.
1. Ensure you thoroughly read this booklet and ensure all instructions are followed. Ensure that this booklet
is kept in a safe and prominent location for future reference.
2. Should you be unsure of any aspect of the operation, performance, servicing or installation of the appli-
ance, please contact your B&S dealer immediately. In most instances a phone call will answer your question.
THIS APPLIANCE SHALL ONLY BE INSTALLED/SERVICED BY AN AUTHORISED INSTALLER.
THIS APPLIANCE MUST BE INSTALLED IN ACCORDANCE WITH THE SPECIFIED INSTRUCTIONS
AND SPECIFICATIONS.
IMPROPER INSTALLATION OR OPERATION OF THIS APPLIANCE MAY RESULT IN PRODUCT
FAILURE WHICH MAY LEAD TO PROPERTY DAMAGE, PERSONAL INJURY OR DEATH.

Installation Instructions;
Regulations;
e appliance must be installed only by authorised persons and in accordance with the manufacturer’s instal-
lation instructions, local gas tting regulations, municipal building codes, AS 5601.1 2013 – Gas Installations
and any other health and safety regulations, local authority, gas, electrical any other statutory regulations.
Data Label;
e data label is located on the front of the appliance. is appliance is suitable for Natural Gas and LPG.
Please ensure that the gas supply matches the Data Label ensuring that the gas supply is correct for the appli-
ance being installed and that adequate supply pressure and volume is available – refer to appliance data plate
for MJ/hr consumption, injector sizes of main burners/pilots, etc.
Ventilation;
It is strongly recommended that the appliance is installed under an extraction hood. Ventilation must be in
accordance with AS5601 - Gas Installations. In general, the appliance should have adequate ventilation for
complete combustion of gas, proper ueing and to maintain temperature of immediate surroundings within
safe limits. NOTE: Health Authorities or national Building Codes may require an exhaust system to be t-
ted where these gas appliances are installed. Such systems should comply with AS/NZS 1668.1 and AS/NZS
1668.2.
Plinth Mount;
When the unit is installed on a plinth, the plinth depth must be no greater than 700mm, otherwise it may
disrupt airow to the burner. (is applies only to Verro Plinth models)
Gas Connection;
Each unit has a single male 3/4” BSP gas connection, which is situated at the rear of the appliance below the
main body frame.
All piping must be compatible and suitable for use with the gas being connected, the pressure to which they
will be subjected, and the environment in which they will be installed. It must also be of sucient diameter
to ensure adequate gas supply to the appliance. All piping should be thoroughly inspected to ensure it is free
of debris or moisture.
When the unit is tted with castor wheels, it must be connected using a exible hose certied to AS/NZS
1869. e hose must be of adequate diameter, and not exceed 3 metres in length. e hose must be perma-
nently connected to the unit, and have either a quick-connect device or a manual shut-o valve and union t-
ted at the inlet end of the hose assembly. If a quick connect device is located at the appliance end of the hose
assembly, there must be a manual shut-o valve connected at the inlet end of the hose assembly.
Pressure Test Point;
All appliances that are dispatched from our factory are tested and adjusted according to the specications for
their required gas type. e regulator must be adjusted at the test point on the regulator, using a calibrated
manomenter at time of commissioning to verify correct gas pressure. Ensure the manometer is accurate and
has been zeroed prior to adjusting regulator spring tension. e test point pressure should be adjusted to 1.00
kPa – Natural gas or 2.60 kPa – LPG with the burners operating at maximum.

Combustible Surfaces;
6.10.2.3Clearances around commercial catering equipment
The clearance to combustible surfacesfrom commercial catering equipment shall comply
with the relevant requirements of the gasappliance manufacturer and be no less than as
shown in Table 6.9.

NOTES:
1The cooking surface area is dened as being that part of the gasappliance where cooking normally
takes place and does not include those parts of the gasappliance containing control knobs.
2Example: If a timber preparation table is adjacent to a commercial range, and the table has a
combustible surfacethat is 100 mm below thehob, then 50 mm clearance is required from the range.
Any combustible surfacehigher than that would need to have at least 250 mm clearance, or be
protected.
3These clearances do not apply where an adjacent surface is of a non-combustible materialor is
combustible but is protected with re resistant material. The re resistant materialmay be covered
by ceramic tiles or stainless steel to meet appropriate requirements relating to health protection.
4Care should be taken where acombustible surfaceis covered by a non-combustible material. For
example, covering a combustible surfacewith stainless steel will not prevent heat transfer, and in
some circumstances a hazardous situation could arise.
5Refer to Clause 6.3.7 for requirements regardinggasappliances above a source of cooking vapour,
steam or grease.
6.10.2.2Clearances to a grease lter
The clearance between a grease lter and the cooking surface of the gasapplianceslisted in
Table 6.8 shall not be less than that given in the table.

Water Connection (where applicable);
e water connection is 15mm copper and is situated at the rear of the appliance below the main body frame.
e number of water inlets varies to client’s particular needs. Water isolation valves are tted to all water
inlets. Ensure water is ushed through before nal connection.Water waste outlet is located on the le hand
side of the waste gutter of the appliance (50mm connection). e water inlets and water drains should be
connected with rigid copper pipes. We do not recommend the usage of plastic/PVC piping for connection of
waste outlet.

Commissioning of appliance;
Before commencing an installation, all of the following shall be established;
(a) - e required gas type is available.
(b) - at the gas supply is adequate to satisfy likely simultaneous demands or peak loading.
(c) - at the capacity of the gas measurement system, meter or cylinder supply is sucient to meet the
anticipated maximum demand.
(d) - e pressure of the gas available at the inlet to the consumer piping.
(e) - e maximum pressure supplied from the outlet of the gas measurement system, meter or cylinder in
the event of failure of the supply regulator or control.
(f) - Location of gas measurement system or meter.
Commissioning of this appliance (within Australia) shall be completed by a suitably authorised person who;
(a) - Installed the appliance when gas is available at the time of installation; or
(b) - makes gas available to the appliance if gas was not available at the time of installation.
e commissioning of an appliance shall take full account of special design features, information contained
in these instructions, and relevant appliance safety requirements.

Ensure unit has been leveled prior to nalising commissioning. is unit is also available as plinth, cantilever
and rear locking castor wheels. When the unit has rear locking castor wheels, front legs must be adjusted to
level the unit.
e commissioning of appliances shall include all of the following, as required by AS5601.1:2010;
(a) - Testing and purging of the appliance and installation as appropriate.
(b) - Checks to ensure the appliance is in safe working order.
(c) - Ignition of each burner of the appliance, and where necessary adjustment in accordane with
manufacturers instructions.
(d) - Testing of ue performance.
(e) - Testing of all safety devices for correct operation.
(f) - Instruction of the consumer, where available, on the safe and correct operation of the appliance and any
auxiliary equipment.
(g) - Handing of the appliance operating instructions to the consumer, or if the consumer is not present,
leaving the instructions in a suitable location on the permises.

Flame Failure Gas Valve;
1. Turn main gas knob 30º anti-clockwise and push to start pilot gas
ow.
2. Push the Piezo button adjacent to the gas valve knob located on the
control panel to light the pilot.
3. When pilot is alight, hold down main gas knob for approximately 15
seconds, or until thermocouple has warmed suciently to maintain
ame.
4. Once pilot ame is established, rotate main gas knob a further 60º
anti-clockwise to maximum, or a further 120º to minimum.
5. If pilot ame shuts o prior to establishing, repeat steps 1-4 until
thermocouple has warmed suciently to maintain gas ow.
Shut Down Procedure;
1. Rotate main gas valve knob clockwise to o position.
2. Observe pilot and main burner ames are extinguished.

OPERATING INSTRUCTIONS WARNING!
DO NOT spray aerosols in the vicinity of this appliance while it is in operation.
DO NOT store or use ammable liquids or items in the vicinity of this appliance.
Prior to lighting, smell the area surrounding the appliance for gas (please note that as some gas types are
heavier than air, we recommend the operator to also smell the oor around the appliance). In the event
you smell gas: DO NOT light any appliance. DO NOT touch/operate any electrical switch or phone in your
building. Contact your gas supplier immediately and follow their instructions.
Maintenance and care;
To ensure longevity and optimal performance of your appliance, a good cleaning and maintenance program
is paramount. In general the use of steel wool, abrasive cloths/cleansers/powders should not be used to clean
this appliance.
Daily checks and service;
• Lookforanyforeignmaterialsintheburnerarea,leaks,damagedknobsandanyothersignsthatthe
unit is not t for safe operation.
• Inspectburnerareaandensurepilotsareinpositionneartheburnerandthatthepilotame(where
applicable) when ignited is blue in color and approximately 20-40mm in length. If tted with thermo
couple, ensure pilot ame is in contact with it. Contact the manufacturer if any issues are identied.
• Alwaysensurethatareasurroundingpilotandthermocoupleisclearofanyfats,oilsorfoodstus.
• Cleantheexteriorsurfacesoftheappliancewithaclean,dampclothsoakedwithmilddetergentto
remove any food stus, oils, dust or any other foreign material.
• Ensuretheprimarywaterdrain(whereapplicable,drainislocatedingutter)isclearedofanyfood
stus during operation of the appliance and on completion of use of the appliance.
• espillagetrayslocatedunderthemainbodyoftheapplianceshouldberegularlyinspectedand
removed and cleaned to remove any oil or refuse.
Fortnightly checks and service;
• Burners,trivetsandwokringsshouldbethoroughlycleanedusingadampclothandmilddetergent
to remove any food stus, oils, dust or any other foreign material. THIS IS TO BE COMPLETED
WHEN THE APPLIANCE HAS NOT BEEN IN USE FOR A PERIOD OF AT LEAST ONE (1)
HOUR—ALWAYS USE CAUTION AS BURNER AREA MAY BE HOT.

B&S recommends that this appliance is inspected and adjusted at least annually by a qualied service
person as follows:

WARRANTY ON B&S APPLIANCES
Warranty service is valid during business hours (8:00 am to 17:00pm AEST) Monday to Friday.
Special Notes;
-
-Cleaning of burners due to blockage of burner orifices caused by foodstuffs and/or oils is not
covered by warranty.
1. This warranty applies only for mainland Australia and Tasmania, and does not cover any
service consequent upon accident, alteraons, misuse, fire, flood or act of deity.
2. This warranty is valid only if the appliance has been installed in accordance with B&S
installaon instrucons.
3. This warranty is condional upon the appliance being used in normal commercial catering
operaons.
4. This warranty is the only express warranty given by the company. No person has authority to
change or to add to these obligaons and liabilies.
5. The Company has the right to determine whether or not a fault is caused by faulty
workmanship or material or that any part is defecve.
6. This warranty does not apply to any loss suffered through or resulng from the non-
operaon or the ineffecve operation of the cooking appliance or any part of the cooking
appliance.
7. This warranty does not extend to goods and components thereof manufactured either
enrely or substanally of glass or similar substances, light globes, infra-red or quartz tubes
and electrical controls or elements. Note; Breakage of glass covers for yakitori/salamander
grills and knee valve wands are not covered under warranty.
8. While the goods are in custody of the seller for invesgaon or repair, they shall be at the
risk of the purchaser and no liability shall aach to the company, its servants or agents for
any damage occasioned to, or loan of, the goods whatsoever.
9. To obtain the benefit of this warranty, the purchaser must five noce to the company
immediately upon it becoming aware of the alleged defect and in any event before the
expiraon of the applicable warranty period.
10. Nothing in this warranty, however, shall be construed as affecng any rights you may have
under the Trades Pracces Act or any other Commonwealth of State Legislaon which gives
you rights which cannot be modified or excluded by agreement.
The electronic devices in Hi-Pac Woks are highly sensive and care must be taken to prevent
moisture entering these devices. Cleaning of sensors and ignion is not covered by warranty.
B&S Commercial Kitchens Pty Ltd (hereina£er called the company) undertakes by this warranty that
the company or its agent will pay for the cost of labour and the cost of parts which the company or
its agent find defecve, for a specified period of me from the date of delivery. The period of me
for which the unit is covered is dependant on the unit and range it belongs to. For clarificaon on
the applicable warranty, please contact the company or its agent. The liability of the company under
this warranty is limited to the repair or replacement of defecve goods or components All other
costs including, without limitaon, cartage, carriage and installaon shall be borne by the purchaser.
