We design and manufacture consumer products with the safety of you, our valued customer, foremost in mind.
In addition, we ask that you exercise a degree of care when using any electrical appliance and adhere to the
following precautions:

•Carefully read all instructions before operating and save for
future reference.
•Remove any packaging material and promotional stickers
before using the Yoghurt Creations for the first time.
•Do not place the Yoghurt Creations near the edge of a
bench or table during operation. Ensure the surface is
level, clean and free of liquid or other substances.
•Do not place the Yoghurt Creations on or near a hot gas or
electric burner, or where it could touch a heated oven.
•Do no use on metal surfaces, for example, a sink
drain board.
•Always ensure the Yoghurt Creations is properly
assembled before connecting to the power outlet
and operating.
•Use only the yoghurt container and yoghurt container lid
supplied with the Yoghurt Creations..
•Always switch the Yoghurt Creations to OFF, switch off at
the power outlet and unplug the power cord from the
power outlet before attempting to move the appliance,
when not in use and before disassembling, cleaning
or storing.
•Do not use the Yoghurt Creations near a heat source,
outdoors or in sunlight as this may expose the yoghurt
to excessive heat.
•Do not attempt to operate the Yoghurt Creations by any
method other than those described in this booklet.
•Ensure the kitchen thermometer used to monitor
temperature of the milk is suitable for use with food
and liquids.
•Do not place any parts of the Yoghurt Creations in the
dishwasher or microwave oven.
•Always keep the appliance clean. Follow the cleaning
instructions provided in this book.

Yoghurt is the best known of a group of cultured
fermented milk products and it is made when
pasteurised milk and starter culture bacteria are
combined and allowed to incubate at the correct
temperature for several hours. The starter culture
bacteria convert most of the lactose in whole milk
into lactic acid creating the soft creamy curd and a
distinctive taste of yoghurt.
Yoghurt making recipes in this book use pasteurised
milks containing lactose such as full-cream, skim
and goat’s milk. Starter culture bacteria can be either
a commercial natural yoghurt (containing the live
culture bacteria Lactobacillus bulgaricus, acidophilus
or casei), yoghurt made in your Yoghurt Creations, a
powdered starter culture available from supermarkets
or a bacterial yoghurt starter available from health
food stores. Adding full-cream, skim or goat’s milk
powder to the recipes will give a thicker, firmer
setting yoghurt. Recipes are also included for making
soy yoghurt.
Preparation of the yoghurt ingredients and utensils is
important. Ensure all utensils are clean and
ingredients are fresh. Use Australian metric
measuring cups and spoons to measure the
ingredients and a sterilised kitchen thermometer to
check the temperature of the milk.
Your Breville Yoghurt Creations makes fresh healthy
yoghurt that can be eaten in its pure natural state or
mixed with other sweet or savoury ingredients to
enhance the flavour. Yoghurt made in your Breville
Yoghurt Creations can also be used to make cultured
milk products such as soft cheeses or incorporated in
a variety of sweet and savoury recipes.

Using your Breville Yoghurt Creations
Before first use
Remove any packaging material and promotional
labels. Remove the Yoghurt Creations outer lid,
yoghurt container lid, yoghurt container, yoghurt bowl
and spoon, and wash in warm, soapy water, rinse
under hot water and dry thoroughly with a clean tea
towel. Wipe the Yoghurt Creations housing with a
damp cloth and dry thoroughly. Ensure that all parts
are completely dry before assembling (refer to
cleaning instructions).
To disassemble the Breville Yogurt Creations
Step 1
Before disassembling, ensure the Setting Dial is in
the OFF position, the power is switched off at the
power outlet, the power plug is removed from the
power outlet and the appliance is cool.
Step 2
Remove the Yoghurt Creations outer lid from the top
of the housing. Remove the yoghurt container and
container lid from inside the housing. Use the handle
on top of the yoghurt container lid to rotate the lid
clockwise or anti-clockwise until it unlocks from the
yoghurt container.
To operate the Breville Yoghurt Creations
Step 1
Before assembling the Yoghurt Creations for use,
ensure the setting dial is in the OFF position, the
power is switched off at the power outlet and the
power plug is removed from the power outlet.
Step 2
Prepare yoghurt mixture following desired recipe
instructions. Refer to yoghurt recipes on Page 14 and 15.
Step 3
Pour the yoghurt mixture into the yoghurt container.
Lock the container lid onto the yoghurt container by
turning the lid clockwise or anti-clockwise.
Step 4
Insert the yoghurt container into the housing. Place
the outer lid onto the housing.
Do not operate the Breville Yoghurt Creations without the
yoghurt container, containing ingredients and with lid
attached, inserted into the housing.
Note
Step 5
Switch the Yoghurt Creations on by turning the Setting
Dial to the required time setting between 1 and 10.
The corresponding incubation time selected with each
setting is shown in the chart below.

Avoid moving the Yoghurt Creations during the
incubation time. To avoid the yoghurt curdling,
do not stir yoghurt during or at the end of
incubation. Stir only after refrigeration.

Using your Breville Yoghurt Creations
Step 6
At the end of the selected incubation time, remove
the lids and check that the yoghurt has slightly
thickened and set. If the yoghurt requires more
thickening, replace the lids and turn the Setting Dial
to select additional incubation time. When the
yoghurt has thickened sufficiently, turn the Setting
Dial to the ‘OFF’ position, switch the power off at the
outlet and unplug the power cord. Remove the
yoghurt container and lid from the housing. Place the
yoghurt into the refrigerator overnight to achieve a
firmly set yoghurt.
Some separation of the liquid whey may occur.
Pour off and discard before using the yoghurt.

Care and cleaning
Step 1
Before disassembling and cleaning, ensure the Setting
Dial is in the OFF position, the power is switched off at
the power outlet, the power cord is unplugged from the
power outlet and the appliance is cool.
Step 2
Remove the Yoghurt Creations outer lid from the top
of the housing. Remove the yoghurt container and
container lid from inside the housing. Use the handle
on top of the yoghurt container lid to rotate the lid
clockwise or anti-clockwise until it unlocks from the
yoghurt container.
Step 3
Use a slightly damp, soft cloth to wipe the housing.
Dry thoroughly.
Step 4
Wash the yoghurt container, container lid and outer
lid in warm soapy water. Rinse with hot water. Dry
thoroughly with a soft, clean cloth.
Do not use abrasive cleaners or solvents as these
may cause damage to the appliance.
Do not wash any parts of the Yoghurt Creations in
the dishwasher.
Note
Storage
Ensure the Yoghurt Creations is switched off,
cooled and cleaned before storing. Store the
Yoghurt Creations fully assembled and in an
upright position. Do not store anything on top
of the appliance.
NEVER I ERSE THE YOGHURT CREATIONS HOUSING BASE IN WATER OR
ANY OTHER LIQUIDS.

Hints & tips for successful yoghurt making
•Ensure the yoghurt container, container lid and
other utensils used in preparation of the yoghurt
are clean and rinsed under hot water then dried
with a clean tea towel prior to use. This will help
eliminate interfering bacteria.
•Ensure the ingredients to be used in yoghurt making
are fresh. Using out-of-date products will impede the
production of thick, flavoursome yoghurt.
•Ensure the ingredients are suitable for making yoghurt.
•Follow suggested recipe quantities and methods to
ensure successful yoghurt production. If lesser
quantities are used, reduce the incubation time.
•To avoid milk sticking or burning to base of
saucepan when heating, use medium heat and stir
continuously with a metal spoon.
•Do not heat milk in a microwave oven.
•After heating, cool the milk by placing the
saucepan in a shallow, cold water bath.
•Use a sterilised kitchen thermometer to monitor
temperature of the milk when heating and cooling.
•Avoid moving the Yoghurt Creations during the
incubation time. To avoid the yoghurt curdling, do
not stir yoghurt during or at the end of incubation.
Stir only after refrigeration.
•Avoid leaving the yoghurt to incubate for longer
than suggested time in the recipe. The yoghurt is
still edible but may separate and have a curdled
appearance.
•Do not use the Yoghurt Creations near a heat
source, outdoors or in sunlight as exposure to
excessive heat may make the yoghurt separate and
have a curdled appearance.
•Refrigerate the finished yoghurt for 2 to 3 hours
before using. The texture and flavour will improve
with longer refrigeration.
•If the yoghurt container is required for further
yoghurt making, place the refrigerated, set yoghurt
into a clean, sterilised container, seal with a lid and
refrigerate until required.
•Keeping qualities of the yoghurt will vary depending
on the ingredients used and length of incubation
time. Yoghurt and yoghurt culture foods should be
refrigerated and consumed within 3-4 days.

Recipes

Basic natural yoghurt recipes
Keeping qualities of the yoghurt will vary
depending on the ingredients used and length of
incubation time. Yoghurt should be refrigerated
and consumed within 3-4 days.
Note
Full cream milk natural yoghurt
6 cups/11⁄2litres full cream milk
1⁄2cup/125ml natural yoghurt
3⁄4cup/75g full cream milk powder
Skim milk natural yoghurt
6 cups/11⁄2litres skim milk
1⁄2cup/125ml natural skim milk yoghurt
3⁄4cup/75g skim milk powder
Goat’s milk natural yoghurt
6 cups/11⁄2litres pasteurised goat’s milk
1⁄2cup/125ml natural goat’s milk yoghurt
1⁄2cup/150g goat’s milk powder (if not available
increase goat’s milk yoghurt to 3⁄4cup)
1. Heat the milk to just below boiling point (90-95ºC)
then cool quickly to 40-45ºC. Use a sterilised
kitchen thermometer to monitor temperature of
the milk when heating and cooling.
2. Stir in yoghurt and milk powder until well
combined. Do not aerate.
3. Pour yoghurt mixture into yoghurt container and
lock the yoghurt container lid into position. Place
the yoghurt container into the Yoghurt Creations
housing and cover with the outer lid.
4. Turn the Setting Dial to setting 5.The Yoghurt Creations
will switch on and start warming to incubate the mixture.
5. After approximately 4-5 hours, the Setting Dial will
have turned anti-clockwise to the OFF position and
switched the Yoghurt Creations off.
6. Remove the outer lid and yoghurt container. Remove
the yoghurt container lid and check the texture of the
yoghurt. Do not stir the yoghurt. If set to desired
thickness, switch the Yoghurt Creations off at the
power outlet and unplug, replace the yoghurt
container lid and place the yoghurt container into the
refrigerator for 8 hours or overnight.
Yoghurt can also be made by following above
method and omitting the starter yoghurt and milk
powder, and adding 3 teaspoons bacterial yoghurt
starter. Bacterial yoghurt starter can be purchased
from the refrigerated section of health food stores.

Soy yoghurt
6 cups/11⁄2litres regular or long-life soymilk drink
1⁄3cup/85ml soy yoghurt
1⁄2cup/50g soy drink powder
1. Heat the milk to below boiling point (80ºC) then
cool quickly to 40ºC. Use a sterilised kitchen
thermometer to monitor temperature of the milk
when heating and cooling.
2. Stir in yoghurt and powder until well combined.
Do not aerate.
3. Pour yoghurt mixture into yoghurt container and
lock the Yoghurt container lid into position. Place
the yoghurt container into the Yoghurt Creations
housing and cover with the outer lid.
4. Turn the Setting Dial to setting 5.The Yoghurt Creations
will switch on and start warming to incubate the mixture.
5. After approximately 4-5 hours, the Setting Dial will
have turned anti-clockwise to the OFF position and
switched the Yoghurt Creations off.
6. Remove the outer lid and yoghurt container. Remove
the yoghurt container lid and check the texture of
the yoghurt. Do not stir the yoghurt. If set to desired
thickness, switch the Yoghurt Creations off at the
power outlet and unplug, replace the yoghurt
container lid and place the yoghurt container into
the refrigerator for 8 hours or overnight.
Soy yoghurt made with regular soy milk drink
will have a firmer texture and sweeter taste,
whilst long-life soy milk drink will have softer
texture with slightly tart taste.
Note
Pre-packaged starter culture yoghurt
4 cups/1 litre room-temperature tap water
1 packet (approx. 150g) natural unsweetened
powdered starter yoghurt culture
1. Combine starter yoghurt culture and water, mix to
form a smooth, lump-free mixture. Do not aerate.
2. Pour mixture into yoghurt container and lock the
yoghurt container lid into position. Place the
yoghurt container into the Yoghurt Creations
housing and cover with the outer lid.
3. Turn the Setting Dial to setting 7.The Yoghurt Creations
will switch on and start warming to incubate the mixture.
4. After approxiamately 6-7 hours, the Setting Dial
will have turned anti-clockwise to the OFF position
and switched the Yoghurt Creations off.
5. Allow the yoghurt container to remain in the
Yoghurt Creations for 12 hours until yoghurt sets
or if preferred place into the refrigerator for 8
hours or overnight.
Natural unsweetened powdered starter yoghurt
culture can be purchased from most supermarkets.

Basic natural yoghurt recipes
Serving and flavouring suggestions
Flavour yoghurt, before incubation and
refrigeration by:
•Using a variety of flavoured milks to make sweet
flavoured yoghurts.
•Using flavoured yoghurts as the starter.
Flavour yoghurt, after incubation and
refrigeration by:
•Sweetening with maple syrup, golden syrup or
honey.
•Stirring in pureed fruits such as banana, pineapple,
raspberries, mango.
•Adding 1-2 tablespoons of your favourite liquor.
•Adding texture with a small amount of muesli and
finely chopped fresh fruit.
•Stirring in 1-2 tablespoons apple sauce, some
raisins and a dash of cinnamon.

Keeping qualities of the yoghurt culture foods will
vary depending on the ingredients used and
length of incubation time. Yoghurt culture foods
should be refrigerated and consumed within 3-4
days.
Note
Soft yoghurt cheese
6 cups/11⁄2litres natural or goat’s milk yoghurt
1. Place yoghurt into sterilised muslin cloth and allow
to drain over a bowl, covered in the refrigerator,
for 24-36 hours. The longer the yoghurt is
strained, the firmer the cheese becomes. Remove
yoghurt cheese from the muslin cloth, place into a
clean bowl and discard the liquid whey.
Refrigerate until required.
Sterilise the muslin cloth by boiling in a saucepan
of water for 5 minutes. Remove and rinse with cold
water to cool, then squeeze out excess moisture.
Note
Clotted cream
akes approx. 1 cup
4 cups/1 litre full cream milk
1 cup/250ml double cream
1. Combine milk and cream in a saucepan, warm
over a gentle heat until temperature of mixture
reaches 70ºC. Do not overheat. Use a sterilised
kitchen thermometer to monitor temperature of
the milk when heating and cooling.
2. Pour mixture into yoghurt container and lock the
yoghurt container lid into position. Place the
yoghurt container into the Yoghurt Creations
housing and cover with the outer lid.
3. Turn the Setting Dial to setting 7. The Yoghurt
Creations switch on and start warming to incubate
the mixture.
4. After approximately 6-7 hours, the Setting Dial will
have turned anti-clockwise to the OFF position and
switched the Yoghurt Creations off.
5. Remove the outer lid and yoghurt container.
Remove the yoghurt container lid and check the
texture of the clotted cream. Do not stir the clotted
cream. If set to desired thickness, switch the
Yoghurt Creations off at the power outlet and
unplug, replace the yoghurt container lid and place
the yoghurt container into the refrigerator for 8
hours or overnight.
6. Spoon the clotted cream into a clean container,
cover and refrigerate. The remaining milk can be
refrigerated and used in other cooking such
scones, cakes and batters.

Sweet and Savoury recipes using yoghurt
Yoghurt scones
akes 10-12
2 cups/300g self-raising flour
1 teaspoon baking powder
1 tablespoon icing sugar
Pinch of salt
2 tablespoons/40g butter, softened
1⁄2cup/125ml natural yoghurt
Extra milk, if required
1. Sift dry ingredients into a large bowl. Rub in butter
until the mixture resembles breadcrumbs. ake a
well in the centre and mix in yoghurt, add extra
milk if necessary to make a soft, pliable dough.
2. Knead dough gently on a lightly floured bench,
pat the dough out to a 2cm thickness. Use a
sharp-edged 4cm round scone cutter to cut
straight down into dough to form scone rounds.
3. Place scone rounds close together in a low-sided,
lightly-greased baking tray, brush tops lightly with
milk and bake at 200ºC for 12-15 minutes or until
cooked and golden brown.
4. Serve warm with strawberry jam and clotted cream.
Yoghurt pancakes
akes 8-10
1 cup/150g plain flour
11⁄2teaspoons baking powder
1⁄2teaspoon bi-carbonate of soda
2 tablespoons caster sugar
1 cup/250ml natural yoghurt
2 x 60g eggs, beaten
2 tablespoons/40g butter, melted
1 teaspoon vanilla essence
1. Sift flour, baking powder, soda and caster sugar
into a mixing bowl.
2. Combine yoghurt, eggs, butter and essence.
3. Gradually mix the combined ingredients into the
sifted ingredients until the batter is smooth.
4. Spoon 1⁄4cup of batter onto the centre of a
preheated frypan. Quickly spread the batter in
circular movements until desired diameter of the
pancake is achieved.
5. Allow the pancake to cook until the top surface is
no longer runny and the pancake can be moved
slightly on the cooking plate. Turn the pancake
over to cook the other side. Cook until just golden.
Do not overcook.
6. Serve the pancakes with savoury or sweet fillings
such as tzatziki dip or strawberry yoghurt cream
mousse.

Citrus yoghurt flan
Serves 6-8
Pastry
1 cup/150g plain flour
2 tablespoons finely ground almonds
1 tablespoon sugar
3 tablespoons/60g butter, softened
1⁄4cup/60ml lime or lemon juice
Filling
3⁄4cup/200ml natural yoghurt
3⁄4cup yoghurt cheese
2 tablespoons honey
2 x 60g eggs
Finely grated rind of 1 orange
Juice of 1 orange
Topping
1 cup sugar
1⁄2cup/125ml water
1 small orange, finely sliced and seeds removed
1 small lime, finely sliced and seeds removed
1. Combine flour, almonds and sugar, rub in butter
until mixture resembles breadcrumbs. Stir in
sufficient lime juice until the dough comes
together. Form dough into a ball, cover with plastic
wrap and refrigerate for 30 minutes before use.
2. Roll pastry into a round to fit the base and sides of
a 20cm flan pan. Prick pastry with a fork and bake
at 180ºC for 10 minutes. Cool.
3. Beat yoghurt, cheese, honey and eggs until
smooth. Fold in rind and juice.
4. Pour mixture into prepared pastry case and bake
at 180ºC for 20-30 minutes or until set.
5. Combine sugar and water in a small frypan, bring
to the boil and simmer uncovered for 10 minutes
or until mixture turns a light golden colour. Add
orange and lime slices and cook in the syrup for
10-15 minutes or until lightly caramelised.
6. Remove flan from oven and place onto a cooling
rack. Arrange caramelised slices over top of hot
flan. Allow flan to cool before removing from pan.
7. Serve flan sliced with sweetened yoghurt.

Chocolate yoghurt cake
Serves 6-8
125g butter, softened
1 cup sugar
2 x 60g eggs
2 cups/300g self-raising flour
1 teaspoon bi-carbonate of soda
1⁄2cup cocoa
3⁄4cup/200ml natural yoghurt
1⁄4cup/60ml milk
1. Cream butter and sugar, add eggs one at a time
and beat well.
2. Sift flour, soda and cocoa together. Gradually add
sifted ingredients, yoghurt and milk alternately into
creamed mixture, mix well.
3. Pour mixture into a lightly greased, deep 20cm
round cake pan and bake at 180ºC for 40-50
minutes or until cooked when tested.
4. Allow cake to stand in pan for 5 minutes before
turning out onto a wire rack to cool.
5. Serve with sweetened clotted cream or strawberry
yoghurt cream mousse if desired.
Bircher muesli
Serves 4-6
2 cups rolled oats
11⁄2cups/375ml apple or pear juice
1 green apple, grated
1 cup/250ml natural yoghurt
1⁄4cup flaked almonds
1⁄2cup dried fruit medley, chopped
aple syrup or honey, optional
1. Combine rolled oats, juice and grated apple in a
bowl, cover and refrigerate 2-3 hours or overnight.
2. Stir in yoghurt, almonds and fruit medley, and just
before serving drizzle with syrup or honey if
desired.
Sweet labna
akes approx. 20
Sweet flavourings (for example: finely ground
hazelnuts or almonds, cinnamon sugar)
2 cups/500ml yoghurt cheese
1. Sweet flavourings can be mixed into yoghurt
cheese then rolled into 3cm diameter balls.
Alternatively yoghurt cheese can be rolled into
balls then rolled into sweet flavourings to coat.
2. Serve sweet labna with mixed fruit compote,
poached quinces or as an accompaniment on
a cheese or fruit platter.
