STAGE 1: Sharpening - Course Grind
• With the knife parallel to your work surface, slowly (2"per second) pull the
knife towards you through both slots in STAGE 1. Repeat three times. In order
to sharpen the tip of your knife, carefully lift up the handle as you draw the
curved portion of the blade through the blade guides.
STAGE 2: Honing - Fine Polish
• With the knife parallel to your work surface, slowly (2"per second) pull the
knife towards you through both slots in STAGE 2. Repeat three times. After
the third time, make one more fast pass (one second) through both blade
guides. Carefully wipe off the blade with a moist cloth prior to use. If the knife
still does not cut to your standards, repeat the entire process.
CAUTION
Do not run ngers along edge of knife to check sharpness. To avoid injury, handle knives with extreme
care. Never insert the tip of the knife into the blade guide rst and push through. This could damage the
knife sharpener and your knife. The knife sharpener is designed so that very little effort is needed to draw
the knife through the blade guides. If downward pressure is applied to the knife as it is being drawn
through the blade guides, the sharpening wheels will stall.

USEFUL INFORMATION
• If you would like to keep a razor sharp edge on your knife, run it through
STAGE 2 prior to every use.
• You may have to repeat STAGE 1 AND 2 under certain circumstance such
as: using a knife made of tempered steel, using a very dull knife, the knife
has been sharpened in the past by using another method or it is the rst
time you have sharpened a specic knife. This will only occur the rst time
you use this sharpening system. Moving forward, the normal process can
be used.
• DO NOT use this sharpener on electric serrated knives or knives serrated
on both sides. We DO NOT recommend using it on non-electrical one
sided serrated knifes. However, if you do, only use STAGE 2 and only
sharpen the non-grooved side of the knife.
CAUTION
Never use your ngers to check the sharpness of a knife. Always handle knives with extreme care. The
tip of a knife should never be placed in the blade guides rst and then pushed through. Doing so could
damage the sharpener and/or your knife. Do not press knife blade down as it goes through the blade
guides as the sharpener will shut down for safety reasons.
PLEASE RETAIN THESE INSTRUCTIONS FOR FUTURE REFERENCE.
