several hours after use. After Removing the ash tray, stir ashes with water in a separate
container to ensure they are completely cool before disposing.

•Do not douse this appliance with water or other fluids when hot. Such

Only use fuels that do not produce noxious fumes. We
recommend lump charcoal or chunk wood. For best results,
do not use charcoal when cooking food in the smoker oven.

IMPORTANT! Self-Cleaning Burn
Before First Use
It is important that you conduct a self-cleaning burn in your new
Wood-Fired Pizza Oven & Smoker before you start cooking. This
self-cleaning burn will remove all residue and any moisture that
built up during shipping and manufacturing.
Please follow instructions under “First Time Lighting”
on page 9-10 of this manual.
This manual contains information on the proper/safe operation of
the EcoQue Wood-Fired Pizza Oven & Smoker. Read
Thoroughly before use.
Note: The dial thermometers are calibrated to show
the temperature inside the cooking chamber center and do
not show the appropriate temperature when the appliance is
cool. Do not be alarmed if the door thermometers read
significantly above ambient temperature. We
recommend using a digital thermometer for much more
accuracy. Probes go through the provided door holes.
You can now also use bigger pieces of cooking wood!
Hints and Tips:
The Smoker Oven is great for smoking large cuts of meat.
With vent control, the smoker oven can maintain
temperatures as low as 200oF (93oC) for “low and slow”
cooking.
The cooking chamber of the pizza oven is completely
sealed off from smoke. If you want to add a great smoke
flavor to your pizza, try placing an EcoQue Chip StripTM
alongside your pizza. Available at ecoque.com
Wear heat-resistant gloves, such as leather stove
gloves or oven mitts, when using this product.
When cooking with this Wood-Fired Pizza Oven & Smoker,
remember to maintain temperatures with small amounts
of fuel. Once the unit has reached cooking temperature,
a few blocks of chunk wood at a time should do the trick.
For larger fires to reach higher temps for the stone oven,
you can also remove the top fuel grate and build a
larger fire on the lower grate.

Assembly of the Side Handles
Assemble the oven handles:
Unbox/Uncrate the Oven Compartment. Remove all the contents.

IMPORTANT!! Additional Tip for Attaching the Handles!!
Before you roll your new oven off the pallet, you need to attach the assembly handles. Each handle
was matched up to your oven when the main frame was dropped onto the base cart on the pallet.
It's important to have these handles fit tightly against the oven and the holes need to line up
straight to do that. The handles packed with your oven are a custom matched set for this oven.
They have been 100% inspected and assembled onto the oven at the factory- then removed and
packed inside. One is paired for the left side holes and one is paired for the right side holes. If you
try and assemble one of the handles to the right or left side and the holes don't line up, first flip the
handle over and try again on that side. Hold off tightening both handles down until both are in
place and fit properly on your oven. It's also possible that both handles will fit on either side, but
make sure that you have a match on both sides before tightening down the screws.
Also note that if the wire grid is in the way to attach the screws on the top of the handlebar
stamping, the wire grid can be adjusted slightly. It may have loosened up, shifted or dropped a
little during shipping. Simply loosen the screws a little and move it, then tighten the screws back
down once it's out of the way. It can also be completely removed, but that should not be necessary
for this assembly and it should always remain in place while the oven is operated for safety
reasons. The sides and back of the oven get very hot during use and the grid has been added to the
oven to prevent contact to the hot surface while in use. It's also a great surface to hang your tools!
From time to time, please inspect the screws to make sure they are tight and re-tighten them as
necessary. OCCASIONALLY INSPECT AND TIGHTEN SCREWS/BOLTS AS NECESSARY AFTER USE.

Assembly of the Base Cart provided in case you need to replace a screw later.
Always check regularly to make sure all hardware is tight.
Once the pallet is close to the place where your oven will go, it's time to unpack it. Remove the
carton and empty the contents of the oven chambers to lighten up the unit to move it into
place. Remove all the accessories from the bottom shelf.
Your unit was Pre-Assembled and we've installed a ramp on one side to allow you to roll it off the
pallet, but please empty everything out of the oven first and install the handles.
REMOVING THE OVEN FROM THE PALLET
Please Note!! Your cart was already assembled onto the main frame. Remove the front and the
back blocking on the face of the cart. Remove the Accessories on the cart. Once you have
added the handles to the sides, lift one handle at a time and have a helper remove the foam
sheet on top of the pallet frame under the bottom shelf. That should allow the wheels to hit the
pallet. Unlock the brakes and roll the unit down the ramp!

Chimney adjustment rod is at the base of chimney.
Attach Chimney Cap with 3 provided screws (A) as shown. The Chimney will be locked on top of the Oven
by dropping it in the oven top hole(knob at a few degrees to the right of center, until the cross rod at the
base drops in the slot holes) and then rotating it clockwise to lock it, so the adjustment knob points forward.
To Remove, twist counterclockwise and lift. Note: The chimney should be placed so that the chimney
adjustment plate and handle points to the front of the Oven. Also: It's always a good idea to remove the
chimney when you move the oven for clearance under eves and through doors to prevent damage. But
leave it on when the oven has the cover on it.
NOTE!! THIS STEP HAS ALREADY BEEN COMPLETED ON YOUR UNIT. PLEASE MOVE TO THE
NEXT STEP ON PAGE 8
Transport this unit by pulling on the two handles located on the
sides of this unit. The unit will pivot on the wheels and can easily be
wheeled across a smooth, hard surface to the desired location.
Take all necessary precautions when transporting this unit to avoid
excessive tipping.Always Lock the wheel brakes once the oven is
in position. Wheels with brakes go on the FRONT of the cart. Fixed
Wheels on the back-pointing front to back.

OVEN Chimney Assembly-

Place Parts in the oven and smoker compartment:
(as shown in the diagram) Note: All the parts below are packed in the pizza oven
chamber for transportation. Assemble the ovens
according to the instructions below:
1x slide out rack in the pizza oven.
1x Baking/Prep/Water Pan for the smoker oven.
2x Wire Tray Pans for the Smoker Oven (located in the
Accessory boxes of The Rack, packed on the Storage
Cart)
1X 15” Griddle/Base Cover pan over the drip pan
(Removable griddle is Used when the oven is pulled out
for loading and unloading or on the optional firebox

Starting the Fire Step 3: Add Additional Fuel
This Wood-Fired Pizza Oven & Smoker is designed to burn
cleanly and efficiently. Its unique firebox design allows for
easy setup and operation. Follow the simple steps below to
start your fire.
Step 1: Place Fire Starters
Place fire starters on Ash grate. Note: Avoid using fire
starters that will produce excessive amounts of soot or
debris such as paper.
Add Additional fuel as necessary to maintain the
temperatures you want in the ovens. You can use any
cooking woods that burn without producing excessive soot
or debris. We recommend using cooking hardwoods or
lump charcoal. Note: If you are going to be using the
smoker oven, use wood fuel. Charcoal smoke can
produce an undesirable flavor in your food so we suggest
you only use wood fuel after you place food in the smoker
oven. NEVER USE CharcoalBriquettes!
Step 2: Insert Fuel & Light
Place the fuel on the grate. After that, use long matches or
a long lighter to ignite the fire starters. NOTE!! For bigger,
hotter fires, feel free to use a charcoal starter chimney right
in the firebox, when it is pulled out, to start a Base fire,
dump it in the firebox then add wood and close the
firebox. Only use lump charcoal. Never use Briquettes.
Step 4: Control the Temperature
Once you’ve added fuel, slide the fire box back into the
appliance and close the door. The knobs on the front of the
door allow you to directly control the temperature inside
the pizza oven and the smoker oven. To increase the
temperature, open the knob vents. To decrease the
temperature, close the knob vents.
At start-up, If the appliance is cool, make sure to open the
knob vents about .75 to 1 inch and allow the oven to heat
as quickly as possible.
Note: Only a small amount of fuel is required to maintain
temperature in the pizza oven and smoker once you have
brought the oven up to the desired temperature for
cooking. Be careful not to add too much wood. Always
use the knob vents and chimney vent to control the
cooking temperature.
Note: Cooking times and temperatures will vary depending
on fuel and other factors. It will be important to get a feel
for controlling the temperature with a variety of fuels.

First Time Lighting- (Break-In Burn)
Follow the instructions below before cooking in
the pizza oven or smoker oven. It is important to
remove any oil residue or moisture that enters
the appliance during manufacturing and
transportation with a self-cleaning burn. Also,
be sure to follow the instructions for proper first
time care of the masonry which includes the
pizza stone and Base Oven Bricks.
•Open the doors and remove any packaging.
•Remove all the bricks and stones from the
pizza oven.
•Carefully clean the pizza stone with a
damp/clean rag. Also, use a damp rag to
wipe the base Oven Bricks. Do not use soap or
detergent as this will damage the masonry.
•Carefully dry the pizza stone and three bricks
with a clean towel and then allow to air dry.
•Clean the walls inside of the smoker box
pizza oven with warm water, mild detergent,
and a non-abrasive scrubber. Dry with towel.
•Place masonry back in the pizza oven when
dry (After the Break -in Burn). Never place
damp masonry in a Hot pizza oven It may
crack.
•Follow instructions on page 9 to light the fire.
•Heat the oven to approximately 500oF
(260oC) for at least 2 hours. Be careful not
to exceed 650oF (350C) in the pizza oven.
•Now your oven is ready to use!
Cooking in the Pizza Oven
It’s easy to cook just about anything in this fully
insulated and extremely efficient pizza oven!
Use the pizza oven instead of the smoker when-
ever you want to plank, roast, or bake without
smoke.
Avoid cooking foods that will drip fat or grease
on the pizza stone. This can damage the stone.
Instead make sure to put foods like lasagna,
meat, and anything else that might drip in one
of the non-stick pans or on a cookie sheet.
Follow instructions on page 11 to light the fire
and maintain your desired cooking
temperature. The pizza stone takes about 90
minutes to heat up and will stay hot for hours.
For best results, we recommend a laser
thermometer to measure the exact
temperature of the pizza stone. Pizza
cooking time & temperatures will vary
depending on your recipe.
Cooking Pizza
Always use cornmeal when baking on the
stone surface to prevent dough from sticking.
Use a wood peel dusted with cornmeal to
place pizza and bread on the stone. Then use
a steel peel to remove your food.

Not Just Pizza!
The pizza oven is great for a variety of other
cooking methods.
Planking
Try planking a beautiful piece of salmon or
some veggies and scallops on a cedar plank.
The pizza stone provides a great surface for
planking all kinds of food.
Roasting
If you are looking to roast without smoke, try
using the pizza oven for a controlled, even
heat. Again, use a pan to make sure that
nothing drips on the pizza stone.
Baking
Bake bread, muffins, cornbread, cakes and
everything else you love. Use a thick non-
stick or cast iron pan or be sure to dust the
pizza stone with cornmeal first because
dough will stick to the stone.

THE FIREBOX
The Firebox is fastened to Glide Rails and that allows it to
easily slide in and out of the combustion chamber.
Hints & Tips
•The door thermometers are calibrated to show the temperature inside the cooking chamber and do not show the
appropriate temperature when the appliance is cool. Do not be alarmed if the door thermometers read
significantly above ambient temperature. Use of a Good Digital or Laser Thermometer is also recommended.
•Please note that the chamber temperature may drop slightly when either oven door is opened. This is normal,
do not immediately add more wood. Instead, close the oven door and wait a few minutes to see if
temperature rises back to the desired temperature. After that, add one or two pieces of wood at a time.
Check every few minutes to see if the oven has reached the desiredtemperature.
•Hold the oven at your desired cooking temperature for about 10 minutes before adding your food. This
allows the temperature inside the appliance to stabilize. After that, maintain the cooking
temperature by adding one or two small pieces of wood at a time.
•Never exceed the maximum temperature of 650oF (350oC)

Assembly of the pizza stone to the oven top: The stone is held up by 2 brackets and 6
screws. To make is easier to assemble the stone we have provided a plastic pipe
“jack” to hold the stone in place while you install the brackets & screws. Center the
plastic adjustable tube under the stone to push the stone up to the oven top.
Loosely start all the screws first. Screw the brackets in place to hold the stone.

Additional Notes and Tips for Installing the Pizza Stone in
the Top of the Oven:
When installing the Top Pizza Stone, here's some additional tips we've come up with to make it a
little easier.
1) WAIT to install the top pizza stone until after you've cleaned the oven chamber with some
citrus cleaner and a rag. You should also wait until the initial burn has been done and then you
will re-install the bricks on the bottom of the oven.
2) To properly operate the jack (pictured below) you will need to have the 6 base bricks back in
place AND one of the 2 cooking stones on top of the bricks at the bottom of the oven. (The second
cooking stone (both in White boxes) is the one you will use up on the top of the oven) Place a
piece of cardboard (like a side of the white box the stones were in) on top of the bottom cooking
stone so the plastic cap on the jack doesn't leave a mark on the stone's cooking surface.
3) On one side, loosely install the bracket with 3 screws that hold the bracket in place. That way
you will be able to slip the stone up above the first bracket with all the screws already started. A
phillips head #2 screwdriver works well for this. One with a magnetic screw holding head, even
better. (See Attached picture of a driver style screwdriver w/Magnetic head to hold the screw in
place).
4) Lift the stone and hold it in place with the pipe jack against the top of the oven.
5) Tighten all 3 screws on the first bracket then install the second bracket, with the jack still in
place. Then remove the jack.

This type of screwdriver has a magnetic feature on the end that holds the screw for you and
that helps guide it into the hole. In the picture the screw used in installation is being held on
the end of the bit by the magnet.

Smoking
The smoke created by the fire wraps around
the stone oven and pours into the smoker
oven, delivering an amazing smoke flavor
directly to your food! Control the smoke
flavor of your food by following these tips:
• Decide what wood to use
Use table below to choose the right wood.
• Build the fire and heat the smoker oven
Avoid charcoal fuel with food in the smoker
oven.
• Control the smoke with the Chimney
Illustration to the right
• Place a water pan in the smoker oven
Always keep a water pan on the rack below
your food. This adds humidity and helps
regulate the temperature.
• Maintain smoking temperature
Make sure not to add too much fuel.
• Monitor your food’s temperature
Keep tabs on your food with a long probe
thermometer and remove it when directed by
your recipe.
Hint: Soak wood chips for about an hour and
then add them to your fire for an even more
intense smoke flavor

Experiment with different woods to find your personal
favorite. Always use well-seasoned wood. Green or fresh
wood can turn food black and impart a bitter taste.
Always keep the smoker oven door closed to prevent loss
of heat and smoke. Add wood as necessary to maintain
the proper cooking temperature.
When the Chimney is shut (or partially closed),
smoke is held in the smoker oven. When the
Chimney is open, smoke is allowed to pass
through the smoker oven. Adjust the chimney
to deliver the right amount of smoke for what
you are cooking.

Maintenance
Note: Allow this appliance to completely
cool before performing maintenance.
Cleaning the Cooking Chambers
The cooking chambers should be cleaned periodically
with warm soapy water and a non-abrasive scrubber.
Remove masonry to ensure that soap does not contact
the masonry. Allow unit to dry thoroughly after cleaning.
Cleaning External Surfaces
Keep your Wood-Fired Pizza Oven & Smoker looking
clean by regularly washing it with warm soapy water.
Again, avoid using an abrasive scrubber as this may
damage the surface finish.
Care and Maintenance of the Masonry
Light Cleaning
•Scrape off food particles with a plastic scraper or
spatula. A soft wire or fiber brush can also be used to
lightly release particles from the stone surface.
•Remove loose particles with a vacuum or with a hand
broom and dust pan.
•Use a clean, damp rag to wipe the stone.
•Allow stone to dry completely before heating the pizza
oven.
Thorough Cleaning
•Carefully remove the pizza stone. Be sure to allow your
pizza stone to completely cool before removing it for
cleaning.
•Carefully clean the pizza stone with a wire pizza stone
brush and damp rag. Use a damp rag to wipe the three
bricks if necessary. Do not use soap or detergent as this
will damage the masonry.
•Scrape off food particles with a plastic scraper or
spatula. A soft wire pizza stone brush can also be used
to lightly release of particles from the stone surface.
•Carefully dry the pizza stone and three bricks with a
clean towel and then allow to air dry.
•Place masonry back in the oven when dry. NEVER put
damp masonry in a warm/hot pizza oven as it may
crack if heated too quickly.
Note: The Pizza Stone will darken and discolor with use.
This is a normal part of the seasoning process.
Cleaning the Combustion Chamber
When it comes time to empty the ash tray, follow
these simple steps ONCE THE FIRE IS OUT!!...
Step 1: Pull out the Fire Box
Step 2: Do not remove coals until
fire is completely extinguished
Step 3: Empty Ash Tray
Warning! Make sure ashes are completely
doused with water after emptying the ash
tray. Remove the upper fuel grate.
NOTE!!- You can also leave the firebox
attached to the rails, and just remove and
empty the ash tray.

•EcoQue hereby warrants this product against defects in materials and workmanship for a period of One (1)
Year from the date of original retail purchase. This warranty is good only to the original purchaser.
•No liability will be accepted for loss or damage during transit.
•The appliance must be operated and maintained in accordance with the supplied instructions.
•No alterations or repairs are to be carried out unless by obtaining prior consent byEcoQue.
•Any repair or replacement does not extend the warranty period.
•Any parts other than original EcoQue parts will void this warranty.
•The warranty period is calculated from the date of purchase only.
•Proof of purchase must be retained in a safe place. Please register online for the warranty at

Not Covered
•Lack of maintenance, abuse, neglect, misuse, accidental or improper installation of this appliance.
•Scratches, dents, corrosion or discoloration caused by heat, abrasive chemical cleaners or
chipping of painted/coated parts.
•Corrosion or damage caused by exposure to the elements (e.g. insects, weather, hail).
•Grease and fat fires.
•Cleaning and wear and tear.
•Rusting of metal frame or components.
•Commercial use of the product.
•Unauthorized repairs or modifications during the warranty period.
•Cracks and weathering caused by exposure to the elements or damage by heat, insects, chemicals,
or food acids or juices.
•Removal or re-installation costs. This warranty does not cover costs for transit.
If you discover a defect, EcoQue will, at its option, repair or replace the defective part(s) of the
product - or -refund the purchase price of this product at no charge to you provided that EcoQue
is notified of your claim and all relevant details during the warranty period. The first step to notify
we can determine the best course of action for the problem. Based upon this assessment, we will
issue you an R/A Number and instructions on how the problem will be resolved. EcoQue’s
warranties do not apply if the product has been damaged by accident, abuse, misuse, or
misapplication; or if the product has been modified without the written permission of EcoQue.

California Proposition 65 Warning:
This product may contain components that were
cleaned with chemical(s), known to the state of
California to cause Cancer, and birth defects or other
reproductive harm. These should burn off during the
break in burn process- prior to cooking.
However, certain fuels, like cooking wood and Natural
Lump Charcoal will be used in this oven. (These are
the same fuels commonly used to cook with ALL the
charcoal and wood-burning grills on the market
today)
