Read and understand all safety messages in this
manual. Read and understand the decal safety
messages on your freezer. Take notice of the
location of all decals on the freezer and keep the
safety decals in good condition. Check them
periodically and replace missing, damaged or
illegible safety decals. The safety decals must
remain in place and legible for the life of the
freezer. If you need new decals, use the
information and illustrations on pages iv and v of
this manual to identify the decal and contact your
local distributor — or H.C. Duke & Son, LLC.

1 Introduction
GravityfedsoftservefreezermodelSL500
isdesignedtoproducesoftserveice
cream,icemilk,yogurt,andsimilar frozen
dairyproducts,withaproductserving
temperaturerangeof15to25°F(-9to-
4°C).Ifsuchproductsarepreparedfrom
powderedconcentrate,theyshouldbe
precooledto40°F(4°C)priortointroduction
tothefreezer.Useofotherproductsinthis
machineisconsideredmisuse
(seeWarranty).
Thismanualhasbeenpreparedtoassist
youintheproperoperationandgeneral
maintenanceoftheElectroFreezemodel
SL500freezers.
Makesureallpersonnelresponsiblefor
equipmentoperationcompletelyreadand
understandthismanualbeforeoperatingthe
freezer.Whenproperlyoperatedand
maintained,thefreezerwillproducea
consistentquality product.

This freezer must be installed and serviced by an Electro Freeze Distributor or
authorized service technician in accordance with the installation instructions.
After installation the warranty registration card must be completed and re-
turned to validate the warranty.

2.1 Uncrating and Inspection

removing bolts and
installing legs or casters.
Whentheunitisreceivedandwhile
thecarrierisstillpresent, inspect the
shippingcartonforanydamagethat
mayhave occurredintransit.Ifthe

labelindicatesredand/or
thecartonis broken,torn,orpunctured,
notethedamageonthecarrier’sfreight
billandnotifythecarrier’slocalagent
immediately.
1. Removethecartonfromthepallet,
andmove themachineascloseas
possibletothepermanentlocation.
2. Removetheshippingboltsonthe
bottomofthefreezer(figure2-1)andinstall
eitherthe legsorcasters(figure2-2).

2.2 Installation
CAUTION
All materials and
connections must conform
to local requirements and
be in compliance with the
National Electrical Code
(NEC).
1. The freezer is designed for
indoor use and must be protected from
outdoor weather conditions.
2. Wherecodespermit,Electro
Freeze recommends that the floor
model freezers be installed on casters
and have flexible water and electrical
connections for easier service and
cleaning.
2. Allmodelsrequireaminimum
6-inchclearanceonpanelswithlouversfor
adequateventilation.Anythingblocking
ventilationofthefreezer(includingcone
dispensers)willreducetheefficiencyof
thefreezer.
3. Water-cooledmodelSL500
requiresa3/8-inchMPTwaterinletand
waterwasteconnection. Theconnections
arefoundonthebottom,underthe
compressormountingarea.Theyare
tagged“WaterInlet”and“WaterWaste.”
Amanualshut-offvalveshouldbeinstalled
inthewaterinlet line at thetimeof
installation.Thewaterpressuremustbe
between35-140psig(241-965kPa)for
properoperation.
4. Placethefreezerinitsfinal
location and adjust the legs or casters
so that it is level side-to-side and the
front is approximately 1/4-inch lower
than the rear to allow proper drainage
of the freezing cylinder.
2.3 Electrical Requirements
CAUTION
To prevent accidental
electrical shock, a positive
earth ground is required.
1. Alwaysverifyelectricalspecifica-
tionsonthedataplate(figure3-1) ofeach
freezer.Dataplatespecificationswill
alwayssupersedetheinformationinthis
manual.
2. Supplyvoltagemustbewithin+
10%ofvoltageindicatedonthe
nameplate.Also,onthree-phasesystems,
voltagebetweenphasesmustbebalanced
within2%.(Morethana6voltdifference
betweenanytwovoltagemeasurements
at208-230voltsindicatesapossible
imbalance.)Requestyourlocalpower
companytocorrectanyvoltageproblem.
3. Aneasilyaccessiblemainpower
disconnect must be provided for all
poles of the wiring to the freezer.

fromthefrontofthefreezer.

Starts the freezer when dispensing.
Must be in place for proper
operation.

Secures handle to the head.

rate and a positive shut-off of mix

hopper and mix feed tube. (O-ring
does not need lubrication.)

This two-position switch controls the
day and night refrigeration modes.
a. “DAY” (left) — The low tem-
perature thermostat controls the
system refrigeration to maintain the
product serving temperature between
18° to 21ºF (-8° to -6°C). This is the
normal operating position.
5.1 Day– Night Switch 1
b. “NIGHT” (right) — This energy-
saving mode will reduce product agita-
tion. The freezer will automatically cycle
to maintain temperatures below 40
º
F
(4
º
C). Use this position when the freezer
will not be in use for periods of more
than an hour.
The following paragraphs describe the
operator controls and indicators. Refer
to figure 5-1 for location of these
controls and indicators on the freezer.
NOTE: The dispense head must be in
place before the freezer will operate.

Test operation of the head
switch prior to placing the
freezer in service. See
Section 11, Routine
Maintenance, Monthly.
