3 INTRODUCTION
This operating manual describes the installation, operation and
maintenance of the CALLISTO. Figure 3-1 shows the selection panel
of the CALLISTO.
The Callisto 1 can, depending on the settings, dispense the following
beverages: a cup of coffee, a mug of coffee, a jug of coffee.
The Callisto choc can, depending on its settings, dispense the
following beverages: a cup of chocolate, a mug of chocolate, a jug of
chocolate, hot water.
These instructions are intended for users, maintenance personnel and
others working with the equipment. We would advise you to read these
instructions carefully and keep them in a safe place. If you have any
further questions please contact your supplier.
Chapter 4describes the safety instructions. Chapter 5explains the
activities that must be carried out before the machine is ready for use.
Chapter 6relates to the operation of the machine. Chapter 7explains
maintenance that must be carried out on the machine. Chapter 8
Chapter Chapter 8refers to the drinks counter. Warnings about minor
faults and how these can be remedied are described in chapter 9.
Finally, chapter 10 contains some technical information.

4 SAFETY INSTRUCTIONS
The CALLISTO meets all the requirements associated with the
CE mark.
The following symbols are used in these instructions:
ᏘThis means: take care, danger of damage to the machine
This means: take care, you are taking a risk
☞This means: important information
➭This means: tip
The following safety instructions should be observed during
maintenance operations on the machine. Neither the manufacturer nor
the supplier will be liable for injury occurring as a result of irresponsible
actions.
• Only qualified staff may remove protection plates installed in the
machine.
• Never work on the machine while someone else is using it.
• Never use the machine without water in the boiler.
• Dismantling or modifications to the machine may only be carried out
by qualified staff.
• Modifications to the equipment are subject to written authorisation
from ETNA Coffee Technologies b.v..
• Connect the machine to the water supply in accordance with local
regulations.
• Connect the mains cable to an earthed wall socket.
• Never attempt to clean the machine with a water jet, or to use it in
an area where hoses are used.
• If the connection has to be relocated, contact your supplier's service
department.

5 PREPARING THE MACHINE FOR USE
A few operations must be carried out before the CALLISTO is ready for
use. Although these installation operations should be carried out by
qualified personnel, they are listed step by step below.
The machine must first be set up in a suitable location (see paragraph
5.1) and the packaging removed (see paragraph 5.2). The machine
should then be connected to the mains and water supply (see
paragraph 5.3). Next, the Bag-In-Box or ingredient bag is to be placed
in the machine (see paragraph 5.4)(see paragraph 5.4.3). Once the
boiler has been drained and refilled, the machine is ready for use (see
paragraph 5.5).
5.1 Installing machine
The location of the machine must meet a number of conditions.
• The surface on which the machine stands must be flat and stable.
Also make sure that there is adequate clearance at the side to allow
the door to open. And free space at the rear for the mains cable
connection.
• Site the machine in an area that does not freeze and is not too
humid.
• Finally, it is advisable for hygiene reasons not to site the machine in
the vicinity of toilets.
☞If the machine is standing or has been standing in an area
where the ambient temperature is lower than 0 °C, there is
a risk of the water in the machine freezing.
The machine should be placed in an area where the
ambient temperature satisfies the requirements described
in chapter 10 for at least 8 hours before being switched
on.
5.2 Installing machine
The location of the machine must meet a number of conditions.
• The surface on which the machine stands must be flat and stable.
Also make sure that there is adequate clearance at the side to allow
the door to open. And free space at the rear for the mains cable
connection.
• Site the machine in an area that does not freeze and is not too
humid.

☞If the machine is standing or has been standing in an area
where the ambient temperature is lower than 0 °C, there is
a risk of the water in the machine freezing.
The machine should be placed in an area where the
ambient temperature satisfies the requirements described
in chapter 10 for at least 8 hours before being switched
on.

5.3 Connecting water and electricity
1. Connect a water hose with the correct thread (3/4 inch BSP)
between the connection point on the rear of the machine and the
valve.
2. Open the valve and check that there are no leaks.
3. Plug the mains cable into the connector on the rear of the machine.
4. Plug the other end of the mains cable into an earthed wall socket.
5. Switch the machine on at the on/off switch.
The machine fills with water and heats up. The machine is ready for
use in approximately 15 minutes.
ᏘNever connect more than one unit to one wall socket.
☞Ensure that the plug will still be accessible once the
machine is in place.
5.4 Loading the BIB or ingredient bag
The liquid concentrate used to prepare drinks can be packaged in two
ways:
• Bag-In-Box (BIB): in this case the liquid concentrate comes in a bag
contained in a cardboard box. A hose or QCD (Quick Connect
Disconnect) connector may be used with a Bag-in-Box. Paragraph
5.4.1 describes how to load and/or replace a BIB with a hose.
Paragraph 5.4.2 describes how to load and/or replace a BIB with a
QCD connecter. Place the BIB inside the machine on the BIB
support.
• Ingredient bag: in this case the liquid concentrate comes in a bag
which you place in a holder supplied with the machine. Paragraph
5.4.3 describes how to load and/or replace an ingredient bag. The
ingredient bag is loaded in the machine after being placed in the
ingredient bag holder.

5.4.1 Loading a new Bag-in-Box with hose connector
☞If there is no Bag-in-Box (BIB) already in the machine, for
example when starting up the machine for the first time,
skip steps 2 to 6 of the following instructions.
1. Open the door and lift the cover of the machine.
2. Slide the hose lock over the hose of the BIB so that the hose is fully
closed (see figure 5-3) or close the valve between the pump and the
BIB.
3. Pull the spout or the valve out of the hose of the peristaltic pump.
☞During this operation and the subsequent operations,
concentrate may come out of the ingredient bag.
4. Remove the BIB from the machine.
5. Take the spout out of the hose of the BIB.
6. Clean the spout with the hose lock or clean the valve.
7. Slide the hose lock over the hose of a new BIB so that the hose is
fully closed (see figure 5-3) or push the valve into the hose of the
new BIB.
8. Push the spout into the hose of the BIB.
9. Place the BIB in the machine.
10.Push the spout or the valve into the hose of the peristaltic pump.
11.Slide the hose lock off the hose of the BIB so that the hose is no
longer closed(see figure 5-3) or open the valve.
12.Place a jug under the dispensing nozzle.
13.Press button 3 on the service panel on the inside of the door. Keep
this button pressed until the hose of the peristaltic pump is
completely filled.

14.Press button 1 on the service panel on the inside of the door. The
mixer will be rinsed with hot water.
15.Repeat step 14 until the mixer is clean.
16.Close the cover and the door of the machine.
5.4.2 Loading a new Bag-in-Box with a QCD connector
☞If there is no Bag-in-Box (BIB) already in the machine, for
example when starting up the machine for the first time,
skip steps 2 to 4 of the following instructions.
1. Open the door and lift the cover of the machine.
2. Open the QCD connector by pulling the inner part with the hose
connectors to the outside. The connector is fully opened when the
word “OUT” is visible on the inner part (see figure 5-4).
3. Slide the QCD connector off the connector of the BIB.
4. Remove the BIB from the machine.
5. Place a new BIB in the machine.
6. Slide the QCD connector on to the connector of the BIB.
7. Close the QCD connector by pushing the inner part with the hose
connectors inside. The connector is fully closed when the marker on
the hose connectors and the outer part of the QCD connector are
directly opposite one another (see figure 5-4).
8. Place a jug under the dispensing nozzle.
9. Press button 3 on the service panel on the inside of the door. Keep
this button pressed until the hose of the peristaltic pump is
completely filled.
10.Press button 1 on the service panel on the inside of the door. The
mixer will be rinsed with hot water.
11.Repeat step 10 until the mixer is clean.
12.Close the cover and the door of the machine.

5.4.3 Placing a new ingredient bag in the holder
☞If there is no ingredient bag already in the machine, for
example when starting up the machine for the first time,
skip steps 2 to 7 of the following instructions.
1. Open the door and lift the cover of the machine.
2. Slide the hose lock over the hose of the ingredient bag so that the
hose is fully closed (see figure 5-5) or close the valve between the
pump and the ingredient bag.
3. Pull the spout or the valve out of the hose of the peristaltic pump.
☞During this operation and the subsequent operations,
concentrate may come out of the ingredient bag.
4. Remove the holder with the ingredient bag from the machine.
5. Take the bag out of the ingredient bag holder.
6. Pull the spout or the valve out of the hose of the ingredient bag.
7. Clean the spout with the hose lock or clean the valve.
8. Place a new ingredient bag in the holder
9. Slide the hose lock over the hose so that the hose is fully closed
(see figure 5-5) or push the valve into the hose of the new
ingredient bag.
10.Push the spout into the hose of the ingredient bag.
11.Place the holder with the ingredient bag in the machine.
12.Push the spout or the valve into the hose of the peristaltic pump.
13.Slide the hose lock off the hose of the ingredient bag so that the
hose is no longer closed(see figure 5-5) or open the valve.
14.Place a jug under the dispensing nozzle.
15.Press button 3 on the service panel on the inside of the door. Keep
this button pressed until the hose of the peristaltic pump is
completely filled.
16.Press button 1 on the service panel on the inside of the door. The
mixer is rinsed with water.
17.Repeat step 16 until the mixer is clean.
18.Close the cover and the door of the machine.

5.5 Draining the boiler
New machines must be completely filled and emptied once before use.
The machine will fill up with water again when it is switched on. The
engineer carries out this procedure.
Summarized, a machine stands ready when:
1. it is plugged in,
2. it is filled with water,
3. there are no fault codes showing on the display.

6 OPERATION OF THE MACHINE
The CALLISTO is easy to use. The drink selection procedure is
described in paragraph 6.1. Paragraph 6.2 describes how to get more
than one cup.
The standard model does not include a payment system, however the
machine can be fitted with a coin mechanism. Paragraph 6.3
describes how to get a drink from a machine equipped with a coin
mechanism.
6.1 Drink selection
All the actions needed to obtain a drink are summarized in table 6-1.

6.2 Selecting jug function
Using the “jug” selection button, you can request several cups in one
go. The procedure for selecting more than one cup is described below.
1. Raise the cup holder and place a jug under the dispenser spout.
2. Press the “jug” button to activate the jug function. Make sure the jug
is large enough.
To turn the function off while the jug is filling, press the "jug" button
again. The machine will stop when it has finished the current cup.
6.3 Paid drinks
Machines with a payment mechanism can dispense paid and/or free
drinks. If drinks must be paid for, the available credit is shown in the
bottom right corner of the display.
When a selection key is pressed, the price of the drink is shown in the
bottom left corner of the display.
If there is sufficient credit, the drink selected is prepared when the
selection key is pressed.

1. Place your beaker or cup on the cup stand
2. Select a drink by pressing the appropriate
button
3. Your drink is being prepared

7 MAINTENANCE
Product quality will not be guaranteed unless the machine is
maintained thoroughly on a regular basis. The reason is that certain
vital parts of the machine are very sensitive to contamination. Using
the machine requires both daily (see paragraph 7.1) and weekly
maintenance (see paragraph 7.2). Step-by-step instructions are
provided on a sticker on the inside of the door.
7.1 Daily servicing
The following activities must be carried out every day:
• Checking the BIB or ingredient bag (see paragraph 7.1.1).
• Cleaning the drip tray (see paragraph 7.1.2).
• Cleaning the mixer parts (see paragraph 7.1.3)(see paragraph
7.2.1)(see paragraph 7.1.3).
7.1.1 Checking the BIB or ingredient bag
Open the door and check if the BIB or ingredient bag contains
sufficient ingredient. Replace the BIB or ingredient bag If necessary
(see paragraph 5.4)(see chapter 5.4.3).
7.1.2 Clean drip tray and grid
1. Take the drip tray and grid out of the machine carefully.
2. Empty the drip tray.
3. Clean the drip tray and grid.
4. Place the drip tray and grid back in the machine.
7.1.3 Rinsing mixer parts
1. Open the machine door.
2. Place a jug under the dispensing nozzle.
3. Press button 1 on the service panel on the inside of the door. The
mixer will be rinsed with hot water.
4. Repeat these operations until the mixer is visually clean.
5. Close the door.
Note: ensure that the jug is large enough to collect the
rinsing water.

7.2 Weekly maintenance
The parts used to prepare the drinks must be cleaned regularly. The
CALLISTO must be cleaned thoroughly once a week.
☞Use a damp cloth to clean the inside and outside of the
machine.
7.2.1 Cleaning mixer parts
The following parts must be cleaned during weekly maintenance:
• Mixer cover
• Mixing chamber
• Hoses
1. Open the machine door.
2. Switch the machine off at the on/off switch.
3. Take the hoses out of the mixing chambers.
4. Take the hoses out of the dispensing pipes.
5. Remove the dispensing pipes from the steam valve.
6. Remove the metal pipe of the pump from the mixer cover.
7. Release the mixing chamber by pulling the green catch below it
forwards.
8. Take the mixing chamber out of the machine by carefully pulling the
bottom of the chamber towards you.
9. For all loose parts:
- Clean the part with hot water until it is visually clean. (use a brush
where necessary).
- Rinse the part with a disinfectant.
- Rinse the part with cold water.
- Clean the part thoroughly.
10.Clean the inside and outside of the machine with a damp cloth.
11.Fit the cleaned parts and connect the hoses.
12.Switch the machine on at the on/off switch.
13.Rinse the mixer by pressing button 1 on the service panel on the
inside of the door. Check that there are no leaks!
14.Close the door.
☞The mixing chamber must latch securely in place to
prevent leaks. Ensure that the green catch snaps back
into place.

7.2.2 Cleaning the peristaltic pump
The peristaltic pump must be cleaned during weekly maintenance.
7.2.2.1 Cleaning the peristaltic pump for BIB with hose connector.
1. Open the door and lift the cover of the machine.
2. Switch the machine off at the on/off switch.
3. Slide the hose lock over the hose of the BIB so that the hose is fully
closed (see paragraph 5.4.1).
4. Remove the spout from the hose of the peristaltic pump.
☞During this operation and the subsequent operations,
concentrate may come out of the ingredient bag.
1. Pump cup with hose
2. Non-drip spout
3. Rotor assembly
4. Clamp for pump cup
1. Lower the clamp securing the pump cup.
2. Take the pump cup with hose out of the housing.
3. Clean the hose in the pump cup and the non-drip spout with hot
water.
4. Clean the rotor assembly with a damp cloth.
5. Put the pump cup back in place.
6. Move the clamp over the pump cup.

assembly may cause incorrect dosing of product.
7. Push the spout into the hose of the peristaltic pump.
8. Slide the hose lock off the hose of the BIB so that the hose is no
longer closed.
9. Switch the machine on at the on/off switch.
10.Place a jug under the dispensing nozzle.
11.Press button 3 on the service panel on the inside of the door. Keep
this button pressed until the hose of the peristaltic pump is
completely filled.
12.Press button 1 on the service panel on the inside of the door. The
mixer will be rinsed with hot water.
13.Repeat step 12 until the mixer is clean.
14.Close the cover and the door of the machine.
7.2.2.2 Cleaning the peristaltic pump for BIB with QCD connector
1. Open the door and lift the cover of the machine.
2. Switch the machine off at the on/off switch.
3. Open the QCD connector by pulling the inner part with the hose
connectors to the outside. The connector is fully opened when the
word “OUT” is visible on the inner part (see paragraph 5.4.2).
4. Detach the QCD connector from the pump hose.
5. Lower the clamp securing the pump cup.
6. Take the pump cup with hose out of the housing.
7. Clean the hose in the pump cup, the non-drip spout and the QCD
connector with hot water.
8. Clean the rotor assembly with a damp cloth.
9. Put the pump cup back in place.
10.Move the clamp over the pump cup.
☞Make sure the pump cup is properly in place. Incorrect
assembly may cause incorrect dosing of product.
11.Reconnect the QCD connector to the pump hose.
12.Slide the QCD connector on to the connector of the BIB.
13.Assemble the QCD connector by pushing in the inner section with
the hose connectors. The connector is fully home when the marker
on the hose connectors and the outer section of the QCD connector
are directly opposite one another .
14.Switch the machine on at the on/off switch.

15.Place a jug under the dispensing nozzle.
16.Press button 3 on the service panel on the inside of the door. Keep
this button pressed until the hose of the peristaltic pump is
completely filled.
17.Press button 1 on the service panel on the inside of the door. The
mixer will be rinsed with hot water.
18.Repeat step 17 until the mixer is clean.
19.Close the cover and the door of the machine.
7.2.2.3 Cleaning the peristaltic pump with an ingredient bag
The peristaltic pump must be cleaned during weekly maintenance.
1. Open the door and lift the cover of the machine.
2. Switch the machine off at the on/off switch.
3. Slide the hose lock over the ingredient bag hose so that it closes the
hose well (see paragraph 5.4.3).
4. Remove the spout from the hose of the peristaltic pump.
☞With this and the following operations, concentrate can
escape from the ingredient bag.
5. Lower the clamp securing the pump cup.
6. Take the pump cup with hose out of the housing.
7. Clean the hose in the pump cup and the non-drip spout with hot
water.
8. Clean the rotor assembly with a damp cloth.
9. Put the pump cup back in place.
10.Move the clamp over the pump cup.
☞Make sure the pump cup is properly in place. Incorrect
assembly may cause incorrect dosing of product.
