anti-tip bracket following the
instructions supplied with the
bracket.
To reducethe riskof tipping the range,the range
must be secured byo properly installed anti-tip
brockeLSee installation instructions shipped with the
bracketfor complete details before attempting to
install.
Tocheck ifthe bracket isinstalled and engaged
properly, carefully tip the range forward. The bracket
shouldstop the range within 4 inches,tf it does not,
the bracket must be reinstalled.
Ifthe range ispulled from the walt for any reason,
alwaysrepeat this procedure to verify the range is
properlysecured bythe anti-tip bracket.

Remove
packaging
tape
Carefully remove all packaging, foam pads
and tape.
Toassure no damage isdone to the finish
of the product, the safest way to remove
the adhesive from packaging tape on new
appliances isan application of a household
liquid dishwashing detergent. Apply with a
soft cloth and allow to soak.
NOTE:Theadhesive must be removed from aft
parts. It cannot be removed if it is bakedon.

* The California Safe Drinking Water and Toxic
Enforcement Act requires the Governor of
California to publish o list of substances known
to the state to cause cancer, birth defects
or other reproductive harm, and requires
businessesto worn customers of potential

• The fiberglass insulation in self-clean
ovens gives offa very small amount of
carbon monoxide during the cleaning cycle,
Exposure con be minimized by venting with
an open window or using a ventilation fan
or hood.
° Gasappliances can cause minor exposure
to four of these substances, namety
benzene, carbon monoxide, formaldehyde
and soot, caused primarily by the incomplete
combustion of natural gas or LPfuets.
Properly adjusted burners, indicated by a
bluish rather then a yellow flame, wil! minimize
incomplete combustion. Exposureto these
substances can be minimized by venting
with an open window or using a ventilation
fan or hood.
IMPORTANT: Thehealth of some birds is
extremely sensitive to the fumes given off
during the self-cleaning cycle of any oven.
Move birds to another welt-ventilated room.
A WARNING: SAFETYPRECAUTIONS
When using your appliance, follow basic
safety precautions, including the following:
• Have the installer show you the location of
the range gas shut-off valve and how to turn
it off if necessary.
° Besure all packing materiels are removed
from the range before operating it to prevent
fire or smoke damage should the packing
material ignite.
After prolonged use of a range, highfloor
temperatures may result and many floor
coverings will not withstand this kind of
use. Never instatl the range over vinyl tile or
linoleum that cannot withstand such use.
Never install it directly over interior kitchen
carpeting.
*Locate the range out of kitchen traffic path
and out of drafty locations and areas with
poor air circulation.
ZkWARNING:
NEVERusethis appliance as a space heater
to heat or warm the room. Doingso may
result in carbon monoxide poisoning and
overheating of the oven.
WARNING:
NEVERcover any slots, holes or passages
in the oven bottom or an entire rack with
materials such as aluminum foil. Doing so
blocks air flow through the oven and may
a_sotrap heat, causing a fire hazard.

• Do not leave children alone--children should
not be left alone or unattended in an area
where an appliance isin use.They should
never be allowed to sit or stand on any part
of the appliance.
°Children in walkers, or children crawling, can
be attracted to the oven door handle and
may grab and open the oven door. This can
result in injury from the door being pulled open
on a child, or severe burns if the oven is in use
and hot.
•Do not allow anyone to climb, stand or hang
on the door, control panel or cooktop. They
could damage the range and even tip it over,
causing severe personal injury.
• Do not store flammable materials in the
oven or near the cooktop.
• Do not store plastic, flammable liquids or
combustible materials on top of the optional
high shelf.
• CAUTION: ITEMS OF INTEREST TO CHILDREN
SHOULD NOT BESTORED IN CABINETS
ABOVE A RANGE OR ON THE BACKSPLASH
OF A RANGE--CHILDREN CLIMBING ON
THE RANGE TO REACH ITEMS COULD BE

• Never wear loose-fitting or hanging
garments while using the appliance. Be
careful when reaching for items stored over
the range. Flammable material couid be
ignited if brought in contact with surface
burners, burner grates or oven heating
elements and may cause severe burns.
° Use only dry pot holders--moistor damp
pot holders on hot surfaces may result in
burns from steam. Donot let pot holders
touch surface burners, burner grates or
oven heating elements. Donot use a towel
or other bulky cloth.
•When surface cooking, do not touch surface
burners, burner grates, grill or griddle (on
some models)or the surrounding areas.
When using the oven,do not touch the
oven heating elements,the interior surface
of the oven or the exterior area immediately
surrounding the door or back trim.
These surfaces may be hot enough to burn.
During and after use,do not touch, or let
clothing or other flammable materials contact,
the surface burners, grill or griddle (on some
models),areas near the surface burners or any
interior area of the oven; allow sufficient time
for cooling first.
Potentially hot surfaces include the cooktop,
areas facing the cooktop, oven vent opening,
surfaces near the opening, crevices around the
oven door, metal trim parts above the door or
any backguard or high shelf surface.
CAUTI0 N: Theinsidesurfaceofthe
oven may be hot when the door is opened.
Keep the ventilator hood and greasefilters
clean to maintain good venting and to avoid
grease fires. Turn the ventilator OFFin case
of fire or when intentionally "flaming" liquor or
other spirits on the cooktop. Thebtower,
if in operation, could spread the flames.
Cook meat and poultry thoroughly-meat
to at least an INTERNALtemperature of
160°Fand poultry to at least on INTERNAL
temperature of 180°F.Cookingto these
temperatures usually protects against
foodborne illness.

•Do not use water on grease fires. Never
pick up a flaming pan. Turn the controls
off. Smother a flaming pan on a surface
Unit by covering the pan completely with
a welt-fitting lid, cookie sheet or fiat tray.
Use a multi-purpose dry chemical or
foam-type fire extinguisher.
Flaming grease outside a pan can be put
out by covering it with baking soda or,
if available, by using a multi-purpose dry
chemical or foam-type fire extinguisher.
Flame in the oven can be smothered completely
by closing the oven door and turning the oven
off or by using a multi-purpose dry chemical or
foam-type fire extinguisher.
" DO NOT STOREOR USECOMBUSTIBLE
MATERIALS, GASOLINE OR OTHER
FLAMMABLE VAPORS AND LIQUIDS IN THE
VICINITY OF THIS OR ANY OTHER APPLIANCE,
• Do not let cooking grease or other flammable
materials accumulate in or near the range.
Clean grease troughs (some models) and
burner pans after every use.
• Ifyou smell gas, the installer has not done a
proper job of checking for leaks. You con have a
small Ieak, and therefore a faint gas smell,
if the connections are not completely tight.
Finding a gas leek is NOT a do-it-yourself
procedure. Some leaks can only be found
with the burner control in the ON position. For
your protection, it must be done by a qualified
service technician. Never use an open flame
to locate a leak.
° If by some chance a burner goesout and
gas escapes, open a window or a door to
let the room air out. Donot attempt to use
the appliance until the gas has had time
to dissipate. Follow the instructions in
"What to do if You SmeltGas" on page 2.
° Never block the vents (air openings) of the
range. They provide the air inlet and outlet
that are necessary for the range to operate
properly with correctcombustion. Air openings
are located at the top and bottom of the oven
door, in the front portion of the control panel,
at the rear of the cooktopand along the
bottom of the range.
° Besure all the range and/or cooktop
controls are turned off and the applianceis
cool before using any type of aerosol cleaner
or cooking spray on or around the appliance.
The chemicalthat produces the spraying
action could, in the presence of heat, ignite
or causemetal parts to corrode.
WARNING: SURFACE COOKING SAFETY PRECAUTIONS
Donot heat unopened food containers; a
buildup of pressure may cause the container
to burst.
Setthe burner control sothat the flame
heats only the bottom of the pan and does
not extend beyond the bottom of the pan.
Excessiveflame is hazardous. The high BTU
burners can easily melt cookware handles.
• Hold the handle ofthe pan, using a dry pot
holder, to prevent movement of the utensil
when stirring or turning food.
° Always use the LITEposition when igniting
the surface burners and make sure the
burners have ignited.

• Never leavethe surface burners unattended
at high flame settings. BoJloverscause
smoking and greasy spilIoversthat may catch
on fire. Ifthe burner flames ere smothered
by a severe boilover which affects the igniter,
unburned gas will escape into the room.
• To minimizethe possibility of burns, ignition
of flammable materials and spillage, turn
cookware handles toward the sideor back of
the range without extending over adjacent
burners.
• Always turn the surface burners to OFF
before removing cookware.
• Carefully watch foods being fried at a high
flame setting.
• Foodsfor frying should be as dry us possible.
Frost on frozen foods or moisture
on fresh foods can cause hot fat to bubble
up and over the sides of the pan.
• Usethe least possible amount of fat for
effective shallow or deep fat frying. Fillingthe
pan too full of fat can cause spiltovers when
food is added.
• Usea deep fat thermometer whenever
possibleto prevent overheating fat beyond
the smoking point.
• Always heat fat slowly, and watch as it
heats.
• Never try to move o pan of hot fat, especially
a deep fat fryer. Wait until the fat is cool.
• If a combination of oils or fats will be used
in frying, stir together before heating or
as fats melt slowly.
• When using glass cookware, make sure it
isdesigned for top-of-range cooking.
• Do not leave any items on the cooktop.
The hot air from the vent may ignite
flammable items and will increase pressure
in closed containers, which may cause them
to burst.
• Do not usealuminum foil to cover the grates
or line any part of the cooktop. Doingso
may result in carbon monoxide poisoning,
overheating of the cooktop surfaces, or a
potential fire hazard.
• Useproper pan size--avoid pans that are
unstable or easily tipped. Select cookware
having fiat bottoms large enough to properly
contain food and avoid boiiovers and spillovers
and large enough to cover burner grate. This
will save cleaning time and prevent hazardous
accumulations of food, since heavy spattering
or spillovers left on the range can ignite. Use
pans with handles that can be easily grasped
and remain cool.
• Do not leave plastic items on the cooktop--
they may melt if left too close to the vent or
burner.
To avoid the possibility of a burn, always be
certain that the controts for all burners are at
the OFF position and all grates are coal before
attempting to remove them.
Grease is flammable. Lethot grease coot
before attempting to handle it. Avoid letting
grease deposits collect in the grill or the
griddle grease troughs (some models}.
Cleanthese areas after each use.
For proper lighting and performance of the
cooktop burners, keep the burner ports
clean. It may be necessary to clean these
when there is a boilover or when the burner
does not light, even though the electronic
igniters click.
° After cleaning, it is important to make sure
the cap and burner port are properly aligned
with the burner base. Incorrect alignment
wilt produce poor burner performance. Never
operate the burner without al! burner parts
in place.
Cleanthe cooktopwith caution.Avoidsteam
burns;do not use o wet sponge or cloth to
cleon the cooktop while it ishot. Somecleaners
produce noxiousfumes if applied to a hot
surface. Fotlowmanufacturer's directions.
• Do not use the grill for cooking excessively
fatty meats or products that can flare-up.
• If range is located near awindow, do not
hang long curtains that could blow over the
surface burners and create a fire hazard.

ZkWARNING: OVEN SAFETY PRECAUTIONS
•Place the oven rack in the desired position
whilethe oven is cool. If racks must be
handled when hot, do not let pot holder
contact the heating elements.
• Stand away from the range when opening
the oven door.Hot air or steam which
escapes can cause burns to hands, face and/
or eyes.
Never broil with door open. Open door
broiling is not permitted due to overheating
of control knobs.
Extendingthe rack to its fully openposition
is a convenience in lifting heavyfoods. It is
also a precaution against burns from touching
hot surfaces of the door oroven walls.
• When using cooking or roasting bags in the
oven, follow the manufacturer's directions.
Do not use your oven to dry newspapers.
If overheated, they can catch on fire.
Do not useovenfor a storage area. Items
stored in an ovencan ignite.
Do not leave paper products, cooking
utensils or food in the oven when not in use.
Do not allow anyone to climb, stand or hang
on the door.Theycould damage the oven or
cause severe personal injury.
Do not use aluminum foil to line the oven
bottom. Foilcan trap heat or melt, resulting
in damage to the product and a shock or fire
hazard
• , WARNING: SELF-CLEANING OVEN
°Be sure to wipe up excess spillage before
starting the self-cleaning operation.
° Before self-cleaningthe oven, remove
the broiler pan,grid and other cookware
or atuminum foil.
°Do not clean the oven frame seal or the
door seal. Theseseals are essential for a
snug fit. Careshould be taken not to rub,
damage or remove the seals.
• If the self-cleaning mode malfunctions, turn
the oven off and disconnect the power supply.
Have it serviced by a qualified technician.
Do not useoven cleaners. No commercial
oven cleaner or oven liner protective coating
of any kind should be usedin or around any
part of the oven. Residuefrom oven cleaners
will damage the insideof the oven when the
self-clean cycle is used.
°Clean only the appliance parts specified in
this manual during the self-cleaning cycle.

The range is equipped with electronic ignition
which eliminates the need for a standing pilot
light.
The burners on this range will automatically
relight ifthe flame goes out.
All surface burner igniters will spark and make
clicking sounds when any burner is turned on.
Donot touch any of the burners when igniters
are clicking.
Occasionally the burners may spark if excess
wind or a draft blows the flame away from the
burner's flame sensor.
The griddle and IR(infrared)grill are equipped
with GIo-Bar igniters.TheGlo-Bar remains
energized whenever the griddle or IRgrill is in
useto ensure the burner always stays lit.
In case of a power outage, you can light the
surface burners on your cooktop with a match.
Hold a lighted match to the burner, then turn
the knob to the LOWposition. Use extreme
caution when lighting burners this way.
Do not attempt to light the grill or griddle during
a power outage. The gas to these burners will
automatically shut off during a power outage.

Afterthe burner ignites, turn the knobto adjust
the flame size.
To turn o burner off, turn the knob clockwise,
asfar as it will go,to the OFFposition.
Donot operate a burner for an extended
period of time without cookware on the grate.
Thefinish on the grate may chip without
cookware to absorb the heat.
Theindicator light on each bezelverifies the
burner is on. However, it should not be a
substitute for visually checking the flame at
the burner.
Dual-flame
stacked
burners
All surface burners on your range have two sets
of flames stacked one on top ofthe other; the
dual-flame burners have a lower/simmer) flame
and a upper {main)flame.
When a burner isturned on,the lower flame
will always light and stay on.
Simmering:
Thestacked burner design provides a wide
range of heat settings with which to simmer.
Depending on the type and quantity of food,
and pan size,the flame can be adjusted to suit
your specific need.The lowest setting usesonly
the lower flame and can maintain delicate foods
at a safe 140°F.
Cooking:
Settings from LOto X-HI wil!use both upper
and lower flames. Use LOto HI for all purpose
cooking. Use Ht or X-HI [highest setting) with
larger diameter cookware.

X-HI and HI are very high heat settings and
are intended to sear foods quickly and boil
large quantities of water.

Watch the flame, not the knob,asyou increase
or reduce heat.
Theflame sizeon a gasburner shouldmatch
the cookware you are using.
FORSAFEHANDLINGOFCOOKWARE,NEVER
LETTHEFLAMEEXTENDUPTHESIDESOFTHE
COOKWARE.Anyflame larger than the bottom of
the cookwarewilt not result infaster heating and
could be hazardous. Forsurface stability, 6" minimum diameter
cookware is recommended. Uselarger
diameter cookware for heat settings between
HIand ×-HI.
Wok
cooking The burner grates are uniquely designed
to cook on either side. Theflat side
accommodates flat bottom cookware
(stockpots, sauce pans, frying pans and flat
bottom woks),while the wok side isdesigned
to hold a wide variety of round bottom woks
without the need for a separate ring.
For easy access, a front burner location is
recommended for wok cooking.
Thefront center burner is recommended for wok
cookingon 6-burner 36" and 48" ranges.
ACAUTION: Toproperlyfitthegrate
and match the flame size,the wok must be
between 12" and 14" in diameter.

Grease Flare-ups:
Occasionally, during grilling, grease drippings
can ignite creating minor bursts of flame for a
second or two. Thisis normal when grilling.
Thegrill radiant baffle is designed to catch
excess grease,limiting flare-ups.
If a flare-up becomes excessive, remove the
food from the grill and lower the heat setting
until the flare-up subsides.
Tofurther reduce flare-ups, trim excess fat
around the edges of steaks and chops, use
hamburger that islean, remove the skin from
poultry, etc.
Use a long spatula and a non-flammable mitt
when turning food on the griE
Grill Cover.
Removethe cover before lighting the burner. For
your safety, the cover must be removed when
usingthe grill. Ifthe cover is left in place it will
become extremely hot,
Cookware:
Donot use any cookware on the grill.
Using the
IR gril!
Removethe cover before lightingthe burner,The
covermust be removedwhen usingthe IRgrill.
Setthe control knob to PREHEAT.The longer the
grill ispreheated, the darker the grill marks will
be on the food.
Allow 5 to 15 minutes to fully preheat the grill,
After preheat, the control knob may be set to
any position between HI and LO,
Do not leave the grill unattended atany time.
The intense heat caramelizes fats and juices
creating authentic barbecued flavor. The tRgrill
will achieve the some results as an outdoor grill.
All gas grills cook differently. Adjust cooking
times and methods when using the IRgrill.
Cleanthe grill grate, grease trough and grease
basin after each use.Removethe parts for
cleaning after they are cod to the touch,
NOTE:The grill will take approximately
45 seconds to ignite. Unlike the surface burners,
which use electric igniters, the grill uses
a GIo-Barfor ignition. It tokes approximately
45 seconds for the GIo-Barto reach
temperature, Gasisonly supplied to the grill
once the Glo-Bar reaches temperature.

Remove the cover before lighting the IR grill.
Thegrill grate isreversible.Placethe handle end
toward thefront ofthe cooktop.
Thegrate will change color when subjected
to the heat, and as oils cook onto the surface.
This isnormal and does not affect the cooking
performance.
The porcelainized cast-iron grill grate does not
need to be seasoned.
One sideof the grate (SideA)is grooved and
should be usedfor foods such as steak or

from the griddle flue cover to be obstructed by
cookware or towels.
Removethe metal cover andthe cutting board
before turning the griddle on.
The griddle assembly shouldnot be removed
for cleaning.
Once the unit is in position, the griddle can
be leveled. Removethe flue cover by lifting
it straight up. Becareful not to scratch the
surrounding stainless steel surfaces during
removal of the flue cover.
Thetwo inner screws are clamping screws for
securing the griddle in place. Loosenthese two
screws before leveling. Do not remove these
two screws.
The two outer screws are leveling screws. Do not
remove these two screws. They can be turned
to levelthe griddle or to provide a forward slope
to help grease and oils to drain away from the
food being cooked.After the first few uses,you
wilt be able to judge the slope best suited for the
foods you are cooking and personal preference.
After leveling the griddle, tighten the clamping
screws to secure griddle in place. Hand tighten
screws;do not over-tighten.

Before using the griddle for the first time, it
must be seasoned,
tf the griddle has not been used for a period
of time, it should be reseasoned.
1. Cleonthe griddle thoroughly with hot, soapy
water to remove any protective coating.
2. Wipe the surface using a solution of 1
quart water and 1 cup white vinegar. Dry
thoroughly.
3. Usea paper towel and wipe 1 tablespoon
vegetable oil evenly across the griddle: Donot
use corn oil as it can get sticky.
4. Turnthe control knob to 400°F for
approximately 30 minutes. Turn the heat off
when the oil starts to shimmer.
5. RepeatStep 3.Be sureto cover the entire
surface with the oil.
6. Allow the griddle to coo!.Wipe the entire
surface of the griddle using a heavy cloth to
remove the oil.Thegriddle is now ready to
use.
The griddle surface is o combination of highly
polished Type 304 stainless steel and an
aluminum core plate for even heat distribution.
It is normal for it to darken with useas oils cook
onto the surface to provide a stick-resistant
base or "seasoning."
The griddle isthermostatically controlled and
can be set to maintain any temperature from
200°Fto 450°F.
NOTE:Unlike the surface burners, which use
electric igniters,the griddle uses a Glo-Bar for
ignition. It takes approximately/45 seconds for
the Glo-Bar to reach temperature. Gasis only
supplied to the griddle once the Glo-Bar reaches
temperature.
To heatthe griddle,pushin the control knoband
turn tothe desiredtemperaturesetting.Thelight
on the bezelwillglow to indicatethe thermostat
control isworking.

CAUTION: To ovoid possible
burns, place the racks in the correct position
before turning on the oven.
Thecorrect rack position depends on the
kind of food and the browning desired.
The racks have a frame that locksinto the
rack supports on both sides.Oncethe frame is
locked into place, always pull the rack out, by its
upper front rail, to its full extension stop position,
when placing or removing cookware.

1. Hake sure the rack is pushed all the way into
the oven.
2. Graspthe rack by both its upper front rail and
its lower front rail and lift straight up to unlock
the front rack locks from the rack supports.

1.Placethe rear rack locks over and onto
the rack supports (five rack positions are
available includ ngthe top position).

3. Firmly holding onto both the upper and lower

remove it from the oven.

rear rack locks are secure on the rear rack

Low profile
oven rack The low profile oven rack isdesigned for
optimized performance when baking or broiling
certain foods in your Monogram ProfessionalAll-
Gas range. It can also be used asa normal oven
rack with the full extension oven racks as well.
Pleaserefer to the oven rack position table for
your bake/broil/convection mode for details asto
location and rack type for the best performance.

Turn the Oven Node Selector to BAKE,
Using the Temperature knob, set the desired
temperature, in 25°F increments, from t75°F
to 550°F,
The oven will now begin to preheat. The
temperature display will begin at 100°F and
remain there until the oven exceeds that
temperature. From that point, the display will
show the actual temperature,
The interior lights will turn on and stay on until
the oven is turned off. The convection oven fan
will turn on temporarily during preheat. The
control will beep when the oven is preheated
and food can now be pieced inside the oven.
Turn the Oven Node Selector end the Temperature
knob to OFFwhen baking isfinished.
NOTE: A cooling fan will turn on to cool internal
parts. This is normal, and the fan may continue to
run even after the oven is turned off.
Use the temperature probe when a precise
internal temperature is impor[ant. See Using
the probe.
For best results when baking four cake layers at
one time, place four pans on one shelf using the
center position C. Race the pans so each has at
least 1-1/2" air space around it..
Or,place four pans using racks B and D.Stagger
the pansso that one pan is not directly above
another as shown above.
The ovenhas 5 rack positions. Seethe Full
extension oven racks section for how to use,
remove and replace the racks.
Thedouble oven range has a smal! ovenwith
/4rack positions. Rackposition Cis not in the
small oven.

Professional Aft-Gas Range
Introduction
to broiling The broil mode has 2 settings. Choose HI or LO
setting.
° The HI setting can be usedto sealinjuices or
provide intense browning or charring when
needed for foods such as hamburgers, roasted
vegetables, whole peppers, eggplant, corn,
assorted cut vegetables, kabobs and very thin
meats such as smoked pork chops, London
broil and chicken.
• The LOsetting can be used for foods that
need adequate browning and also need to
be thoroughly cooked, likefish fillets, pork
tenderloin and beef roast.

to run even after the oven is turned off.
NOTE:Broil will not work if the temperature
probe is plugged in. Never leave your probe
inside the oven during a broil cycle.
Open door broiling is
not permitted.
