youcanaddadditionalingredientstomakethousandsofvarietiesofbreads,eachwithitsown
textureandflavor.
Toachieveoptimumresults,pleasetakea fewminutestoreadthefollowinginformationbefore
youshopfortheingredients.

•Flour:BreadFlourIsEssential
Breadflourisa necessity.Itismilledfroma hardwinterorspringwheat.Theproteincontentis
higherandmoredurableinbreadflourthaninall-purposeflour.Theproteinbecomesgluten
whenmixedwithliquid.Whengluteniskneadeditbecomeselastic,andwhenbaked,itisthe
structureofthebread.All-purposeflour,milledfroma combinationofhardandsoftwheat,
becomeselastictooeasilyforuseina breadmachineandquicklylosesitsabilitytostretch
well.
Thebreadmadefromall-purposeflourwillbesmallanddense.Severalwell-knownmillsnow
marketbreadflour.Thepackagesarelabeledasbreadflourandarereadilyavailableatgrocery
stores.
Wheatistheonlygrainthatcontainsgluten,thetypeofproteinthatbecomeselasticwhen
kneaded.
Otherflours(oat,rice,barley,soy,rye,andbuckwheat)addflavorandfibertobreads
butdonotbecomepartofthedough.Therefore,itisnecessarytohavewheatflourasa base
whenmakingbreadswithotherflours.
VitalWheatGlutenisproducedbyprocessingwhiteflouranextrastep.White(all-purpose)flour
containsproteinandstarch.Millscannowremovemostofthestarch,leavingonlytheprotein
(gluten).
Thisismoreexpensivebutisusedinverysmallamounts.Whenvitalwheatglutenis
addedtorecipescontainingallwholegrains,ithelpstoimprovethevolumeandshapeofthe
loaf.Usually

teaspoonpercupofflourwillmakea difference.Ifmorethana tablespoonper
cupofflourisused,thebreadmaybetough.Grocerystoresarebeginningtostockthis
ingredientintheaislewithbakingingredients.Itisalsoavailableathealthornaturalfoodstores.

Storeflourforlongperiodsoftimeinthefreezerratherthantherefrigerator.Refrigeratorstend
todryoutflours.Besuretheflourisatroomtemperaturebeforeplacingitina breadmachine.
•Yeast:TheNumberOneIngredient
ActiveDryYeastorQuickRiseYeastcanbeusedintheGoldStarAutomaticBreadmaker.This
canbepurchasedinsmallpackets,jars,cans,orinbulkata healthfoodstore.Cakeyeast
cannotbeused.Becauseyeastcangrindagainstitselfandbecomeveryfine,itispackagedby
weightandnotbyvolume.A 1Aoz.packageofyeastcontainsapproximately21Alevel
teaspoonsofyeast.Theactivityofyeastwilldeterioratewhenitisexposedtooxygen,moisture,
orwarmth.Therefore,yeastneedstobestoredairtight,refrigeratedorfrozen.Yeastisgranular
andcomestoroomtemperatureveryquickly.Besuretochecktheexpirationdateontheyeast
sinceagedyeastusuallyperformspoorly.Measureyeastaccuratelyforbestresultsandfollow
thequantitiesgivenineachindividualrecipe.

•Liquids:ActivateTheYeastAndBindTheDough
Liquidsincludeallthewetingredientsusedintherecipe.Traditionalbreadbakershavebeen
taughtcorrectlythatwarmliquid(110-115°F)willactivatedryyeast.However,whenyeastis
usedina breadmachine,theliquidtemperaturemostlikelytoprovidea goodenvironmentfor
theyeastis80°F.Atthistemperature,theyeastactivatesgraduallytoaccommodatethe
programofthemachine.Whenhotterliquidsareused,theyeastnotonlyactivatestooquickly,
theentiredoughbecomestoowarm.Ifthetemperatureofthedoughrisesabove100°Fduring
therisetimes,theyeastdoesnotdiebutbecomesverylethargicandineffective.
Becauseclimatesandseasonsoftheyearcausea widevarietyofhumiditylevels,theliquid
amountscalledforina recipemayhavetobeadjusted.Flourwillnotacceptthesameamount
ofwaterina moist,humidclimateasitwillina dryclimate.Forexample,Floridaresidentswill
alwaysuselessliquidthanArizonaresidents.
Wisconsinbakerswilluselessliquidintheirmachinesinthesummerthaninthewinter.The
differencemaybeasmuchas1AtoV2cupofliquid.Whenbreadiskneading,thedoughshould
bea soft,tacky
ball.
Moreflour,onetablespoonata time,maybeaddedafter5 minutesof
kneadingifthedoughistoowet.
Moreliquidmaybeaddedalso,onetablespoonata time,ifthedoughistoodry.Ifthebread
fallsduringthebakingcycleand/orisquitecoarse,reducethetotalliquidamount.
Whenthemachineissetonthedelaytimer,reducetheamountofliquidinmostrecipesby1
tablespoonandbesuretheliquidisvery
cold.
Eggsarealsoconsideredpartofthetotalliquidamount.Oneeggmeasure1Acup.Ifitdoesnot,
addadditionalwatertoequalV4cupperegg.AneggwhiteisequaltoVscup.Ifitdoesnot,add
additionalwatertoequalVscup.Eggsneedtobeatroomtemperaturebeforeputtingitinthe
machine.Ifeggsaretakendirectlyfromtherefrigerator,placethemina bowlofwarmwaterto
takeoffthechillbeforecracking.DONOTUSEEGGSORANYPERISHABLEFOODSWITH
THEDELAYEDSETTING.
Recipeswhichrequirenonfatdrymilkcansubstitutefreshmilk.Omitthedrymilkandreplace
partorallofthewaterintherecipewithmilk.Drymilk,likeliquidmilk,willmakethecrumb
structurehavea morevelvetytexture.Freshmilkisnotrecommendedwiththedelayedsetting.
Alwaysplaceingredientsintothebreadpanintheorderlistedintherecipesinthisbook.

Resistthetemptationtoaddmorethanspecifiedintherecipe.Forthebestresults,waitforthe

•Sugar:LeavenstheBread
Yeastfermentssugartoleavenbread.Whiteandbrownsugar,honey,andmolassesmaybe
interchangedequally.Sincehoneyandmolassesareliquids,decreasethewaterbythesame
amountasthehoneyormolassesadded.Donotusea sugarsubstitute.
Artificialsweetenersmaynotbeusedastheyeastcannotreactwiththem.Yeastdoeshavethe
abilitytoconvertthestarchinflourtosugar.Althoughsugaristhefavoritefoodofyeast,too
muchsugarwillcausetheyeasttomalfunction,especiallywithina breadmachineprogram.The
yeastwillhavea feedingfrenzyandthenbecomelethargic.Theloafofbreadwillbesmalland
dense.Driedfruitsalsocontributesugartothebreaddough.Resistthetemptationtoaddmore
thanspecifiedintherecipe.
•Salt:RegulatesYeastActivity
Saltisnecessarytocontroltheactivityoftheyeast,discipliningittoworkslowlyandsteadily.
Withoutsalt,yeastactsveryrapidlyandisexhaustedtooquickly.Saltalsostrengthensthe
structureofthedough.Iftoolittlesaltisused,thebreadwillriserapidlyandthenfailbeforethe
bakingorassoonasthebakingbegins.Thetexturewillbecoarseanduneven.Somesalt
