1 BEFORE COMMISSIONING
Thank you for choosing a JAC system. It is essential that you read these instructions
before installing and commissioning this machine. This will protect you and avoid damaging
your machine.
These instructions refer to various illustrations in order to make them easier to understand.
These illustrations are at the end of the instructions. Please refer to them whenever you see
the following symbols: (fig.X, n°Y).
To ensure that your machine gives you full satisfaction over the coming years, we
invite you to familiarise yourself with the following advice:
- Enlist the help of your approved agent for installation, commissioning and service support.
- In order to be covered by the 5-year warranty (see terms and conditions set out below),
please have your dealer fill in the service booklet when your machine is being installed. The
service booklet is at the back of your machine.
2 WARRANTY
All JAC products are covered by a 5-year warranty.
This warranty is valid for all parts on your machine, including electronic components but
excluding consumables. The warranty takes effect on the date the equipment is installed.
Subject to the following restrictive conditions:
- Equipment acquired from an approved dealer;
- Installation carried out by an approved agent;
- Equipment used in accordance with the instructions for use and for the intended purpose
for which it was manufactured;
- Equipment serviced on a daily basis in compliance with the instructions for use;
- Regular servicing by the approved agent in compliance with service specifications, with
at least one service a year (servicing chargeable to the user).
- Exclusive use of genuine JAC parts.
If there is no record of servicing by an approved agent and/or if the service booklet
has not been filled in correctly, warranty cover will be limited to one year.
This warranty does not cover:
- Replacement of consumables (§9);
- Parts not accepted as defective by our company;
- Problems due to improper use of the equipment;
- Problems due to installation not carried out by an approved agent;
- Parts or problems due to transit damage or improper handling.
Repairing and/or replacing defective parts during the warranty period does not
bring about an extension of said warranty.

3 WARNINGS
It is most important that these user instructions be kept with the machine for any future
reference. Should this machine be sold or transferred to another user, please ensure that the
user instructions are handed over so that the new user can be familiarised with its operation
and the warnings associated with it.
These warnings are given for your safety and that of others. We would therefore
ask you to read them carefully before installing and using the machine.
This machine has been designed for use by authorised adults. Please therefore ensure
that children do not touch it or use it as a toy.
This machine is intended exclusively for professional use.
It is dangerous to modify or attempt to modify the specifications of this machine.
After having installed this machine, please ensure that it is not standing on the power
cable.
Follow the instructions given for its use.
This machine must be stored and used in an indoor room, protected from moisture and
heat.
This machine must be adequately illuminated to operate it.
The noise level of this machine does not exceed 75 dB(A) in accordance with EN ISO
3744.
This machine must be used by one person at a time (unless otherwise specified).
Always disconnect the mains supply before cleaning the machine inside/outside
and when carrying out maintenance.
This machine is heavy. Take all necessary safety precautions when handling it.

5 INSTALLATION AND COMMISSIONING
5.1 Unpacking the machine:
Machines are delivered from our works on pallets, strapped and protected with cardboard. First of all,
the packaging must be examined and any damage caused in transit must be declared directly to the
carrier.
A. Remove the wooden case.
B. Remove the foam pads wedging the cooling unit
C. Remove the wooden battens wedging the castors
D. Take the machine off the pallet. Make sure you do this with at least two people in order to
lower it as gently as possible onto the floor.
After unpacking your machine, check that it has not been damaged in transit. Notify us of any
defects.

5.2 Positioning:
In order to achieve excellent performance and long-term reliability, choose a location that is:
Well ventilated, shielded from direct sunlight and away from sources of heat, with a sturdy
surface free from vibration.
5.3 Electrical connection:
IMPORTANT: This machine must be earthed.
It is recommended that the system be protected with a fuse and an RCD.
Your mains electricity supply to the machine must be protected as indicated below:
TL40 – TL105
- North America: 15 A protection;
- Rest of the world: 16 A protection.
TL220
- North America: 32 A protection;
- Rest of the world: 32 A protection.
For machines equipped with a variable speed drive, it is imperative that they be connected to a
junction box on a circuit fitted with a 300 mA RCD.
Note: Any problem resulting from any other type of connection will not be covered under warranty.
Before connecting your machine to the mains supply and in order to prevent the motor from burning
out when it is switched on, it is important to check that the mains supply matches the machine
specification (see machine nameplate).
This machine complies with Machinery Directives 2006/42, 2006/95, 2004/108 and is CE marked as
proof of this.
Please familiarise yourself with the safety pictograms displayed on the machine:
This pictogram indicates an electrocution hazard. Please isolate the machine
before carrying out any work on it. You will find it inside the machine on the
electrical enclosure (fig.10, n°26).
You will find the circuit diagram for the machine inside the electrical enclosure
cover (fig.10, n°27).
5.4 Commissioning:
Before commissioning, ensure that there are no extraneous objects interfering with the machine’s
moving parts.
Ensure first of all (after verifying electrical compatibility) that the motor is rotating in the right direction,
for this to be the case, the blades need to be rotating clockwise

5.5 Danger:
If the user or the machine is in danger, you must use the main isolator switch (fig.6, n°28) to cut the
power supply to the machine.
Keep clear of the tray proofers when they are in motion.
Remove the plug from the power socket before any maintenance and/or servicing work.
Any maintenance work or replacement of parts must be carried out by an approved agent.
6 CONTROLS AND SAFETY FEATURES
6.1 Controls:
Your machine is equipped as standard with a mechanical keyboard (fig.5).
6.2 Work area:
The work area is at the front of the machine (fig.4).
7 OPERATION
Braked castors must be locked while the machine is in operation (fig.1, n°7). For the TL220, adjust
the anti-vibration pads (fig.2, n°9).
Control panel
The control panel is on the lid of the machine (fig.1, n°1).
It features a screen and various buttons for making settings (fig.5)
Storage temperature 1 enables the sourdough starter to be kept for feeding daily whereas storage
temperature 2 enables the starter to be kept for up to 72 hours without feeding (fig.5, n°23). It is
inadvisable to set a storage temperature below 8°C (46°F) in order to avoid any risk of frost on the
tank wall.
Operating procedure (fig.7, 8)
On first use, pour the initial starter into the tank (for the quantity of initial sourdough starter, see tables
in paragraph 4.1 depending on Tradilevain model) then follow the directions below:
A. Add hot water (45°C) and flour. Add 50% of the working
capacity as hot water and 50% as flour (see tables in
paragraph 4.1 depending on Tradilevain model).
B. Press the cycle start button to start the first mixing
cycle.

C. The Tradilevain will buzz and the display will show “Scrape
down”. Open the lid and use the spatula supplied to scrape
down the tank.
D. Close the tank and press the cycle start button to start
the second stirring cycle (*).
E. The Tradilevain switches automatically to the fermentation
cycle after the second mixing.
F. After a time specified in the basic settings, the fermentation
cycle finishes and the Tradilevain switches automatically to
storage. The sourdough starter is then ready for use.
G. Open the valve to obtain sourdough starter.
H. In order to feed, press the + + keys simultaneously
to stop the cycle and resume from step A.
(*) If the mix is not satisfactory after the second stirring cycle, press the key to start another
stirring cycle.
If, despite the third stirring cycle, the mixture is still not correct, at the next feed, add 50% of the
working capacity as hot water and 25% as flour. At step D, do not press start cycle; stop the cycle
instead by pressing the + + keys simultaneously. Then resume at step A, adding the 25% of
flour.
For reasons of food hygiene, under no circumstances must dough or flour left on the top of
the machine or outside it, be reused or reintroduced into the food chain.

Setting the time
To set the time, proceed as shown below:
Starter draw-off function
The starter draw-off function gives an idea of the quantity of sourdough starter drawn off. When
drawing off sourdough starter, add the quantity drawn off by pressing and entering the
quantity of starter drawn off. If 10 litres of starter are drawn off, proceed as shown below:

Detailed description of a cycle and the electronic board settings
In the description below, the values in brackets refer to the adjustable settings shown in the default
settings table.
Add hot water (45°C) and flour. Add 50% of the working capacity as hot water and 50%
as flour.
Press the cycle start button to start the first mixing cycle. The mixing cycle comprises:
-A stirring cycle at fast speed (P24) for X seconds (P8).
-A stop cycle of X seconds (P9).
-A stirring cycle at fast speed (P24) for X seconds (P10).
-A stirring cycle at slow speed (P21) for X seconds (P11).
The Tradilevain buzzes and requests a scrape-down. Open the lid and use the spatula
supplied to scrape down the tank.
Press the cycle start button to start the second mixing cycle. The second mixing cycle is
identical to the first. If the mix is not satisfactory after this second cycle, press key 1 to
start another stirring cycle at fast speed (P24) for X seconds (P20).
Automatic switching to fermentation cycle and stirring cycle 1.
Fermentation cycle:
Sourdough starter fermentation phase,
the Tradilevain maintains the setpoint
temperature (P41) for a pre-programmed
time (P40).
Stirring cycle 1:
Stirring cycle 1 is done at fast speed
(P24) for X seconds (P14). It is repeated
X times (P12) and at pre-programmed
intervals (P13).
Stirring cycle 2:
Stirring cycle 2 is done at fast speed
(P24) for X seconds (P17). It is repeated
X times (P15) and at pre-programmed
intervals (P16).
Stirring cycle 3:
Stirring cycle 3 is done at fast speed
(P24) for X seconds (P19). It is repeated
until the next feed and at pre-programmed
intervals (P18).
Storage cycle:
The sourdough starter can be used from
this point on. Once the fermentation time
has elapsed, the Tradilevain switches
automatically to storage mode. The
cooling unit will then run until the selected
setpoint temperature (P42 or P43) has
been reached.
The Tradilevain buzzes every day at a set time (P39) for X seconds (P31) to request a
feed.

Setting P1: Selects the display language.
Setting P2: Selects the unit of temperature.
Setting P3: Corrects any difference between the actual temperature of the sourdough starter and
the temperature shown on the display. For instance, if the measured temperature of the starter is
12°C and the temperature displayed is 15°C, replace the value of this setting (it will be 15 in this
case, since it is the value displayed) with the measured temperature, 12°C in this case.
Setting P5: Determines how many degrees above the setpoint the temperature at which the
cooling unit starts up will be. For instance, if you are in storage cycle 1 (12°C) and this setting is at
1°C then the cooling unit will start up when the sourdough starter temperature reaches 13°C
(12°C + 1°C).
Setting P29: Stops fast stirring cycles for a duration determined by this setting before feed time
(setting P37). For instance, if setting P37 is 08:00 and this setting is 01:00 then fast stirring cycles
will end at 07:00.
Setting P30: Sets the delay before the Tradilevain buzzes (lid open, fault, etc.). For instance, if
this setting is 5, the Tradilevain will not buzz until 5 seconds after the lid is opened.
Setting P31: Sets the duration of feed reminder buzzer.
Setting P34: If this setting is YES, stirring cycles will be stopped when switching to the storage
cycle.
Setting P35: Minimum storage temperature if setting P33 is YES.
Setting P44: Specifies the sourdough starter working capacity for the calculator function.

8 MAINTENANCE
8.1 Weekly, by a trained operator.
A. Drain the tank.
B. Pour very hot water into the tank and start a mixing cycle .
C. Stop the cycle by pressing the + + keys simultaneously.
D. Turn off the isolator switch.
E. Remove the plug from the socket.
F. Drain the tank again and clean it with hot water and a damp cloth.
G. Use a damp cloth to clean the outside.
H. Clean with a brush and vacuum the inside of the machine (cooling unit and electrical part).
Never leave the tank empty for several days at a time; always leave a little water (2-3 cm) at the bottom of the
tank to prevent premature wear of seals.
NEVER WASH THE MACHINE BY HOSING IT DOWN
9 CONSUMABLES
When ordering spare parts, check with your approved agent which part is required based on the
spare parts catalogue issued by the manufacturer.
Always quote the machine serial number shown on the nameplate.
Your agent will place the orders with JAC.

10 MALFUNCTIONS
WARNING: The machine must be isolated from the power supply before attempting any work on it.
Should the problem persist, please contact your technician.

Check the main power supply and the power supply to
the motor.
Check that the selector at the rear of the machine has
been switched on.
Check that the cover is fully closed.

Shut off the power to the machine at the isolator switch,
wait 2 minutes and reset the isolator switch. If the fault is
still there when the power is switched on again, contact
your dealer.

1 AVANT LA MISE EN SERVICE
Merci d’avoir choisi une solution JAC. Veuillez impérativement lire ce mode d’emploi avant
d’installer et de mettre en service cette machine. Vous pourrez ainsi vous protéger et éviter
de détériorer votre machine.
Cette notice fait référence à différentes figures afin de faciliter la compréhension des
instructions. Ces figures se trouvent en fin de notice. Veuillez vous y référer dès que vous
rencontrez les symboles suivants (fig.x, n°y).
Pour que votre machine vous donne entière satisfaction au cours des prochaines
années, nous vous invitons à prendre connaissance des conseils suivants :
- Faites-vous aider par votre agent agréé pour l’installation, la mise en service et le suivi.
- Afin de pouvoir bénéficier de la garantie de 5 ans (voir conditions reprises ci-après),
faites compléter le carnet d’entretien par votre distributeur lors de l’installation de votre
machine. Ce carnet d’entretien se trouve à l’arrière de votre machine.
2 GARANTIE
JAC offre une garantie de 5 ans sur tous ses produits.
Cette garantie est valable sur toutes les pièces de votre machine, pièces électroniques
incluses, hors consommables. La garantie prend effet à la date d’installation du matériel.
Sous les conditions restrictives suivantes :
- matériel acquis auprès d’un revendeur agréé ;
- installation effectuée par un agent agréé ;
- utilisation du matériel conformément aux indications du mode d’emploi et dans le but
pour lequel il a été fabriqué ;
- matériel quotidiennement entretenu conformément aux indications du mode d’emploi ;
- entretiens suivis par l’agent agréé conformément aux spécifications d’entretien avec, au
minimum, un entretien par an (entretien à charge de l’utilisateur) ;
- utilisation exclusive des pièces d’origine JAC.
S’il n’y a pas de suivi d’entretien par un agent agréé et/ou que le carnet d’entretien
n’est pas correctement complété, la garantie se limite à un an.
Cette garantie ne couvre pas :
- le remplacement des consommables (§9) ;
- les pièces non reconnues défectueuses par nos services ;
- les problèmes résultant d’une utilisation anormale du matériel ;
- les problèmes résultant d’une installation non effectuée par un agent agréé ;
- les pièces ou les problèmes résultant d’un dégât de transport ou d’une manutention
inappropriée.
