This manual covers the use of the following commercial fountain models:
SQ1 -SQ2 - SQ3 - SQ4 & SQ4 TALL

IMPORTANT SAFEGUARDS
When using our Cascade Chocolate Fountain, safety precautions should always be
followed including the following:
1. READALLINSTRUCTIONSBEFOREUSINGTHISFOUNTAIN.
2. Whenthefountainbasinisremoved,thetopofthefountainbasecanbeextremely
hot.AVOIDANYCONTACTWITHTHETOPOFTHEFOUNTAINBASEIFITISEXPOSEDasthe
heatingelementislocateddirectlybeneath.
3. Avoidallothersurfacesthathavebecomehotduringuse.
4. Toprotectagainstelectricalshockanddamagetothefountain,donotputthe
fountainbaseinwaterorotherliquids.Neverallowliquidtoenterthefountainbase
throughthebottomgrate,ventholes,orotheropenings.
5. Whenbasinisremoved,takeextracaretokeeptheliquidorotherobjectsfrom
enteringintotheexposedopeningatthetopofthefountainbase.
6. Avoidcontactwithmovingparts,suchastheaugerinthecylinderorthespindleinthe
centreofthebasin.
7. Closesupervisionisnecessarywhenthefountainisusednearchildren.
8. Donotoperatethefountainifyouobservedamagetotheelectricalcordorplugorif
thebaseofthefountainhasbeendroppedordamagedinanymanner.Thefountain
mustbereturnedtoJMPosneroradesignatedrepairfacilityforexaminationand
repairasspeciedinthe“Warranty”sectionofthismanual.
9. Alwaysunplugthefountainfromtheelectricaloutletwhenitisnotinuse,especially
beforeputtingonortakingoffparts,andbeforecleaning.
10.Donotallowtheelectricalcordtocomeintocontactwithhotsurfaces.Anextension
cordmaybeusedifnecessary.Careshouldbetakentopositiontheelectricalcord
sothatitdoesnotcreateahazardbyhangingoveratableorcounteredgeinsucha
waywhereitmightbetrippedonorpulledbythosearoundthefountain.
11.Neverplaceanyobject,especiallyyourngers,insidethecentralcylinderwhilethe
fountainisinuse.Doingsomaycausesevereinjurytopersonsordamagetothe
fountainitself.
12.Theuseofaccessoryattachments,otherthanthosemadeavailablespecicallyfor
usewiththisfountain,isnotrecommendedbythemanufacturer,andmaycause
injury,andwillvoidyourwarranty.
13.Extremecautionmustbeusedwhenmovingafountainorfountaincomponents
containinghotliquid.Alwaysmovethefountainbyliftingthedrum.Ifyouliftthebasin
itmightcomeofffromthedrum.
14.UseofthefountainoutdoorsisnotrecommendedunlessusedwithaWindGuard.
15.Donotusethisfountainforotherthanitsintendeduse.
16.TheFountainmustbeonalevelsurfacetooperateproperly.
17.Observeandfollowcustomarysanitationguidelineswhenusingthismachine.

InessencethisrequiresthattheCascadeChocolateFountainhasit’sbearingsserviced
every800hoursoreachyear,whichevercomesrst.Failuretodothismayresultinthe
invalidationofyourwarranty.
GENERAL INFORMATION
Themainproblemofinsufcientservicingis:
• Theseals(locatedinthebowl)mayfailwhichwillallowchocolatetoleakintothe
motorcompartmentandcausethemotorandothercomponentstofail.
• Toreducetheriskofproblemsandtotestwhetherthemachinerequiresaservice.
Pleasetakenoteofthefollowingpoints:
• Neverwashtheremovablebowlinthedishwasher.Thesteamandhotwatercan
causeprematurefailureofthesealsandrustingofthebearings.Alwayswashinthe
sinkanddonotfullysubmerge.
• Everytimeyoucleanthefountainandremovethebowltryturningthespindleby
hand.Thisshouldmovefreely,ifitdoesnotthenmachineneedstobeserviced.
• Oncethebowlhasbeenremovedchecktheunderside,andalsointhemotor
compartmentforanysignsofleakingchocolate(thiscanresemblethickblack
grease).Ifthereisanyevidenceofthisstopusingthemachineimmediatelyandbook
aservice.
• Fortheavoidanceofdoubt,anymachinethatisreturnedtouswherethebearings
haveseizedwillbedeemedtobeoutofwarranty.

required.ThereisatwodigitLEDdisplaytoindicatethetemperatureindegreesCelsius
(notfeaturedonSQ1cascade),andalsotwoindividualLEDindicatorswhichlight
whentheheaterandmotorrespectivelyareON.Themembraneswitchpanelhasa
pairofpush-buttonswitchesforUPandDOWNcontrolofthetemperature,andathird
push-buttoncommandstheON/OFFstateofthemotor.
• Fuse–Themachinehas3fuses.1stfuseisinthepowercord.2ndfuseisinthepower
socketonthedrumandthe3rdfuseisonthePCBboardinsidethedrum.Onlya
qualiedelectricianshouldreplacethefuseinthePCBboard.
• AdjustableFeet–Screwintothebottomofthebase.Thesemaybetightenedor
loosenedtoraiseorloweraparticularsideofthefountainforleveling.

surface.Makesurethedrumislevelsothatthe
chocolatewillowproperly.
STEP 2
Tocheckthefountainislevelplaceaspiritlevel
onthebasinrimatvariouslocations(Fig.1).If
levelingisneeded,raiseorloweraparticular
sideofthefountainbyadjustingthefeet.

Placeaugerontopofthesquarecentreshaftin
themiddleofbasin(Fig.2).
STEP 4
Placethecentrecolumnontothecentre
housinginthemiddleofthefountainbase(Fig.
3).Ensurethattheslotonthecolumnbaselines
upwiththelocatingpinontheinsideofthe
housing.Pleasenotethattheaugerwillnotll
thewholelengthofthecolumn,thisisnormal
anddoesnotaffectoperationofthefountain.

PlacetheCupsonthecentrecolumn,
matchingthenumbersonthecupswiththe
correctnumberedbracketonthecolumn(Fig.
4).Forexample,cupA1mustattachtobracket
A1;thereare8cupsintotal,A1-A4andB1-B5.

STEP 1
Preheatthefountainbyturningonswitchonthepowersocketsettheheatlevelto70
degreesbypressingthe( + )key(SQ1operatesatastandardtemp.).Allowfountainto
preheatforatleast10minutes.
STEP 2
JMPosnerFonduechocolatecaneitherbepre-meltedormelteddirectlyinthefountain.
Topre-melt,followtheinstructionsonthemicrowaveablebag.Tomeltinthefountain,
add1kgofchocolateatatime,stirringoccasionallyuntilcompletelymelted.
Toaddchocolatetothefountainduringuse,eitherpre-meltthechocolateorpour1cup
ofchipsatatimedirectlyintothebasin.Allowchipstomeltbeforeaddingmore.
Important Note:Donotoverllthefountain;seefountaincapacitiesbelow.
STEP 3
Oncethechocolateiscompletelymelted,lowertheheatbypressingthe( - )keytothe
operatingtemperatureandturnthemotorswitchto“ON”.

IMPORTANT INFORMATION ABOUT THE
CONTROL PANEL
Thecontrolsystemswitchesthechocolateheateronandoffsoastomaintainthe
temperatureatapre-setlevel,andswitchesthemotoronandoffasrequired.
ThereisatwodigitLEDdisplaytoindicatethetemperatureindegreesCentigrade,and
alsotwoindividualLEDindicatorswhichlightwhentheheaterandmotorrespectivelyare
on.Amembraneswitchpanelhasapairofpush-buttonswitchesforUP( + )andDOWN
( - )tocontrolthetemperature,andathirdpush-buttoncommandstheON/OFFstateof
themotor.
1) SETTING THE TEMPERATURE
Wheneitherofthe( + ) or( - )push-buttonsispressedthesystementersthetemperature
settingmodeandthedisplayshowstheexistingunchangedsetpointtemperature.The
twodisplaydecimalpointsashonalternatelytoconrmthatthetemperaturesetting
modeisenabled.Furtherpressesofthe( + ) or( - )push-buttonscausethetemperature
tobeincreasedordecreasedrespectivelyby1°Catatime,butifeitherpush-buttonis
heldforlongerthantwosecondsthetemperatureisraisedorloweredcontinuouslyata
rateof3°Cpersecondforaslongasthepushbuttonisheld.Ifthetemperaturereaches
99°C,furtheruseofthe( + )push-buttoncannotalterthetemperaturefurthernorifthe
temperaturereaches0°Cthe( - )push-buttonwillnotehaveanyeffect(notethatsetting
atemperaturebelowtheambienttemperatureisirrelevantasthesystemonlyhasa
heater).
Ifneitherpush-buttonisoperatedforlongerthanthreeseconds,thesystemautomatically
comesoutofthetemperaturesettingmodeandtheashinglightturnsoff.Atthesame
timethenalsettemperaturevalue(TSET)isstored,thistemperaturesettingwillbeused
whenthefountainisnextswitchedon.
2) TEMPERATURE CONTROL
Whenthefountainisswitchedon,theheaterisalwaysintheONstateinitially,andthe
HeaterLEDisilluminated.Thetemperaturewilluctuatearoundyoursettemperature,
thusthehysteresisbandis2°C.Ifthetemperaturesensorfails,orisun-pluggedfromthe
controlboard,theheaterandthemotorarebothswitchedOFF,andthedisplayshows
‘SF’(SensorFault).
3) MOTOR CONTROL
Whenthefountainisswitchedon,themotorisalwaysintheOFFstateinitially,andthe
MotorLEDisoff.ThemotorsubsequentlyrunsONwhenthe( ON )push-buttonispressed,
andtheMotorLEDisilluminated.Subsequentoperationofthe( ON / OFF )push-button
togglesthemotorandindicatorbetweentheONandOFFstates.
However,ifwhenthemotorissettobe( ON )themotorwillonlystartwhentheactual
temperaturegetstowithin10°Cofthetemperaturesetusingthecontrolpanel(eg.
Fountainsetat80°Cmotorwillonlyfunctionwhenactualtemperaturereaches70°C).In
thisevent,thedisplayshows‘LT’(Lowtemperature)fortwosecondsbeforeitrevertsto
thenormaltemperatureindication.Thisistominimizepossibleoverheatingofthemotor,
asthereisariskoftheAugerbeinglockedduetosolidchocolate.
Themotoralsohasabuilt-inthermalswitchwhichopensifitstemperatureexceedsa
safelimit.Thisswitchconnectsbacktothecontrollertooverridenormalmotoroperation.
WheneverthethermalswitchisopenthemotordriveissettoOFF,andthedisplayshows
‘OL’(Over-Load)untilthemotorhascooledsufcientlytoresetthethermalswitch.The
motorcanthenbere-startedmanuallybyusingthe( ON / OFF )push-button.

SAFETY PRECAUTIONS
• DO NOT TOUCH HOT SURFACES. SOME FOUNTAIN COMPONENTS BECOME
HOT DURING USE.
• WHEN MOVING THE FOUNTAIN MAKE SURE THAT YOU LIFT THE DRUM. IF YOU
LIFT THE BASIN IT MIGHT COME OFF FROM DRUM.
• NEVER ALLOW LIQUID TO ENTER THE FOUNTAIN BASE THROUGH THE BOTTOM
GRATE OR VENT HOLES
• ADULT SUPERVISION IS NECESSARY WHEN APPLIANCE IS USED IN PRESENCE
OF CHILDREN.
• AVOID CONTACT WITH ALL MOVING PARTS
• ALWAYS UNPLUG THE FOUNTAIN FROM THE ELECTRICAL OUTLET WHEN IT
IS NOT IN USE, BEFORE PUTTING ON OR TAKING OFF PARTS, AND BEFORE
CLEANING.
• NEVER COVER VENT HOLES ON THE FOUNTAIN BASIN. DOING SO MAY
CAUSE THE FOUNTAIN TO OVERHEAT.
CHOCOLATE PREPARATION
WestronglyencourageyoutouseJMPosnerFondueChocolate,availableinDark,Milk,
andWhitevarieties.JMPosnerchocolateisspeciallyformulatedtomeltdowntothe
correctviscositytoowperfectlythroughthefountaineverytime.Ouruniquefondue
chocolateisexquisiteintasteandaromaandyourguestsandclientsaresuretobe
delighted.
Beforeusingthechocolate,storeitinacool,dryplace.Donotfreezeorrefrigerateas
moisturecouldaffectthechocolate’sconsistency.
Youmaymeltthechocolatedirectlyinthefountainbasin,inabainmarie,orin
microwaveaccordingtotheinstructionsonthebags.WHENMICROWAVINGCHOCOLATE,
ALWAYSUSEHALF–POWERTOPREVENTBURNING.
Whenmeltingchocolatedirectlyinthefountainbasin,refertothetablebelowfor
timings.Addchocolate1kgatatimetoexpeditethemeltingprocess.Stirchocolate
occasionally,scrapingitfromthebasinwithaspatulaasyougo,thiswillprevent
scorching.MilkandWhitechocolatearemoresusceptibletoburningsobesuretostir
morefrequently(every2-3minutes)anduseappropriatetemperaturesettings.

STARTING THE FOUNTAIN
BEFORE STARTING THE FOUNTAIN:
1. Ensurethatthefountainisonasturdy,LEVELsurface.
2. Thefountainitselfmustbelevelinordertooperateproperly.Pleasesee“FOUNTAIN
ASSEMBLY”forinstructionsonlevelingthefountain.
3. Ensurethatthefountainventholesandthebottomofthebasehousingarenot
covered.Theseareasallowheattoescapefromthemotorandheatingelement
duringuse.Obstructionoftheairowwillcausedamagetothemotorandinternal
electricalcomponents.
4. Fillthebasinwithchocolateaccordingtothe“FOUNTAINOPERATION”instructions.
ONCE THE CHOCOLATE IS MELTED:
1. PlacetheScrewsintothecolumnsandturnthemclockwisetocheckthattheyare
lockedinplaceoverthespindles.Placethetophatontopofthecolumns.
2. PresstheOnswitchtoSTART.TheScrewswillturnandcarrythechocolateupthrough
thecolumns,causingittoowoverthetophatanddownthepolycarbonatetrays.As
thecolumnsllwithchocolate,theremaybeabriefknockingnoisefromtheScrews
spinningagainstthecolumns.
ADDING ADDITIONAL CHOCOLATE TO THE FOUNTAIN:
10Kgofchocolatewillserveapproximately200people.Additionalchocolatecanbe
addedusingthefollowingmethods:
ADDING MELTED CHOCOLATE:
Toaddalargeamountofchocolate,meltitpriortoaddingittothebasin.Youcanmeltit
inmicrowaveorinabainmarie.
Chocolatetemperaturemaybeaffectedbytheadditionofchocolateorby
environmentalfactors,suchasoperatingthefountaininacoldarea.Insuchconditions
thefountaintemperaturemayneedtobeadjustedaccordingly.
HELPFUL TIPS
1. Alwaysprovideeachguestwithaplateandskewers.(Guestsshoulduseaseparate
skewerforeachfooditem).Woodenandplasticforkedskewersmaybeordered
onlineatwww.jmposner.co.ukItisalsoagoodideatohaveageneroussupplyof
napkinsavailable.
2. Guestsshouldnever“doubledip”,placingafooditemthathasbeenbittenbackinto
thefondueow.Fooditemshouldonlybedippedinthefondueonce.
3. Cutalldippingitemsintobite-sizepiecessotheycaneasilybeplacedontheskewers.
4. Neverallowwatertocomeintocontactwithchocolateasitcanthickenandruinthe
chocolate.Thisincludeswater-basedavouringsandfoodcolourings.Useoilbased
productsinstead.
5. Keepchocolateinacool,dryplace.Donotfreezeorrefrigerateitasmoisturemay
adverselyaffectthechocolate.
6. Alwaysreducethetemperaturesettingfromthemeltingtemperaturetotheoperating
temperatureoncethechocolateiscompletelymeltedinthebasin.Failuretodoso
maycausethechocolatetoburn.
7. Donoaddmorethanthemaximumamountoffonduechocolatetothefountain
basin.Iftoomuchisadded,itwilloverowthebasinwhenthefountainisturnedoff.
8. Airisoftentrapped,inthecolumnsandatthebottomoftheTopHatwhenthe
fountainisinitiallyturnedon.Thiscancauseunevenchocolateow.Tocorrectthis,

TO CLEAN:
1. Wearingfoodhandlergloves,scrapeexcesschocolatefromthetophatandcupswith
aspatula.Removetophatandcupsandplacethemdirectlyinthesink.
2. Pulloutthecentrecolumn,scrapingtheexcesschocolateoffwithaspatulaorgloved
handasyougosothatitfallsbackintotheBasin.Placethecentrecolumninthesink.
3. Removetheauger,scrapingtheexcesschocolateoff.Placeitdirectlyinthesink.
4. Allremovablefountainpartsaredishwasher-safe.Theymayalsobehand-washed
withwarm,soapywaterandalargesponge.Useadegreasingagentwhenwashing
componentsinthesink.Makesurethechocolateisbrokenupbywarm,soapywater
beforeitgoesdownthedrain.Chocolatepoureddirectlydownthedrainmayharden
inthepipesanddamagethedrainsystem.
5. Twistofftheremovablebasinandpourtheleftoverchocolateintoabag-lined

CHOCOLATE DOES NOT FLOW PROPERLY:
1. Fountainisnotlevel:Thebaseofthefountainmustbelevelinorderforchocolate
toowproperly.Ifthefountainisowingheavilyononeside,raisethatsideofthe
fountainusingtheadjustablefeetuntilitowsevenly.
2. Airbubbles:Airisoftentrappedinsidethecylinderwhenthefountainisinitiallyturned
onorifthechocolatelevelinthebasinbecomestoolow.Thiscausesgapsinthe
chocolateow.Toresolvethis,simplyturnthefountainoff,allowittositfor15-30
seconds,andturnitbackon.Repeatthisprocedureuntilthefountainisowingatfull
capacity.
3. Notenoughchocolate:Refertothe“FOUNTAINCAPACITY”tabletoensurethatyou
aremeetingtheminimumcapacityrequirement.
4. Chocolateistoothick:Chocolatewillnotowcorrectlyifitisatthewrong
temperature.Generally,forDarkchocolate,thetemperatureshouldbeincreased.
ForWhiteandMilkchocolate,thetemperatureshouldbedecreased.Pleasesee

3. LowTemperature:CheckthefountaindisplayifitsaysLT,thismeansthetemperatureof
