Safety instructions
for use
The appliance may only be used to prepare food for domestic purposes.
Overheated fats and oils are inflammable. Therefore never operate app-
liance when unattended.
Frozen foods and foods with a high water content are very likely to spit
fat when fried.
Never use water to extinguish burning fat or oil.
Fires caused by fat should be fought with fire extinguishing agents or
suffocated with a blanket.
Fats with a fire point below 350 °C can be a fire hazard. Animal fats or
oils are not suitable for frying because of their propensity to oxidize ra-
pidly.
When cooking the appliance must be filled with the minimum amount of
oil or fat.
Do not use dirty or old oil as this is easily inflammable and causes the
oil to foam.
Remove oil spits from the floor immediately. Danger of slipping!
Let the top to become cold before closing.
Do not put hot pans on the top.
for cleaning
Switch off the appliance before cleaning.
Parts or accessories that come into contact with foods should be cle-
aned with detergents and then rinsed with clean water.
for installation
Use an effective external all-polo interruption device with a contact gap
of at least 3mm.,i.e.. safety fuse.
The appliance should be installed in such a way that no water can get
into the container.
Connection must be equipped with an earthed shockproof socket of 10A.
for repairs
Repairs may only be performed by authorized personnel.
The appliance must be disconnected completely from the mains when re-
paired.
Following a short-circuit (safety valve released) or after replacing heating
coil, the functions of the appliance must be checked once again.
Before the fryer is used for the
first time
Initial cleaning
Remove all foreign material and packaging.
Before using the fryer for the first time wipe the inside of the fryer and all
accessories with a damp cloth and a little dishwashing liquid. Rinse well
with clean water to remove all detergent, then dry the appliance.

Use of the fryer
Please take note of the safety instructions on page 9.
Your fryer is equipped with a ,,cold zone“ which means that the temperatu-
re beneath the heating coil does not exceed 80 °C.Crumbs that fall into the
fat do not burn and the fat stays clean for longer.
There will be no unhealthy residue in the fryer.
The fat can be used more often than in conventional fryers.
Notes on using the lid
Caution! The lid of the deep-fat fryer is made of glass. If not handled pro-
perly, there is a risk of breakage.
-Make sure that the lid does not fall off.
-Hold the lid with both hands when opening the deep-fat fryer.
-Place the lid in the groove at the back of the fryer container in such a
way that it cannot fall over (see following illustrations) or deposit it in a
safe place.
Turn on fryer and select the temperature
-The temperature selector is used to turn the fryer on and off and to
adjust the required temperature.
The heater control light will light up until the fat has reached its prese-
lected temperature. When fat has reached the preselected temperature,
the light will go out until it has to reheat again.
-When the temperature selector is turned to 0the fryer is turned off.
Attention! When in use the containermust be filled with frying fat. Should this
be neglected the security switch will turn the fryer off immediately (see p. 11 ).
Filling the container with fat
The container and the heating coil must be clean and dry.
-When filling the container with oil the oil level must always be between
the minimum and maximum levels indicated on the inside of the contai-
ner.
-Only use heat resistant vegetable fats or oils for frying.
Melting the fat
-In order to melt the fat gently select a tempe-
rature of 120 °C.
Fat ages more rapidly when molten at a higher
temperature.
-Solid fat should be cut into small cubes before
melting.This prevents fat from spitting.
Frying
Melt the fat before frying.
-Insert the filled frying basket .
Do not overfill the basket as this leads to increa-
sed foaming and disappointing cooking results.
-Select the temperature according to the
food to be cooked (Guidelines see table oppo-
site).
Caution! If frozen foods or foods with a high water content are inserted into
hot fat, the fat may spit or foam heavily.
Never leave the fryer unattended when cooking!
Remove crumbes and roasted particles from the oil this prevents oils from
ageing rapidly.
Turning the fryer off
-Turn the switch to 0.
The heating control light will go out.
The fryer has been turned off.
Caution! The fat in the fryer is still very hot!
Please let the top to become cold before closing.
The handle of the frying basket can be folded back. This will prevent it from
falling into the fat. The container can be covered with the glass lid.
Changing the fat
-Filter and change the fat regularly! The higher the temperature the soo-
ner the fat ages. Change the fat when it is no longer hot!
Very old fat increases fire hazard!
-Clean the container when changing the oil (see. p. 11)
Oil needs changing when:
–the quality of oil deteriorates
–(check the oil after frequent use),
–oil discolours,
–smokes at 170 to 180 °C,
–increased foaming; overused oil foams at length,
–a brown-black varnish-like deposit forms on the inside of the contai-
ner above the fat level.

Guidelines for frying temperatures
The ideal frying temperature is between 140 and 180 °C.If this temperature
is exceeded the quality of the oil deteriorates. If the temperature is too low,
the pores on the outside of the food do not close and the food absorbes
too much fat.
Food Temperature Time
in °C in min.
Chips
blanching
frying
160 – 170
180 – 190
4 – 6
2 – 3
Fish fillets 170 – 180 5 – 7
Meat (e.g Schnitzel,
pork cutlet) 170 – 180 5 – 8
Noisette potatoes 160 – 180 4 – 6
Meatballs 160 – 180 8 – 10
Roasted chicken 160 – 180 12 – 15
Doughnuts 160 – 180 4 – 6
Pineapple fritters,
banana fritters etc. 180 – 190 3 – 5
The shorter cooking times apply to smaller portions and thawed foods whe-
re the oil has reached its preset temperature.
Frozen food needs a longer cooking period.
Safety shut-off switch
The safety shut-off switch is activated when
-the heating coil is turned upwards.
-there is no or not sufficient fat in the container
-the fat exceeds a temperature of 230 °C
Heating coil turned upwards
If the heating coil is turned upwards the heating system is cut off and the
heating control light goes out. When the heating coil is repositioned, the
heating system comes on again.
No or not sufficient fat in the container
The heating system is cut off. It comes on again only when sufficient oil is
filled into container.
Safety temperature limiter
When oil temperature exceeds 230 °C, the safety temperature limiter inter-
rupts the heating process.
Possible causes: not sufficient amount of oil in container. Add more fat.
The safety temperature switch can be repositioned manually after oil has
cooled off after about 5 minutes. The red switch is located underneath the
case (beneath the built-in working surface).
Should this interruption repeat itself:Discontinue use! Appliance must be re-
paired by authorized service personnel!
If the safety temperature switch interrupts the heating process frequently,
the thermostat might be faulty. The appliance must be checked by authori-
zed service personnel.
Cleaning and maintenance
Stainless steel surfaces
Before cleaning the surface with a liquid detergent the fat must have cooled
off!
When cleaning, make sure that no water gets into the container even when
the oil is cold.
Clean stainless steel surfaces with detergents designed for stainless steel
materials.
Lid
Remove glass lid, clean with a damp cloth and a little dishwashing liquid.
Rinse with water and dry.
Container
When cleaning the frying container either melt the oil or let it cool off, as it
should have a temperature of about 10 °C above its melting point.
Caution! The fat might still be hot. Danger of scalding
1. Remove oil from the container completely :
–Take out frying basket
–Fold up the heating coil
–Take out container and pour out the oil.
2. Remove stubborn stains .
3. Clean container with water and dishwashing liquid and rinse thoroughly
with water.
4. Clean container with stainless steel detergents that are commercially
available! Do not use scouring brush or steel wool. Rinse well and dry.
Frying basket
Rinsethe basket regularly with water and clean with a little dishwas-
hing liquid. Never use a harsh scrubbing detergent (frying basket is tin-
coated).Do not clean with a steel brush or steel wool. Rinse thoroughly
with water after using detergents and dry the basket.
Heating coil
Do not damage the thermostat sensor when cleaning the heating coils!.
1. Fillthe emptiedfrying basket with water , and add fat solvent and
bring to boil briefly. Pour out water.
2. For stubborn stains apply fat solvent directly onto the coils and scrub care-
fully with a soft brush.
3. Fill fryer with water and rinse thoroughly.
4. Wipe fryer with a damp cloth and dry it.
We recommend the fat solvent to be a soap sud-based detergent. Please
follow the manufacturer’s instructions!
