The Lakeland Fortis™ is very versatile and makes light work of food preparation. With
attachments for meat mincing, sausage making, and slicing or grating fruit and vegetables. It
also juices soft fruits, and presses biscuits.

SAFETY CAUTIONS
Carefully read all the instructions before using the appliance and keep in a safe place for future reference.
Always follow these safety cautions when using the appliance to avoid personal injury or damage to the
appliance. This appliance should be used only as described in this instruction book.
• Make sure your electricity supply matches the voltage shown on the appliance.
• Ensure all packaging materials and any promotional labels or stickers are removed from the appliance
before the first use.
• Always inspect the appliance before use for noticeable signs of damage. Do not use if damaged or
has been dropped. In the event of damage, or if the appliance develops a fault contact the Lakeland
customer care team on 015394 88100.
• Do not use this appliance if the lead is damaged. If the lead is damaged it must be replaced with a
special lead. Contact the Lakeland customer care team on 015394 88100.
• Always use the appliance on a dry, level, heat resistant surface.
• Unplug from the mains when not in use and before cleaning. Allow to cool before cleaning the
appliance. To disconnect, turn the socket to “off” and remove the plug from the mains socket.
• This appliance is not intended for use by persons (including children) with reduced physical, sensory
or mental capabilities, or lack of experience and knowledge, unless they have been given supervision
or instruction concerning the use of the appliance by a person responsible for their safety.
• Children should always be supervised to ensure they do not play with this product.
• Do not use any accessories or attachments with this appliance other than those recommended by
Lakeland.
• To protect against fire, electric shock or personal injury, do not immerse cord, plug or base unit in
water or other liquids.
• Do not leave the lead hanging over the edge of a kitchen table or worktop. Avoid contact between
the lead and hot surfaces.
• For indoor use only.
• For domestic use only.
• This appliance should be used for preparation of food as described within the instructions for use
that accompany it.
• Always ensure that your hands are dry before removing the plug from the mains socket. Never pull
the plug out of the mains socket by its lead.
• To avoid injury or possible fire, do not cover the appliance when in use.
• Do not connect this appliance to an external timer or remote control system.

• An extension cable may be used with care. The electrical rating of the cable should be at least as
great as the appliance. Do not allow the cable to hang over the edge of the worktop or touch any
hot surfaces.
• This appliance complies with the basic requirements of Directives 04/108/EC (Electromagnetic
Compatibility) and 06/95/EC (Safety of Domestic Electrical Appliances).
• WARNING: a cut off plug inserted into a 13amp socket is a serious safety (shock) hazard. Ensure
the cut off plug is disposed of safely.
• CAUTION: the plastic bags used to wrap this appliance or the packaging may be dangerous.
To avoid risk of suffocation, keep these bags out of reach of babies and children. These bags
are not toys.
• The blade is very sharp; handle with care when handling and cleaning.
• Ensure the appliance is switched off, unplugged and wait until moving parts have stopped running
before attaching or detaching any attachments.
• This appliance is not suitable for processing very hard foods e.g. nuts, ice cubes, coffee beans, hard
spices or for grinding bones.
• Always use the pushers to put food into the Fortis™, never reach into the attachments or machine.
• Never operate the appliance continuously for more than 3 minutes at 350W.
• Never press the reverse button (REV) when the appliance is on. The machine must be stopped,
and then reversed.

ASSEMBLING THE ATTACHMENTS
FOR DIFFERENT FUNCTIONS
MINCING
Use the mincer attachment for meat, fish, onions and making breadcrumbs from fresh and
dried bread.
1. Insert the mincer worm shaft into the mincer attachment,
wider end first.
Slot the blade onto the mincer worm shaft with the sharp
edges of the blade at the front (facing you).
Slot the medium or coarse mincing disc on top of the blade
and worm shaft. The groove on the edge of the mincing
disc will fit into the notch on the mincer attachment.
Screw the mincer locking nut onto the end of the mincer
attachment, to hold everything in place.
2. Attach the mincer attachment to the base unit by placing it
over the lock and turning it anti clockwise. The release/lock
button on the base unit will click outwards to show it has
locked into place.
3. Place the tray on top of the mincer attachment. Place a large
bowl under the mincer for your food.
The Fortis™ is now ready to mince.
Feed food into the top of the mincer, using the pusher.

SAUSAGE MAKING
Meat for sausage making must be minced first.
1. Insert the mincer worm shaft into the mincer attachment,
wider end first.
2. Place the separator on top of the mincer worm shaft,
narrower end first, so the wider lip sits outside the mincer.
The groove on the edge of the separator will fit
into the notch on the mincer attachment.
Place the sausage horn on top of the separator.
Place the mincer locking nut over the sausage horn and
separator, and screw it onto the mincer attachment to hold
everything in place.
3. Attach the mincer attachment to the base unit by placing it
over the lock and turning it anti clockwise. The release/lock
button on the base unit will click outwards to show it has
locked into place.
4. Place the tray on top of the mincer attachment.
The Fortis™ is now ready to make sausages.
Feed your sausage mixture into the top of the sausage
maker using the pusher.

SLICING AND GRATING FRUIT AND VEGETABLES
1. Select the slicer/grater drum you wish to use.
Slot it into the slicer/grater attachment, making sure the cog at
the back of the attachment slots into the drum.
2. Attach the slicer/grater attachment to the base unit by placing
it over the lock and turning it anti clockwise. The release/
lock button on the base unit will click outwards to show it has
locked into place.
3. Place a large bowl under the slicer/grater for your food.
The Fortis™ is now ready to slice and grate. The fine grater/
potato ricer can be used to create creamy mash from
boiled potatoes.
Feed food into the top of the slicer/grater, using the pusher.

PRESSING BISCUITS
1. Insert the mincer worm shaft into the mincer attachment, wider
end first.
Place the separator on top of the mincer worm shaft narrower
end first, so the wider lip sits outside the mincer.
The groove on the edge of the separator will fit into the
notch on the mincer attachment.
2. Place the biscuit ring on top of the separator, with the
slot facing upwards.
The notch on the edge of the biscuit ring will fit into the
groove on the edge of the separator.
3. Place the mincer locking nut over the biscuit ring, and screw it
onto the mincer attachment to hold everything in place.
Attach the mincer attachment to the base unit by placing it
over the lock and turning it anti clockwise. The release/lock
button on the base unit will click outwards to show it has
locked into place.
4. Place the tray on top of the mincer attachment.
Slide in the biscuit press through the slot on the front of the
biscuit ring, selecting the shape you require.
5. Place a large bowl under the mincer for your shaped
biscuit dough.
The Fortis™ is now ready to press biscuits.
Feed your biscuit dough into the top of the biscuit press, using
the pusher.

JUICING SOFT FRUIT
The Fortis™ juices soft fruits, like peeled citrus fruits, grapes and berries. You can also juice tomatoes
and make passata for sauces from the pulp.
1. Insert the juicer worm shaft, narrower cog end first, into the
juicer attachment.
2. Slot the juicer cone over juicer worm shaft inside the
juicer unit.
3. Screw the juicer nozzle onto the juicer ring, and then screw
them onto the juicer attachment to hold everything in place.
5. Place the tray on top of the juicer attachment. Place a
small bowl underneath the hole for liquid, and a larger bowl
underneath the juicer nozzle for pulp.
The Fortis™ is now ready to juice soft fruits.
Feed your soft fruits into the top of the juicer,
using the pusher.
4. Attach the juicer attachment to the lock on the base unit
by placing it over the lock and turning it anti clockwise.
The release/lock button on the base unit will click
outwards to show it has locked into place.

USING THE FORTIS™ FOR THE FIRST TIME
• Remove all of the packaging materials.
• Wash the attachments in hot, soapy water, rinse and dry thoroughly.
• Please take care when handling the blade, as it’s very sharp.
• Never immerse the base unit in water, wipe the outside with a damp cloth.
INSTRUCTIONS FOR USE
• Assemble the attachment for the function you would like to carry out, see ‘ASSEMBLING
THE ATTACHMENTS FOR DIFFERENT FUNCTIONS’.
• Plug the base unit into the socket and switch on, press the on/off button
to start the Fortis™.
• If the ingredients are not moving through the machine easily, press the reverse button for
a couple of seconds and then try again.
• Never press the reverse button (REV) when the appliance is on. The machine must be
stopped, and then reversed.
• To remove your attachment from the base unit, press the release/lock button and twist the
attachment clockwise with your free hand.

HINTS AND TIPS
• Cut the food you are processing into pieces that easily fit into the feeder tube of the
attachment you are using. We recommend 10cm long, 2cm thick pieces.
• Put a small quantity of food into the machine at one time and let it work through, before
adding more.
• This appliance is not suitable for processing very hard foods e.g. nuts, ice cubes, coffee
beans, hard spices or for grinding bones.
• Do not try to process frozen food with the Fortis™.
• Do not force food through the machine.
WHEN MINCING MEAT
• When processing meat, remove any bones, pieces of gristle and sinew.
• Chilled meat which has been refrigerated can help it through the machine more easily but
do not mince frozen meat.
• Put the meat onto the tray. Use the pusher to gently push the meat into the mincer
attachment.
• When mincing several different ingredients at once e.g. onions, meat, bread, herbs; mix
them before mincing. Different textures will help move the food through the machine.
• If mincing a recipe which includes liquid, mix the liquid through the other ingredients first.
The liquid will soften the mixture and help move the food through the machine.
• Stale or dry bread will mince more easily than very fresh bread; you can dry fresh bread in
the oven before mincing.
WHEN MAKING SAUSAGES
• Put the minced meat onto the tray. Use the pusher to gently push the meat into the
mincer attachment.
• Soak your sausage skins in lukewarm water for 10 minutes or according to the instructions
on the packet. Then slide the wet skin onto the sausage horn. Push the minced meat into
the mincer attachment.
• If the skin does not slide onto the sausage horn, add some more water.
• Leave a few centimetres of skin to knot after you have made the sausages. Do not
knot it at the beginning or air will get trapped in the sausages. Twist to form links
between sausages.

RECIPES
All spoon measurements in these recipes use standard metric measuring spoons. For
example 1 tsp. is 5ml, 1 tbsp. is 15ml. We recommend you use a set of measuring spoons
for accuracy.
BEEF BURGER WITH BLUE CHEESE MELTING MIDDLE - makes 12 burgers
Onion 1 large, peeled and cut into 8-12 pieces
Vegetable oil 1 tbsp.
Beef, stewing steak or chuck steak 1 kg
Stout (or stock for an alcohol free version) 5 tbsp.
Brown bread roll 1 roll, broken into pieces
Parsley 4-5 stalks, stalks removed
Salt 1 ½ tsp.
Freshly ground black pepper ½ tsp.
Blue cheese, firm textured 240g
Ingredient Quantity
• Set up the machine to mince, with the coarse mincing disc.
• Mince the onion. Add the oil to a frying pan, and fry the onion for 5-6 minutes until golden.
• Mix the beef and stout or stock together in a bowl. Add the bread, parsley, salt and pepper. Gently
feed small quantities through the machine.
• Cut the cheese into 20g pieces.
• Divide the beef mixture roughly into 12. Take one portion, place a piece of the cheese in the centre
and shape the meat around it to form a burger shape, making sure the cheese is completely
encased. Repeat to make all the burgers.
• Refrigerate the burgers for 15 minutes, then grill, fry or barbecue over a medium heat until cooked.

Bramley apples 300g (about 2 apples), peeled, cored and cut
in chunks
Spring onions 4, root removed, cut in pieces
Pork shoulder or belly 1 kg
Brown bread 100g, cut into pieces
Fresh sage 6-8 leaves, stalks removed
Salt 1 tsp.
Freshly ground black pepper ¾ tsp.
Sausage skins
Ingredient Quantity
• Soak the sausage skins in luke warm water, according to their instructions.
• Set up the machine to mince, with the medium mincing disc. Combine all the other ingredients and
gently feed small quantities through the machine.
• Next, set up the machine to make sausages.
• Place the sausage skin on the sausage horn and then gradually feed the minced mixture into the
machine and begin to form your sausages.
• Leave a few centimetres of skin to knot after you have made the sausages. Do not knot it at the
beginning or air will be trapped in the sausages. Twist to form links between sausages. Refrigerate
until required.
• Cook by grilling or barbecuing or add into casseroles and other dishes.
PORK, SAGE AND APPLE SAUSAGES - makes 16, using medium sized skins.

Outer leaves of a Savoy cabbage 5, centre stalk removed, washed and rolled up
Red cabbage ¼ of a medium sized, cut into chunks,
stalk removed
Mint leaves 8-10
Fresh coriander small bunch, stalks removed
Mango 1, firm, skin and stone removed, cut into pieces
Pecan nuts 100g
Salt and freshly ground black pepper to taste
Ingredient Quantity
WINTER SALAD - serves 4-6, as an accompaniment.
Honey 1 tsp.
Lime ½, juice and zest
Dried chilli flakes small pinch
Sesame oil or nut oil 1 tbsp.
• Set up the machine to slice/grate, with the slicer attachment.
• Feed in the savoy cabbage, red cabbage, mint leaves and coriander.
• Stop the machine. Change over to the coarse grater, feed in the mango with the pusher.
• Add the nuts into the bowl of sliced/grated ingredients.
• Combine the dressing ingredients and add to the prepared ingredients, mix well.
• Taste and season with salt and pepper.
For the dressing:

Unsalted butter 175g, softened
Caster sugar 200g
Egg 1
Vanilla extract or vanilla bean paste ½ tsp.
Baking powder 1 tsp.
Plain flour 325g
Salt Pinch of
Icing sugar 25g, to dust biscuits
Ingredient Quantity
VANILLA BISCUITS - makes around 80 small biscuits
• Preheat your oven to 180ºC or gas mark 4.
• Cream together the butter and sugar until it is it is a pale colour, using a food mixer, electric hand
mixer or in a bowl with a wooden spoon.
• Add the egg and the vanilla. Then stir in all the dry ingredients, a few spoonfuls at a time until you
make smooth, stiff dough.
• Set up the machine to press biscuits, with the biscuit press attachment, selecting the shape
you require.
• Put the biscuit mix onto the tray and use the feeder to load it into the nozzle.
• Gently feed small quantities through the machine.
• Switch on the machine and use one hand to push the dough through the machine with the pusher,
use the other hand to catch the pressed mix.
• When you have about 30cm of mix, switch off the machine and cut the mix away from the
biscuit press.
• Slice the mix creating small biscuits.
• Lay the biscuits on non-stick baking sheets with a few centimetres of space between them.
• Bake for 8-10 minutes, until they start to brown at the edges. Remove from the oven and allow to cool
a little, before placing them on a cooling rack until completely cooled.
• Dust with sieved icing sugar.
For chocolate biscuits replace 50g of the flour with cocoa powder.
You can also remove the vanilla and add other flavourings, for example almond essence, rose water or
orange flower water to make lovely biscuits to accompany desserts.

TROUBLESHOOTING
The following are some common problems that can occur when using the Fortis™. Please
review the problems, their possible cause and any corrective action that should be taken to
ensure successful mincing, grating and slicing.

The mincer attachment is
moving about, and does not
feel secure.
The mincer attachment is not
properly locked in place.
Attach the mincer unit to the
lock on the base unit. Turning
it anti clockwise until the lock

I cannot get food to feed down
the nozzle.
The pieces of food are
too large.
Switch the machine off.
Remove any food from the
nozzle. Cut the food into
smaller pieces and feed them
through the machine again.
The slicer or grater discs are
rattling when in use.
The slicer/grater discs are not
properly fitted into the grater
unit.
Make sure the hole at the back
of the slicer or grater disc is
slotted into the cog on the
back of the attachment.
Meat is not coming out of the
mincer attachment.
Meat is stuck in the mincer
worm shaft.
Press the reverse button for
1-2 seconds to dislodge the
meat, and continue use.
Sausage meat is coming out of
the sides of the sausage horn.
The sausage ring is not
securely in place.
Switch the machine off,
undo the mincer ring and
reattach the sausage horn
to the machine, making sure
everything is securely in place.

CARE AND CLEANING
• Switch off and unplug the machine before cleaning.
• Before the first use and after every use, wash all the attachments in hot, soapy water, rinse and dry
thoroughly.
• Check all parts before reassembly.
• Always use plastic, nylon, wooden or silicone tools. Metal tools will damage non-stick coatings.
• Never immerse the base unit in water or any other liquid.
• To clean the base unit, wipe with a clean damp cloth and dry before storing.
• Do not use abrasive cleaners, steel wool or abrasive materials.
• None of the attachments are dishwasher safe.
• To keep the mincing discs, blade and mincer attachment in peak condition, rub a little vegetable oil
over them with kitchen towel.
• Store the machine with the cord loosely coiled. Never wrap it tightly around the base unit.
