Assoon asthe bread makerisplugged the powersupplyabeepwill be

heardand “3:00”appearsinthe displayafterashorttime.Butthe two
dotsbetween the “3”and “00”don’tflashconstantly.Thearrowpointsto
2.0LBandMEDIUM. It isthe default setting.
START/ STOP
Forstartingand stoppingthe selected bakingprogram.
Tostartaprogram,press the “START/STOP”button once.Ashortbeep
willbeheardand the twodotsinthe timedisplaybegintoflashand the
programstarts.Anyotherbutton isinactivated exceptthe
“START/STOP”buttonafteraprogramhasbegun.
Tostoptheprogram,press the “START/STOP”button forapprox.3
secondsuntil abeepconfirmsthatthe programhasbeen switched off.
Thisfeaturewill helptopreventanyunintentionaldisruption tothe
operation ofprogram.
MENU
It isused tosetdifferentprograms.Eachtimeitispressed
(accompanied byashortbeep)thatthe programwill vary.Press the
button continuouslythe 12 menuswill becycled toshowon theLCD
display.Selectyourdesiredprogram.The functionsof 12 menuswillbe
explained below.
1.Basic:kneading,riseand bakingnormalbread.Youmayalsoadd
ingredientstoadd flavor.
2.French:kneading,riseand bakingwithalongerrisetime.The bread
baked inthismenu usuallywillhaveacrispercrust and light texture.
3.Wholewheat: kneading,riseandbakingof wholewheatbread.This
settinghaslongerpreheattimetoallowthe graintosoakupthe
waterand expand.It isnotadvised tousethe delayfunction asthis
can producepoorresults.
4.Quick:kneading,riseand bakingloafwithbakingsoda orbaking
powder.Bread baked on thissettingisusuallysmallerwithadense
texture.
5.Sweet: kneading,riseand bakingthe sweatbread.Forbakingthe
crispand sweetbread.
6.Ultrafast-I: kneading,riseand baking1.5LBloafinashortesttime.
Usuallythe breadmade issmallerand rougherthanthatmade with
Quick program.
7.Ultrafast-II: the sameasabove, but applicablefor2.0LBloaf.
8.Dough:kneadingandrise,butwithoutbaking.Removethe dough
and shapingit tomakebread rolls, pizza, steamed bread, etc.
9.Jam:boilingjamsand marmalades.

Withthe buttonyoucanselectaLIGHT, MEDIUMorDARKcolorforthe

Press thisbutton toselectthe Loafsizeofthe bread.Pleasenotethe
totaloperation timemayvarywiththe different loafsize.
DELAY(TIME+orTIME-)
Ifyou wantthe appliancedo notstartworkingimmediatelyyou canuse
thisbutton toset the delaytime.
Youmustdecidehowlongitwill bebeforeyourbread isreadyby
pressingthe “TIME+ ”or “TIME- ”.Pleasenotethedelaytimeshould
include the bakingtimeofprogram.Thatis,atthe completion ofdelay
time, thereishotbread can beserviced. At first the programand degree
ofbrowningmustbeselected,thenpressing “TIME+”or “TIME-”to
increaseordecreasethedelaytimeat the increment of10 minutes. The
maximumdelayis13 hours.
Example:Nowitis8:30p.m,ifyou wouldlikeyourbread tobereadyin
the nextmorningat7o’clock,i.e.in10hoursand30 minutes.Select
yourmenu,color,loafsizethen press the TIME+orTIME-toadd the
timeuntil 10:30 appearson the LCD.Then press the STOP/START
button toactivatethisdelayprogram.Youcanseethe dotflashed and
LCD willcountdowntoshowthe remainingtime.Youwill getfreshbread
at7:00 inthemorning,IfYoudon’twanttotakeoutthe bread
immediately, the keepingwarmtimeof1hourstarts.
Note:Fortimedelayedbaking,do notuseanyeasilyperishable
ingredientssuchaseggs, freshmilk,fruits, onions, etc.
KEEPWARM
Bread canbeautomaticallykeptwarmfor60 minutesafterbaking.Ifyou
wouldliketotakethebread out, switchtheprogramoffwiththe
START/STOPbutton.
MEMORY
Ifthe powersupplyhasbeen broken offduringthe courseofbread
making,the process ofbread makingwill becontinuedautomatically
within15minutes,even withoutpressingStart/stopbutton.Ifthebreak
timeexceeds15 minutesthe memorycannotbekeptand the bread

makermustberestarted,Butifthe doughisno furtherthan the kneading
phasewhen thepowersupplybreaks off,youcanpress the
“START/STOP”straight tocontinuetheprogramfromthe beginning.
ENVIRONMENT
Themachine mayworkwell inawide rangeoftemperatures,butthere
couldbeadifferenceinloaf sizebetween averywarmroomand avery
coldroom. Wesuggestthe roomtemperatureshouldbebetween 15
and 34.
WARNING DISPLAY:
1、Ifthe displayshows “H:HH”afteryouhavepressed START/STOP
button,(see belowfigure1)the temperatureinside isstill too high.
Thentheprogramhastobestopped.Open thelidandletthemachine
cooldownfor10 to20minutes.
2、Ifthe displayshows “E:EE”afteryou havepressed START/STOP
button,(see belowfigure2)the temperaturesensorisdisconnected
pleasecheck the sensorcarefullybyAuthorized expert.

Forthe first use
The appliancemayemitalittlesmokeand acharacteristicsmell when
youturniton forthe firsttime.Thisisnormaland willsoon stop.Make
surethe appliancehassufficient ventilation.
1.Pleasecheck ifall partsand accessoriesarecompleteandfree of
damage.
2.Clean all the partsaccordingtothe lattersection “Cleaningand
Maintenance”
3.Setthe bread makerinbakingmode and bakeemptyforabout10
minutes.Aftercoolingit downclean oncemore.
4.Dryall partsthoroughlyandassemblythem,sothe applianceis
readyforusing.
Howtomakebread
1.Placethe pan inposition, and then turnit clockwiseuntil theyclick in
correctposition.Fixthe kneadingblade ontothe driveshafts.Turn
the kneadersclockwiseuntil theyclick intoplace. It isrecommended

tofill holeswithheat-resistingmargarine priortoplacingthe
kneaders, thisavoidsthedoughtostick belowthe kneadersandthe
kneaderscouldberemoved frombread easily.
2.Placeingredientsintothe breadpan.Usuallythe waterorliquid
substanceshouldbeputfirstly,thenaddsugar,saltand flour,always
add yeastorbakingpowderasthe lastingredient. Incaseofheavy
doughwithhighRyeorwholemealportion weadvisetoreversethe
orderofingredients.i.e.tofill infirstthe dryyeastand flour,and
finallythe liquidtoget abetterkneadingresult.
3.Withfingermakeasmall indentation on oneside ofthe flour.Add
yeasttoindentation,Makesureitdoesnotcomeintocontactwith
the liquidingredientsorsalt.
4.Closethe lidgentlyandplugthe powercordintoawall outlet.
5.Press the Menubutton until yourdesired programisselected.
6.Press the COLORbutton toselectthe desired crustcolor.
7.Press the LOAFSIZEbutton toselectthedesiredsize(1.5LBor
2.0LB).
8.Set the delaytimebypressingTime+orTime-button.Thisstepmay
beskipped ifyouwantthebread makertostartworkingimmediately.
9.Press the START/STOPbuttontostart working.
10.Forthe programofBASIC,FRENCH,WHOLEWHITEBREAD,
SWEET,SANDWICH,alongbeepsoundwill be heardduring
operation.Thisistopromptyou toaddingredients.Open the Lidand
put insomeingredients. It ispossiblethat steamwill escapethrough
the vent slitsinthelidduringbaking.Thisisnormal.
11.Oncetheprocess hasbeen completed 10 beepssound will beheard.
Youcanpress START/STOPbuttonforapprox.3-5secondstostop
the process and takeoutthe bread.Open the Lidand whileusing
oven mitts,firmlygraspthe breadpanhandle.Turnthepan
anti-clockwiseand gentlypull the panstraightupand outofthe
machine.
12.Usenon-stick spatulatogentlyloosen the sidesofthe bread from
the pan.
Caution: the Bread panandbread maybeveryhot!Alwayshandlewith
careand useoven mitts.
13.Turnbread pan upside downontoaclean cooking surfaceand
gentlyshakeuntil bread fallsout ontorack.
14.Removethe bread carefullyfromthe pan and coolforabout20
minutesbeforeslicing.
15.Ifyouareoutoftheroomorhavenotpressed START/STOPbutton
attheendofoperation,the bread will bekeptwarmautomatically
for1hourandthenstopfurtherkeepingwarm.

16.When do notuseorcompletelyoperation, unplugthe powercord.
Note:Beforeslicingthe loaf,usethe hooktoremoveoutthe Kneading
blade hiddenonthebottomofloaf.The loafishot, neverusethe hand to
removethe kneadingblade.
Specialintroduction
1. ForQuick breads
Quick breadsaremade withbakingpowderandbakingsoda that
activated bymoistureand heat. Forperfect quickbreads, it issuggested
thatall liquidsbeplaced inthe bottomofthe bread pan,dryingredients
on top.Duringthe initialmixingofquick breadbattersand dry
ingredientsmaycollect inthecornersofthepan,itmaybenecessaryto
helpmachine mixtoavoidflourclumps. Ifso, usearubberspatula.
2.About Ultrafast program
The bread makercan bakeloafwithin1hourwithultrafastprogram.
These2settingscan bakebread in58 minutes,the bread isalittlemore
denseintexture.UltrafastIisforbaking1.5LBbread whileUltrafastII
isfor2.0LB.Pleasenoted ingredientof watershouldbehot waterinthe
rangeof48—50,you mustuseacookingthermometertomeasurethe
temperature.The watertemperatureisverycriticaltothe performanceof
baking.Ifthe watertemperatureistoolowthe breadwill notberiseto
expected size;ifthewatertemperatureistoohighitwillkill the yeast
priortorising,whichalsowilllargelyaffect the bakingperformance.
Cleaningand Maintenance
Disconnectthemachine fromthe powerand letitcooldownpriorto
cleaning.
1. Breadpan: Rubinside andoutsidewithadampcloth. Donot useany
sharporabrasiveagentsforthe consideration ofprotectingthe
non-stick coating.Thepan must bedried completelypriortoinstalling.
2.Kneadingblade:Ifthekneadingbarisdifficulttoremovefromthe axle,
Insuchaneventfill the Containerwithwarmwaterand allowittosoak
forapprox.30minutes.The kneadercan then beeasilyremoved for
cleaning.Alsowipethe blade carefullywithacotton dampcloth;
Pleasenoteboththebread pan andkneadingblade aredishwashing
safecomponents.
4.lidandwindow:clean thelidinsideandoutsidewithaslightlydamp
cloth.
5.Housing:gentlywipethe outersurfaceofhousingwithawetcloth.
Donotuseanyabrasivecleanertoclean asthiswoulddegradethe
highpolishofthe surface.Neverimmersethe housingintowaterfor

cleaning.
6.Beforethe bread makerispacked awayforstorage,ensurethatit
hascompletelycooleddown, isclean and dry,and thelidisclosed.
Introductionofbread ingredients
1. Breadflour
Bread flourhashighcontentofhighgluten (soitcan bealsocalled
high-gluten flourwhichcontainshighprotein),ithasgood elastic
and can keepthe sizeofthe bread fromsunken afterrising.Asthe
gluten contentishigherthanthecommon floursoitcanbeusedfor
makingbread withlargesizeand betterinnerfiber.Bread flouristhe
most important ingredientsofmakingbread.
2. Plainflour
Plainflourismade bymixingwell-chosen soft and hardwheatand
applicableformakingexpress bread orcakes.
3.Wholewheat flour
Wholewheat flourismade bygrindingwholewheat, it containswheat
skinand gluten wholewheatflourisheavierand morenutrientthan
common flour.The bread made bywholewheatflourisusuallysmall
insize.Somanyrecipesusuallycombine the wholewheatflourand
bread flourtoachievebest results.
4. Black wheat flour
Black wheatflour,alsonamed by“roughflour”,isakind ofhighfiber
flourthatissimilartowholewheatflour.Toobtainthe largesize
afterrisingitmustbeused incombination withhighproportion of
bread flour.
5. Cakepowder
Cakepowderismade bygrinding soft wheatorlowproteinwheat,
whichisspeciallyused formaking cakes.Differentflourseemstobe
alike,Actuallyyeastperformanceorabsorbabilityofvariousflour
differslargelyforgrowing areas,growthreasons,grinding process
and storagelife.Youmaychooseflourwithdifferent trademarktotest,
tasteand compareinlocalmarket, and selectthe one whichcould
producethe best result accordingtoyourownexperiencesand taste.
6. Cornflourand oatmealflour
Cornflourand oatflouraremade bygrinding cornand oatmeal
respectively;theybotharetheadditiveingredientsofmakingrough
bread, whichareused forenhancingtheflavorand texture.
7. Sugar
Sugarisveryimportantingredienttoaddsweettasteandcolorof
bread.Whileithelpstoyeastbread asnourishment. whitesugaris
largelyused.Brownsugar,powdersugarorcotton sugarmaybe
called byspecialrequirements.

8. Yeast
Yeast passesdoughyyeastingprocess, then producescarbon dioxide,

Thewaysdescribed belowwill check whetheryouryeastisfreshand
activeornot.
(1)pour1/2cupwarmwater(45-50ºC)intoameasuringcup
(2)Put1tsp.whitesugarintothe cupand stir,then sprinkle2tsp.yeast
overthe water.
(3)Placethe measuringcupinawarmplaceforabout10min.Donot
stirthe water.
(4)Thefrothwill beupto1cup.Otherwisethe yeastisdead or
inactive.
9. Salt
Saltisnecessarytoimprovebread flavorand crustcolor.Butsaltcan
alsorestrainyeastfromrising.Neverusetoo muchsaltinarecipe.if
youdon't want tousesalt, omit it. And bread wouldbe largerifwithout
salt.
10. Egg
Eggscan improvebread texture,makethe bread morenourishand
largerinsize,add specialegg flavortobread. when usingit must be
peeled andstirred evenly.
11. Grease, butterandvegetableoil
Greasecan makebread besoft and delaystoragelife.Buttershould
bemelted orchopped tosmallparticlesprioruse,soastobestir
evenlywhen you takeitout fromrefrigerator.
12. Bakingpowder
BakingpowdermainlyisusedtorisetheUltraFastbread andcake.
Asit do not need risetimeand producegaswhichwill formbubbleor
soften thetextureofbread utilizingchemicalprinciple.

bakingpowder.

watertemperaturebetween 20 and25isthe most proper. But
the watertemperatureshouldbewithin45-50 forachieving rising
speed formakeUltraFastbread.The watermaybereplaced by
