Important Safeguards
When using electrical appliances, always follow basic safety precautions, including
the following:
1. Read all instructions before operating the device.
2. Do not touch hot surfaces.
3. To protect against risk of electrical shock, do not immerse the power cord or plugs
in any liquid. Also, do not fill the water level past the maximum fill line. Do not
immerse the upper section of the machine in water or other liquid.
4. Never operate the machine without the back cover and impeller cover securely
attached and the machine clamped to a sturdy surface, like a stockpot.
5. Adult supervision is required if the machine is operated by children.
6. Unplug the Sansaire from the power outlet when not in use and before cleaning.
Allow the machine to cool before opening compartments for cleaning.
7. Avoid contact with moving parts.
8. Clean hot surfaces with caution. If a wet sponge or cloth is used on hot surfaces, be
careful to avoid steam burns. Some cleaners can produce noxious fumes if applied
to hot surfaces.
9. Do not operate any appliance with a damaged cord or plug, or after the appliance
malfunctions, or is dropped or damaged in any manner.
10.Do not place on or near a hot gas or electric burner, or in a heated oven.
11.Extreme caution must be used when moving an appliance containing hot water.
12.Always attach plug to appliance first, then plug cord into the wall outlet. To
disconnect, power the unit off, and then remove plug from wall outlet.
13.If necessary, return the appliance to the nearest authorized service facility for
examination, repair, or electrical or mechanical adjustment.
14.The use of attachments not recommended or sold by the manufacturer may cause
fire, electric shock, or injury.
15.Do not use outdoors.
16.Do not permanently mount to any surface.
17.Do not let cord hang over edge of table or counter.
18.Only use this appliance for its intended use.
19.Household use only.
20.Any other service should be performed by an authorized service representative.

Cooking Sous Vide
The Sansaire™ Immersion Circulator is designed for sous vide cooking. High-end
restaurants have been cooking sous vide for years. You are about to see how easy it is
to achieve perfectly cooked proteins and vegetables every time. It works like this:
1. Preheat your water bath to the desired cooking temperature by adjusting the
temperature ring on your Sansaire™ Immersion Circulator.
2. Seal the ingredients you wish to cook in a plastic bag. You may also place your
ingredients in a canning jar filled with a neutral-flavored oil, and sealed tightly.
3. Submerge the bagged food or canning jar in the water bath and let it cook until
the thickest part of the food has reached its target temperature. Consult sous vide
recipes for suggested times and temperatures for common foods.
4. If desired, give your food a quick sear with a blowtorch on a hot skillet or, and it’s
ready to serve!
Unlike cooking on a stove or in the oven, the temperatures used in sous vide cooking
are relatively low (well below boiling temperatures). By setting the right temperature for
your ingredients, your food won’t overcook if you leave it in the water bath – it can’t get
hotter than the temperature you set!

Setup
1. Pick a container large enough to hold your food, and with plenty of room for water
to circulate. We recommend a polycarbonate food storage container, or a large
metal pot. Avoid plastic containers made with BPAs or PVC materials.
2. Attach the Sansaire™ Immersion Circulator to the side of the container using the
clamp. Add water until the level is above the minimum fill line on the Sansaire, but
below the maximum fill line. Remember that the water level will rise when you add
your food.
3. Plug in the Sansaire.
4. Press the power button on the top of the unit. This turns on the display and
makes the circulator heat the water to the set target temperature. Set the target
temperature of the water bath by turning the silver temperature ring above the
display. The Sansaire automatically keeps the water at the target temperature until
you turn it off. Your water bath is now ready for cooking!

7. Pump Outlet: The circulator moves water through
the pump outlet to keep the water bath at an even
temperature.

1. Temperature Ring: Turning the ring sets the target
temperature of your water bath.
2. Target Temperature Button: Used to show
temporarily the target temperature on the display.
3. Power Button: Used to turn the circulator on
and off. When on, heating and circulating begins
immediately.
4. C/F Button: Switches between Celsius and
Fahrenheit units on the display.
5. Display: During normal operation, the display
shows the current temperature of the water bath.
When you turn the temperature ring, the display
temporarily shows target temperature.
6. Minimum Fill/Maximum Fill: These lines indicate
the minimum and maximum fill levels for the water
bath. Never operate the Sansaire if the water level
is outside of these boundaries, as it may cause
damage to the unit.

WATER BATHS
The Sansaire is designed to attach to many
shapes and sizes of baths. When in use, the
circulator needs to be securely clamped to
the wall of the container. This prevents the
machine from accidental water exposure.
RESETTING
The Sansaire™ Immersion Circulator has a
safety mechanism in case the water level
becomes too low and the heating elements
begin to overheat. This usually happens if the machine is turned on for an extended
period outside a water bath or if the water level becomes too low. If this happens, the
display reads “LOW WATER”. Let the heating element cool, and press the reset button
on the back of the circulator all the way in until it clicks to return normal functionality.
Operation
USER INTERFACE
During regular operation, the primary user interface includes the power button to turn
the machine on and off and the temperature ring to change the target temperature.
The display, by default, shows the current temperature of the water. However, when
the temperature ring is turned or the power is turned on, the display turns to showing
the target temperature. Typical cooking temperatures range from 40°C (~105°F) to
85°C (185°F).
To view the target temperature at any point, press the target temperature button.
The display can be set to show temperature in Celsius or Fahrenheit by pressing the
C/F button.

REMOVING THE BACK COVER
The circulator has a back cover that detaches for cleaning. It should only be detached
when the circulator is off and unplugged; it should never be detached during use.
To open: Detach the clamp, push down on the tab at the top of the back cover, and pull
the back cover down and away.
To close: Push the back cover against the back of the Sansaire until the tab at the top
snaps closed. Reattach the clamp.
CLAMP POSITION
The clamp on the back of the Sansaire Immersion Circulator has two different
configurations. In most cases the clamp should attach to the machine on the inner
hooks, but if the container wall is thicker, you can move the clamp to the outer hooks.
To move the clamp position, press the clamp toward the center of the circulator and pull
down gently. Once the clamp is off the axle, align the axle with the desired hook and pull
up gently. The clamp can be completely detached for cleaning. However, the circulator
should never operate without the clamp attached to the machine and secured to the
container.

Maintenance
CLEANING
In the course of normal use, food particles and minerals from the water bath may
collect on the Sansaire Immersion Circulator. We recommend regular cleaning of the
housing, impeller, and heating coils.
1. Power off, unplug, and remove the Sansaire from the water bath. If the unit is hot,
wait for it to cool down before proceeding.
2. Remove the power cord from the back of the unit.
3. Remove the clamp from the back of the unit.
4. Remove the back cover. NOTE: The upper section of the Sansaire contains sensitive
electronics and should never come in contact with water.
5. To remove the impeller cover, twist it clockwise.
6. Pull the impeller cover down to remove.
7. While holding the unit upright, rinse under running water to remove food particles.
8. If necessary, scrub the unit gently with a sponge or brush and a drop of dish-
washing liquid. Rinse the unit thoroughly, ensuring that water does not enter the
upper section.
9. Reinstall the impeller cover, and twist it until it is aligned with the pump outlet
opening. Reinstall the back cover and clamp.

DECALCIFYING
After extended use, the water may deposit calcium onto the heating coils. To clean, add
a decalcifying agent, such as CLR, to your water bath, following the dilution instructions
provided by the manufacturer. Set the temperature of your water bath to 25°C / 77 °F,
and allow the unit to run for 10 minutes. Power off, unplug, and remove the Sansaire™
Immersion Circulator from the water bath and continue cleaning per the instructions
above. Discard the water in the bath, and thoroughly clean the container and any other
materials in contact with the bath.
WARNING: Do not add food (bagged or otherwise) to the water bath while cleaning, and
ensure that the bath water has been replaced with fresh water before cooking.
STORAGE
You may choose to leave the Sansaire clamped to the water bath when not in use, but
it should be unplugged from the power source. However, should you need to store your
circulator, wipe the unit dry using a cloth or paper towel prior to putting it away.
TEMPERATURE CALIBRATION
Your Sansaire™ Immersion Circulator is factory-calibrated, but also allows for a manual
temperature offset. You may adjust the temperature reading by performing the
following steps:
1. Prepare a water bath at or around a normal cooking temperature (eg., 50.0°C).
2. Measure the temperature of the water bath with an accurate digital thermometer.
Note the difference between the Sansaire temperature reading and the reading
from your thermometer.
3. With the unit running, hold down the C/F button for a few seconds. The display will
show the current offset temperature.
4. Turn the temperature ring to adjust the offset value. For example, setting the offset
value to 1.5°C increases the temperature reading by 1.5 degrees.
NOTE: Most kitchen thermometers are less accurate than the Sansaire. For recalibrating, we
recommend using a professional reference thermometer, such as those sold by ThermoWorks
(ThermoWorks.com).
