any case, when using the controls, the display remains lit
and the keys active, but with this function activated, if a key is not activated after about
2 minutes, the back-lighting of the display and of the keys switches off. This function
allows keeping or not the lighting of the display for aesthetical purposes and, in case of
display off, allows a small energy saving.
To return to main menu act on key .
□Stand-by
The screen in stand-by allows the display only of date and time. Every time a program
ends or during scrolling of the menus, if not acting on the control keys for a few
minutes, the display will automatically switch to stand-by mode. In case back-lighting is
activated, it will position on the lowest level, regardless of that set. This contributes to
reducing electric energy consumption in stand-by.
□Oven light
The internal light can be controlled by an appropriate key ( or , depending on
the models). It automatically switches off if no control is activated within a few minutes.
This avoids an unnecessary energy consumption. However, it is possible, at any
moment, to switch-on the oven light, again by acting on the arranged keys
In the arranged models, if the light is off, upon opening of the door this switches on
again.
□Safety lock
After having started any program, it is possible to engage/disengage the safety lock,
useful against accidental operations, by simultaneously pressing the keys
and +
++
+or only , depending on the model. The key symbol will appear on the
display during lock phase. Act in the same way to release the controls.
When this function is activated it avoids children or other persons accidentally pressing
keys, thus amending the previously executed program.
Every acoustic signal intervening during oven functioning when this safety lock is
engaged, can be eliminated by pressing any one of the lit keys. The safety lock will
remain active.
□Safety for maximum functioning duration
A safety system is envisioned in case the oven has been forgotten on. Depending on the
temperature of use, the oven remains on for a maximum period of time. The safety
values set are:
temperature switch-off after
250°C 3 hours
from 200 to 245°C 5 hours
from 120 to 195°C 8 hours
less than 120°C 11 hours

□No current
In case of mains current interruption, depending on the duration of the interruption, the
oven maintains the set data as follows:
Power supply interruption <15 minutes:
all data is kept in the memory in case of automatic cooking or with pre-set time, the
cooking end is delayed for a time equal to the lacking of current
Power supply interruption >15 minutes < 24h:
date and time are kept in the memory but all other data is lost
Power supply interruption >24h:
all set data is reset, date and time updating is necessary
■
Manual use of the oven

Functions of the manual cooking
□Defrosting and Rising
This function can be used for defrosting and/or drying food to be cooked only with the
moving of air that circulates at the temperature of 25°C. This allows defrosting the dish
without modifying its taste or aspect.
Fast defrosting: again, with the aid of ventilation, just adjust the temperature from 35°C
to 60°C, in this way enabling a soft temperature increase inside the oven.
Rising: at the temperature of 30°C the internal fan does not activate, in this way creating
the ideal environment for making bread or other rise.
□Food warmer
By engaging this function, the temperature is constantly maintained at 80°C, very useful
for heating and maintaining already cooked, but cold, dishes, at temperature.
□Static traditional cooking
With the simultaneous distribution of heat coming from the bottom and from the top,
this function allows cooking dishes requiring slow cooking with constant addition of
liquids. Ideal for any type of roast, bread, cakes and biscuits in general. Use only one
shelf with this type of cooking to avoid incorrect temperature distribution.
□Upper cooking
The upper electric resistance activates with this function. This intense heat sent out from
the top is optimal for perfecting cooking of dishes already cooked in the centre but
requiring further cooking on the surface
□Lower cooking
In this case, the lower heating element starts working. On the contrary to upper cooking,
this function is recommended for perfecting cooking of dishes are already cooked on the
surface but require further cooking in the centre. This intense heat from the bottom is
also optimal for roasting not particularly tender meats.
□Intensive cooking
The activation of the upper and lower heating elements, together with the functioning of
the fan, allows even distribution of the intense heat produced. The hot air circulating
inside the oven, evenly cooks and browns even dishes on more levels and different
between them, but requiring similar temperatures. In meat roasts the optimisation of heat
distribution allows cooking at lower temperatures reducing the dispersion of sauces.
This helps keep the meats more tender and reduce the drop of weight.

9880022800-EN-011210.doc
11
EN
□Ventilated cooking
This type of cooking is indicated for dishes arranged on more shelves, also different
between them, without the smells mixing. The even circulation of the hot air allows low
and even cooking.
□Electric grill
In this selection only the internal part of the electric resistance positioned on the upper
part of the oven functions. The feature of the Grill to send out intense heat allows using
the oven to grill and roast. The immediate browning of meats prevents the leaking of
liquids, keeping them tender. For this type of cooking it is necessary to keep the door
open. With this function, in models where arranged, it is possible to use the spit. Refer
to paragraph “Use of the Grill”.
□Ventilated electric grill
This function allows softer grilling thanks to the use of forced air. The forced circulation
of air inside the oven increases heat penetration in the food and prevents them burning
on the surface. For this type of cooking it is necessary to keep the door open. Refer to
paragraph “Use of the Grill”.
□Spit
In models where arranged it is possible to use the spit. The spit coupling is positioned on
the right wall of the oven and its functioning is automatically had during all functions
even if the symbol is not present. To use it act as follows. Introduce the dish fixed with
the appropriate fork hooks in the spit rod and place everything in the spit stand
previously arranged in its housing on the drip tray. The grip of the spit, made of
insulating material, must only be used to remove the spit rod from the oven and must be
removed during cooking.

Programmed cooking
■
Programming of cooking duration - immediate start.
This function allows establishing the cooking duration by programming the oven switch-
off upon expiring of the time. All programs (except "Defrosting" and "Food warmer")
envision a pre-heating phase (separate from cooking phase) for reaching the set
temperature. A buzzer and the writing "Insert dish" will warn you when this happens.
This enables (it is recommended) to insert the dishes when the oven is already hot (see
"Pre-heating" paragraph").
Once the function and the wanted temperature are chosen in "Manual Cooking", the
writing "Unlimited time" appears on the screen. Wanting to program the cooking
duration, act on keys +
+ +
+ and --
----
--
to define the wanted time. Confirming with
the duration and cooking end appear on the display. Once the time expires cooking
stops and a buzzer starts. To stop the buzzer act on key .
NOTE: regardless of the function set by you, during pre-heating the display will show
the function icon "Ventilated cooking" . This means the oven is using the quickest
system for reaching temperature. The previously chosen function will then activate in
the cooking phase.
Attention: The program for temperatures from 100°C upwards, will always
perform a pre-heating, also in manual functioning
□
Pre-heating
In all functions, in manual cooking and in guided cooking, pre-heating always happens
with the quickest function (Ventilated cooking )
Once cooking is started, the display will indicate "Pre-heating" for temperatures from
100°C upwards. This means the program is bringing the oven temperature to the set
value. Once temperature is reached, a buzzer and graphic message will warn it is
possible to "Insert the dish". Therefore, insert the dish inside the oven and press the key
. If there is no intervention, the "Insert dish" warning will remain active for about 5
minutes, during which time the oven will maintain the temperature constant. After such
time, the "Cooking" will automatically activate.
■
Programming of cooking duration - programmed start
After having chosen cooking function, the temperature and the duration, select
"Programmed start". After the , as well as indication of the settings already made,
highlighted on the display also indication of cooking start. Acting on keys +
+ +
+ and --
----
--
it
is now possible to set the time when wanting cooking to start. The program will also
automatically update the cooking end time. The latter will depend on the previously set
duration.
Example: it is 11:30, a 30 minute cooking time is set and cooking is to stop at 13:00.
The oven will switch-on at 12:30 and switch-off at 13:00. After having done this with
key , confirm programming. With the writing "Programmed start" the display will
signal the oven is in stand-by.

9880022800-EN-011210.doc
13
EN
With key it is possible at any moment to go back to the previously set parameters to
eventually amend them. Attention, going back using key , the programmed start
data will reset. All set parameters and the current oven status can be directly verified on
the display at any moment.
Once cooking has started, it will be possible to amend the settings, again going back
using key . A buzzer will warn when cooking has ended. To cancel programming,
keep key pressed then select “Stop”.
■Cooking with Programmed start
The "Cooking" phase in the "Cooking with Programmed start" starts after the pre-
heating phase. It is usually recommended to insert the dishes in the oven when this has
already reached cooking temperature. In this case, as start is postpones and not
protected, the insertion of the dish must happen with the oven cold.
■Stop, pause, and cancellation of a program
To pause or stop a program at any time, keep key pressed for a few seconds until the
“Pause” or “Stop” options appear. This allows choosing whether to temporarily interrupt
cooking (Pause) or stop it (Stop). By pressing "Stop" the program brings you to the main
menu screen cancelling every programming and preparing for new eventual choice. If no
intervention takes place, after about two minutes the program goes back to "stand-by"
mode.
The “Pause” option interrupts functioning of the heating elements and of the
programming times eventually entered; to restart the interrupted settings press .
However, it is possible to completely cancel a program by also keeping key pressed
until the stand-by screen appears.
■Consecutive cooking
In case of consecutive cooking, if successive cooking requires a lower temperature to
that of the oven, a warning "Temperature too high" together with a buzzer (the beep can
be interrupted using key ) will warn the oven is in pause and is awaiting lowering of
the temperature to programmed value. Once the right temperature is reached, the oven
will automatically re-start.
■
Pre-set recipes (Guided)
The oven is provided with a recipe book with the possibility of choosing 51 different
types of dishes where the times, the temperatures and the methods are already
programmed. By selecting the wanted recipe, the oven automatically proceeds with
cooking, using temperatures and functions combined in order to optimise the use of the
oven and obtain the best cooking. All recipes are realised by professional chefs that have
tested the realisation directly on the oven.

9880022800-EN-011210.doc
14
EN
■Guided recipes
The recipes are grouped in 6 different types of dishes giving a wide range of choice
(white meats - red meats - fish - vegetables/pasta - bread/pizza - cakes).
From the main menu, select the "Guided" entry, once the type of dish is chosen, e.g.
"White meats", confirm with . In this way accessing the submenu of the recipes
assimilated to white meats.
Select the wanted recipe scrolling the menu and finally confirming with
The screen enabling setting of the weight now appears. With +
+ +
+ and --
----
--
it is possible to
choose among 11 different values (expressed in grams) enabling to near the weight of
that to be cooked. The weight variation will slightly influence the cooking duration.
Confirm the choice and program, either immediate start or programmed start (see
previous chapters).
Once cooking has started, after the pre-heating phase (the "pre-heating" writing
disappears), the display will show the name of the chosen recipe. The oven will proceed
as programmed, varying the temperatures and the functions used in the various cooking
phases. The buzzer will warn of the cooking end.
□Guided Recipes with programmed start
The programmed start can also be used with guided cooking (see previously seen
paragraph "Programming of cooking duration - programmed start"). It is essential in this
case for the dish to be inserted with the oven cold. The oven program also includes the
pre-heating times. Therefore, the total times are recalculated somehow taking into
account of the pre-heating in the cooking. With the exception of recipes for homemade
pizza, pizza margherita and frozen pizza, for which the insertion of dishes with cold
oven is not envisioned, therefore excluding programmed start.
■Memo recipes, customised (Memo recipes/Guided)
With the "Memo recipes" function the possibility of customising a certain number of
cooking is had, creating up to 4 different programming to pleasure that will allow
cooking with the same mode of the guided cooking, but realised to pleasure.
□Customised recipes recording (Recipes rec/Settings)
From main menu select "Settings", confirm and scroll successive menu up to entry
"Recipes rec". Once confirmed selecting “Recipe 1” with access is gained to the
programming screen.
Programming allows creating from 1 to 5 different phases, each of which is customised
choosing time, temperatures and functions values. In this way it is possible to combine
the alternating of temperatures functions and times, making your cooking perfect.
Indicative example of cooking a white meat dish:
PHASE 1 – “intensive cooking” function – temperature 200°C for 40 min
For an intense but even cooking, both inside and outside, at high temperature
PHASE 2 – “intensive cooking” function – temperature 150°C for 15 min
For continuing intense cooking more softly
PHASE 3 – “ventilated cooking” function – temperature 180°C for 15 min
For continuing cooking more delicately with even browning
PHASE 4 – “intensive cooking” function – temperature 100°C for 6 min
For delicately finishing cooking

9880022800-EN-011210.doc
15
EN
PHASE 5 – “defrosting” function – temperature 25°C for 10 min
To slowly and evenly let the temperature of the food drop
It is not necessary to program all 5 phases, but it is possible to use, indifferently, from
only 1 to 5. For the unnecessary phases, leaving the "time" parameters and the
"temperatures" at "0", these will not be considered.
Programming is simple and intuitive. Using keys +
+ +
+ and --
----
--
adjust the temperature to
pleasure, using keys or (depending on the model), move selection on entry to
entry “time” . Choose the minutes to be set for the first phase (phase 1) and, using
the same keys, select the function. Now identify the most suitable for the type of
cooking from the various possibilities offered by the manual functioning (see paragraph
functions of the manual cooking"). Confirm with , the program now proposes
customising the second phase (phase 2). Continue with programming like in previous
phase, setting the new data. Also in the case the phases to be programmed are less than 5,
it is always necessary to confirm with up to fifth phase, to allow recording of the
program. Remember the phases that are not of interest must have the time and
temperature parameters at “0”.
□Use of the customised recipes (Memo recipes/Guided)
To use the customised recipes, select the entry "Guided" from the main menu, confirm
with and select the function "Memo recipes" confirm with thus moving on to
the customised recipes menu. Chosen the recipe, the display will show all programmed
phases. In this way it is possible to exactly see the cooking cycle of the recipe to be
used. Confirm and choose when to start cooking. After last confirmation, depending on
the given setting, the oven starts (immediate start) or is placed in stand-by (programmed
start). On the display it is possible to view at any time the advance status of the various
phases. The oven will automatically perform pre-heating even with the customised
recipes, it is not necessary to program a pre-heating phase. To stop cooking act as
described in paragraph "Stop, pause, and cancellation of a program”.

■Use of the Grill
To optimise the Grill cooking, pre-heat the oven with Grill on at maximum for at least
10 minutes. Introduce the dish inside the oven in the nearest position to the Grill,
depending on the type of food to cook. Always use the Grill with door open and for a
maximum time of 15 minutes.
With the grill it is possible to cook fish, vegetables, small kebabs and various types of
meat, with the exception of certain lean game meat. Finely cut meat and fish must
always be grilled very quickly greasing them slightly with oil using a suitable brush and
always placed on the grill. In turn, the grill must be placed nearest to the upper heating
element, proportionally to the thickness of the dish, to avoid burning it on the surface
and not cooking it enough inside. Only salt the meat after cooking or it will be less juicy.
Never prick food during cooking, not even to turn them. Their sauce would drip and the
grill would be dry.
The meats can be arranged in the appropriate containers or cooked directly on the grill.
In the latter case, always pour some water in the drip pan then inserting it in the guides
under the grill. In this way avoiding the fat dripping in the drip pan burning generating
bad smells.
Attention: during use of the Grill, the accessible parts can overheat. It is therefore
advisable to keep children at a due distance.
In no case use the oven to heat the premises or the room you are in.
■Tangential fan
This device is provided with a tangential fan for cooling the controls panel and the oven
door handle. This fan starts working a few minutes after cooking start, when the oven
reaches a certain temperature (the time varies depending on the model) and also avoids
the overheating of the cabinet housing. The tangential fan continues working even after
oven switch-off, until the temperature drops to normal levels.
■
MAINTENANCE AND CLEANING
Disconnect the electric power supply before carrying out any maintenance on the
product.
Do not clean the device using steam cleaners.
Do not use rough, abrasive materials or sharp metal scrapers to clean the oven door, as
they can scratch or damage the surfaces and cause the glass to break. Do not use acid
products (e.g. scale preventer) as they can damage the enamelled parts.
Switch-off the heating elements, wait for the internal parts of the oven to cool down
before touching or cleaning them. Pay greater attention to the cooking grills.
Cautiously clean the oven. Attention to avoid scalds from steam in case a sponge or soft
cloth used for cleaning residues, comes into contact with a hot surface. Also, certain
detergents create toxic smoke when in contact with heat.

■Routine maintenance
Periodically check the status of the gasket placed around the opening of the oven. It
guarantees the correct functioning of the oven. Keep this gasket clean avoiding using
abrasive substances or objects. If the gasket is damaged, contact the nearest after-sales
technical assistance centre.
■Error signals
In case of malfunctioning of the temperature probe, the display will show the writing
“PT1000 FAILURE”. This indicates the probe is to be replaced and that your oven
cannot work until its replacement. For its replacement contact an authorised after-sales
technical assistance centre.
■Cleaning the surfaces
The enamelled or stainless steel parts must be cautiously treated. Use water or specific
products, then accurately drying with a soft cloth. Do not use abrasive products. In
case of tough deposits on enamelled parts, use a plastic sponge or similar, soaked in hot
water and vinegar. It can become very difficult to remove food residues or stains from
oils, sugars, fats, etc. if they are not immediately removed after having terminated using
the oven. It will make removing them easier if the internal parts of the oven are cleaned
with the same still warm. Due to an increasing presence of new products on the market it
is not possible to establish a list of items suitable for cleaning this device. Accurately
read the manufacturer instructions to verify the possible use of the detergent.

positioning of the foot encasing). With the oven door completely open, remove the hinge
lock bringing the locking hooks in original position or, depending on the model,
removing the rods. Slowly close the oven door and ensure it has been correctly inserted
and aligned with the side edges.
Attention. Do not remove the hinge locking hooks from their seat when the door is not
mounted in the oven. Do not close the hinges without the weight of the door as it causes
a violent closing of the springs.
Do not rest weights on the door and do not hang them on the handle, they might damage
the product creating malfunctionings.
Also, do not use the oven until the door has been correctly re-mounted.
■Side frames dismantling
If you have just finished using the oven, ensure the side frames have sufficiently
cooled down before removing them.
Grip the front part of the guide to be removed, lift it and pull towards the centre of the
oven until it comes out from the fastening seat (fig. below left). Now pull the guide
outwards, lift the rear part and pull towards the centre of the oven until it is completely
removed from the rear fastening seat (fig. below on right). Repeat the operation in
reverse order to install the guides in their seats again.
