Double Wide Modular Proofer
Construction:
The cabinet interior and exterior are
constructed of heavy gauge polished
stainless steel to maintain an attractive
appearance for years of heavy use. The 2”
thick polyurethane panels throughout
ensure the ultimate in energy efficiency.
The cam-lock modular panel construction
adapts to different rack configurations and
makes assembly easy.
Controls:
The digital control panel is conveniently
mounted at eye level. The heat and relative
humidity levels can be adjusted independently,
and offers a six-program time set countdown
function.
Doors:
The self-closing doors are securely mounted
on 3 rugged cam-lift hinges, which have a
lifetime guarantee. Each door has a self-
adjusting magnetic gasket to prevent the
humidity from escaping. An interior vapor-
proof incandescent light fixture is provided.
Capacity:
Each door opening will accommodate a 75”
high rack for 18” x 26” or 20” x 30”pans.
Humidification System:
Internally mounted, energy efficient heat
and humidity system is virtually maintenance
free. Fine nozzle air-wash system controls
humidity, no flush cleaning required.
Cabinets are provided with both front and
rear drain capabilities.

Notes:
* One point electrical connection located on the top rear of the box. 21 1/2” from left hand corner, 6” from the rear, 84” from the floor.
**Water supply connection. Hot or cold water supply @25-50 psi. Located 6” from the front left side, 20” from front, 84” from floor. For proper operation of the steam system it
is recommended that the water supply follow these specifications: Hardness of 2-4 grains per gallon, ph range of 7.0 to 8.0 and chloride concentration of 0-30 ppm. Consult
your water treatment company for proper water filtration system.
*** Drain factory equipped for rear exit (can be field modified for front exit). Drain exit located 4 1/2” from rear left hand corner. 2 3/4” from floor. Drain must be installed
angled to floor prior to routing to drain source for proper drainage. A hard smooth level floor is required on which to position the proof box and access for maintenance is locat-
ed on the top or inside the unit. It is recommended that a minimum of 24” be available on top of the proof box for servicing.
Proof Box installation must be performed by factory authorized technicians and all utility connections must be performed by licensed contractors to meet all federal, state and
local codes.
Victory participates in the KCL CADalog, the most current source of CAD symbols for foodservice designers worldwide. Symbols include
standard equipment in plan, side, front and 3-D views, layered for FEDA/FCSI recommended guidelines.
