Important Safety Instructions
WARNING - TO REDUCE THE RISK OF FIRE, ELECTRIC SHOCK, OR
INJURY TO PERSONS, OBSERVE THE FOLLOWING:
1. Use this unit only in the manner intended by the manufacturer. Ifyou have
any questions, contact the manufacturer.
2. Before servicing or cleaning unit, switch power off at service panel and
lock service panel to prevent power from being switched on accidentally.
When the service disconnecting means cannot be locked,securely fasten
a prominent warning device, such as a tag, to the service panel.
WARNING - TO REDUCE THE RISK OF A RANGE'TOP GREASE FIRE:
1. Never leave surface units unattended at high settings. Boilovers cause
smoking and greasy spillovers that may ignite. Heat oils slowly on low or
medium settings.
2. Always turn hood ON when cooking at high heat or when cooking
flaming foods.
3. Clean ventilating fans frequently. Grease should not be allowed to
accumulate on fan or filters.
4. Use proper pan size. Always use cookware appropriate for the size of the
cooking area.

Before Using Your Hood
Although the hood iscleaned upon completion of the manufacturing
process,you will probably need to cleanyour hood again afterinstallation.
Wipe the surfaceof the hood with a good household cleanerapplied with a
soft cloth, or stainlesssteel polish, depending upon the finish of your hood.
Thiswill leavea protective finish on the hood.

Operation of Your Hood
Always turn your hood on before you begin cooking to establishan airflow
in the kitchen. Letthe blower run for a few minutesto clearthe airafter you
turn your cooking appliance off, Thiswill help keepthe air in the kitchen
cleaner.
Eachhood hasone blower motor which isoperated usingtwo (2)controls.
Usethe on/off control switchto startand stop the blower. When turned on,
the blower will operate at the previoussetting ofthe speed control. Turnthe
speed control knob counterclockwiseto decreasethe blower speed and
clockwiseto increasethe speed. The type of cooking you are doing will
dictate the speed of the blower you will want to use.

Locatedtotheleftofthefanswitchesisthehalogenlightswitch.This
controlsthe50watthalogenlightslocatedinthefrontofthehood.The
halogenlightsalsohaveaswitchwhichcanberotatedinordertodimor
brightenthelights.Turnthedimmercontrolknobclockwisetobrightenthe
lightsandcounterclockwisetodim.
Each18"H.indoorhoodwillbeequippedwithoneortwoheatlamp
outlets.Theswitchestooperatetheheatlampswillbelocatedontheright
endofthecontrolpanel.The250wattinfraredbulbsarenotincludedand
shouldbepurchasedlocally.CAUTION:Donotplaceflammablematerial
onwarmingshelveswhenusingheatlamps.
Heat SensorThermostat
Yourhood isequipped with a heatsensorthermostat. Thethermostat will
turn on or speed up the blower ifit sensesexcessiveheat above the cooking
surface. If the blower isOFF - it turnsthe blower ON to HIGHspeed. Ifthe
blower isON at a lower speed setting- itturnsthe blower up to HIGH
speed. When the temperature leveldrops to normal, the blower will return
to its original setting. CAUTION: tfthe power to the hood isnot
disconnected during cleaning, the heatsensorthermostat can causethe
blower to turn ON.
Using the Grill with Outdoor Approved Hoods
•Outdoor approved hood models should be installed in a covered non-
enclosed area. They should also be protected from naturalelements(suchas
rain)asmuch aspossible.
•Alwaysturn the outdoor hood on to the HI position before lighting the grill.
•Keep the grill canopy closed asmuch aspossiblewhen cooking so smoke is
exhaustedout the backof the grill. This allows for optimum performance of
the hood.
•During breezyconditions, the performance of the outdoor hood may be
compromised.

CAUTION
UNPLUG POWER CORDS FROM CONTROL PANEL
BEFORE CLEANING OR SERVICING HOOD.
Cleaning and Maintenance
Any piece of equipment works better and lastslonger when
maintained properly and kept clean. Ventilation equipment isno exception.
Your hood must be kept cleanand maintained properly.
Cleaningthe Bafl]e Filters
As air passesthrough a bafflefilter,greaseparticlescollect on the stainless
steel "U" shaped baffle channelsand drip clown into the bottom of the filter.
Bafflefiltersare extremely efficient when compared to meshfilters. The
power of the hood isincreasedasmore air passesthrough a baffle filter than
with usuallydirty meshfilters. The capture of greaseisalsosuperior asbaffle
filtersare almost universallyrequired in commercial installations.The baffle
filtersshould be examined periodically to assurethat all surfacesand parts are
clean. The filterscanbe washed in adishwasheror in a sinkwith hot, soapy
water. Simple periodic cleaningwill insuremaximum filter effectiveness.
*Do not usecausticdetergent to cleanthe filters. A causticcleaner may
damage the finish.
*Do not takethe bafflefiltersaparLto cleanthem. It isnot necessaryand will
void the filter warranty.
When cleaningfiltersin 18" H. hoods, alwaysremove the greasetrough and
clean by placing in sinkwith hot soapywater.

Charcoal Filter Maintenance (Redrculating Hoods Only)
Replace the charcoal filters every 6 months to 1 year depending on the
amount and type of cooking.
To replace,remove the baffle/charcoal
filter assembly and slidethe charcoal
filter out of the channel and replace
with new one. Do not put the
charcoalfilters inthe dishwasheror
oven.

Cleaningthe Hood Canopy
Finishesin enamel or stainlesssteelare highly resistantto damage or
discoloration due to grease, steam, and heat provided that reasonablecareis
given to the equipment. Thefollowing suggestions will help you keep your
hood looking new. Do not allowan excessiveaccumulation of grease. For
best results,you should wipe your hood cleanwith acloth dipped in warm,
soapy water. DO NOT USEABRASIVECLEANSERS,STEELWOOL PADS,or
ABRASIVECLOTHS. DO NOT usecleanersthat contain chlorides, the
chlorides in the cleanercould damage the stainlesssteelfinish.
If necessary to scrape stainless steel to remove encrusted materials, soak the
area with hot towels to loosen the material, then use a wooden or nylon
spatula or scraper. Do not use a metal knife, spatula, or any other metal tool
to scrape stainless steel. Every three months give your hood a thorough
cleaning. On painted surfaces, use a new coat of wax. A good wax cleaner,
available at either a grocery or hardware store willdo both jobs at once. On
stainless steel surfaces, use a good stainless steel cleaner and polish.

Renewingthe Enamel Finish
Ifdiscoloration occurs,you should thoroughly polishthe finish on your hood
to renew itsgloss and lusterand to remove any greaseresiduewhich may
have a yellowing effect. Useanygood enamel polish, refrigerator polish, or
automotive polish. CAUTION: Do not usea porcelain cleaneror rough
abrasivecleaner.
Renewingthe StainlessSteel Finish
Regularcleaning isthe best way to assurethat your stainlesssteel finishstays
bright and unscratched. Use lemon oil or stainlesssteel polish to coat and
protect stainlesssteel.
Brass Parts
CaulJon: All brassspecialordered partsare coated with an epoxy coating.
Do not usebrasscleanersor abrasivecleanserson the brassoption parts. All
brassbody parts should be wiped regularlywith hot soapywater. When hot
soapy water will not do the job, useeve_' day household cleanersthat are
not abrasive.
Cleaning Ductless Venting Chamber
1. Remove the middle vent by gently raising up and pulling out.
2. Use the same cleaning directions as stated in "Cleaning the Hood
Canopy".
3. After cleaning, replace the middle vent.
Replacing Light Bulbs
Halogen Lights
Use an oven mitt during bulb removal to protect your hand in casethe bulb
breaks.
q) Unscrewhalogen bulb.
2) Replacethe bulb with a 120volt, 50-wa_ halogen bulb.
Infrared Heat Lamp
Usean ovenmitt during bulb removal to protect your hand incasethe bulb
breaks.
q) Unscrewinfraredbulb from heat lamp socket.
2) Replacethe bulb with an R40, 120volt, 250-wa_ infraredbulb.
