VolksMill Mod.II
TheVolks Mill is equippedwithastonedisc grinder (conicaldiscs)that
processesnotonlymoist, butalsoall oilygrains. Withyourmill you can
notonlygrindtheusualdrygrains fromcoarsegrist tothefinest flour,
butyou canalsoprocess oilseeds(linseed,poppyseeds, sesame) toa
doughy part. Details canbefoundintheleaflet"Oilseeds". Forbulky,
poorlyflowinggrist, whichyou canalsoprocess inthis mill, you need
thesmall screw conveyor,whichweusuallyalreadyhavebuilt in. (Coco-
nutflakes, sunflower seeds, possiblyspelled,naked oats,)
Whengrinding,notethatthefineness of theflourdependsverymuch
on thenaturalmoisture contentof thegrist, wherebymoist grain(from
12%) canbegroundveryfinelyatcoarser settings, whileverydry, hard
grain(e.g.8%) canonlybegroundbecomesveryfineatthetightest
setting.

Installation
Before you startthemill, pleasereadtheseinstructionsandthentry
grindingwheatatvarious settings. You canthenuseyourgrinder to
grindother grist aswell. You will quicklybecomefamiliarwiththede-
viceandits easeof use.
Theextremelysimpleconstruction of thegrinder is thereason thatthis
grinder onlyneedsaveryshortgrindingtimeuntil it hasreachedits fi-
nalfineness.
individualparts
Theindividualparts of themill haveanamethatcanbederivedfrom
thefunction:
Adjustmentmechanism oradjustmentplate: Rectangularwooden
platewithscrew,spring andadjustmentknob inthemiddle.
Funnel:Withfunnelbottom,brass nail atthefrontengagesintheset-
tingplateandprevents it from slippingout.
Runnerstone roundstoneonthemotorshaft.
Standingstone:Angularstone,frontwithgrindingsurface,topwith
holeforthefunnel, donotremovethesealaround theoutside!
Small auger:Ahanger bolt (iron threadon oneside,woodenthread
on theother side) inthemiddleof therunner block.
Largeauger:Optionalauger,mainlyformanualoperation, inasmall
plastic bag,about5cmlongandthreadedon oneside,theother side
solderedwithalargeturn.

Duetothebetter transportinthepostalpackage,yournewmill was
partiallydismantledafter wegroundit. Inthis wayyou canfamiliarize
yourself withthesimplestructure of yourgrinder!
Auger: Thesmall Auger is mounted,it eggssothatit canconvey.
Fortheoptionalmanualdrive(handcrank +largeauger €36),thelar-
geauger is inasmall plastic bag,pleasefollowtheseinstructions.
Howtousethehand crank is described intheseinstructions.
Ifyou cannotassemblethegrinder,proceedasfollows:Insertthestan-
dingstoneoppositetherunner stone,push thesettingplatewiththe
knobinfrontof it intotheguidegrooveandlock thefunnelover it into
theguide.
Thebrass nail fixesthefunnel.
Thestandingstoneloosens byitself asthegroundmaterialflowsin;
Thegrinder doesnotneed any extramechanics forroughsetting.
Forfinegrinding,thestonesmustbepressedtogether;thefirmer the
grist, thefirmer thesetting.We groundthemill withwheat, simplytigh-
tenit uptothestopandback until theburned-inlineis atthetop,this
is thestartingpositionforfine-flourwheat.

Adjustmentmechanism
We run all themills inourworkshopfortestingpurposesandgrind
them.Theadjustmentmechanismsare setsothatyou getfineflourat
12.oo. (Clock division onthefrontpanel,).This flouris veryfine.Ne-
vertheless, thegrinder still needsacertainamountof singlemeal. Itis
advisabletogrindthefirst 5-10 kgof grainon asettingbetween9
and10 o'clock toavoidunnecessaryheatingof theflour.Asaresult,
thestonesgrind each other alittlemore gently.
Shouldthegrinder no longer grindfinelyenoughforyou afterwardsor
over theyearsinthe12oo position,you canreadjusttheadjustment
mechanism.
operation
Whenmakingfineadjustments, pleasedonotletthegrinder run empty
sothatthestonesdonotwearoutunnecessarilyandrubsmooth. Al-
ways payattentiontoperfectly cleaned grainorgrist.
Thestoneswill thank you fortheirlong life.(approx.50 -200 quintals!)
Yourgrinder is veryeasy touse.Theoperatingswitchis locatedonthe
topof thegrinder,behindthefunnel.
Usethedialon thefronttosetthedegree of fineness:
Turntotherightfiner
Turntotheleft coarser
Theburned-inpointonthedisc is usedtofindthedesireddegree of fi-
neness, wherebyit is veryhelpful tohaveastoptotheright, over
whichyou shouldnotturnwithforce.-Foraninitialorientation, the
followinginformation:
12oo is thefinegrinding point.
Between6oo and9oo you getmealforbaking bread
between3oo and6oo you mightgrind yourgranola
However,withinashorttimeyou will havefound"your"settingsfor
yourvarious wholefooddishes.
However,if you havegroundmealthatis too coarse,pleasedonot
sendit throughthegrinder again, unless it is verycoarseandstill trick-
lesabit, theauger is built in, and you maystill pokeinanemergency.

„Miller“-yournewjob!
Thegrinding
Wheat, andespeciallyrye,placeparticularlyhighdemandson theengi-
newithincreasedhumidityandthefinest settings. Whenthegrainis
moist, thetemperaturesalsorise: Sincetheconicaldisc grinder
developedbyus is particularlyinsensitivetoso-calledsmearing,this na-
turallyleadstothefact thatmoist grist is alsogroundextremelyfinely.
However,if you observeexcessiveheating,it is better tomovethe
settingscreenoneortwolinestotheleft;this lowersthetemperatures
andprotects theengine.Incidentally, this doesnotnecessarilymake
theflourcoarser! You onlyreducethepressure on thestones, because:
moist grist is alsosofter andcanbeprocessedmore flaky withless
pressure.
Oilseeds
Settingsbetween3and10 o'clock are recommendedforprocessing
common oil seeds. Inany case,it is better tosetthingsalittlecoarser
atthebeginningandthenreadjustso thateverythingis not"closed"
andsmearedrightfromthestart. Important:Oilseedscanalsoget
damp.Whilethemill is still processingmoist grain, it goeson strikewith
moist oilseeds.
Ifthestonesgetsmearedwhilegrinding,you don'thavetoopenand
cleanthegrinder straightaway. Itis sufficienttosetthegrinder very
roughly. Assoon asthegrist starts torun again(you canhearit!),Gra-
duallyadjustthefiner again. Thestonecleans itself automatically. But
stayoneortwolinesbefore thepointatwhichthesmearstarted.
Flakes
Onthesubject of "flakes":You canreallyonlymaketheseproperlywith
rollers. However,you canmakemedium-sized flakesfromnakedoats, if
this is nottoo dry, withaflourcontentof 20-30%.Ifnecessary, mois-
tentheoats. See leaflet!

mechanically. There are someventilation openingson theback. Ifyou
removethegauze of themiddleholewithapocketknifeorsimilar,then
you caninsertahandcrank intothemotorshaft behindit. You canalso
obtainsimplehandcranks fromus. Alternatively, you canalsoscrewin
a10 mm thread,e.g.10 mm bolt plusapieceof copper pipeasa
spacer sleeveandanoldV-belt pulleyorachainpinion openupnew
possibilities.
Disassemblyof thehandcrank
Danger! Millsfrom 2016! Inmills from2016 onwards, therotor
block canloosenwhenturning backwardsand thesettingplateburst.
Fordismantling,you shouldremovethestandingstoneandeither
clampit withawoodenwedge,orholdthecross holeintheshaft be-
hindthemovingstone,e.g.withascrewdriver.
Note: Thegrindingcapacity inmanualmodewithMod.II is verylow(5
-10 grams/minute).By usingthelargescrewconveyor,you canincre-
asethegrindingperformance.DANGER!Thelargescrewconveyor
increasesthegrindingcapacity considerablyandcanoverloadthe
motor.
Auger
Inmostcases, thesmall auger is alreadyinstalled.Itis acommercially
availableM6x45 or50 hanger bolt thatdoesnotrun centrically(it de-
scribesacircularmovementof about8 mm).
Thescrewconveyoris screwedintothecenter of therotorstoneinthe
shaft of themotor,this protrudesintothestandingstoneandimproves
theflow of thegroundmaterial.
Inrare cases, such asspices, coffee ormanualoperation, you canalso
usethelargeauger.This canonlybeobtainedfromus. DANGER!The
largescrewconveyorincreasesthegrindingcapacity considerablyand
canoverloadthemotor. Oilseeds
Theconicaldisc grinder of ourgrainmills cannotonlygrindoil seeds
andoil fruits butalsogrindthemmore orless intofinepasteswithout
harmful heating.

We havegainedthemostextensiveexperienceingrindingoil seedsand
oil fruits withtheuniversalgrinder.Iwouldliketotell you aboutthis in
thefollowing:
Itwasn'ttoo longagothattheterm“wholefoods” wasknownonlytoa
fewinitiates. Intermsof kitchentechnology, themajorityof Western
Europeans are still quitehelpless inthis regard.This is particularlytrue
withregard totheso-called "oilseeds". Itstarts withtheterms:General-
lyspeaking,theseare theseedsof plants. Theoil seedsare fine-
grainedandtricklethroughourhands(linseed,poppyseed,mustard,
etc.).Thecoarsest oilseedswouldtherefore bethesunflower seeds,
whichno longer trickleso easily. Oil fruits are all nuts andnutkernels:
hazelnuts, peanutsandwalnutsuptothecoconuts thatare availableto
us inthehouseholdintheformof desiccatedcoconut, forexample.
(Thelatter contain60%oil.)
Theseoil seedsandfruits are usedtoextract oils andraw materials for
all kindsof industriallymanufacturedediblefats.
Thegrist
Oil seedsandfruits are softer thangrain. Thefineadjustmentof the
mill musttherefore bechosenmore coarselyfromthestart, soyou
needless externalpressure,astheso-calledgrindingpressure between
thestonesis lower.Thehighoil contentis notanobstacleforourgrin-
der.Inthis context, it is largelyunknownthatoilseedscanalsobecome
damp(e.g.duetounfavorableorlongstorage).Theconicaldisc
grinder hasno difficultyinprocessingmoist grainuptogerminating
grainwithapprox.40%moisture.Inthecaseof moist oilseeds, howe-
ver,it goeson strike.Itis therefore essentialtoalways store oil seeds
andfruits inadryplaceinorder toprotect yourself fromunpleasant
surprises!Ifthere are any difficulties, theonlythingthatwill help is dry-
ingonthebakingsheetintheoven. Inthecaseof peanuts,this is even
essential. Theusualpeanutbutter canbemadefromroastedpeanuts.
Someoil fruits havesuch ahighoil contentthatthefinest settingcrea-
tesapaste,withdesiccatedcoconut evenaliquidcream thathardens
soon after grinding.
Thegrindingprocess.
Thetopprioritybefore you turnonthegrinder is:First of all, setthead-
justmentmechanismveryroughly, i.e.aboutthree quartersof aturnto

theleft. Thenletthegrinder run forthree tofoursecondsandthen
turnit off againandcheck thegrindingresult. Ifnothinghasarrivedin
thedrawer,turnhalf aturnmore coarsely.
Itis notasbadif wholegrains fail inthefirst fewattemptsthanif the
grinder smeared straightaway.
Theuniversalmill allowsgrindingindifferentfineness evenwithoil
seedsand fruits.
Theoilseeds, i.e.everythingthatis pourable,run throughthemill like
grain. Thefirst problemsarisewithsunflower seedsanddesiccatedco-
conut:Theyblock theoutletof thestandingstone.You canhelp
yourself withpokingaround,butthat'snotthesolution.Forthis
purposethere are thescrew conveyors, small andlarge.
Thesmall snail is asimpleso-calledhanger bolt, liketheoneusedby
carpenters, wemakethebigoneourselves.
After thegrindingprocess hasbeencompleted,cleaningbegins. First
you shouldpull off thefunnelandlook intothegrindingchamber tosee
whether there is any largeamountof leftover oil. Theseare pushed
downintothegrindingchamber andthefunnelis putback on. Thenwe
grindasmall handful of grainthrough.Smaller residuesthatsit inthe
grindingpassages(thechannels onthestones)canbescrapedoutwith
thebrush handle.
However,it is worthconsideringwhether you shouldnotsendtheoil-
seedsthroughthemill on thebakingdaybefore thegrainis milled.This
is useful, forexample,if linseedorpoppyseedsare tobebaked.Then
you saveyourself thecleaning.
Ifyou wanttoprotect yourdrawer,you canalsouseanother washable
container,e.g.Tupperware.This is definitelyadvisablefordesiccated
coconut. Theseare literallyliquefiedand themass later hardens.

Furtherprocessing
Avarietyof delicaciescanbemadefromtheraw materials. You can
findsomerecipesonlineinoursmall collection thatwedevelopedour-
selves.
Ofcourse,wecannotcompletelyreplacethecommerciallyavailable
industrialgreases, butwecanreducetheirusesomewhat.-Everyoneli-
kestohaveasnack, especiallychildren. Fruit barsthatare only
sweetenedwithhoneyare alsosuitableforschool breakfasts, hiking
meals, etc. Theusualsweets are overloadedwithindustrialsugarand
are harmful totheteeth;Fruit barswithhoneyare expensive.Families
withchildrenwill certainlybegrateful forthis suggestion. By theway, it
is fun toexperimentwiththemill -evenon Sundays -andtodemons-
tratethelatest developmentstothefamilytotry.
Thosewho havetoliveaccordingtoadietgainalittlemore
independenceandvarietythroughthehomemadefeasts.
auger
Thetask of theauger is toensure thatthematerialtobegroundflows
smoothly. There are no problemswithregulargraincropssuch as
wheat, rye,etc., evenwithfine-grainoilseedssuch aspoppyseeds, lin-
seed,etc. Thesmall screwconveyoris alreadyinstalled.Itis astandard
hanger bolt thatwebendeccentricallyso thatit feedsproperly. This
canalsoremaininthemill atall times, asit doesnotchangetheperfor-
manceof themill significantly.
Itis differentwiththelargeauger.This doublesthegrindingcapacity of
themill and wouldoverload themotor.Thelargescrew conveyoris only
intendedformanualoperation andis requiredtobringthegrindingca-
pacity upto40 g/in. otherwisethegrinder grindsveryslowlyin
manualmode.
Installation
Ifyou openthegrinder andtakealook attherotor,you will see the
small screwconveyorinthemiddle.You mustfirst removethis byhol-
dingit withpliersandturningtherotorcounter-clockwise,nowyou can
usethelargescrewconveyordeploy.
Importantforbothaugers:Iftheaugersare too longandhit thestan-

dingstone,thenyou mustunder no circumstancesusethenuts and
you will havetograbahacksaw orsimilarandshortenit. Otherwise
you will notbeabletogrindreallyfinely. Thelargescrewconveyorcan
alsobedestroyed whenthemill is switchedon and damagethestones!

Cleaningand care
Readjust theadjustmentmechanism.
Forthis you needtwosize 13 open-endwrenches. First, takethefunnel
off. Inthechamber betweentheadjustmentmechanismandthestan-
dingstoneyou cansee abrass capnutthatpressesagainstthe
standingstone.Placeoneof thekeys on this sothatthenutcanno
longer movetotheleft (leanagainsttheleft wall of thegrindingcham-
ber!).Placethesecondkeyon thehexagon nutbehindtheadjusting
washer andholdthekeywithyourleft hand.Pleasenotethepositionof
thedisc (positionof theburned-inpointorlineonit)before loosening
thesettingdisc withyourrighthandbyturningit totheleft. Thenturn
thefirst keytotherightwithoutremovingit fromthebrass capnutso
thatit is leaningagainsttherighthousingwall. Thesecondkey, which
you are still holdingwithyourleft hand,mustnotchangeits position.-
Nowtightentheadjustingwasher againbyturningit clockwise(coun-
ter) until it is approximatelyintheoriginalpositionand is firmlyseated.
This procedure compensatesforminimalstoneabrasion orchangesto
thehousing(wood!) Andthefinest pointalways remains at12:00.

Grinding chamberandstones
Tocleanthegrindingchamber,pull off thefunnel. Loosentheadjust-
mentmechanismbyturningit totheleft andpull it outupwards. Witha
normalbrush, e.g.25 mm,flourdustandother residuescannowbe
removed.After grindingoilseeds, doughy residuescanstick totheouter
peripheryof thestones, whichare better removedimmediatelyafter
grinding.This works well withthebrush handleoraknife.Thestone
surfaceis best cleaned byitself bygrindingdrygrain. Theflourthenab-
sorbstheresiduessuch asoil, moisture and odor.
Harder crusts andsmudgescomeoff whenyou grindrice.(asmall
handful,)
Pleasecleanthegrindingchamber,drawer anddrawer spaceseveral
timesayear.
Enginecompartment
You canblowouttheenginecompartmentwithcompressedairevery
fewyears.
Theenginedrawsinflouranddustthatcanbuildupintheenginecom-
partmentover theyears. Whenstandingforalonger periodof time,
vermincannestlehere.
Toblowout, simplyloosenthehousingcover (unscrewthescrewsfrom
theside) andcarefully push it back alittle.Payattentiontotheconnec-
tions fromtheswitch. Thenyou canbloweverythingout, ideally
outdoorse.g.atthegasstation. Thenslidethecover back inasbefore
andscrew it tight.
Wooden cabinet
Thewoodenhousingcanbesandedbyhandwithmedium-finesandpa-
per,e.g.grain120,toremovedirtanddiscoloration. Thenyou canoil
thegrinder withlinseedoil andnaturalturpentineorcommercially
availablehardoil. Preferablydonotoil theinsideof thegrindingcham-
ber orthedrawer.
Awell-keptmill shouldbeover 30 yearsold!

Replacementstones
Experiencehasshownthatthestonescanbewornoutafter 15 yearsof
age.Theamountof weardependson theamount, fineness andhard-
ness of thegroundmaterial. Oftenthestoneshold inthepopular
mill forover 20 years.
Withalittleskill, shecanbuildnewstonesherself. We wouldbehappy
todothatforyou too. We canthencleanandmaintainthemill and
grindinthenewstonesrightaway. Pleasefindoutmore aboutthis on

pleasedonothesitatetocontact us, wewill behappytohelpyou inan
uncomplicatedmanner.
Starting problems
Themotorhasaveryhighstartingtorque.Ifit still doesnotstart, set
thepower switchtooff. Thenloosentheadjustingdiskbyturningit an-
ticlockwiseabout3/4of aturn-andstartagain. After startingup,turn
theadjusting dialtowhere it shouldbe.
Whenthefunnelof themill is groundhalf empty, you shouldshakethe
drawer atleast oncesothatthemountainof flouris distributedand

cannotbuildupinthegrindingchamber.Inextremecases, this can
block themotor.Evenlarger amountsof flourcanfall downafter pulling
outthedrawer,sothatyou havetocleanthedrawer spaceagain. The
easiest waytodothis, bytheway, is withahand brush anddustpan!
Smear
Ifyou oftenhaveproblemswithsmearing,pleasenotethefollowing:
You donotsetthefineness ontheadjustingwheel!You justpress the
stonestogether.Thegrist pushesthestonesapartwhengrinding.The
resultinggrindingpressure determinesthefineness. Softer grist cannot
buildupalotof grindingpressure,if you press thestonestogether
strongly, thegrist will no longer comeoutof thestonesandthemill will
smear.Forsoftoilseeds, onlypressthestonesso hardthattheygently
rubagainsteach other.This is thefinest setting!
