6 Instructions –Fruit Hydropresses
Description of the machine and the operation system
The machine is a fruit press for pressing previously crushed fruit by using the water pressure energy. The
principle of operation of the press is simple. For efficient fruit pressing, it is sufficient to connect the
press to the water distribution network with a pressure of at least 2.5bar. By filling the pressure
membrane with water, it generates pressure on the wall of the basket causing the fruit pressing process.
The pressure membrane is mounted axially in the centre of the press and is compressed to the bottom
of the collecting container with a flange through the feed axis and screw connection. The pressure
connection is located at the bottom of the collecting container where there is also a pressure gauge and
a safety valve with water discharge at 3.0bar –connecting-safety-measuring set.
Connecting-safety-measuring set consists of a ½" connecting tap, ball valve, aluminium connecting
chamber, pressure gauge, safety valve with a spring, water outlet ball valve and water discharge fitting.
The internal tap thread for attaching the set on the connecting tap of the press is cut into the underside
of the connecting chamber. The hose fitting is attached on the water inlet tap that is on the other end
connected to the water distribution installation. There is a pressure gauge with the measuring range of
0–5bar fitted to the upper side of the chamber.
A spring safety valve is integrated on the back side of the chamber serving as a safety element for
switching the machine into a de-energised state in case it would potentially exceed the pressure of
3.0bar.
The feed axis also serves as a connecting element of the press. At both ends of the feed axis there is a
pipe thread for tightening the threaded nuts and thereby fixing the elements of the press in the axial
direction. As shown in Figure 3, the membrane is clamped with flanges on both sides. The bottom flange
affixes the pressure membrane to the collecting container with the sealing washer and the form of the
feed axis. There are two flanges fitted on top that affix the pressure membrane to the upper part of the
feed axis with two sealing washers and a threaded nut.
The bottom and upper threaded nut are physically secured against loosening and should not be
loosened or re-tightened after the purchase.
Place the press basket in the centering ring of the collecting container through the attached membrane,
as shown in Figure 4. Affix the basket to the collecting container using three tensioners that are welded
on the collecting container and hopper.

Figure 5: Tightening the threaded nut on the threaded feed axis spindle
The threaded nut that must be tightened by turning it to the extreme right downward position on the
threaded spindle is used to secure the cover. The force required for this can be easily achieved by
hands, without any additional use of levers or bars.
When emptying the basket, first remove the cover from the press,
pull out the lever of the latch mechanism towards the press basket, and then simply turn the collecting
container with the basket around the swing axle by 100 angular degrees (angle A) in the position shown
in Figure 6. In this position, the lever of the latch mechanism fixes the press basket so that it is much
simpler to empty the press and it shortens the entire amount of time required for pressing the fruit.

V. SAFETY IN THE USE OF THE MACHINE
-Only a professionally qualified, healthy person that is familiar with the instructions for use, and
who is older than 18 years can use the machine.
-During use, the machine may not be moved or shifted.
-It is not allowed to clean or repair the machine during use.
Before using the machine for the first time, you should:
-carefully read and familiarise yourself with the content of these instructions,
-find all warnings, symbols and signs on the machine and understand their significance from
these instructions, Chapter IX.,
-read these instructions and get acquainted with all the machine components and their
functions, Chapter IV.,
-follow the instructions before each use of the machine.
Before each use of the machine, you should:
-follow the instructions before using the machine for the first time,
-perform a visual inspection of the machine before each use,
-ensure that all parts of the machine are in perfect condition,
-set the machine on solid, flat and non-slippery floor, and ensure that there is a min. 2m2large
surface available for handling,
-block the transport wheels before starting the pressing procedure,

10 Instructions –Fruit Hydropresses
-provide for sufficient lighting of the machine and the area of handling of at least 150 lux,
-machine operators should wear a tight fitting clothing, long hair should be tied together with
a rubber band and during work you should not wear necklaces, neckties and the like.
-ensure that work with the machine does not compromise the safety of anyone in the area, and
that there are no children in the vicinity,
-ensure that the surrounding of the workplace are tidy and that no other items are stored there.
The selected materials and machine components that come in direct contact with the juice are in
accordance with the Order on machinery safety, Annex I, item 2.1 –Machines for the processing of
agricultural and foodstuff products.
Operating procedure –pressing
-set up the press correctly, blocking the brakes on the transport wheels and prepare it for use (according
to the instructions before first and each use),
-before starting to fill the basket (edge perforated sheet), unscrew the air-vent screw and the threaded
nut and remove the press cover,
-place the press basket in the centre of the collecting container, directly in the centring ring, which is
welded to the collecting container and fasten it with tensioners,
-fill the container (circular space) between the pressure membrane and the press basket with crushed
fruit. You must be careful that the mass is evenly distributed, since otherwise it can result in the damage
to the press and injuries to the user,
-during filling, the discharge channel from the collecting container should be opened, otherwise the
capacity of the press can be reduced,
–always fill the press to the top (the farthest edge of the basket),
-put the cover on the threaded spindle so that it fits tightly (along the entire perimeter) on the basket,
-secure the cover by screwing the threaded nut onto the threaded spindle,
–never tighten the threaded nut using tools such as various levers, but tighten it only by using
hand force,
–connect a hose on the water inlet ball valve (Figure 2, Chapter IV) and connect it to the water
distribution system on the other side, close the water discharge ball valve and partially tighten the air-
vent screw at the top of the threaded spindle,
–by opening the water inlet ball valve, you start the pressing procedure,
-the membrane of the press is filled for a while, then you will notice the water drain on the air-vent,
then screw (close) it completely,
-increased pressure will generate in the system that can be observed on pressure gauge readouts,
-if the pressure exceeds the value of 3.0bar, the safety valve will open and some water will flow out of
the system,
-by closing and opening the water inlet pipe, you can avoid the drainage of water from the system
through the safety valve by continuously monitoring the pressure level in the system on the pressure
gauge,
-after the pressing procedure is completed, the press is relieved by closing the water inlet pipe, and
then you open the discharge ball valve on the set and the bleed valve on the threaded spindle,

Instructions –Fruit Hydropresses 11
–when the pressure drops to 0.0bar of gauge pressure, unscrew the threaded nut and remove the
cover,
–first, loosen the pressed fruit, then turn the press hopper into the discharge position and empty it.
VI. TRANSPORT AND STORAGE OF THE MACHINE
The press can be moved and transported only in the de-energised state and when it is empty.
The press is constructed with four transport wheels that are screwed to the frame for moving the press.
After use, the cleaned and dried machine must be stored in a dry and ventilated space, in which
there are no artificial fertilisers. The moisture level that will be bound to the dirt on the machine
over the duration of storage depends on the thoroughness of the cleaning procedure. The
moisture reaction to the steel frame results in corrosion and premature ageing of the machine.
In order to prevent this, all components of the press are made of stainless steel.
VII. AREA OF MACHINE HANDLING
Only one person that must provide sufficient space for handling
before starting to use the machine or take precautions before each
use can operate the machine with the machine.
