INSTALLATION
UNPACKING
Immediately on delivery unloading, please chek whether machinepackaging is eventuallydeteriorated
and in this case make necessary reservetions on signing the delivery note. You will than check the
machineinsidepackagingandeventuallycontactimmediatelythecarrierwhenitis damaged.
Priortoinstallation,testtheelettricalservicetoassurethatitisincompliance withthespecificationson
the machine data plate 1.
ELECTRICAL
Warning: THIS MACHINE IS PROVIDEDWITHTHIS PLUG MUSTBE CONNECTED
TO PROPERLY GROUNDING PLUG, GROUNDED OUTLET. IF THE RECEPTACLE IS NOT THE
PROPERGROUNDINGTYPE,CONTACTANELECTRICIAN.
CLEANING
This machine musi be thoroughly cleaned and sanitized after installation and before being put into
service.
SAFETY
SAFETYDEVICESINCORPORATEDINTHISSLICERMUSTBEINTHEIR
CORRECTOPERATINGPOSITIONEVERYTIMETHESLICERISINUSE.
The blade cover 6 must be in position over the knife and secured by tightening
the hand knob 7.
TheIast slice device 4 must be used when slicing, it keeps your hands away from the knife.

When the siicer is not working, the slicer thickness
control 2 mustbesetonzero(fuIlyclockwise)toprevent
the blade edge from being exposed.
AlwaysUNPLUGthepowercordbeforecleaningormoving
theslicer.
SLICING
PuII the product holder 3 towards you until it stops
and place theproduct tobe sliced onthe product holder
tray. Place the last slice device against the product and
startthe slicerby pressing theon-off swtich 9 .Adjustthe
slice thicknessbyturningtheslicethicknesscontrol. The
numbers on the slice thickness control do not indicate
precise measurement, but may be used for reference to
duplicateslicethickness.Usingeitherthecarriagehandle
13 orIastslicedevice 4 push the product holder 3
back and forth to slice. Always swtich-off the slicer and
turn the slice thickness control clockwise to zero when
notslicing.
WARNING:Slicershouldnotbeoperatedbyuntrained
personnelorpersonsunder18yearsofage.
CLEANING
Thismachinemustbethoroughlycleanedaftereachday’s
operation orevery time it will not be usedfor anextended
period.
WARNING: UNPLUGMACHINEPOWERCORD
AND TURN THE INDEX KNOB FULLY CLOCKWISE
BEFORECLEANINGTHESLICER.
Removetheslice deflector 12 byremovingitsthumb
screw.
Theproductholdercanberemovedforaneasycleaning
byunfasteningits handle 8 .
Usingamildsoapandhotwatersolutionandacleancloth,
wipeallsurfacesof theslicer.
Thoroughlyrinseitwithanothercleanclothandfreshwater.
Removethe bladecover byremoving
the hand knob 7 . With the hand knob removed, grasp
the edge of theblade cover andcarefullylift itstraightoff
theknife.
WARNING:THE SLICER BLADE IS VERY SHARPUSE
EXTREME CAUTION WHEN WORKING NEAR THE
BLADE.
CAREFULLY wash both sides of the blade with the slice
thicknesscontrolturnedfullyclockwise. Washtheblade
by wiping outward from the center. ALWAYS rinse the
bladethoruogthlyusingfreshwaterandacleancloth.Never
use steel pads it clean the blade. Wash and thoroughly
rinsetheremovedcamponentspriortoreassemblingthem.
DONOTwashanyslicercomponentsinadishwasher.

ATTENTION
Use protection gloves
ELECTRICAL SAFETY
Whenthe slicer is running the eventual removal of the blade cover 6, or the default of electric power,
causesthe stopof themachine.
To restart the slicer press the on-off switch 9.
SHARPENING OPERATION
Yourslicerblade willprovidelongserviceinnormaldeli,foodstore,orcommercialkitchenuse.
However,inhighvolumeapplicationswhereitisapracticetosharpenthebladefrequently orevendaily,
theblade will be expended in a shorter time.
For a correct sharpening of the blade follow these
instructions:
1Makesurethatthemachineis off.
2Cleanthebladeremovinganygreasyresidue.
3Rotatetheslicethicknesscontroltozeroto make
surethat thebladeiscoveredbytheslicethickness
plate.
ATTENTION
During the sharpening operations, pay attention
to an accidental contact with the blade.
4Fullyliftupandturnitby180°thesharpenerdevice
5Pressthegrinding wheelpushbuttonand putback
initsplacethesharpenerdevice.

6 Sharpening: Presspushbuttonto startthemachine
andstarttheautomaticsharpeningoperation. After
10max.15secondspressthehoningstonebuttonand
pushthe wheeltowardstheblade.Afterafewseconds,
withthetwowheelsincontactwiththeblade,pressthe
stoppushbutton
7Lift androtate of 180°the sharpener andreset
it into its initial position
Cleaning of the grinding wheels
For an adequate sharpening the grinding wheel must
always be cleaned. Remove dirt and grease with alcohol
byusingabrush.

It must be kept clean but not lubricated. The motor has sealed
