●Donotcleanwithscouring pads. TheBaking
Pan and Mixing Paddle have a non-stick

POLARIZED PLUG
Thisappliancehasapolarized plug—one
bladeiswiderthantheother.Toreducethe
risk of electric shock, this plug will fit into a
polarized outlet only one way.Iftheplug

stilldoesnotfit,contactaqualified
electrician. Do not attempt to defeat this

TAMPER-RESISTANT SCREWS
Thisapplianceisequippedwithtamper-resistant
screwstoprevent removaloftheoutercover. To
reducetheriskoffire or electric shock, do not

●Therearefive settings including one for
doughorpasta.
●The“Super RapidBake”settingcanproduce

hour.This setting can only be used with recipes
supplied.Youcannot usethe timer withthis

recipessuch as whole grainbecause of its

●Dependingon the recipeyouselect, the
“Dough/Pasta” setting will let you produce
doughthatcanbeshapedintodinnerrolls,
pizza,longloaves,challah, pretzels,filled braids,
ormore. ForPasta, be sureto use pasta or
semolinaflour. Pasta dough should be
processedthrough a pasta maker or pasta
shapertoform the desiredshape. Consultthe
Cookbooksection of this manual.
●TheCrust Controlfunction lets you choose
“Regular”or“Dark” crust on the Basic, Rapid
Bake, or Sweet settings. It cannot be used on the
WholeGrainor Dough/Pastasettings.
●The“KeepWarm” function begins automatically
afterbreadis baked. Itkeeps baked bread
warm up to an hour after the baking is done.
Thisfunctionstopsafter60minutesorwhen
theunitisunplugged,ortheStart/Resetbutton
ispressed.
●An“Add-Ingredient”functionsignalswith
beepswhenit’stime to add ingredients
suchasfruits or nuts to recipesused with any
settingexceptRapidBake. A beep signals before
kneadingiscompletedtoletyouknowwhen to
addingredients. This featurehelpskeepfruit or
nutswhole (See“Add-Ingredient Function”
pg.10formoredetails). Ifyouuse theTIMER to
delaybaking,youmay add all ingredientsat
onceandbypass this function, however, your
fruit or nuts may get“chopped” and blended
intothebread.
●TheOpti-Risefunction allows youto extend the
rise time of your 2lb(900g)recipesbydelaying
thebakecycle. Just minutes beforethe bake
cyclebegins, beeps will sound signalling you to
chooseupto2additional10minuterise periods.
(See“UsingtheOpti-RiseFeature” pg. 11 for
moredetails).TheOpti-Rise function cannot
beusedwiththeDough/PastaorSuper Rapid
Bakesettings.
●Donotcover the breadmakerwith towels
orothermaterial that may preventsteam from
escaping. Somesteaming from vents is normal.
Becauseof escaping steam, you should keep
thebreadmakerseveralinches(more than
20cm)awayfromcabinets while making bread.
●Donotplaceanyobjectsontopofthe
breadmaker.
●IMPORTANT: Addingredientsintheorderthey
arespecified in the recipe. Forbestresults,
accuratemeasuring of ingredients isvery
important. Do not put larger quantities than
recommendedinto the BakingPanas it may
producepoor resultsandmaydamagethe
breadmaker.

1. Display
●Theblackarrowattheright side of the display
indicatesyourbreadsettingchoice;theleftside
arrowindicatestheDough/Pasta setting and

day, or,whenthebreadmakeris operating,the
timeitwilltakeforyourbreadtobecompleted

2. ClockButton
Use when setting the currenttime of day.
●TheCLOCKbutton is used with the“Up” and
“Down” arrows to set the 12 hour“AM”or“PM”
digitalclock.
3. Timer Button
Use when setting the TIMER to delay baking.
●TheTIMER button is used with the“Up” and
“Down” arrows to set the time you wish your
breadto be complete (up to 13-hour delay).
4. Start/Reset Button
●Press to start operation and to display the time it
willtakeforyourbreadtobecompletedunder
theselectedsetting.
●Press and hold to cancel the breadmaking
operation.The red“on” light goes out & unit
beeps(DONOT presswhen you arejust check-
ingtheprogress of your breador you will cancel
yourprogram).
5. Opti-RiseButton
Use when extendingthe rise time of 2 lb
(900g)recipes.
●Whenunitbeepsprior to baking cycle,the
OPTI-RISEbuttoncanbepressedto add up to 2
ten-minuterise periods.
●Press and hold to cancel remainingrise time and
start baking operation.
6. IndicatorLights
●Thered“on” light indicates that the breadmak-
ingoperationhas started.When the cycle is
complete,the redlight will flash for 60 minutes
inits“KeepWarm” cycle.If youdonotremove
thebreadafter 60 minutes,itwillsimplyremain
ontoshow youthattheunitisstillpluggedin.
●Thegreen“timer” light indicates that the timer
functionison.When the actual breadmaking
operationbegins, the greenlight will go off, and
theredlight will come on.
●The1stor2ndgreenOpti-Riselightswillflash
indicatingthatanadditional10minutesofrise
timecanbechosenby pressingthe Opti-Rise
button.The light remainsonwhentheOpti-Rise
period is selected. Once the bake cycle begins,
thelightwillgooff.

Thissettingisusedforbreadswhich primarilyuse
whiteflour,thoughsomerecipes may include small

amountsofwholewheatflouraswell. In the U.S.,
besureto use Bread Flour; in Canada,you may use
CanadianAll-PurposeFlouror BreadFlour. Follow
recipescarefully. BasicBread/Regular Crust will
producegood resultswhenyouareusing
ingredientssuch as cheese,nuts,orcornmeal as
theytendtobrowneasily. ChooseBasic Bread/Dark
Crust, to producealoafwithadarkercrustwithout
lengtheningthebakingtime.
SUPERRAPID BAKE/RegularCrustor
SUPERRAPID BAKE/DarkCrust
(1:10hours)
Thissettingisusedonly tomakevariations ofbasic
white bread quickly whether youchoosea“Regular”
or“Dark”crust. Referto therecipesection ofthis
bookletfora complete listof all recipesthatcan be
usedwiththis setting.This setting cannot be used
successfullytomakebreadsother than those
specifiedduetotheshorter rising time of this cycle.
SWEET/RegularCrustor
SWEET/DarkCrust(3:50hours)
Use this setting for recipesthatusefruit juice,large
amountsofsugar,cheese, or added sweet
ingredientssuch as raisins,dried fruit,orchocolate.
Bakingtemperatureis lower to preventburning.
WHOLEGRAIN(4:10 hours)
Thissetting is used forrecipes with significant
amountsof whole wheat orrye flour,oats,
orbran. This settinghasa longer rise cycle
andpreheatcycle to allow heaviergrains
toexpand. Generally, whole wheat/multi-grain
breadsareshorter anddenserthan Basicor Sweet
breads. You cannot use the Crust Colorselections
withthis setting.
DOUGH/PASTA (2:00hours)
Thissettingmakesbread-styledough and pasta
dough. Doughcanbeshapedtomakepizza,rolls,
pretzels,longloavesorbraidsthat must then be
bakedinaconventionaloven. It can also prepare
pastadoughthatmustthenbeprocessedand
shapedthrougha pasta maker. Pastadough should
beremoved from theBreadmaker after the
“Add-Ingredient”signals (in 40 - 45 minutes).

BreadType Setting Descriptions
HowTo UseYour Breadmaker
Thefour breadmaking settings inthisunit will
combineingredients,knead, andbakebread
fromstartto finish –automatically. The
Dough/Pastasetting makes dough foravariety of
recipesbutyou must shapeandbake the dough
yourselfin a conventionalovenor process itina
pastamaker. Todelaycompletion, the Automatic
Timermay be programmedto make breadwhileyou
areatwork or asleep. (See“Setting theTimer” pg. 10)
TheCookbook sectionofthis book includesrecipes
thathave been thoroughlytestedin Black& Decker’s
owntestkitchens both in theUnited Statesand
Canadato ensurebestresults. Flours,cornmeal, and
afew other ingredientsvarywidely between
thetwo countries.
NOTE: Theterm,“All-Purpose Flour”for example,is
appliedto two totally different types offlour
dependingon whether it ispurchasedintheU.S.or
Canada. Canadian“All-PurposeFlour”willproduce
goodto excellentresultsin this Breadmaker;whereas
American“All-Purpose Flour”willproduce poor
results.
Therefore,each recipeis presentedwith twosetsof
ingredients–one for each country. Sinceingredients
aredifferent,itis importantthat youdoublecheck to
besureyou arefollowingtheappropriaterecipefor
ingredientsinyour country(U.S. or Canada)before
usingyour Breadmaker.
Most North Americannational brandflours and
yeastswill producegoodresults. Keepin mindthat
therecipesincluded herehave been createdbyour
HomeEconomistsspecifically for thisautomatic
breadmaker(ModelB1650)and may not produce
acceptableresultsin other similar
breadmakers.

ForallSETTINGS(including
Dough/Pasta) followthese
instructions:
1Openthe lid, grasp the wirehandle with two
hands,and turntheBakingPan to the left
“Unlock” position, then removeitby pulling
straightup on the handle. It is important to remove
theBakingPan from the unit ratherthanaddingre-
dientsintothePan while it is in place to avoid acci-
dentallyspillingingredientsinto the oven chamber.
2Attachthe MixingPaddleonto
theshaftinsidetheBakingPan
by lining up the flat side of the Paddle
withtheflatsideontheshaft. Gently
pushthePaddleontotheshaft.
3Selecta recipefrom the
Cookbooksection of this booklet.
Whenfollowing the recipe:
●Always add ingredients into the Baking Pan in
the order they are listed.
●Measure ingredients carefully
& accurately. To measure
liquids,use a see-through
measuring cup and check the
measurement at eye level.
●When measuring dry ingredients,use
standard dry measuring cups or measuring
spoons and level off the ingredients with the
straight-edge of a knife or metal spatula.
Inaccurate measurements,even if only slightly
off,can make a difference in results.
●Yeast is always added last. Be sure that the
yeast does not touch the liquid ingredients,salt
or shortening.
4TheBakingPan can be installed in TWO
POSITIONS.Therearenotches on two sides of
therim of the BakingPan. Be sureto have a
notchedsidefacingtowardyou when youputthe
Pan into theovenchamber. PlacetheBakingPan
intotheunitinaleftdiagonalpositionasillustrated.
Using both hands, rotate the Paninaclockwise
directionuntil the notch on the Pan lines up with
thelockarrowonthebackwalloftheoven
chamber. Fold the handle downand click into
place.

Closethe lidand plugintoanoutlet(120 volt).Two
ARROWSwillcomeupin thedisplay windowindi-
catingBASIC BREADTYPE witha REGULAR crust and
12:00AM willflash inthedisplaywindow.Ifyouwish
touse theTIMERtodelay baking,youwillfirst haveto
setthe correcttimeof day.However,if youwantto
startthebreadmakingoperationnow,itisnot neces-
sary tosettheCLOCK.
6To bake a Basic loaf of breadwith a Regular
Crust, simply pressthe START/RESET Button.
However, youcanchooseadifferent setting for your
recipebypressingthe
BREADTYPEbutton
onthepad.Eachtime
youpressBREADTYPE,the
arrowinthedisplaywindow will point
tothenextselection(i.e.RapidBake,Sweet
Bread, etc.)If you areusing a recipethat calls for the
Basic,RapidBake, or Sweet
Bread setting, choose a
crust color bypressingthe
CRUST COLORbutton until the
arrowinthewindow lines up with either
“Regular”or“Dark.”
7PresstheSTART/RESET Buttononce until it
beepsand the red “on”indicatorlight comes on.
Theflashing 12:00 AM willbereplacedby,for exam-
ple,3:50,if you chosearecipefor the BasicBreadset-
ting(regardlessofwhether you chose“Regular”or
“Dark” crust). It willcountdownthe
remainingtimein one-minute intervals
(3:49,3:48, etc.)untilthe breadis done. Whenthe
bakingis complete,severalbeepswill sound to alert
youthat the breadisready and thered indicator light
willbegin flashing. Inaddition, aflashing12:00 AM
willreappearin the display screen.
8ThisBreadmaker is designed with a KeepWarm
functionthatautomaticallybeginswhenbaking
iscomplete. Theredlight will continue to flash for
upto60minutesafterbakingiscompleteandwill
keepbreadwarm duringthat time. Atthe end of the
hour,theKeepWarm cyclewillendandthelight
willremainon constantly, indicating the unit is still
pluggedin. Thebreadshould then be removed as
soonaspossibletoavoidgettingsoggy. You may
remove the BakingPanany time during the Keep
Warm cycle. ToturnofftheKeepWarm feature
beforethe 60 minutes areup, simply pressthe
START/RESET button and hold it until the display
timeclears.
NOTE: The KeepWarm feature does not function for

during the SuperRapidBakesetting) as this may
causethebreadto underbake. Most of the moisture

ovenmitts,grasp the wirehandle with both
handsandturn the Pan to the left until the notch in

Function

Slicing&StoringBread
For best results,allowloaves to cool on a wirerack
15to30minutesbeforeslicing. You may use an
electric knife (such as the Black&DeckerSlice
Right™Electric Knife Model EK300) for even slices.
Otherwise,use a sharp knife with a serrated blade.
For sandwich slices, place the loaf on its side
andsliceacross.
Storebreadtightlycovered(resealablestyle bags or
plasticcontainersworkwell) at room temperature
uptothreedays. Ifweatherishotandhumid,store
intherefrigerator. For longer storage(uptoone
month),placebreadin a tightly coveredcontainer in
thefreezer. Ifyoustorethebreadin the refrigerator,
leaveitouttobring it to room temperature before
serving. Sincehomemadebread has no preserva-
tives,it tends to dry out and become stale faster
thancommercially-made bread.
Leftover slightly hardenedbreadmay be cut into
1/2”(1.27cm)or1”(2.54cm)cubesandusedin
favorite recipesto make croutons,bread pudding,
orstuffing.

Whenreinstallingthe lid, be surethe slots on the lid
arefully inserted into the posts on the hinge of the
Breadmaker. Thiswillpreventdamage when
closingthelid. Ifyou feel resistancewhen you try to
closethelid,stopimmediatelyandrepositionit.
Thelidshouldcloseeasilywithoutanyforcebeing
applied.
BakingPanand MixingPaddle
Boththe Baking Pan and MixingPaddlehave a non-
stickcoatedsurface. Donot use any harsh cleaners
orutensilsontheseparts as scratchingmayoccur.
Overtime,the non-stick surface may change in
colorduetomoistureand steam. This is normal
andhasnoeffectonitsuseorquality.
Remove the BakingPanand MixingPaddle from the
ovenchamberbeforecleaning. Wipetheoutsideof
theBakingPan with a damp cloth. Be carefulnot to
damagetherubber seal under the shaft. NEVER
TOTALLY IMMERSETHE BAKING PAN in water.
YoucanhandwashtheinsideoftheBakingPan
withsoapy water. The MixingPaddleshould be
removed from theshaftandthedepressedarea
underthePaddlecleaned.Ifthe Mixing Paddle is
hardto remove from the BakingPanafter baking, fill
thePanwithhotwaterandletsoakfor30minutes
toanhour.Next, pour out the water,turn the Pan
overandwigglethePaddleloosewhileholdingthe
wingedcouplingonthebottomofthePan.Using a
toothpickorsoftkitchenbrush clean out any dough
leftintheholeofthePaddle.
CAUTION: Noneofthebreadmakerparts are
dishwasher-safe. DONOT placetheBakingPan,
RemovableLid,or MixingPaddlein the dishwasher.
StoringThe Unit
Besuretodry all partsbefore storingand wipe any

Manyingredientsdiffer between Canadaandthe
United States. Cheese,confectioner’s(icing)sugar,
andcornmeal arejust a few ingredientsthat vary
betweenthe two countries. Themajor differenceis
inflour.
Flours
Canadianflours aremilledfromharderwheatsso
breadscan be successfully made fromnational
brandsof both All-Purpose Flour and BreadFlour.
U.S.“All-PurposeFlour”will producepoorresults
andshouldnotbeusedwiththisunit. Inthe U.S., it
isimportant to use “Bread Flour” for tall, even-
texturedloaves.
●Bread flour isprocessed fromhard wheat and is
highintheproteinsubstance called gluten.
Whenmixedandkneaded,theglutenstretches
andincorporatesair bubbles to produce a light,
fine-texturedloaf. The stretchyresilienceof
glutenmakesthiskindofflourmosttolerantto
hightemperatures,altitude, or high humidity.
●Canadian“All-Purpose Flour”iseasy to find
andhasbeenextensivelytestedwiththe
Canadianrecipesincluded in this book with
goodresults. Canadian Bread Flourmayalsobe
usedwithgoodresults.
●Whole wheatand multi-grain flours contain
thebranand germofthegrain. Althoughhigher
infiber,thesefloursare lower in gluten than
breadflour. Rye flour does not contain any
glutenandtherefore,mustbeusedincombina-
tionwithotherflours. Wholewheat, multi-grain
andrye flour typically produce shorter, denser
loaves. Wholewheat flours vary greatlybetween
theUnited Statesand Canada. Besureto
consulttherecipesfor tips on successful whole
wheatbreads. The recipeshavebeendeveloped
andtestedusingnationallyavailablebrands of
flour.
Fat
●Butter,margarine orvegetable shortening are
ofteninterchangeablein most breadrecipes. Fat
addsflavorandtenderness to the dough. Low-
fat(diet) margarines arehighin watercontent
butmay besubstituted withacceptable results
forpeople ona lowfat diet.
Salt
●Inverysmallamounts,salt adds flavor and
controlsthe risingactionoftheyeast,allowing
thedoughtorise evenly. Inhigh altitude areas,
additionalsaltmaybeneededtoimprovebread
results, however, keep in mind that too much
saltmaypreventthe breadfrom rising.
Liquid
●Milk—whole, 1% or 2% fat, skim, buttermilk,or
reconstituted(powdered)drymilk,andwater
arethe most commonly used liquids in bread
recipes. Milk provides a soft crust, and gives
breada velvety texture. Ifyourrecipecallsfor
powderedmilk and youpreferto use freshmilk,
simplysubstitutethemilkforthewaterand
powder. Watermakes a crispercrust. Some
recipescall for juice to be added as a flavor
enhancer.
Sweeteners
●Naturalsweeteners, such as white or brown
sugar,honey,andmolasseshelptheyeastin a
recipeto grow. Sugarserves as food for the
yeast. Withoutsugar, the yeastwillnotgrowand
thebreadwill not rise. Thebalance of sugar, salt,
andyeastis a very important partofthebread
makingprocess. Sweeteners enhance the bread
flavorandthebrowningprocess. If youprefer to
useasugarsubstitute,yourbakingresultsmay
vary with the type and amount of sugar
substituteused.
Yeast
●Yeast isa heat-sensitive plant that feeds on the
sugarindough. Too much heat will kill the
yeast,too little will slowthe yeast action. Check
theexpirationdate to be suretheyeastis fresh.
Therecipesin this cookbook have been tested
withBread Machine yeast. If youpreferto use
TraditionalDry yeast,RapidRise yeast or Quick
Riseyeast,you will have to increaseyeast
amountby1/4teaspoonin your recipe; for
example-ifyourrecipecalledfor1teaspoonof
yeast,increasetheamountto1-1/4teaspoon.

Bread & Dough Ingredients

●Use only fresh ingredients.
●In the U.S.: Use Bread Flour; In Canada: Use
All-Purpose Flour or Canadian Bread Flour.
●Use lukewarm water – not cold water.
●Measure ingredients accurately and level off
dry ingredients with the flat side of a knife or
metal spatula. (See page 8 for measuring
techniques).
●When recipes call for a“lightly floured surface,”
use about 1 to 2 tablespoons flour on the
surface. You may want to lightly flour your
fingers or rolling pin for easy dough
manipulation.
●Recipes referring to a“greased/oiled” bowl call
for about 1 tablespoon oil or soft vegetable
shortening spread on the bottom and sides of
the bowl. You may prefer to use a non-stick
vegetable spray to“grease” the bowl to cut down
on added fats and calories.
●When you let dough“rest” and“rise” according
to a recipe, place it in a warm, draft-free area.
For best results, cover the dough with waxed
paper and a clean, dry towel. If the dough does
not double in size, it may not produce a tender
product.
●Dough may be wrapped in plastic and stored in
a freezer for later use. Bring the dough to room
temperature before using.
Bread & Dough Ingredients
The following test can be used to determine
whether your yeast is stale and inactive:
A) Place 1/2 cup of lukewarm water into a
small cup or bowl.
B) Stir 1 tsp.of sugar into the water then
sprinkle 2 tsp.of yeast over the surface.
C) Place bowl or cup in a warm area and allow
to sit for 10 minutes undisturbed.
D)The mixture should foam and produce a
strong yeast aroma.If this does not occur,
fresh yeast should be purchased.
