SUPER RAPID BAKE/LIGHT Crust or DARKCrust

Thissetting is usedonly to make selected recipesquickly
whetheryou choose a LIGHT orDARK crust. Refertothe
recipesection of this booklet for a complete list of all recipes
thatcanbeusedwiththissetting.This setting cannot beused
successfullyto make breadsotherthan those specified due to
theshorterrising time ofthis cycle.
SWEET/LIGHT Crustor DARK Crust (3:50hours)
Usethis setting forrecipesthat use fruitjuice,large amountsof
sugar, cheese,oradded sweetingredientssuch as raisins,dried
fruit, orchocolate. Bakingtemperature is lowerto prevent
burning.
GRAIN (4:10hours)
Thissetting is usedfor recipeswith significant amounts of
wholewheat or rye flour, oats, or bran. This settinghas a
longerrisecycle andpreheatcycle toallowheavier grains
toexpand. Generally, whole wheat/multi-grainbreadsare
shorter anddenser than Basic orSweetbreads. You cannot
use theCRUSTcolor selections with this setting.
FRENCH/LIGHTor DARKCrust (3:45 hours)
Thissetting is usedfor basic Frenchor garlic French bread.
Seethe Cookbooksection for the recipe. Becauseit uses water
insteadof milk, French breadhas acrispiercrust and softer
centerthan milk-based breads. At approximately2hours and
10minutes into theprogram(the display willreadbetween
1:30and 1:35), thereisa series ofbeeps. Thissignals youmay
takeout the bread,manuallyshape it into a longloaf, let itrise
again,and bake itin an ovenif youprefertraditonalFrench
Bread loaves.
CAKE(1:40hours)
Similartothe BAKE setting,this setting is used fornon-yeast
breadsoftenreferredtoas“Quick Breads” andcakes. Unlike
theBAKE setting, thetemperatureis not adjustable onthis set-
tingand you MUST use theMixing Paddle. Approximately 10
minutesinto the program(thedisplay will readaround1:30),
thereisa series of beeps. This signals you to scrape downthe
sidesof the Panwith a spatulaand stir the mixture. You may
alsoadd ingredients(like nutsor a cinnamon/sugar topping)
atthis time.
BAKE(30 min- 1:30 hours)
Thissetting is forquick breads(non-yeastbreads)and may be
usedwith some cakerecipesbylowering the manufacturer’s
recommendedtemperature settingby50° F (10°C) and
increasingthetime.Some experimentation may be nesessary.
Temperature rangesbetween 300°F - 420°F (154°C -216°C).
You don’t needto use the paddle.This settingis good for frozen
andthawed doughs.
JAM(1:22hours)
Thissetting is usedto cook homemade jams andfruitmar-
malade. Freshor frozenfruitswill haveto be choppedor
processedbeforemeasuring them intothe BakingPan. To
reducesplatterand cleanup, placean aluminum foil“collar”
aroundthe BakingPan after insertingit into the unit.
DOUGH (2:00hours)
Thissetting makes bread-styledough. Doughcan be shaped
tomake pizza, rolls,breadsticks,long loavesor braidsthat
mustthen be bakedin a conventional oven.
DESSERTS(1:39 hours)
This setting is used for a variety of desserts such as apple
crisp, cobbler, or puddings. Most recipes call for some prepa-
ration of ingredients before placing them in the Baking Pan.
Check the Cookbook section for specific recipes and try varia-
tions of your own. Approximately 14 minutes into the pro-
gram (the display will read around 1:25), there is a series of
beeps. This signals you to scrape down the sides of the Pan
with a spatula and stir the mixture. You may also add ingredi-
ents (raisins, nuts, etc.) or toppings at this time.
BreadType Setting Descriptions
HowTo UseYour Breadmaker
Thebreadmaking settings in thisunitwill
combineingredients, knead, and bake breadfrom
start to finish – automatically.
The CAKE and BAKE settings will allow you to use your
breadmaker almost like an oven to make quick breads
and loaf cakes. However, they require some additional
scrape down/mixing manually. The JAM setting
requires some pre-Bake Pan preparation of fruits by
cutting or processing them in advance. However, your
breadmaker will combine ingredients, mix, and boil
jams and marmalades automatically.
TheDOUGHsettingmakes dough for a variety ofrecipes
butyoumustshapeandbake the dough yourself in a
conventionaloven. Todelaycompletion,theautomatic
TIMERmaybeprogrammedtomakebreadwhile you are
atworkorasleep.

NOTE: Theterm,“All-Purpose Flour”for example,is
appliedtotwototally differenttypes of flour
dependingonwhetherit is purchasedinthe U.S.or
Canada. Canadian“All-Purpose Flour”will produce good
toexcellentresultsinthisBreadmaker;whereas American
“All-PurposeFlour”willproducepoorresults.
Most NorthAmericannationalbrandfloursandyeasts
willproducegoodresults. Keepin mind that the recipes
includedherehave been createdbyour Home
Economistsspecificallyforthisautomaticbreadmaker
andmaynotproduceacceptableresultsin othersimilar
breadmakers.
