The Blodgett CombiĆOven/Steamer offers a comĆ
pletely new method of cooking With the Oven/
Steamer you have the choice of two cooking proĆ
cesses: Steam and Hot ir, either
DSeparately
DCombined, or
DIn Sequence
And for easy operation you can choose from three
primary cooking modes:
In the Steam mode you can:
steam reheat reconstitute
stew thaw simmer
blanch preserve braise
poach
In the Hot ir mode you can:
roast bake
grill gratinate
broil
In the two Combi modes you can:
defrost roast rethermalize
reheat bake forced steaming
There are four additional specialized modes to
help you make the most of your time:
Retherm - for perfect reheating
Proofing - Proof and bake all in the same oven
Preheat - in this mode the oven will preheat to
575_F (300_C) for 15 minutes The oven will then
automatically lower to 480_F (249_C) to protect
the advanced electronic components
Cool Down - allows the oven cavity to cool down
rapidly with the door opened

The combination of circulating hot air and steam
in the space saving, high performance CombiĆ
Oven/Steamer leads to improvements in the folĆ

The work process is simplified since products are
prepared on or in steam table āpans āand trays
Food can be cooked, stored, and transported with

Blodgett CombiĆOven/Steamers are quality proĆ

The multiple speed fan, which is guarded against
accidental finger contact, is driven by a quiet and
powerful motor The condenser draws out excess
steam from the appliance Condensation and
waste water, which result during steaming and
cleaning, are continuously drained
The use of high quality insulation impedes excesĆ
sive heat radiation and saves energy
The BCM/BLCM makes it possible to enjoy all of
the advantages of a high quality steamer at the
flick of a switch Fresh steam enters the oven cavĆ
ity without pressure and is circulated at high

OVEN/STE MER OPER TION
The practical oven door, with a viewing window,
has a wide swing radius and handle which can be

Unpacking the Oven
The oven s best handled wh le st ll n ts wrapp ng.
Wherever poss ble, use a roll ng l ft.
1. Roll the l ft under the lower cross tube of the
stand Place a couple of wooden blocks beĆ
tween the cross tube and the l ft.
NOT : To achieve the best possible balance,
roll the lift from the front of the oven or
from the motor side.
NOT : If necessary, the oven can also be
lifted off the stand.
2. Remove the or g nal packag ng from the oven.
Do not remove the v nyl that covers the sta nĆ
less steel surface unt l the oven has been
nstalled. Once the v nyl has been removed,
the surfaces are vulnerable to sharp objects
such as tools.
3. Remove all packag ng mater al that secures
the racks n the oven chamber.

The well planned and proper placement of your

To ensure that the oven functions correctly
when installed, it should be placed upright and
level (horizontally). This is measured at the
front and side edge of the roof. The oven can be
levelled using the adjusting screws on the
stand or on the legs of table models. The height
of the oven should also be adjusted to fit the
trolley for rack.

Plumbing Connections
WATER CO ECTIO
Blodgett BCM/BLCM ovens have two water conĆ
nect ons. Both are located at the back of the un t.
D1 connect on for raw water for the condensat on
jet.
D1 connect on for steam generat on and the
Comb Wash jet n the oven chamber. Must
meet the requ rements apply ng to water supĆ
pl ed to household appl ances.

If the water temperature exceeds 70°F
(21°C), problems with regard to Combi
Optima calibration and cooling of the
oven may occur.
The water connection must be carried out
by an authorized plumber in accordance
with existing local codes.
Clogged up water filters and dirt in the soĆ
lenoid valves are not covered by the warĆ
ranty.
To fac l tate clean ng and serv c ng, the oven
should be connected w th an approved flex ble
3/4" hose. Permanent nstallat ons should be f tted
w th a stopĆtap and a nonĆreturn valve.
If the feeder s connected to the water d str but on
system w th a flex ble hose, th s hose should be VA
approved.
Before connect ng the oven to water, flush the
tubes thoroughly. Connect the oven.
DRAI CO ECTIO
Blodgett ovens are equ pped w th a dra n system
that removes surplus water from the oven chamĆ
ber. Th s may be condensed water from the prodĆ
ucts, or t may occur when the oven chamber s
cooled down w th cold water, or when the oven
chamber s cleaned.
WAR I G!!
Connection must be carried out by an auĆ
thorised plumber, to an open or closed
drain. The drain must never end directly
beneath the oven.
The dra n must be of sta nless steel or an equally
temperatureĆres stant mater al, have a d ameter of
at least 2" (49 mm) and a fall of at least 3° or 5%.

Electrical Connection and Ventilation
ELECTRICAL CO ECTIO
NOT : lectrical connections must be performed
by a qualified installer only.
Before mak ng any electr cal connect ons to these
appl ances, check that the power supply s adeĆ
quate for the voltage, amperage, and phase reĆ
qu rements stated on the rat ng name plate
mounted on the appl ance.
1. The rat ng plate s located on the r ght s de of
the oven.
An approved plug outlet or a safety cutout must be
located close to the oven so that the oven can be
d sconnected dur ng nstallat on and repa r. The
safety cutout must be able to cut off all poles w th
a total d stance of break of at least 3 mm.
All appl ances must be nstalled n accordance
w th Local or Nat onal Electr cal codes.

NOT : Disconnect the power supply to the apĆ
pliance before servicing.

Electric Models

Gas Models
U.S. and Canadian Installations
A power cord (115V un ts only) s suppl ed w th a
plug attached. Plug the power cord nto the deĆ
s red receptacle.

If the supply cord is damaged, it must be
replaced by a special cord or assembly
available from the manufacturer or its serĆ
vice agent.
VE TILATIO
Blodgett BCM/BLCM ovens are equ pped w th an
open/d rect exhaust system that removes surplus
hum d ty from the oven chamber. The exhaust sysĆ
tem has an electr cally operated damper.
The vent lat on motor can be controlled d rectly
from the oven. Th s means that the vent lat on
starts when a program s started and runs for 10
m nutes after the program s completed.
The exhaust tube can be connected to a vent laĆ
t on system. In that case, a spec al extract on funĆ
nel s f tted to avo d suct on d rectly from the oven
chamber. Th s extract on funnel can be ordered
from Blodgett.
If an extract on hood s nstalled n the ce l ng
above the oven, t should project 20" (50 cm) over
the front of the oven.

GAS PIPI G
A properly s zed gas supply system s essent al for

s zed to prov de a supply of gas suff c ent to meet
the max mum demand of all appl ances on the l ne
w thout loss of pressure at the equ pment.
Example:
NOT : BTU values in the following example are
for natural gas.

3. Measure the d stance from the gas meter to
the cook l ne. Th s s the p pe length. Let's say
the p pe length s 30' (9 m) and the p pe s ze
s 1" (2.54 cm).
4. Use the appropr ate table to determ ne the toĆ
tal capac ty of your current gas p p ng.
The total capac ty for th s example s 270,900
BTU. S nce the total requ red gas pressure,
270,900 BTU s less than 375,000 BTU, the
current gas p p ng w ll not have to be nĆ
creased.
NOT : The BTU capacities given in the tables are
for straight pipe lengths only. Any elbows
or other fittings will decrease pipe capaciĆ
ties. For example: a schedule 40 1Ć1/2" ell
fitting has an equivalent capacity of 4.2"
(10.2 cm) of straight pipe. Contact your loĆ
cal gas supplier if you have any questions.

Gas Connections
PRESSURE REGULATIO A D TESTI G
The gas pressure to the appl ance must be rated
for each appl ance wh le the burners are on. A sufĆ
f c ent gas pressure must be present at the nlet to
sat sfy these cond t ons. Refer to the table below
for correct gas pressure.
Each appl ance has been adjusted at the factory
to operate w th the type of gas spec f ed on the ratĆ
ng plate.
Each oven s suppl ed w th a regulator to ma nta n
the proper gas pressure. The regulator is essenĆ
tial to the proper operation of the oven and
should not be removed.
DO NOT INSTALL AN ADDITIONAL REGULATOR
WHERE THE UNIT CONNECTS TO THE GAS
SUPPLY UNLESS THE INLET PRESSURE IS
GREATER THAN 14" W.C. (1/2 PSI) (37mbar).
The oven and ts nd v dual shutoff valve must be
d sconnected from the gas supply p p ng system
dur ng any pressure test ng of that system at test
pressures n excess of 1/2 ps g (3.45kPa).
The oven must be solated from the gas supply
p p ng system by clos ng ts nd v dual manual
shutoff valve dur ng any pressure test ng of the
gas p p ng system at test pressures equal or less
than 1/2 ps g (3.45kPa).
Pr or to connect ng the appl ance, gas l nes
should be thoroughly purged of all metal f l ngs,
shav ngs, p pe dope, and other debr s. After conĆ
nect on, the appl ance must be checked for corĆ
rect gas pressure.
U.S. and Canadian Installations
Installat on must conform w th local codes, or n
the absence of local codes, w th the National Fuel
Gas Code, NFPA54/ANSI Z223.1-Latest dition,
the Natural Gas Installation Code CAN/CGAĆ

Gas Hose Restraint
If the appl ance s mounted on casters, a commerĆ
c al flex ble connector w th a m n mum of 3/4" (1.9
cm) ns de d ameter must be used along w th a
qu ck connect dev ce.
A restra nt must be used to l m t the movement of
the appl ance so that no stra n s placed upon the
flex ble connector. The restra nt should be fasĆ
tened to the base frame of the oven as close to the
flex ble connector as poss ble. It should be short
enough to prevent any stra n on the connector.
W th the restra nt fully stretched the connector
should be easy to nstall and qu ck connect.
The restra nt ( e: heavy gauge cable) should be atĆ
tached w thout damag ng the bu ld ng. DO NOT
use the gas p p ng or electr cal condu t for the atĆ
tachment of the permanent end of the restra nt!
Use anchor bolts n concrete or cement block. On
wooden walls, dr ve h test wood lag screws nto
the studs of the wall.
WAR I G!!
If the restraint is disconnected for any reaĆ
son it must be reconnected when the apĆ
pliance is returned to its original position.
