Quali ied installation personnel are individuals, a
irm, a corporation, or a company which either in
person, or through a representative are engaged in
and responsible or:
DThe installation or replacement o gas piping. The
connection, installation, repair, or servicing o
equipment. Quali ied installation personnel must
be experienced in such work, amiliar with all preĆ
cautions required, and have complied with all reĆ
quirements o state or local authorities having juĆ
risdiction. Installation must con orm with local
codes, or in the absence o local codes, with the
National Fuel Gas Code, NFPA54/ANSI
223.1-Latest Edition, the Natural Gas InstallaĆ
tion Code CAN/CGAĆB149.1 or the Propane InstalĆ
lation Code, CAN/CGAĆB149.2 as applicable.
DThe installation o electrical wiring rom the elecĆ
tric meter, main control box, or service outlet, to
the appliance. Quali ied installation personnel
must be experienced in such work, amiliar with all
precautions required, and have complied with all
requirements o state or local authorities having
jurisdiction. Re erence: National Electrical Code,
ANSI/NFPA 70-Latest Edition and/or Canadian
Electrical Code CSA C22.1 as applicable.
DThe connector must comply with the Standard for
Connectors for Movable Gas Appliances, ANSI
21.69 or Connectors For Moveable Gas ApĆ
pliances CAN/CGAĆ6.16 and a quick disconnect
device that complies with the Standard for QuickĆ
Disconnect Devices for Use With Gas Fuel, ANSI
21.41 or Quick Disconnect For Use With Gas Fuel
CAN 1Ć6.9. Adequate means must be provided to
limit the movement o the appliance without deĆ
pending on the connection and the quick disconĆ
nect device or its associated piping.
NOTE: A fixed restraint must be provided if casters are
used in conjunction with a flexible connector
for movable appliances. This restraint must seĆ
cure the oven to a nonĆmovable surface to elimĆ
inate stress on the connector. If the oven is
moved, the restraint must be reconnected after
the oven is returned to it's normal position.
DELIVERY
All Blodgett Ovens are strapped on heavy wooden
skids, and surrounded by triĆwall cartons to prevent
shipping damage. Each unit has been care ully inĆ
spected and packaged when tendered to the carrier.
Upon delivery o your Blodgett oven:
DInspect the shipping container or external damĆ
age. Any evidence o damage should be noted on
the delivery receipt, which must be signed by the
driver.
DUncrate the oven and check or any concealed
damage. Carriers will accept claims or damage, i
noti ied within 15 days o delivery, and the carton
is retained or inspection.

LOCATION OF THE OVEN
The well planned and proper placement o the oven
will result in long term operator convenience, and
satis actory per ormance. There ore, adequate
thought must be given to the location o the oven
prior to its delivery or installation.
PLEASE NOTE:
DArea must be ree o excessive dra ts.
DArea surrounding oven must be kept clear o comĆ
bustible materials.
DProvisions or adequate air supply or proper
oven operation need to be considered.
DA minimum o 7.5" (19 cm) must be maintained
between the rear o the oven and any combustible
or nonĆcombustible sur ace. A minimum o 6" (15
cm) must be maintained between the side o the
oven and any combustible or nonĆcombustible
sur ace. However, a clearance o 18" (45.7 cm)
rom the oven body's right side and body back
must be available or servicing.
DOven must not be placed on a curb base or sealed
to wall. Either condition will restrict the proper
low o combustion, and ventilation air resulting
in damage to the oven. Yellow loating lames on
the main burners indicate a lack o secondary air.
DOven must be installed with legs supplied by the
manu acturer.
DBe ore making any connections to this oven,
check the rating plate to be sure the oven speci iĆ
cations are compatible with the gas and electrical
services supplied or the oven. The rating plate is
located on the inside o the burner door.
DLocation must provide adequate clearance or air
opening into the combustion chamber.

GAS PIPING
The 1048DD series ovens are rated at 80,000 BTU
per hour (23.4 kW). At ull demand, each oven reĆ
quires 80 cubic eet per hour (2.3 m3) Natural gas or
31 cubic eet per hour (0.9 m3) Propane gas. In order
to achieve the degree o per ormance or which the
oven is designed, a well planned and properly sized
gas supply system is essential. The installation must
con orm with local codes, or in the absence o local
codes, with the National Fuel Gas Code, NFPA 54Ć
Latest Edition or ANSI Z223.1 Latest Edition.
Your local gas supplier should consult the National
Fuel Gas Code or proper sizing and installation o
gas piping. Generally speaking, piping should be
sized to provide a supply o gas su icient to meet the
maximum demand o all appliances on the line withĆ
out undue loss o pressure at the equipment. ThereĆ
ore, the total BTU requirements o the equipment
served and the length o piping rom the meter to the
appliances are major considerations in the proper
design o the gas supply system.
DPiping o less than 3/4" diameter (19 mm) is not
recommended or natural or propane gas installaĆ
tions.
DEach oven has been adjusted at the actory to opĆ
erate on the type o gas speci ied on the rating
plate o the individual unit.
DPrior to connecting the oven, gas lines should be
thoroughly purged o all metal ilings, shavings,
pipe dope or other debris. A ter connection, the
oven should be checked or correct gas pressure.

GAS PRESSURE
This oven has been adjusted at the actory to operate
on the type o gas speci ied on the rating plate.
NOTE: This oven is certi ied or use on gas supply
piping systems having pressure not in excess
o 1/2 psig (13.85" W.C. or 3.45kPa). WhenevĆ
er this oven's g s supply piping system is
tested in excess of 1/2 psig (13.85" W.C. or
3.45kP ), this oven nd its individu l shutĆ
off v lve must be disconnected from the sysĆ
tem. Whenever this oven's gas supply piping
system is tested at 1/2 psig (13.85" W.C. or
3.45kPa) or less, this oven must be isolated

Oven Electric l Connection
This oven is supplied or connection to 120 volt
grounded circuits. All ovens, when installed must be
electrically grounded in accordance with local codes.
In the absence o local codes, with the National ElecĆ
trical Code, ANSI/NFPA 70-Latest Edition and/or
Canadian Electrical Code CSA C22.1 as applicable.
Wiring diagrams are located on the right side access
panel and on the back o the oven.

threeĆprong (grounding) plug for your

be plugged directly into properly grounded
threeĆprong recept cle. Do not cut or remove
the ground prong from this plug.
Ste m Gener tor Electric l Connection
The steam generator has a separate electrical supply
or operation on 208 volt 3F or 240 volt 1F installaĆ
tion.
NOTE: All steam generators will be shipped as 208 volt
3F units. If 240 volt 1F is required, an element
conversion kit must be installed.
Be ore making any connection to the generator,
check the rating label located beside the electrical
connection to assure that the voltage, phase and kW
rating are compatible with the electrical supply.
The steam generator when installed must be conĆ
nected and electrically grounded in accordance with
local codes. In the absence o local codes, with the
National Electrical Code, ANSI/NFPA 70-Latest
Edition and/or Canadian Electrical Code CSA
C22.1 as applicable.
Wiring diagrams are located in the generator control
compartment area.

VENTILATION
A properly designed ventilation system will allow
the oven to unction properly, while removing unĆ
wanted vapors and products o combustion rom the
operating area.
Failure to vent the oven properly will result in operaĆ
tional problems and/or damage to the oven. D m ge
sust ined s direct result of incorrect ventil tion
will not be covered by the m nuf cturer's w rr nty.
Two methods o ventilation are acceptable or this
appliance.
DVia a mechanically driven, canopy type, exhaust
hood.
DVia a direct lue arrangement. Class B type allowĆ
able.
CANOPY TYPE EXHAUST HOOD
The pre erred method o ventilation is the use o a
mechanically driven, canopy type exhaust hood. The
hood should be sized to completely cover the equipĆ
ment it is ventilating, and have an overhang o at least
6 inches (152mm) on all sides, except the side adjaĆ
cent to the wall. The distance rom the loor to the
lower edge o the hood should not exceed 7 eet
(2.2m). All ovens operating under this type o hood,
should be equipped with a dra t diverter as shown.
The capacity o the hood should be sized appropriĆ
ately and have provisions or the adequate supply o
makeĆup air. Ventilating hoods are available in a
wide range o sizes and capacities. Capacity is generĆ
ally expressed in cubic eet per minute (CFM). One
cubic oot o natural gas burned with just enough air
or complete combustion produces eleven cubic eet
o combustion products. In virtually all appliances,
some excess air is used and this volume o excess air
is added to the lue products lowing rom the apĆ
pliance.
In ormation on the proper construction and installaĆ
tion o ventilation hoods may be obtained rom the
Standard or the Installation o Equipment or the
Removal o Smoke and Grease Laden Vapors rom
Commercial Cooking Equipment, NFPA 96ĆLatest
Edition.

DIRECT FLUE ARRANGEMENT
I the installation o a mechanically driven exhaust
hood (canopy type) is impractical, the oven may be
vented by a direct lue. It is essential that the direct
lue be installed as described. Inst lling the flue inĆ
correctly will result in uns tisf ctory b king results,
nd oven d m ge.
The height o the lue should rise 6Ć8 eet (2Ć2.5m)
above the roo o the building, or any proximate
structure. The lue should be capped with a UL listed
vent cap to isolate the unit rom external environĆ
mental conditions.
The direct vent does not have the capability o reĆ
placing air consumed and vented by the oven. It is imĆ
portant that provisions be made to supply the room
with su icient makeĆup air. There ore, it may be necĆ
essary to increase the supply o air entering the room
by means o a small an or grill.
IMPORTANT INFORMATION ABOUT
VENTING AND GAS PRESSURE
The 1048DD series gas ovens are indirect ired. Heat
and lue products rom the burners are used to heat
the top and side panels in the baking compartment.
As a result, improper venting and/or gas pressure can
have a detrimental e ect on the baking characterisĆ
tics o the oven. In most cases, dissatis action with
the per ormance o this oven results rom incorrect
venting or inadequate gas supply rather than a malĆ
unction o the equipment itsel .
The 1048 series oven uses the natural principal o
heat rising as the basic method o ventilation. I the
venting o any 1048 series oven is either restricted or
orced in any way, the baking characteristics o the
oven will be adversely a ected. Examples o orced
venting would include the installation o a an in a diĆ
rect type vent pipe or placement o the oven under a
canopy type hood without the LĆshaped dra t divertĆ
er in place. The use o tees and elbows, long horizonĆ
tal runs, and the lack o turbine type spinners or diĆ
rect vents are examples o restricted venting.
Incorrect gas pressure will have an equally damaging
e ect on the quality o the bake, strong or weak botĆ
toms will almost surely result.
If the oven is not inst lled s described in this m nuĆ
l, proper oper tion c nnot be ssured. D m ge susĆ
t ined s result of improper inst ll tion will not be
covered under the m nuf cturer's w rr nty.

LEG ATTACHMENT
1. Push the oven onto a genie li t with the bottom
o the oven down.
2. Run a 1/2" x 13 tap through the bolt holes in the
corners o the oven bottom.
NOTE: There are three holes in each corner.
3. Attach the legs to the underside o the oven base
rame with the bolts provided. Install the legs
with the locking casters on the ront o the oven.
Install the legs without the locking casters on the
rear o the oven. The correct location, re erĆ
enced rom the ront o the oven, is marked on
the mounting plate o each leg.
NOTE: Hand tighten only. It may be necessary to
adjust the legs when installing the shelf tray
slides.
SHELF INSTALLATION
NOTE: If a DFG is to be installed beneath the 1048DD,
use the top set of holes to attach the tray slides.
1. Use the countersunk Flathead screws to secure
the le t tray slide to the ront and back legs. The
top nylon slide should be located toward the
ront o the oven.
NOTE: It may be necessary to use a power drill to
drive the screws.
2. Repeat Step 1 or the right tray slide.
3. Tighten the leg bolts.
4. Lower the oven onto the casters.
NOTE: You may need to straighten the louvers on
the bottom of the oven.
5. Slide the tray hal way into the tray slides.
6. Insert the white nylon slides under the tray and
into the tray slide channels. Align the tapped
holes in the nylon slides with clearance holes in
the channels.
7. Secure with the #8 x 1/4" slotted pan head maĆ
chine screws provided.

DOOR HANDLE INSTALLATION
1. Remove the handle assemblies rom inside the
oven.
2. Attach the long handle with the curved black
brackets to the oven door using the screws atĆ
tached.
NOTE: Be sure curve of the handle is pointing up.
3. Attach the chrome plated handle to the combusĆ
tion compartment door with the screws atĆ
tached.
DECK INSTALLATION
NOTE: The deck material is heavy. To avoid injury or
damage use 1" x 4" lumber to help slide the
decks into place. DO NOT use shims.
1. Slide the deck insulation into the oven cavity beĆ
tween the deck supports. See igure or proper
con iguration.
NOTE: The ceramic foil side of the insulation
should be facing down.
2. Slide one o the 1" steel bars between each piece
o insulation.
3. Slide the insulation covers over the insulation.
4. Slide the right deck through the door. Be sure
the probe hole is visible on the ront edge o the
deck, near the center o the oven. Rest the deck
on the insulation covers and slide to the rear o
the oven until it drops into the deck support.
Slide the deck to the right.
NOTE: Be careful not to damage the deck probe
during installation.
5. Slide the le t deck on top o the right. See igure
or proper deck orientation. Slide the deck to the
rear o the oven until it is within the deck supĆ
port. Slide to the le t until the deck drops down
into the support.
6. Push the decks together to close the center joint
7. Install the deck probe in the deck. Li t the door
into a horizontal position to allow access.
8. Install the side lue plates on top o the decks and
snug under the liner top.
NOTE: The outer skin of the flue should face into
the oven cavity.
9. Install the rear insulation plate.

10. Pull the deck probe slightly out o the deck.
Install the deck seal between the door and the
rame. Push the probe back in be ore the deck
seal is resting on the deck.
STEAM GENERATOR INSTALLATION
1. Attach the generator bracket to the back o the
right rear leg using the our #8 x 3/8" machine
screws provided. Use the two #10 x 1/2" machine
screws to attach the top o the bracket to the unĆ
derside o the oven.
2. Remove the two screws rom the lower back o
the steam generator. Slide the generator in place
on the bracket.
3. Attach the bracket plate to the bracket with #10
tapping screws. Secure the generator to the
bracket plate with the screws removed in step 2.
4. Connect the red and white wires to the steam
generator.
NOTE: Wiring must be installed by a certified elecĆ
trician.
a. Remove side panel to access the controls.
b. Remove the hole plug in the top o the steam
generator. Insert the wiring conduit rom
the oven into the top o the generator. SeĆ
cure the conduit to the generator.
NOTE: The longer conduit is connected to the
steam generator.
c. Connect the red and white wires rom the
conduit to the terminal block on the upper
right side o the control compartment. The
red wire connects to the black wire. The
white wire connects to the yellow wire.

e. Reinstall the control cover.
5. Install a pressure regulator to the water inlet side
o the steam generator. I not supplied, install a
valve that regulates the pressure to 17Ć25 psi.
GENERATOR DRAIN INSTALLATION
1. Attach the drain pipe assembly to the manual
valve on the generator. Attach the other end o
the drain pipe assembly to the ront right oven
leg using the #8 x 3/8" machine screws provided.
Pipe to a loor drain i possible.
2. Connect the HOT water supply to the generator.
Use joint compound to make a water tight seal.
The use o hot water greatly reduces the need or
uture maintenance.

STEAM PIPING
1. Attach the steam mani old assembly to the back
o the oven using the quick disconnects on the asĆ
sembly.
2. Attach the condenser to the union provided on
the steam mani old assembly.
3. Connect the brown, white and green wires to the
solenoid.
4. Slide the solenoid coil over the solenoid stem on
the steam pipe. Secure with the clip provided.
5. Attach the 3/8" copper steam tube to the valve
assembly on the top o the generator.
6. Attach the other end o the 3/8" copper steam
tube to the top o the condenser.
7. Insulate the steam piping with the kit provided.

8. Attach a drain tube to the condenser 3/8" comĆ
pression itting (not provided).
9. Attach the sa ety pipe assembly to the generator
sa ety relie valve.
NOTE: The safety pipe extends to 17" above the
floor. It may be necessary to change this diĆ
mension. Check local codes for required
length.
10. There is a steam trap located on the bottom o
the condenser. Excess water escapes at the trap
and runs down the drain tube. Place a bucket unĆ
der the tube to collect the water or plumb to an
indirect waste.
COMPUTER CONTROL
1. Remove the our screws rom the plastic spacer
in the right corner o the oven top.
2. Position the computer control on top o the plasĆ
tic spacer.
3. Remove the control cover.
4. Wire the power cord and ground to the terminal
block.
5. Connect the two quick disconnects.
6. Plug in the two thermocouple leads to the matchĆ
ing plugs on the controller.
7. Attach the control to the plastic spacer with the
screws removed.
8. Replace the control cover.

STACKING ON A DFGĆ100
1. Mount the docking bracket to the le t legs o the
1048DD using the #10 tapping screws provided.
See igure.
NOTE: It will be necessary to drill two .156 diameĆ
ter holes in each leg.
2. Attach low pro ile casters to the DFGĆ100 using
the leg bolts provided. See igure.
NOTE: Install the locking casters on the front of
the oven. Install nonĆlocking casters on the
rear of the oven.
3. Push the lue connector into the lue on the botĆ
tom o the 1048DD.
4. Push the DFGĆ100 into place beneath the
1048DD. Align the back le t corner o the
DFGĆ100 to the docking bracket as shown.
5. The lue connector should line up with the lue
on the top o the DFGĆ100.
RESTRAINT CABLE
NOTE: A fixed restraint must be provided if casters are
used in conjunction with a flexible connector
for movable appliances. This restraint must seĆ
cure the oven to a nonĆmovable surface to elimĆ
inate stress on the connector. If the oven is
moved, the restraint must be reconnected after
the oven is returned to it's normal position.
1. Drill two holes in the lower right rear rame o
the oven.
2. Use two bolts to secure the restraint bracket to
the oven rame.
3. Attach the restraint cable to the bracket and the
wall behind the oven.

INITIAL STARTUP
WARNING!!!!
In the event of power f ilure, ll switches
should be turned off nd no ttempt should be
m de to oper te the ppli nce until power is
restored.
In the event of shutĆdown of ny kind, llow
five (5) minute shutĆoff period before tĆ
tempting to rest rt the oven.
Each oven, and its component parts, have been thorĆ
oughly tested and inspected prior to shipment. HowĆ
ever, it is o ten necessary to test or adjust the oven as
part o a normal and proper installation. These adĆ
justments are the responsibility o the installer, or
dealer. Because these adjustments are not considĆ
ered de ects in material or workmanship, they are
not covered by the Original Equipment Warranty.
They include, but are not limited to: adjustment o
the doors, burner adjustments, testing o gas presĆ
sure, and tightening o asteners. No installation
should be considered complete without proper inĆ
spection, and i necessary, adjustment by quali ied
installation or service personnel.
INITIAL OVEN STARTUP
1. Veri y that the manual valve on the gas solenoid
is in the ON position. The gas valve is located inĆ
side the access panel on the right side o the
oven.
2. Turn the manual gas valve on the ront o the
oven to ON.
3. Toggle the POWER SWITCH to ON.
4. Toggle the STEAM POWER SWITCH to ON.
CURING THE DECK
Curing is necessary to remove any moisture within a
new deck. This procedure must be completed be ore
using any new deck. F ilure to cure the deck m y reĆ
sult in d m ge to oven nd injury to the oper tor.
1. Press the arrow keys (4) in the ollowing seĆ
quence enter the cure mode:
a. UP ARROW
b. DOWN ARROW
c. UP ARROW
d. DOWN ARROW
e. UP ARROW
f. DOWN ARROW
2. The display reads CURE. The computer controls
the time and temperature during each stage o
the our hour cure cycle.
