The manufacturer suggests to read this manual carefully.
This equipment is manufactured with first quality material by experienced technicians.
Proper
installation and maintenance will guarantee a reliable service for years to come.
A nameplate fixed to the front or right side of the oven specifies the model number, serial number,
voltage and amperage.
Drawings and replacement parts numbers are included in this manual. The electrical diagram is affixed
in the control panel at the back of the oven.
ATTENTION
DOYON is not responsible for damages to the property or the equipment caused
by personnel who is not certified by known organizations. The customer is
responsible for finding qualified technicians in electricity and plumbing for the
installation of the oven.
You just bought the most advanced oven in the world, "DOYON" technology at it’s best. This oven is
manufactured using the highest quality components and material.
The oven gives a perfect uniform baking with its unique Jet Air convection system. The DOYON oven
is designed with parts that are easy to find.
For your safety, this equipment has been verified by qualified technicians and carefully crated before
shipment. The freight company assumes full responsibility concerning the delivery in good condition of
the equipment in accepting to transport it.

Take care to verify that the received equipment is not damaged before signing the delivery receipt. If a
damage or a lost part is noticed, write it clearly on the receipt. If it is noticed after the carrier has left,
contact immediately the freight company in order that they do their inspection.

INSTALLATION AND SERVICE
Installation and service must be done by specialised technicians. Contact a certified electrician and
plumber for set up.
The oven must be connected to the utility and electrically grounded in conformity to the effective
local regulations. If these are not established, the oven must be connected according to the Canadian
Electrical Code (CSA-C22.1-XX) or National Electrical Code (NFPA 70-XX). Refer to last edition
year for XX. Installation must also allow proper access for service (24 inches each side and back).
The ovens must be installed with a proper ventilation according with the local building code.
A)
Back and sides of the oven: 1 inch.
B)
Top of the oven: a clearance of 12 inches to the ceiling must exist to permit adequate venting.
C)
Floor: 4 inches minimum.
D)
Sides of the oven: do not install other than easily removable equipment for service and
maintenance (not closer than 1 inch).
E)
It is recommended to have a certain length of water pipe, electric cable between oven and
wall to help gain access for service.

INSTALLATION ET SERVICE
L'installation et le service doivent être faits par un technicien spécialisé. Contactez un technicien
spécialisé en électricité.
Cet appareil doit être branché et mis à la terre (grounded) conformément aux règlements effectifs de
votre localité. Si aucune réglementation n'est établie, le four doit être branché conformément au Code
Canadien de l’électricité CSA 22.1-XX ou au Code National de l'Électricité NFPA 70-XX. Référez-vous
à l’année de la dernière édition pour XX. L'installation doit aussi permettre un accès suffisant pour
effectuerle service surl'équipement (24 pouces sur toutes les faces).
Le four doit être installé sous une ventilation adéquate respectant les normes locales.
A)
Arrière et côtés du four : 1 pouce.
B)
Dessus du four : Il est obligatoire d'avoir au moins 12 pouces entre le dessus du four et le
plafond de manière à permettre une ventilation adéquate.
C)
Plancher : Une distance de 4 pouces minimum.
D)
Les côtés du four : Installer uniquement des équipements légers et faciles à déplacer pour être
en mesure d'effectuer l'entretien de l'appareil (1 pouce minimum).
E)
Il est recommandé d'installer une longueur supplémentaire de tuyau d'eau, de câble électrique
entre le four et le mur pour faciliter l'accès au technicien.

Installation
IN GENERAL
Take off the packaging material with care. Take off all the material used for packing and accessories.
If the equipment is delivered with casters, always lock them after installation and use flexible
electrical cable wire and flexible water line hose. The appliance must secured to the building
structure with restraining device to guard against transmission of strain to the electrical cable,
water line and connectors.
1.to the electrician
Electrical supply installation must be in accordance with the electrical rating on the nameplate.
WARNING
The electrician must make sure that the supply cable does not come in contact
with the oven top which becomes hot.
2.to the plumber
This equipment is to be installed to comply with the applicable federal, state or local plumbing
codes.
Connect the steam system (1/4 NPT) to the cold water distribution network.
We highly recommend to use a water softener to eliminate minerals in the water.
We suggest you to use CUNO # CFS6135 (Doyon part number PLF240) or equivalent.
WARNING
Do not adjust the pressure regulator or needle valves; it has been set at the
factory.

INSTALLATION
EN GÉNÉRAL
Ouvrir avec soin l'emballage de votre équipement. Enlever tous les matériaux utilisés pour
l'envelopper ainsi que les accessoires.
Si l'appareil est muni de roulettes, veuillez toujours les bloquer après l'installation et utiliser un
cordon flexible. De plus, l’équipement doit être sécurisé a la structure du bâtiment a laide
d’équipement de retenues (Câble d'acier ou chaine) pour empêcher le conduit d’eau, câble
d'alimentation et les connecteurs de subir des tensions lorsque le four est déplacé.
1.À l'électricien
L'installation de l'alimentation électrique des fours doit être conforme avec la source électrique
spécifiée sur la plaque signalétique de l’appareil.
AVERTISSEMENT
L'électricien doit s'assurer que le câble d'alimentation ne touche pas le dessus du
four à cause du degré élevé de chaleur dégagée par celui-ci.
2.Au plombier
Relier le système de vapeur (1/4 NPT) au réseau de distribution d'eau froide.
Il est fortement recommandé d'installer un adoucisseur d’eau à l’entrée de l’appareil afin d’éliminer
les minéraux dans l’eau.
Nous recommandons la marque CUNO # CFS6135 (numéro de pièce DOYON PLF240) ou
équivalent.
AVERTISSEMENT
Ne jamais changer l'ajustement des régulateurs de pression ou valves à aiguille ils
sont pré ajustées a l'usine.

TOUCH SCREEN OPERATION
OVEN START UP
Turn on the main power switch on right side corner. The controller will power up and display large power button.
Note: If you have JA8XR or the optional over ride feature, turn the selector switch to position 1. See next page for
how use the over ride.
Press the POWER button icon twice, the oven will go ON. The display will turn to Manual mode usage by default and
will start heat to reach the set temperature showing on the display, to change the set point temperature press on the icon
Enter the desire temperature between 75°F to 500°F and press on the icon.
Note that During the first power ON preheat the oven fan will remind on high speed without reversing
cycle mode until reach set point temperature, all fan icon; delay, reversing cycle and fan speed setting
will be effective only after reach set point temperature first time.
The oven we go the desire temperature. When oven reach is baking temperature then, the oven will display READY and
the alarm will beep 3 times. Open the door and load the product in the baking chamber. If desire set the bake time on the
timer to remind when product is ready to unload.
Note: the timer in manual mode is only a reminder this will not control the product bake, if you need to control the
baking use recipe programming function.
To turn the oven OFF, it is recommended to let the main power switch ON and only press the POWER OFF icon
The oven will run on COOL DOWN mode until it reaches 250°F and then, it will automatically turn OFF. At this
moment, the display will show the main power icon button. If the oven not use for long period of time you can turn
OFF the main power switch after the cooldown process.
The timer can be use in the manual screen operation they are reminder timer only, they have no control on the bake. If
you need to use timer to control a recipe.
Press on the timer icon to set desire time and press press icon to start the countdown, to stop or add
minute press on the icon or
POWER FAILURE
When the power comes back, the oven will come in OFF mode automatically. It’s recommended to turn the main
power switch to OFF to avoid parts damage in a case of power surge when power come back

OVER RIDE MODE
The over ride mode gives you the ability to bypass the programmable control and use the oven in
manual mode, in the case that the programmable control malfunctions. The convection fan will not
reverse and can affect the quality of the bake using this mode.
HOW TO USE MANUAL OVER RIDE FUNCTION
1. Turn the selector switch to over ride.
2. Set the mechanical temperature control dial to the desired temperature, when the red indicator light
goes off the temperature is reached and ready to bake.
3. To use the steam you need to press and hold the black manual steam button for the time you need
steam, in over ride there is no preset time.

Manual mode display Icon description:
DEFAULT No fan delay, Recommended to delay fan for frozen cookie dough or liquid muffin or cake mixes to
give time of the product to expand before fan go ON in cycle mode, press on the icon to turn ON or OFF desired fan off
delay time mode.
Select 1, 3 or 5 minutes fan OFF delay.
Shot steam OFF. This create one shot of steam Press on the icon to turn ON the shot steam
Shot steam ON. Press on the icon to cancel before end of the shot steam.
Pulse steam OFF. Press on the icon to turn ON the pulse steam creating moisture during the baking.
Pulse steam ON. Press on the icon to cancel the pulse steam sequence.
Fan speed LOW Recommended for Gentle and light product. Press the icon to toggle between desired speeds.
Fan speed MEDIUM Recommended for small Pastry
DEFAULT Fan speed HIGH Recommended for heavy load & Bread
DEFAULT Fan reversing cycle 1: (2:30 min ON-10 sec OFF) Recommended for Bread and heavy load to create
more fan ON time. Press on the icon to toggle between desired fan cycle time.
Fan reversing cycle 2: (1:30 min ON-25sec OFF) Recommended for Small pastry & cookie product create more fan
OFF time
Fan reversing Cycle 3: will give 1:30 min of air flow with no reversing OFF delay, recommended for any product that
not require fan OFF delay pause in between reversing cycle.
Fan reversing Cycle 4: will give 1:00 min of air flow with no reversing OFF delay, recommended for any product that
not require fan OFF delay pause in between reversing cycle.
Power vent OFF. Press on the icon to turn ON or OFF the power vent
Power vent ON. This function will rapidly exhaust steam in the cavity or cooldown oven temperature faster. Press
on the icon to cancel power vent.

FAN OFF DELAY FUNCTION
By pressing on the FAN OFF DELAY icon, the fan remains OFF for a period of 1, 3 or 5 minutes, if 3 minutes is
selected and after period of time it is change to 5 minutes, it will be 5 minutes total not 8 minutes. The control will
deduct the time from the 3 minutes already use to get total of 5 minutes delay.
To cancel fan off delay, press the FAN OFF DELAY icon, until see.
STEAM FUNCTION
Steam volume is calibrated with the oven cavity temperature, so the amount of water that generate steam will vary with
the oven cavity temperature.
○ Pressing PULSE STEAM icon, the icon logo will turn Green and the shot steam icon will hide during the
pulse is in function, this will create continuous steam injections every 30 second interval to create moisture
in the cavity during baking. If pressed the icon again, it will cancel the pulse steam function.
○ Pressing SHOT STEAM icon, the icon logo will turn green and a single steam injection will inject a preset
calibrate volume of water with oven cavity temperature. Following the steam injection you will have
automatically a FAN OFF DELAY of 30 seconds. If pressed the icon again before end of the shot steam, it
will cancel the shot steam function.
FAN SPEED FUNCTION
You can change the fan speeds. There are 3 different fan speed setting available LOW, MEDIUM and HIGH, Default
speed is HIGH To select a different fan speed press the fan speed icon to select desire fan speed. This function will
creating a different air flow.
FAN REVERSING CYCLE FUNCTION PRESET TIME
4 different Default fan reversing cycles setting available 1 (2.5 min ON - 10 sec. OFF), 2 (1.5 min ON - 25 sec OFF),
3 (1:30 min ON – n o OFF delay) and 4 (1:00 min ON – n o OFF delay). Default fan reversing cycle is 1. To select
a different fan reversing cycle then 1, press the fan reversing cycle icon to select desired fan reversing cycle time.
This function will change the fan reversing time cycle, creating a different air flow volume during the baking.
POWER VENT FUNCTION
This function will rapidly in +/- 10second exhaust steam in the cavity to bake in dry condition or cooldown oven
temperature faster this function need to be cancel manually in manual function mode.

You can select off, pulse or shot steam. If you select pulse you can change the interval and amount. If
you select shot you can change the amount and fan off time after the shot of steam. After the changes
