2-3 Emergency Stop Button
Push the big red push button on the control panel to stop immediately the
operation of all actions.
2-4 Overcurrent Safety Protection Devices
This machine is designed with 2
power-off safety devices to
protect the machine from
overcurrent and short-circuit
current (The Main Power switch
is a fuseless switch, which
constitutes itself a safety
device.)
Once overcurrent happens,
Overcurrent Safety Device 2 will
pop up to stop the power supply.
Push it down to restart the
machine.

III. Water Heating Device
3-1 Water Inlet and Outlet
Underneath the chocolate sink is the
water heating area. Users can inject water
or discharge water with this part. During
the tempering process, if it needs to be
rapidly cooling down, users can discharge
warm water and inject cold water to
accelerate the process.
3-2 Spillway Hole and Water Level Gauge
Precaution: While injecting water, it is
important to notice the indicator on the
WATER LEVEL GAUGE. If the water level
reaches the upper limit, the WATER INLET
needs to be switched off. Although there
is a SPILLWAY HOLE, if the water is
injected in a big volume, the SPILLWAY
HOLE is not enough to discharge
immediately excessive water.

Turn on the HEATING SWITCH

IV. Tempering and Moulding Process
4-1 Turn On the Heating Switch
Turn on the HEATING SWITCH. Once the HEATING INDICATOR LIGHT is on, the
WATER HEATING TEMPERATURE can be set up.
4-2 Set up the Water Heating Temperature
Press on <A/M to get the digital number for adjusting, then press onor to
make the number bigger or smaller. After having the right numbers, press on SET
to confirm the temperature set up.
The CHOCOLATE TEMPERATURE MONITOR only shows the chocolate temperature
without adjustment function.
* Temperature displayed in degrees Celsius (℃).

Adjust the ROTATING PLATE SPEED
4-3 Tempering Process
The chocolate temperature change along with the water tempering process. For
example, the ideal temperature are 50℃, 27℃, and 32℃.
1. Input the water until it reaches the upper limit of the water level gauge. (Input
the warm water would accelerate the process.)
2. Set up the water temperature at 50-70℃and wait for the chocolate
temperature to rise. (There is a temperature difference between water and
chocolate, so you can set a higher temperature for the water.)
3. When all the chocolate is reach 50℃, turn on the water outlet to discharge the
warm water.
4. Input cold water and set up the water temperature at 27℃.
5. When all the chocolate is reach 27℃, set up the water temperature at 32℃.
6. When all the chocolate is reach 32℃, the process of tempering is done.
4-4 Switch On the Rotating Plate to Moulding
Swith on the ROTATING PLATE and adjust the ROTATING PLATE SPEED according to
the necessity of the situation.

Step 1:
Turn off the HEATING switch and the
ROTATING PLATE switch.
4-5 Turn Off the Power
After the tempering and moulding process, turn off the HEATING switch and the ROTATING
PLATE switch. Pull down the MAIN POWER switch located on the back of the
machine. After that, clean the machine.
Step 2:
Pull down the MAIN POWER switch.

V. Procedures of Disassemble, Cleaning and Reassembly
5-1 Disassemble the Injection Device
Loosen up the SCREW circled on the photo. Remove the INJECTION DEVICE.

Remove the SET SCREW
and the fixing piece for
the ROTATING PLATE.

5-2 Disassemble the Rotating Plate
Loosen up the SET SCREW for the ROTATING PLATE circled on the photo.
Removethe FIXING PIECE.
After removing the screw, remove the ROTATING PLATE and pull out the FIXING AXIS.

Loosen the screws and remove
the TEMPERATURE SENSING ROD
5-3 Disasseble the Chocolate Sink
Remove the Temperature Probe.
Loosen up the screws on the fixing stand of TEMPERATURE SENSING ROD,
pull outthe TEMPERATURE SENSING ROD and wipe it clean. Stick it on the side.
Remove the 4 Fixing Screws on the Chocolate Sink.

Take out the Chocolate Sink.
To be able to remove the CHOCOLATE SINK, the SINK needs to be tilted a little to
dodge the support fixed on both sides of the machine.

Positioning the
ROTATING PLATE
5-4 Reassembly Procedures
(Step 1) Reassemble the Chocolate Sink
Tilt the clean Chocolate SINK to install it back on the machine.
(Step 2) Fix up the Chocolate Sink with SCREWS Tighten up
(Step 3) Reassemble the Fixing Axis and the Rotating Plate
Insert the FIXING AXIS aiming at the axial hole and then turn around the AXIS in
order for the locating holes on the end side of the AXIS to find the right position.
The pins have to be inserted in the locating holes to complete theassembly of the
FIXING AXIS.

and the FIXING PIECE.

(Step 4) Fix the Rotating Plate
Screw up and tighten up the ROTATING PLATE and the FIXING PIECE (the flat side
faces on the ROTATING PLATE).

(Step 5) Reassemble the Injection Device
Insert the INJECTIONDEVICE while aiming atthe squared rod located on the side of
the injection area and screw up with the splash guard.

Install the TEMPERATURE
SENSING ROD
(Step 6) Reassemble the Temperature Probe
Install the TEMPERATURE PROBE on the support. Adjust the height of the
TEMPERATURE SENSING ROD to keep it from touching directly the chocolate (a bit
higher than the bottom of the chocolate sink). After confirming the position, screw
up the support to fix up the PROBE to complete the assembly.
5-5 Continue the Next Batch of Chocoalte
After reassembling the parts, the machine can be served to temper another
batch of chocolate.
