from steam. Do not let pot holders touch hot
heat ng elements. Do not use a towel or other
bulky cloth.

b) Do not heat unopened food containers -
Bu ld-up of pressure may cause conta ner to
burst and result n njury.
c) Keep oven vent ducts unobstructed.
d) Use care when using meat probe,
that t does not contact any heat ng elements.
e) Placement of oven racks - Always place
oven racks n des red locat on wh le oven s
cool. If rack must be moved wh le oven s hot,
do not let pot holder contact hot heat ng
element n oven.

3.DO NOT TOUCH HEATING ELEMENTS OR
INTERIOR SURFACES OF OVEN -
Heat ng elements may be hot even though they
are dark n color. Inter or surfaces of an oven
become hot enough to cause burns.
Dur ng and after use, do not touch, or let cloth ng
or other flammable mater als contact heat ng
elements or nter or surfaces of oven unt l they
have had suff c ent t me to cool. Other surfaces of
the appl ance may become hot enough to cause
burns.
4.a) Do not clean door gasket - The door gasket
s essent al for a good seal. Care should be
taken not to rub, damage, or move the gasket.
b) Do not use oven cleaners - No commerc al
oven cleaner or oven l ner protect ve coat ng of
any k nd should be used n or around any part
of the oven.
c) Clean only parts listed in manual.
d) Oven must be n the OFF pos t on before
attempt ng to attach or nstall any accessory.

1. Important notes
1.1 For your safety
You must not operate the appl ance f t s damaged.
The appl ance must only be connected by an
authorised specialist, pay ng attent on to
the relevant regulat ons of the power supply
compan es and the reg onal construct on
regulat ons.
Observe the assembly instructions!
Caution: Fire risk! Do not store any combust ble
objects n your appl ance. When operat ng the
appl ance, only ever leave the nner parts ns de the
cook ng compartment that you actually need.
As the user, you yourself are respons ble for
ma ntenance and proper use n the household.
Only ever operate the appl ance under superv s on.
D sconnect the un t from the water ma ns when t s
not n operat on.
Caution! The appl ance gets hot dur ng operat on.
Keep ch ldren away!
Caution! There s a r sk of njur es f the door s not
closed properly. You could jam and crush your
f ngers and hands.
Caution! Steam may b llow out when you open the
door. If there s steam n the oven, do not reach n
w th your hands! Risk of burns!
Caution! When remov ng the cook ng nsert hot
water may dr p from the oven top. Risk of
scalding! Be careful when remov ng the cook ng
nsert as hot l qu d m ght sp ll. Use heat res stant
oven gloves.
Leads of other electr cal appl ances that are used
n the prox m ty of the cooker must not be jammed
n by the hot oven door.
Do not clean the appl ance w th a steam clean ng
apparatus or w th water pressure – r sk of short-
c rcu ts!
D sconnect the appl ance from the water and
electr c ty ma ns. Sw tch off the correspond ng fuse
and turn off the tap.
Caution! For techn cal reasons the lamp cover
cannot be removed. Lamp must only be replaced
by Gaggenau after-sales serv ce.
Repairs may only be carr ed out by author sed
electr c ans.
Note: the appl ance must not be connected to the
hot water supply.
No warranty claims can be lodged for any
damage result ng from fa lure to observe these
nstruct ons.

1.2 About use
The appl ance s ntended solely for use n the
household and must not be put to any other uses.
Use the appl ance to prepare meals only. It must not
be used to heat up the room n wh ch t s nstalled.
Only ever use the included cooking inserts or
order the spec al accessor es.
Do not place any tems n the oven compartment
that m ght rust. Rusty accessor es w ll lead to further
rust ng n the oven compartment!
Do not use any silver tableware n the cook ng
compartment.
The cook ng compartment may become
d scoloured dur ng prolonged operat on. Th s does
not have a detr mental nfluence on operab l ty of
the appl ance.
Operat on s only poss ble when the door s closed,
otherw se there s a r sk that water w ll spray out of
the appl ance or that hot steam w ll come out.
The steam oven uses unpressur zed steam,
therefore the door can be opened at any t me
dur ng cook ng. To prevent extreme steam from
escap ng when you open the door, you can
condense beforehand. Water may dr p when
open ng the door.
Steam may escape dur ng operat on and when
open ng the door.
The (Heat ng) symbol n the control panel goes
off as soon as the requ red temperature has been
reached.
Turn the “Temperature” control knob (r ght control
knob) to the 0 pos t on after use.
In the event of malfunctions, f rst of all check
the household fuses. If the problem has noth ng to
do w th the power or water supply, please contact
your spec al st dealer or your local Gaggenau after-
sales serv ce.
The door w ndow may fog up at all mo sture levels
(above all at the 100 % mo sture level).
Operat ng no se may occur n all operat ng modes.
Open ng and clos ng of the a r flap causes cl ck ng
no se.
The appl ance r nses automat cally when sw tched
on f t has not been n operat on for a prolonged
period of time or after a prolonged power fa lure
(several hours). Th s removes water that s left over
n the p pes.
The food be ng cooked must not come nto contact
w th the s des or the grease f lter.
At set temperatures below 65°C / 150 °F , the l ght s
sw tched off after a few seconds to ensure that the
halogen lamp w ll not add t onally heat up the oven
compartment. Th s ensures more prec se
temperature coord nat on. The l ght n the oven
compartment s sw tched on aga n for a few
seconds f you turn one of the two control knobs or
f you press a key.
Calibration
(automatic boiling point-adjustment):
the bo l ng po nt of water depends on the baro-
metr c pressure. The barometr c pressure changes
w th the alt tude of the place where the appl ance s
nstalled. Dur ng self-adjustment, the appl ance
adapts tself to the pressure cond t ons preva l ng at
the appl ance’s locat on.
The appliance cannot be operated if it has not
been calibrated!
The appl ance features a descaling display.
When t flashes, th s s an nd cat on that the
appl ance must be descaled. Before commenc ng
operat on, you must enter the water hardness n
your household on the appl ance.

2.3 Accessories / special accessories
As standard, the appl ance comes w th the

3.1 Important notes
Before operat ng the appl ance for the f rst t me,
please pay attent on to the follow ng notes:
Read through these nstruct ons attent vely before
operat ng the appl ance for the f rst t me.
Remove the packag ng from the appl ance and
d spose of t properly.
Pay attent on to the fact that there are accessor es
n the base of the packag ng.
Keep packag ng elements away from ch ldren.
Thoroughly clean the appl ance and accessor es
before us ng them for the f rst t me. Th s w ll
el m nate any “newness” smells and so l ng (see
Chapter 9).
3.2 Calibration
The bo l ng po nt of water depends on the
barometr c pressure at mean sea level.
Dur ng cal brat on, the appl ance s adjusted to the
pressure cond t ons preva l ng at the alt tude where
the appl ance s nstalled.
Recal brate the appl ance manually f you should
move home to a d fferent alt tude (see chapter
ent tled “Opt ons menu” on Page 21).
Every appl ance s subjected to a thorough check
before t arr ves n your home. It s therefore
poss ble that there s st ll water n the appl ance.
Before operat ng the appl ance for the f rst t me,
make sure that the water connect on s properly
secured.
When you operate the appl ance for the f rst t me,
the suggested t me 8:00 appears on the d splay.
You can now choose the requ red t me of day by
press ng the +and –keys. Press the
(Conf rmat on) key to conf rm the entered value.

Important:
the cal brat on process cannot be nterrupted.
Should the cal brat on process be nterrupted by
open ng the door or sw tch ng off the appl ance,
the steam oven w ll not funct on. The appl ance
w ll automat cally start cal brat on unt l the
operat on has been completed.
Recal brat on s not necessary after a power
fa lure.

3.3 What to do, when ...
Proceed as follows:
– Install the appl ance at the requ red locat on (see
assembly nstruct ons).
– Remove all loose parts from the oven
compartment (bak ng tray etc.).
– Close the appl ance door.
– Open the water tap.
– Self-adjustment starts automat cally as soon as
you turn the “Temperature” control knob to any
temperature. Th s takes around 15 m nutes. The
elaps ng t me appears n the d splay. The “CAL”
symbol for cal brat on appears n the d splay.
– An aud ble s gnal sounds after complet on of
cal brat on. The appl ance s now ready for
operat on. “--:--” appears on the d splay. The
(Durat on) and (Cook ng t me) symbols flash
on the d splay.
– Turn the “Temperature” control knob back to the
0 pos t on. The appl ance s now ready for
operat on.

The CAL and 40 °C / 104 °F symbol The temperature n the oven s above 40 °C / 104 °F . Therefore the
flash alternat ng on the d splay. cal brat on cannot take place. The actual temperature appears on
the left of the d splay. The appl ance automat cally cools the oven
below 40 °C / 104 °F and re-starts the cal brat on.
F 61 or F 62 l ghts on the d splay. Check the power and water supply. If these are funct on ng
correctly call the Gaggenau after-sales serv ce.

3.4 Determining water hardness
Water hardness range 4 has been pre-entered on
the appl ance. If the hardness of the water n your
household should dev ate from th s value, the
correct water hardness range (between 1
and 4) must be entered before commencing
operation of the appliance. You can f nd out
the hardness of the water n your household e ther
by consult ng your waterworks or by us ng the
ncluded test str p.
– Run water from the tap for about 20 seconds to
dra n off stale water.
– F ll a glass w th tap water and br efly (no more
than 1 second) d p the test str p nto the water,
mak ng sure that all test po nts are wetted.
– Remove the str p from the water and shake off any
surplus water drops.
– You can read off the result after one m nute.
– If your water conta ns l me, one or more of the test
areas s/are of a redd sh colour and the others
stay l ght or green sh. The number of l ght (green)
areas def nes the r ght water hardness range
sett ng on the appl ance.
The test set must be used even f a water descal ng
system s already nstalled n your household
because, depend ng on the descal ng method, not
all scale-form ng ons are removed.
Please also note that d fferent des gnat ons are
used outs de Germany to descr be the hardness of
water.

3.5 Entering the water hardness
If the hardness of the water n your household
dev ates from the value that s set at the works
(water hardness range 4), you must enter the
r ght water hardness n the opt ons menu for
commenc ng operat on of the appl ance.
Proceed as follows:
– Turn the two control knobs to the topmost
pos t on.
– Press the (Conf rmat on) key and keep t
pressed.
– Turn the “Mo sture level” knob to the r ght.
– Release the (Conf rmat on) key.
– The var ous opt ons appear on the d splay. Turn
the “Mo sture level” control knob to the r ght to
the descal ng pos t on.
– W th the + and – keys, set the water hardness
(between 1 and 4) (F g. 11).
– Press the (Conf rmat on) key.
– To qu t the opt ons menu, turn the “Mo sture”
control knob back up or turn the “Temperature”
control knob.

– Turn the “Mo sture level” control knob to the
mo sture level you requ re.
– Turn the “Temperature” knob to the temperature
you requ re.
When you turn the “Temperature” knob one latch ng
pos t on to the left, the suggested temperature for
the chosen mo sture level appears on the d splay.
100 % – 100°C / 210°F
80 % – 120 °C / 250 °F
60 % – 120 °C / 250 °F
30 % – 165 °C / 330 °F
0 % – 165 °C / 330 °F
When the “Mo sture” control knob s turned, the
mo sture s d splayed for a few seconds.
Switching off:
To sw tch off, turn the “Temperature” knob to the
0 pos t on (F g. 13).
The steam oven l ght ng goes off.
“Temperature” control knob:
The temperature can be set between 30°C / 85 °F
and 230°C / 450°F .
“Moisture” control knob:
You can select the follow ng mo sture levels:
100 %, 80 %, 60 %, 30 % und 0 %

4.4 Operating the timer
The requ red mo sture level and temperature can
be set before and after t me programm ng by
turn ng the “Temperature” or “mo sture level” knob.
As long as one or several symbol(s) n the d splay
flash(es), no nput s poss ble and no value s pro-
grammed or an nval d value has been programmed.
All t me values are entered by means of the
(t mer), +, – and (conf rmat on) keys. Every
nput tr ggers an aud ble and a v s ble s gnal.
If you select a program (e.g. end), but you do not
enter a value, the current t me w ll appear on the
d splay after 20 seconds.
An entered value (e.g. durat on programm ng) must
be conf rmed w th n 20 seconds (Conf rm) key.
Entered values are not stored f they are not
conf rmed.
Press the (Conf rm) key f you w sh to conf rm

Press the + and – keys at the same t me f you w sh
to clear a value.
If you have already programmed a t me value once
(e.g. a durat on) on the appl ance, th s prev ously
programmed value w ll be proposed to you when
programm ng a value aga n.
The longer you press the + or – key when
programm ng a t me, the faster the t me elapses on
the d splay.
After complet on of t me programm ng, the
correspond ng symbol flashes on the d splay. For
example, f you have programmed an end t me, the
(end t me) symbol w ll flash. An aud ble s gnal s
also sounded. Heat ng s deact vated and the oven
l ght ng goes off. You can restart the prev ously
selected mode by press ng any key on the d splay.
You end the bak ng process by turn ng the
“Temperature" knob to 0.
Dur ng a t me programm ng t s poss ble at any
t me to turn the “Temperature” control knob back
to 0. The steam oven w ll then no longer heat. The
prev ously programmed value s reta ned. An
aud ble s gnal sounds after the entered t me has
elapsed.
Every alarm goes off after 3 m nutes.
Note: all t me programm ng funct ons can be
programmed s multaneously.

Setting the time of day
Proceed as follows:

press ng the +and –keys. 08:00 w ll be stored as
the t me of day f you turn one of the control knobs.

Short time
You can program a per od of t me w th the short
t me funct on w thout automat c act vat on or
deact vat on. You can use th s mode of operat on
even when the appl ance s sw tched off as an egg
t mer, for example. The range that can be set s
between ten seconds (00:10) and 23.59 hours
(23:59)
Proceed as follows:
– Press the +key. The short t me symbol flashes
(F g. 16).
– The entered value appears on the d splay, wh ch
you can mod fy by press ng the +or –key. The
t me un t symbol l ghts up.
– Press the (Conf rm) key to conf rm the entered
value.
– The elaps ng t me s d splayed.
Note: f noth ng s entered for 5 seconds, the short
t me starts even f the key (Conf rm) s not
pressed.
Once the short t me has elapsed, an aud ble s gnal
sounds and the (Short t me) symbol flashes on
the d splay. The s gnal goes off when you press any
key. The short t me rem nder can be sw tched off at
any t me by press ng the +and –m nus keys at the
same t me.
Elapsing timer
Proceed as follows:
– Press the –key (F g. 17).
– The t me, beg nn ng at 00:00, s d splayed
(max mum d splay: value 12 hours).
Thus, you can cont nuously d splay the elapsed
cook ng t me w thout programm ng automat c
deact vat on.
When you press the –key aga n, the t me s
sw tched off.

The appl ance s operated for a spec f c per od of
t me. The range that can be set s between one
m nute (00:01) and 23 hours and 59 m nutes (23:59).
Proceed as follows:
– Press the (T mer) key once. The (Durat on)
symbol and the (Cook ng t me) symbol flash on
the d splay. Dashes appear on the d splay ( .e. no
value programmed).
– Press the +or the –key to set the requ red
durat on.
– Press the (Conf rm) key to conf rm the set
value. An aud ble s gnal s sounded. The
(Cook ng t me) symbol l ghts up on the d splay.
– A s gnal s sounded after the programmed
durat on has elapsed. At the same t me, the steam
oven sw tches off automat cally.
– By press ng any key, you can sw tch off the s gnal
and heat ng w ll start aga n. Turn the temperature
selector sw tch to 0 to end the operat on.
Clearing incorrectly programmed values:
– Press the (T mer) key once.
– Press the +and – keys at the same t me.

The end t me s d splayed automat cally f you

Every other t me you program a durat on, the value
programmed last s proposed to you when you

The appl ance sw tches off automat cally at a t me
that you have chosen. The start ng po nt s the t me
of day set on the appl ance.
Proceed as follows:
– Press the (T mer) key tw ce. The (End) and
(Cook ng t me) symbols flash.
– Press the +or –key to set the requ red t me. You
can choose any sw tch-off t me w th n a per od of
24 hours.
– Press the (Conf rm) key to conf rm the entered
value. An aud ble s gnal s sounded. The
(Cook ng t me) symbol l ghts up on the d splay.
After the set t me has elapsed, the (Cook ng
t me) symbol flashes and an aud ble s gnal s
sounded.
By press ng any key, you can sw tch off the s gnal
and heat ng w ll start aga n. Turn the temperature
selector sw tch to 0 to end the operat on.
Programming a duration and an off time
Th s mode enables you to start and end bak ng and
cook ng n your absence.
Proceed as follows:
– Enter a requ red durat on (see page 18).
– Press the (Conf rmat on) key.
– Enter the requ red sw tch-off t me (see above).
– Press the (Conf rmat on) key.
The automat c mode becomes act ve as soon as
the sw tch-off t me s programmed and you have
pressed the (Conf rm) key.
