Having families ourselves, we developed the Instant Duo EvoTM
Plus to allow busy families and professionals alike to cook healthy,
delicious meals more easily and in less time.

Initial Set-up
• Read all Important Safeguards in the included Safety, Maintenance and Warranty booklet before use. Failure
to do so may result in property damage and/or personal injury.
• Only use the Instant Pot Duo Evo Plus lid with the Instant Pot Duo Evo Plus pressure cooker. Using any other
pressure cooker lids may cause injury and/or damage.
• Follow Care and Cleaning instructions in the included Safety, Maintenance and Warranty booklet for washing
the cooker before first use.
• Remove all packaging material from in and around the cooker, and verify that all parts are accounted for.
• Place the cooker on a stable, level surface, away from external heat sources.
• Do not remove safety warning stickers from lid, serial number from bottom, or rating label from back of
cookerbase.
CAUTION Never use the cooker on a hob. Do not place appliance on or in close proximity to a hot gas or electric burner, or a hot oven. Heat from
an external source can cause re, lead to a serious injury, and damage appliance.

Bottom of Lid
Locks the lid in the closed position when
the cooker is pressurised to prevent
accidental opening of the lid.
Locking Pin
Keeps the float valve in place
and assists in pressurisation.
Must be installed before use.
Silicone Cap
Prevents food particles from coming
up through the steam release pipe,
which assists with pressure regulation.
Must be installed before use.
Anti-Block Shield
After closing the lid, the sealing ring creates
an airtight seal between lid and cooker base.
Must be installed before use.
Sealing Ring
Holds the sealing ring in place.
It should be centred in the lid and
an even height all the way around.

Open and Close Lid
When cooker is plugged in, it will play a jingle when lid is opened and closed.
Open Close
Open: Grip handle and turn lid anti-clockwise
until on lid is aligned with indicator on
therim of cooker base. Lift lid up and off
cooker base.
Close: Grip handle and align the on lid
with indicator on rim of cooker base. Lower
lid into track then turn clockwise until it stops.
The quick release switch automatically resets
to Seal when the lid is closed.
Note: Always check lid for damage prior to cooking.
Note: The cooker will not operate if the lid is not properly in
place. Ensure the lid is fully closed before attempting
to operate the cooker.
WARNING Only use the Instant Pot Duo Evo Plus lid with the Instant
Pot Duo Evo Plus pressure cooker base. Using any other
pressure cooker lids may cause injury and/or damage.

2Check Sealing Ring and Sealing Ring Rack
Ensure the entire sealing ring is snug behind the sealing ring rack.
Note: An extra sealing ring is included with your cooker. Use one for sweet dishes and one for savoury.
Only one sealing ring should be installed when using your cooker.
Replace your sealing ring every 12-18 months or when deformation or damage is noticed.
CAUTION Always check for cuts or deformations in sealing ring prior to cooking. Only use authorised Instant Pot sealing rings.
Failure to follow these instructions may cause food to discharge, which may lead to personal or property damage.
CAUTION Sealing rings may stretch over time. Do not use a stretched or damaged sealing ring. If puckering occurs,
replace sealing ring.

3The Float Valve
When the oat valve is popped up, this indicates that the cooker is pressurised.
When it is lowered into the lid, this indicates that the cooker is depressurised.
Do not discard oat valve or silicone cap.
Refer to Venting Methods in this booklet for information on releasing pressure.

WARNING While oat valve is up, contents of cooker are pressurised. Do not attempt to remove lid. Refer to Venting Methods
section in this guide for information on releasing pressure. Failure to comply with this instruction could cause injuries or
property damage.

4Remove and Clean Inner Pot
Remove inner pot from cooker base and wash with hot
water and washing up liquid before rst use.
Wipe outer surfaces of inner pot and heating element to
ensure they are dry and free of food debris. Failure to do
so may damage the cooker.
Always place inner pot into cooker base before cooking.
Food and liquid must not be placed in cooker base.
Note: Always check inner pot for dents or deformations prior to cooking.
CAUTION To avoid risk of personal injury and/or
property damage, do not pour food or
liquid into cooker base.
CAUTION The inner pot is an integral part of product
safety. Always use an authorised Instant
Pot inner pot made for this model when
cooking. Do not use a previous model of
inner pot in the Duo Evo Plus cooker
base. Doing so may cause personal
injury or property damage.
WARNING Do not ll the inner pot higher than the “Max PC Fill”
(Pressure Cooking Maximum), as indicated on the
inner pot.
Exercise extreme caution when cooking and venting
food such as stewed apples, cranberries, pearl
barley, oatmeal/porridge, split peas, noodles, etc., as
these foods may foam, froth or spatter, and may clog
the steam release pipe and/or steam release valve.
Do not ll the inner pot higher than the “Half Fill” line
when cooking these foods.

Venting Methods |
Venting Methods
Once cooking is complete, there are 2 methods to release pressure:
Natural Release (NR)
• Leave the quick release switch in the Seal position. The cooker
dissipates heat so pressure releases naturally over time.
• This method must be used when cooking food such as soups, stews
or chilis, as well as food that expands, such as beans and grains.
Note: Depressurisation time will vary based upon volume of food and liquid.
May take 10-40 minutes or longer.
Quick Release (QR)
• Move quick release switch from Seal to Vent. Do not place hand over
steam release cover. Steam is released continuously through top of
steam release valve.
Note: It will be loud!
• If spatter occurs, move the quick release switch back to Seal and try
again after a few minutes.
If spatter continues, use NR to vent remaining pressure.
CAUTION Float valve will drop when cooker has depres-
surised. Do not touch the oat valve while the
cooker is pressurised. Do not attempt to remove
the lid while the cooker is pressurised.
WARNING
Do not lean over or
touch the steam release
assembly.
Do not place unprotected
skin over the steam
release assembly.
Do not cover or obstruct
the steam release valve
or cover.

Initial Test Run (Water Test)
1. Remove inner pot from cooker base and add 750 ml of
water to inner pot.
2. Insert inner pot into cooker base.
Connect power lead to a 220-240 V power source.
Display indicates OFF.
3. Align on lid with indicator on cooker base.
Lower lid into track, then turn lid clockwise until a
jingle sounds.
Quick release switch automatically resets to Seal
when the lid is closed.
4. Select Smart Programme: Pressure Cook.
5. When Custom flashes, press dial to select it.
Note: Turn the dial to scroll through pre-set cooking times.
When cooking time flashes, turn the dial anti-clockwise
to adjust the cooking time to 00:05 minutes.
Note: The Instant Pot will save any customisation made to cooking
time or temperature.
6. Press Start to begin. Display indicates On.
Cooker begins Pre-heating.
7. Once pressurised, Cooking begins.
Display changes from On to cooking time countdown.
8. When the Smart Programme ends, cooker begins
Keep Warm.
9. Move the quick release switch to Vent.
Steam release valve will release a continuous stream of
steam. CAUTION Steam is hot.
10. Float valve will drop when pressure has been fully released.
11. To open, turn the lid anti-clockwise until a jingle sounds.
12. Discard water and dry inner pot.
13. Start cooking!

QuickCoolTM |
QuickCool™
The Duo Evo Plus lid is equipped with QuickCool™ technology which,
when paired with the QuickCool™ Tray*, allows you to release pressure
naturally up to 70% faster.
To remove the QuickCool™ protective cover: Grip the tab, push it
towards the lid handle and pull up, then pull the cover towards you and
off. Set aside.
Add ice to the QuickCool™ Tray or add water and freeze the tray, then
position the tray on the exposed metal of the lid. Wait for the oat valve
to drop into the lid, then remove the QuickCool™ Tray and open the lid.

CAUTION The lid will be hot during and after cooking. Do not touch the exposed metal with bare skin.

Dial Turn the dial to scroll through options, and press to make a selection.
Cancel Press to stop a Smart Programme at any time. Cooker goes back to Standby and displays
OFF.
Delay Start Postpone cooking for up to 24 hours. Select a Smart Programme and if desired, adjust the
cooking time, then press Delay Start to turn the setting on. Use the dial to adjust the number
of hours before cooking will begin.
Keep Warm Setting is on by default on Pressure Cook, Slow Cook and Rice/Grain Smart Programmes.
Once a Smart Programme is selected, press Keep Warm to turn the setting off.
Sound On / Off When in Standby (OFF), press and hold dial for 5 seconds. When sound icon ashes, turn
dial to adjust sound on or off.
Temperature Units: °F
to °C
When in Standby (OFF), press and hold dial for 5 seconds. Turn dial clockwise until
temperature icon ashes. When temperature icon ashes, turn dial to adjust
between°F and °C.
Press and hold dial for 5 seconds to conrm selection.
