combinesthebestoffourcookingmethods:conventionalbakingor roasting,convection
baking, convectionroasting, and broiling,in a self-cleaningoven.
TheJenn-Airconvectionovenisactuallya conventionaloventhat circulatesheatedair
within the oven. As both bake and broil heating elements cycle on and off with the
thermostat,a fan keeps the heated air circulating around the food. The constantly
recirculatingheatedair in the convection oven stripsaway the layerof cooler air that
surroundsfood. Consequently,manyfoods cookmorequickly. Distributedheatmakes
multiplerackcookingpossible.Convectionroastedmeatsretaintheirnaturalflavorand
juicinesswith less shrinkage than conventionalroasting.
Beforeyou begincookingwith your new oven,pleasetake a few minutesto read and

Readbefore operatingyour oven
All appliances - regardless of the manufacturer- have the potentialthrough
improperor careless useto create safety problems. Thereforethe following
safetyprecautionsshouldbe observed:
1. Besureyour applianceisproperlyinstalledandgroundedbya qualified
technician.
2. Neveruseyourapplianceforwarmingor heatingthe room.
3. Childrenshould notbe leftaloneor unattendedin area whereappliance
isin use. They shouldneverbe allowedto sit orstandon anypartofthe
appliance.
4. Wearproperapparel. Loose-fittingorhanginggarmentsshouldneverbe
wornwhile usingthe appliance.

containerto burstand resultin injury.
11. Keepovenventducts unobstructed.
12. Alwaysplaceovenracksindesiredlocationwhileoveniscool. Ifrackmust
be moved while oven is hot, do not let potholder contact hot heating
elementin oven.
13. Donot cleandoorgasket. The door gasketisessentialfor a goodseal.
Care shouldbetaken not to rub,damage, ormovethe gasket.
14. Do not useoven cleaners. No commercialoven cleaner or oven liner
protectivecoatingofanykindshouldbeusedinor aroundanypartofthe
oven.

Chimes vs.Beeps
• A chimesound isused todesignatetheend ofatiming orcooking operation.
• Abeep soundwill be heardwhen any padis touched. A series of short beepsare used to
designateanincorrectentry,door isopenwhensetfor aself-clean,probeneedstoberemoved
andafault code.
End ofCycle Chimes:
• The endofcycle chimesis four shortchimes followedby"reminder" chimes for a specified
lengthoftime, untilyoucancelthatfunction. Forthe Timerfunction, therearetwo"reminder"
chimes every 30 seconds for five minutes. For the Timed Cook, functions there is one
"reminder"chime everyminutefortenminutes. To cancelthese"reminder"chimes,touchthe
appropriatepad again (eitherthe Timer Pad or Cook Time Pad). You may alsotouchthe
CancelOff Padtocancelthe"reminder"chimes,butitwillalsocancelallother ovenfunctions.
• Ifyouwouldliketoeliminateallthe "reminder"chimesentirely,touchand holdtheCancel Off
Pad fortwelveseconds. (Thiswill not eliminete the initial fourshort chimes).
• Toreturq the "reminder"chimes,touchand holdthe Cancel Off Pad for twelveseconds.

To set oven on Bakeor ConvectBake or Convect Roast
1.Placeoven racks on proper rack positions•(See page 9.)
2,TouchBakePad or Convect Bake Pador Convect Roast Pad.
Indicator Words BAKE or CONV BAKE or CONV ROAST will flash and three
dashes will be shown.
Note: if more than five seconds elapse between touching a pad and touching a
numberpad, Displaywill returnto previous Display.
3. Touch the appropriate number padsfor desired oven temperature.
Allowabletemperature range is 100° to 550°F. After five seconds the oven will
begintopreheat• The indicatorWords ON, PREHEAT,and eitherBAKEor CONV
BAKE or CONV ROASTwill appear in the Display. The temperatureshown will
be 100° or the oven temperaturewhichever is higher.
Example; If at 10 o'clock youset the ovenfor 350°for convect baking,after five
seconds the Display will show:
Duringthepreheat,theDisplaywillshow a risein 50incrementsuntil programmed
temperatureisreached.Whentheovenis preheated,theovenwillchime,theON
and PREHEAT Indicator Words will go off, and programmed oven temperature
will remain in the Display.
Note:Oven will preheat for approximately 7 to 11 minutes.
Important:Whenever ON appears in the Display, the oven is heating•
To recalltemperature setduring preheat: Touch the appropriateBakePador
ConvectBakePadorConveetRoastPad. Temperaturewillbebrieflydisplayed,
thenwill automaticallyreturnto on-goingprogram.
Tochange temperatureset:TouchappropriateBakePadorConvectBakePad
or Convect Roast Pad and theappropriatenumberpads for thenewdesired
temperature.
Note:If youareloweringthetemperaturebelowthecurrentoventemperature,the
Indicator Words PREHEAT and ON will appear briefly in the Display and the
preheatchime will sound. Then, the Displaywill show programmedtemperature
and indicator word BAKE or CONV BAKE or CONV ROAST only.
4. TouchCancel Off Padto turn ovenoff at end of baking. The ovenwill continue
operating untilthe Cancel Off Pad is touched.

Therack positionsnotedare generallyrecommendedforthebest browningresultsand
mostefficient cooking times. For manyfood items, excellentresults canbe achieved
whenusingoneofseveraldifferentrackpositions. Refertobakingandroastingsections
for recommendationsfor specificfoods.

Twoflat racksand oneoffset rackwerepackagedwith youroven.Theuseof theoffset
rackis denotedin the list belowand the chartsas an "o" after the rack number.Note

When electrical power is supplied or after power interruption, the last clock time
displayecLbeforepowerwas interrupted will flash. Timewill advanceand continue to
flash until clock is reset.

Important: This intervalTimer can be usedto remindyou when a period, up to11
hoursand 55minutes,expires. It canbe usedindependentlyofanyother ovenactivity

heating.
3. Touch Cook Time Pad.
Indicator Words COOKTIME will flashand Display will show "0 HR:00".
4, Touch the appropriatenumber pads to entercooking hours in fiveminute
increments. Hours areto left ofcolon and minutes toright ofcolon.(Allowable
rangeis5 minutesto 11hoursand 55minutes.)Example: Ifcookingtimeselected
for the oven is 2 hours and 30 minutes,the Displaywill show:
After five seconds, the timeof day returns to the Display.Important:Oven will
preheat for approximately 7 to 11minutes.At end of programmedCook Time,
oven will shut off automatically; retained heat will continue to cook food. Clock
controlled cooking is not recommendedfor bakeditems that requirea preheated
oven, such as cakes, cookies, pies, breads. For these foods, place food in
preheated oven,then useTimer to signal end of baking time.
At the end of programmedCook Time,the oven will shutoff automaticaJlyand a
"chime"willbe heardfourtimes and"End"willappear intheDisplay. If ovenisnot
cancelled,"End"willremainin theDisplayandtherewillbeonechime everyminute
for ten minutes.

IndicatorWords STOPand TIME willflash.Displaywill show the calculated
stoptime basedoncurrenttime ofdayand cooktime. Note WW27438Owners:
Theappropriateletter (U- upperoven; L - toweroven)and OVENwillalso flash.
6. Touch the appropriatenumberpads to enter desiredstop time.
A stop time canonlybe acceptedfor laterinthe day. Note: Sincefoodcontinues
to cook ifleft in theoven, it issuggestedthat the clockcontrolsbe usedprimarily
tostarttheovenwhennooneisinthekitchen. Provisionsshouldbemadeto have
the food removed as soon asthe chime hassounded.
Example: Ifat 10o'clockyousettheovenfor350°convectionbakingand 2 hours
and 30 minutescooking time, the calculatedstop time would be "12:30". The
Displaywould show:
If you want the stop time to be 1 o'clock,touch the number pads "1,0,0". Five
secondslater, the Displaywill briefly show the start time:

Attheendofthedelayedperiod,theDELAYIndicatorWordwillgooffandtheoven
willbeginto heat. 100°will be shown. Asthe oven heats,the Displaywillshow
a rise in incrementsof 5° until programmedtemperatureis reached.
Atthe end of programmedCook Time,the ovenwillshut off automaticallyand a
"chime"will be heardfour times and "End"will appear in the Display. If oven is
notcancelled,"End"will remainin the Displayand therewill be one chimeevery
minutefor ten minutes.
IMPORTANT
• NoteWW27430Owners: Clockcontrolledbakingcanbe usedwithonlyoneoven
ata time. To program,firstsetthe bakeor convectbakeor convectroastfunction
forthedesiredoven,thenset thecooktime. If one ovenisset forclockcontrolled
baking,theotherovencannot be set to self-clean.
• To recall time function programmed:Touch theappropriatetime pad.
• To canceltimed function only: HoldCookTime Pad forfourseconds. This will
onlycancelcook time and stoptime, notprogrammedbake mode.
• If more thanfive secondselapsebetweentouching a functionpad and touching
appropriatenumberpads, the oven is not set and Displaywill returnto previous

•Whencooking foodsfor the firsttime in yournewoven, use recipecooking times
and temperaturesas a guide.
• Use tested recipesfrom reliable sources.
• Preheattheoven onlywhen necessary. Forbaked foods that riseand for richer
browning,a preheatedovenis better. Casserolescan be started in a cold oven.
Preheatingtakesfrom7to 11minutes;placefoodinovenafter PREHEATIndicator
Wordcycles off.
• Arrange ovenracks beforeturning on oven. Follow suggested rackpositions on
page 9 and in various bakingcharts.
• Allowabout Ito IV2inches ofspace betweenthe ovensidewalls and panstoallow
proper air circulation.
• Whenbakingfoods in morethanone pan, placethem on opposite cornersof the
rack. Staggerpans when baking on two racks so that one pan doesnot shield
anotherunless shieldingis intended. (See above left)
• To conserve energy, avoidfrequent or prolonged door openings. At the end of
cooking,turn oven off before removingfood.
• Alwaystestfordooeness(fingertip,toothpick,sides pullingawayfrom pan). Donot
relyon time or brownnessas only indicators.
• Usegood quality bakingpans and thesize recommendedinthe recipe.
• Dull,dark,enameledorglasspanswillgenerallyproduceabrown,crispcrust. Shiny
metal pans producea light, goldencrust.
•Frozenpiesinshiny aluminumpansshouldbe bakedon acookiesheet on rack2
or be removedto a dull or glass pan.
• Ifedgeofpiecrustbrownstooquickly,folda stripoffoilaroundrimofcrust,covering
edge. (Seeaboveright.)
I NOTE: A coolingfanwilloperateduringallcookingmodes.Thefanmayalsocontinue
to operateafter the ovenis turned off untI the ovenhas cooed down.

Convect Baking R_mmendations
• Use convectionbaking for breads, cakes, cookies, and pies.
• As a general rule, when using recipes or prepared mixes developed for a
conventional bake oven,set the oven temperature 25°F lower than the recipe
recommendedtemperature. Timeswill be similarto or a few minutes less than
reciperecommendedtimes. Thechartonpage15comparestimesandtemperatures
of many bakedfoods. Usethis as a reference.
• Forbetterbrowning,placecookiesheetsand bakingpanslengthwise,sidetoside
on the rack.
• Cookiesheetsshouldbewithoutsidesandmadeof shinyaluminum. Thebestsize
to useforcookiesheets is 16"x 12"or smaller.

Forbestresults,bakefoodsonone rackata timeasdescribedinthis manual.However,
very good resultscan be obtainedwhen bakingquantitiesof foods on multiple racks.
Quantitycooking provides bothtime and energysavings.
Convect Bake is suggested for most multiple rack cooking, especially three rack
cooking,becausethecirculatingheatedair resultsinmoreevenbrowning. Fortwo rack
cooking,theconventionalbakeovenprovidesvery goodbakingresultsespeciallywhen
panscan be staggered,such aswith layercakes and fresh pies.
Many foods can be preparedon three racks at the same time.These are just a few
examples: cookies,cupcakes,rolls,biscuits,muffins,pies,pizzas,appetizers,and
snack foods.
To obtain thebest results in multiple rack cooking,follow thesesuggestions:
• Usetemperatureand times in this manualas a guideforbest results.
• Fortwo rackbaking,rackpositions#20and4 arebestfor mostbakedproductsbut
positions#2and 4 alsoprovideacceptableresults.
• Forthreerackbakingusepositions#1,3o and4. Oneexceptionispizza.(Seepage
21.)
• Sincefoodson positions#1and 4willusuallybedonebeforefoodson position#3o,
additionalcooking time will be neededfor browningfoods on the middlerack. An
additional minute is needed for thin foods such as cookies. For foods such as
biscuits,rolls,ormuffins,allow 1to2 moreminutes. Frozenpiesandpizzas,which
shouldbe bakedon a cookie sheet, need about2 to 4 more minutes.
• Staggersmall pans, such as layer cake pans,inthe oven.
• Frozenpiesin shinyaluminumpansshouldbeplacedoncookie sheetsand baked
on rack positions#1, 30 and 4.
• Cookiesheetsshouldbe placedlengthwise,sidetoside, infrontofthefanfor more
even browning.
• Ovenmealsare recommendedfor energyconservation.Userackpositions#1 and
30 or #2o and 4 andConvect Roast.

•Preheatingis not necessary.
•Foropenpanroasting,placemeat orpoultryon theslottedportionofthetwo-piece
panincludedwith the oven. Donot addwater to the pan.Useopen pan roasting
for tendercuts ofmeat. Lesstendercutsof meatneedto be cookedby moistheat
in a covered pan.
• Forbest results,a meatthermometeror probeisthemostaccurateguidetodegree
of doneness. Thetipofthethermometeror probeshouldbelocated inthethickest
part of a roast, not touching fat,bone,or gristle. For turkeys and large poultry
products,insertthetipofthethermometerorprobeintothethickestpartoftheinner
thigh.
•Placeroastfat side up to allow self bastingof meat during roasting.
•Since meats continuetocook after being removedfrom the oven, remove roast
from oven when Jtreaches an internaltemperature about 5 degrees below the
temperature desired.
•Forless loss ofjuices and easiercarving,allowabout 15 minutes"standingtime"
after removing meat from oven.
•Forbestresultsinroastingpoultry,thawcompletely. Duetothestructureofpoultry,
partially thawed poultrywill cook unevenly.
•If preferred,tender cutsof meat can be roastedin the conventionalbakeoven by
following the general recommendationsgiven above. However, meatswill roast
more quicklyin the convect oven usingConvect Boast.
• Conventionalbake isbest for lesstendercuts of meatthat require a longer,moist
heatmethodofcooking. Followyour recipefortimesand temperaturesforcovered
meats.
•Meatscookedinovencookingbags,dutchovens,or coveredroastingpansarebest
cooked in theconventionalbakeoven usingtheBake Pad.
• Use meat roasting charts in standard cookbooksfor recommendedtimes and
temperaturesfor roasting in a conventionalbake oven.
JNOTE: A cooling fanwill operate during all cooking modes. Thefan may also
down.C°ntinueto operate after the oven is turned off unti the oven has cooed

• Tender cuts of meat and poultry can be roasted to a rich golden brown in the
convectionoven. Followgeneralrecommendationsfor roastingand use¢onvect
Roast.
• Refer to convection meat roasting chart for recommendedcooking temperature
and time. The chart can serve as a guide to helpplan mealserving time.
• Minutes per pound will vary according to the size,shape,quality,and initial
temperatureofmeatasweltas t_eelectricalvoltagein yourarea. Timesare based
on refrigeratorcold meat.
• A largecut of meat willusuallyrequire fewer minutes per pound to roastthan a
smaller cut of meat.
• Do notusea roastingpan with highsides; usepan providedwith oven.
• Do notcover meat.Allowthe circulatinghot air to surroundthe meat and seal in
thejuices.
• Sincethe breast meat on a large turkey cooks morequickly than the thigh area,
placea "foilcap"overthebreastareaafterdesiredbrownnessisreachedtoprevent
overbrowning.(See above.)
• A stuffedturkeywill requirean extra 30to 60 minutesdependingon size.Stuffing
should reach an internal temperatureof165°F.
ConvectRoasting:Frozento Finish
Meats(exceptpoultry)may beroastedfrozentofinish,Followthese guidelinesforthe
most satisfactory results.
• Usetemperaturesfor roastingfresh meatsas recommendedbymostcookbooks.
Generally, most meats are roasted at 325°F. For best results do not use
temperatures below 300°F.
• Usetimesforroastingfreshmeatsgiveninyourfavoritecookbooksasapproximate
guidesfor roastingfrozen meats, Roastingtimeswill vary dueto factors suchas
coldnessof meat,size,quality,or cut. Ingeneral,roastingtimesforfrozento finish
in the convection ovenwill be approximately thesame as fresh to finish in a
conventionalbake oven.
• Theguidelinesgivenfor roastingfresh meatsin the convectionovenalso applyto
roastingfrozen meats.
• Insertmeat thermometeror probe midwayduring the cooking process.
