FRUIT JUICE SMOOTHIE WITH VANILLA YOGURT AND A HINT OF MINT
A refreshing fruity smoothie
Serves 2
Ingredient Quantity
Honeydew or water melon, peeled, seeded and

• In a blender mix together the melon, raspberries, fruit juice, vanilla yogurt and mint leaves.
• Mix together on SMOOTHIE function for 30-40 seconds or until smooth.

ZESTY LIME CHEESECAKE
Serves 2
Ingredient Quantity
Gingerbiscuits,roughlybroken 60g
Vanillaicecream 150g
Juice and zest from 1 lime
• Put the ginger biscuits in a blender and mix on medium/high until they have broken down.
• Empty out into a bowl.
• In the blender jug put in the vanilla ice cream, juice and zest from 1 lime and the crushed
ginger biscuits.
• Mix together on medium/low until combined. Do not over mix or the ice cream will melt.
• Serve immediately.
The trick to this recipe is to crush the biscuits in the blender first but then remove them and put
them back into the blender jug on top of the other ingredients. This is to avoid the crushed biscuits
from clogging up under the blades and not combining with the ice cream. If the mixture is too soft
then it may need to be frozen for a short while before serving. If frozen ensure that it is allowed to
rest out of the freezer for a few minutes before serving.
