INSTRUCTIONS – PRECAUTIONS – GENERAL NOTICE
Before starting every operation the user must read and understand the information contained in this
manual.
It is up to the buyer after looking over the present manual – to inform whoever coming in direct or indirect contact
with the machine about the instructions content in order to work in safety conditions. The manufacturer declines
all responsibility for any damage to people or things caused by the non-observance of the safety instructions
contained in this manual or indicated on the machine.
Safety
The machine is destined for a professional use only. The operator must be suitable to use medium – complex
machines and able to read and understand the instructions quoted in this manual.
The machine must be placed in a room whose features are not unusual for a food workshop, where particular
environmental and hygiene conditions are required. The non – observance or negligence of the safety rules shall
be the origin of even heavy accidents or machine malfunctioning with potential consequences of accidents in
using it or during the maintenance. For any further doubts or explanations you may require kindly get in touch with
the manufacturer who shall be at your disposal and will be pleased to assist you.
We remind you that you are not allowed to carry out any change to the machine or any maintenance not being
described in this manual or whatever not authorized – in an official form – by the manufacturer. Should the
machine be started in an incorrect manner, it shall be whatever operating and reveal dangerous non conformities
later only.
The manufacturer is not responsible for any damage to people and /or things occurred owing to the carelessness
in reading the manual or putting into practice the content of the present manual.
INTRODUCTION
This manual is an integral part of the product. It must be kept with the machine for a quick and easy consultation.
It must be kept also for the future up to the final scrapping.
The manufacturer does not guarantee for the technical – legal suitability of the installation room and services
connected to the machine even if he supports the user with all instructions for a correct installation in the proper
section of this manual.
About this matter we advise you to ask for the professional advice of a professional technician having experience
in this issue for the observance also of laws and local rules.
The divide rounder must be used just by one professional qualified and skilled adult.
Know all the information contained in this manual is essential for your safety and to know how to use the machine.
Every operator must read and understand completely this instruction and maintenance manual before starting to
use the machine. For any problem contact directly the MANUFACTURING FIRM specifying the model and serial
no. of this machine.

GUARANTEE
The manufacturer guarantees the machine for a period of 12 months starting on the date of delivery.
The guarantee covers substitution of faulty parts only. All electrical parts and motors are excluded.
Any request for technical assistance by our technician shall be completely at customer’s charge.

NOISE LEVELS
The measurement of the noise was made during the idling of the machine at max. speed, in conformity to the ISO
11201 rule, so placing the measurement tool microphone at a supporting plan height of 1,6 mt. and 1 mt. in front
of the machine.
The continuous equivalent weighted A noise level is lower than 70 decibel.
In spite of low noisiness the noise emitted by the machine in the room can determine the overcoming of the
differential value compared to the remaining area noise. This can happen especially in particular silent areas and
/or in night hours.
CORRECT AND UNCORRECT USE
The background of a baker, confectioner or pizzaiolo is required to use this machine.
So the machine must be used by qualified people and must not be placed in an open area accessible to
everybody.
The machine must be used just by one user and only for processing bakery, confectionery and pizzeria products.
REMAINING RISKS
The machine has been designed to comply with the safety standards stated in EC standards.
Using the machine in other situations and for other purposes than the usages stated by manufacturer can result in
unforeseen and uncalculated risks.
As “remaining risk” there is the risk of crushing between the plate, the aluminum dividing disk with knives
and the machine structure.
It is strictly prohibited to tamper with devices and electrical or mechanical mechanism, make changes to
the internal and external structure of the machine, loosen or unscrew nuts and bolts, remove safety
devices.
.
When the machine is running all covers, cases, guards and protections must be adequately
fixed to their structures and completely functional.
GENERAL RULES
The serial number and general data plate is placed on the back side of the machine.
The divider rounder must be placed in a room in compliance with the rules in force.
The opening for the room aeration and a suitable lighting are very important as reminded herewith.
The floor is to be perfectly flat and leveled, cemented or paved and suitable for supporting loads according to the
specified safety margins. It is necessary for the electric connection to be arranged as mentioned here-below. This
connection is to be carried out by skilled staff only in possession of all specific, technical and professional
qualifications, having entered his name on the professional roll concerned and in a position to take the complete
responsibility of it.
OPTIMUM ENVIRONMENTAL CONDITIONS
No further particular environmental conditions are required in addition to the ones provided for in work and safety
matters. A particular attention is however to be paid in observing the different rules issued by the local authorities.
The accidents may occur more frequently if the environment is narrow , badly ventilated and temperate
.
LIGHTING
The lighting is to be in compliance with the rules to avoid any difficulties during the working operations.

CONFORMITY TO RULES
The electrical plant is in conformed with EN 60204-1. rules. The materials in contact with dough are in conformity
with FDA rules. The machine is manufactured in conformity to machines directive 2006/42/CE as adopted by DPR
no. 17 dtd. 27/01/2010, directive EMC 2004/108/CE, directive 2006/95/CE and rule 1935/2004 EC.
PROTECTIONS
The safety device is made of one micro-switch, three fixed protections in styrene (+ door) and one emergency
push –button.
MACHINE LIFTING
RECEIPT
The machine packed in crate allows the storage under cover for 6 months approx. Remove immediately the
packing and check for any damage. Report any damage to the shipping agent immediately. Any missing must be
communicated immediately to the Manufacturing Firm.
UNPACKING
After unpacking the machine make sure of its integrity and do not use the machine in case of evident non-
conformities.
Even if there are no particular restrictive conditions for unpacking, the following directions are recommended:
•Do not carry out any lifting –handling if the means are not perfectly being maintained and not in a
position to support the declared weights.
•Do not let the machine pass and/or do not stop it over people or things during handling while lifting;
•Check the directions for use mentioned on the packaging and follow them consequently.
Do not leave any packaging material unguarded. Eliminate it according to rules in force. Any packing
plastic sheets , bags, rivets, wood and other materials can be extremely dangerous for children.
LEVELLING
The lifting must be carried out by qualified people.
The machine is shipped packed in wooden crate or cardboard on pallet.
Packed in one of this way it can be lifted by forklift truck or trans pallet fork lift truck
by inserting the forks into the spaces provided under the cage or lift by a crane by
passing the ropes under the cage.
In this case check that the maximum angle of the ropes when under tension is 45°
as shown in the figure. Once packaging has been removed, the machine can be
lifted by a crane. In this case use 2 eyebolts screwed into the upper part of the
structure as indicated on the side figure. The machine is supplied with wheels and
can be easily moved in any direction.

Place the machine on a flat floor. Settle it adjusting the feet by the special key supplied with the
machine.
Leave enough space around the machine to facilitate working operations and maintenance.
ELECTRICAL CONNECTION
Check that the power supply has the same rating as indicated on the machine identification plate.
The power supply must be through a capacity disconnecting-switch sized to the power requirements of the
machine and with a three phase socket with 4 contacts (3 phases + ground) or a 3 contacts socket (2 phases +
ground) according to the voltage of the machine. Connect to the terminal board of the electrical panel. Before
power is switched on, make sure no loose connections are present due to vibrations during transportation.
Connections must comply with standards in force in the country where the machine is installed.
MACHINE DESCRIPTION
The divider rounder has been designed to divide and round dough divisions as per quantities quoted in the
technical data. The machine is suitable to work bread dough, pizza and flour sweets. All the parts in contact with
dough are in stainless steel or food material. The divider rounder must be placed in rooms with a temperature not
higher than 25°C.

FIRST START UP AND TEST
The following operations must be carried out by the personnel making electrical connections.
1) Turn the selector 5 (FIG.3) to start the machine. At this point it appears for some seconds the version of
the installed software.
2) Wait for the flashing of the push-button CLEAN 3 ( FIG.2)
3) Reset by pushing at the same time the start push-buttons 1 (FIG.2) until the end of the push button
“CLEAN” flashing. OPERATION TO REPETE at every re-start.
4) To verify that the plate rotation direction is the one indicated by the arrow ( clockwise ) :
Start again by pushing at the same time the two start push-buttons 1 (FIG. 2). If the working cycle does
not start and lowering the rounding lever (4) ( after the flashing of the push-button CLEAN 3 (FIG.2) the
plate turns anticlockwise so not in the correct direction switch off the machine , cut off the electricity and
reverse the two power supply phases.

The electrical connection must be carried out by qualified personnel.

Check that the power supply corresponds to the machine voltage and connect the plug to the electrical plant.
Open the safety door and verify that inside the machine there is not any foreign body.

Make at least one working cycle without using the dough.
ANY DAMAGE TO MACHINE DUE TO INCORRECT USAGE OR DUE TO MODIFICATION IS NOT COVERED
BY GUARANTEE.

SAFE AND CORRECT USE OF THE MACHINE
The machine to meet the different working needs permits the pressing time adjustment.
The control panel is extremely easy and intuitive.
Once the machine is switched on (by turning the switch 5-fig.3) it appears on the screen
“program nr. ….” To change the program number (from 1 to 20) press ENTER and one of the two arrows
(Upper arrow to increase the number – lower arrow to decrease the number) . To confirm press again ENTER.
- Press time - Pressing time. By arrows increase or decrease the pressing time (seconds)-
Enter.
- Opening set - dividing disk height. With arrows increase or decrease (in mm. max 47) the
height of the dividing disk -Enter
- Roll-time – Rounding time. With arrows increase or decrease the rounding time
(seconds)-
Enter
- Cutter Mode - program just for cutting. Pressing appears Cutter Mode and then
Press time. With arrows set the pressing time – Enter. To exit press again Cutter Mode.
It is necessary that the scaled doughs before be inserted in the machine are rounded and let rest for approx.
10/15 minutes)
Put the dough on the rounding plate and spread it in a uniform manner without let it exit from the round
stamps. Put a little quantity of flour on the dough upper part, if necessary, so introduce the plate
paying attention that the centering pin goes into the plate hole correctly.
Attention: if the rounding plate is not inserted correctly
the machine could suffer severe damage
KNIVES AUTOMATIC CLEANING FUNCTION – CLEAN (push-button 3 )
Operation to repeat every time before the machine switching off
With the push-button 3 (FIG.2) you can proceed with the cleaning as follows :
First of all place an empty plate inside the machine.
Press the button 3 (FIG.2) (on the display it will appears the writing WARNING – CLEAN CYCLE). Then press at
the same time the push-buttons 1 (FIG.2) until the push-button 3 starts to flash (FIG.2)
Now switch off the machine by means of the main switch 5 (FIG.3)
During the re-start repeat the reset operation ( turn the main switch 5 ( FIG.3), wait that the CLEAN 3 (FIG.2)
push button starts to flash and then press at the same time the buttons 1 (FIG.2) until the button 3 stops to flash.

At this time remove the plate with crumbs and impurities.

MACHINE CLEANING AND MAINTENANCE
CLEAN THE MACHINE AT LEAST ONCE A WEEK AND IF NECESSARY ALL DAYS
CLEANING AND MAINTENANCE: PLATES, HEAD AND
KNIVES
1) Before switching off the machine proceed with a clearing cycle. ( see section–
knives automatic cleaning PAGE 7)
2) The plates must not be left inside the machine.
3) The rounding plates must be cleaned all days even better repeatedly on both
sides.
4) Clean also the plane where the rounding plates lie.
5) Remove the head covers and the head blocking pin 7 pulling it towards outside.
6) Remove the ring 8 loosening the handwheel ( FIG4) turning it anticlockwise so lower it.
7) Proceed with the head and knives cleaning. Remaining pieces of dough inside the divider rounder must
not be removed during the machine working. Do not use high pressure cleaners or water jets and other
liquids. Use a puff of air or a brush to clean the machine
8) Carry out all operations in the reverse order to restore the initial condition.

During the maintenance the machine must be disconnected from the power
supply. All these operations included the parts replacement or problems to
electrical plant must be carried out by qualified personnel.
If the machine is under guarantee you have to get in touch immediately with the
manufacturing firm.
Always switch off the machine. Check always that the electrical power light is off
before starting cleaning operations.
Remaining pieces of dough inside the divider rounder must not be removed
during the machine working. Do not use high pressure cleaners or water jets and
other liquids. Use a puff of air or a brush to clean the machine.

MOTOR BELT TENSION – OIL FILLING UP
Remove the left side panel. Check the belt tension . If necessary use nut 9 to tighten the belt. Once the
regulation is complete re-assemble carefully the panel.
For the oil filling up remove the back panel , unscrew the tank cap and add recommended oil : ESSO
NUTO H32 . ( or compatible – see attached list with the wiring diagrams ). Once the oil filling up is
complete re-assemble carefully the panels.

FAULTS TO THE ELECTRICAL MOTOR AND PROTECTION SYSTEM:
Call an electrician or contact the manufacturer.
RESULTS EVALUATION
The following information will help you to obtain the desired result. When the machine is
working use three options to adjust: volume, pressure time and moulding time.
Check the pre-rising time of the dough (depending on the dough type but usually around 15 minutes).
With a hard dough press a bit longer and stronger. This will give to the dough a more uniform
thickness
•The weight of the dough balls is not the same.
Make sure that the dough is placed on the plate center and flatten it manually. Spread it a little
on the plate but usually in a uniform way and do not let it exit from the round stamps. If this
happens when the pressure ring lowers it will not rest perfectly on the rounding plate and the
dough will come out during the pressing phase.
•Not all the dough balls are moulded
Lower the height of the rounding chamber (see section safe and correct use of the machine
page 7)
•The dough balls are not completely moulded
Increase the moulding time (see section safe and correct use of the machine page 7)
•The dough balls have not a smooth surface
Check that the dough weight to work is in conformity with the machine capacity.
Increase the height of the rounding chamber. (see section safe and correct use of the machine
page 7) The dough balls were moulded with too much strenght ; so lower the moulding time
(see section safe and correct use of the machine page 7)
•The dough comes out between the ring and the rounding plate.
The dough has been pressed too much. Lower the pressing time.
•The dough balls on the external perimeter of the plate are bigger than the central ones.
Reduce the pressing time to avoid the dough exit from the ring.
•The dough balls on the external perimeter are smaller that the central ones.

Let the dough rest for more time before using it with the machine. With hard dough press a
little more and with more force . This will give to the dough a more uniform thickness
POSSIBLE TECHNICAL PROBLEMS AND SOLUTIONS
PROBLEM
SOLUTION
The machine does not start Plug not connected. Insert the plug and verify the voltage.
The machine does not start Check the safety microswitch connected to the safety guard and fuses.
The motor runs but the plate does
not turn. Check the belt and its tension.
MACHINE DISMANTLING
The machine structure is made from painted steel. Knives are made from AISI 304 stainless steel. Safety guards
are made from plastic, support and gears are in cast iron, the belts made from synthetic material, electrical parts
in copper and plastic material. To dismantle the machine separate the parts depending on the materials used to
manufactured them and deliver the parts together with hydraulic oil and grease to dismantling licensed companies
with the obligation not to dismantle RAEE as urban waste as per D. Lgs. 151/2005 art. As per European directives
2002/95/EC and 2003/108/EC on Electronic and Electrical devices waste.
LONG TERM PUTTING ASIDE
Disconnect the machine from any source of energy in case of putting aside or protracted exclusion from work of
the same. The machine must be cleaned, lubricated in all its parts and protected by a waterproof material in order
to prevent any dust infiltration or insects and rodents passage. Etc.
If the machine is moved to an unguarded place, make sure that it is not subject to any crashes or violations it shall
be placed in a dry room and protected against any atmospheric agents.
On resetting it, a preliminary and careful inspection of its integrity is needed and must be carried out by skilled
staff only.
