Piper’s aluminum Heated Cabinets /Proofers are designed
with features to make your operation efficient. Controls
can be easily accessed at the front of the Cabinet without
opening the doors and the entire heater unit can be
removed for cleaning and maintenance.
STANDARD FEATURES
Base is a solid bottom constructed of .125” aluminum,
rolled edge base acts as a built-in bumper
Two 12-gauge aluminized steel reinforcing channels
attach the casters and support the bottom panel
Frame consist of four extruded channels 1-1/2” x 5/8” x
.094” aluminum. Corners have .190 channel supports
for reinforcement
Double pan top constructed of two .080” thick
aluminum panels, fully welded corners
Glides are channels spaced on 1-1/2” centers with 5/8”
ledge, .090 thick extruded aluminum continuously
welded to the frame
Door panel is .125” PVC coated aluminum attached
to cabinet with bakery hinges, 270 degree door swing
with card clip
Back panel is .090” aluminum fully welded with
removable multiple louvered vent stack
1/2” extruded aluminum tie bar keeps cabinet square
16-gauge stainless steel positive gravity latch is
provided to keep door closed during transport
Stainless steel side door latch holds door open
One inch insulation surround the cabinet (Insulated
models only)
Card clip, easy identification of cabinet content when

Piper Holding Cabinets are perfect for maintaining
temperatures up to 225 degrees fahrenheit.* A member
of our Chef SystemTM line, this cabinet utilizes separate
heat and humidity controls for precise control over the
holding environment. This allows the unit to be used for
holding, warming, and proofing.
It is available in multiple configurations, including a
warmer with single or dutch doors, a double warmer with
individually controlled holding sections, or a half size
warmer for smaller operations. Each is designed to hold
18” x 26” bun pans or 12” x 20” steam table pans.

Improve holding capabilities with the Chef System Humidified
Holding Cabinets! Designed for simple operation and
exceptional holding performance in 5- or 10-pan models, the
CS2H provides Piper reliability in a holding cabinet that keeps
a wide range of menu items hot for extended holding times.
With 5 levels of humidity, crisp food will stay crisp and moist
food moist. The 90°F to 185º (32ºC to 85ºC) air temperature
range allows precise food temperature control for holding and
proofing.
STANDARD FEATURES
Precise temperature and humidity control is ideal for
proofing and for holding.
Prepare food in advance of peak serving periods.
CS2H-5 accommodates up to seven 1" (3 cm) deep pans
and model CS2H-10 holds up to fourteen 1" (3 cm) deep
pans.
Five levels of humidity to keep crisp food crisp and moist
food moist.

WATER QUALiTY REQUiREMENTS
Water supply in excess of 3.0 grains of hardness
per gallon (GPG) (.75 grains of hardness per liter)
must be treated and softened before being used.
Water containing over 3.0 GPG (.75 GPL) will
decrease the efficiency and reduce the operating
life of the unit.
Note: Product failure caused by liming or sediment buildup is not
covered under warranty.
