Weekly Cleaning Procedure

Press the MENU key to display
the Main Menu screen.
Press the MENU key from the
Beverage Selection screen to
display Main Menu screen.

Press the CLEANING key.

Press the WEEKLY key.
Step by step instructions will
be displayed. Product must be
calibrated at least two hours
after cleaning to ensure
product is at the correct
temperature.

Prepare a bucket of each:
Ensure buckets are washed,
rinsed, and sanitized. When
preparing buckets, fill them to
the fill line.
•APC (1) (fill ½ with warm
water & then to fill line
with diluted APC from
Waste Not Drum
•Rinse water (2)
•KAY-5 Sanitizer (3)
(2 packets of sanitizer)

Install blender pitcher.
Place a blender pitcher in the
dispensing area.

Remove ice hopper cover.

Remove ice from ice hopper.
Using an ice scoop, remove as
much ice as possible.
Note: Use caution when
removing ice near the
shaver blade area.
Reinstall the ice hopper
cover.
Press the ICE key until all
remaining ice has dispensed
into the blender pitcher.

Remove the blender pitcher
and discard the ice.
Remove the blender pitcher
and discard the ice into the
back sink.

Remove the ice hopper, ice
hopper cover, splash guard,
and ice chute for cleaning.

Remove additional parts for
cleaning.
•Blender pitchers
•Skirt
•Syrup rail
•Rinse station assembly
(grate, actuator, strainer)
•Pitcher drying station
(pitcher grate, drip pan)
•Lid holders
•Whipped cream holder
and cover

Remove the product bins for
cleaning.
Remove the product bags
from the product bins and
place them in the walk-in
refrigerator.

Remove the product bin
shelves and the bottom
cabinet drip pan for cleaning.

Wash, rinse and sanitize all
parts.
Wash, rinse and sanitize all
parts in the 3-compartment
sink. DO NOT PLACE IN
POWER SOAKER SINK OR
DISHWASHER.
Important: Make sure the
water is fresh and clean.

Additional pitcher cleaning.
To remove film build-up on
the inside of the blender
pitchers, place the pitchers in
the 3-compartment sink. Pour
½ scoop of KAY Destainer
into one pitcher. Fill the
pitcher with warm water and
allow it to soak for 5 – 10
minutes. Wearing PPE
gloves, brush clean to remove
residual soil.
Note: Use caution when
cleaning the blender blade.
Destainer
Transfer the solution into the
second pitcher and repeat the
procedure. Once this is
completed, discard the
solution. Rinse and sanitize
the pitchers in the 3-
compartment sink. Allow the
pitchers to air dry.

Clean ice shaver assembly.
Using the squeeze bottle of
APC solution, flush the ice
shaver assembly, while
brushing with the large, white
ice hopper brush.

Clean, rinse, and sanitize ice
shaver assembly.
Using the squeeze bottle of
APC solution, flush inside,
outside, and under the ice
shaver assembly, thoroughly
covering all surfaces.
Flush the solution under the
lip of the plastic cover. Make
sure solution is applied in a
complete 360° circle.
Repeat Steps 15 and 16, using
clean, warm water.
Repeat Steps 15 and 16, using
sanitizing solution.

Place buckets in front of
machine.
Place the three buckets on the
floor in front of the machine.
The bucket containing the
APC cleaning solution will be
used first.

Install cleaning tubes.
Install cleaning tubes onto all
inlet fittings.
Place the other end of the
cleaning tubes into the bucket
of APC solution.

Re-install rinse station
assembly and install cleaning
hose.
Slide the cleaning hose
adaptor onto the dispensing
head. Wedge the other end of
the hose into the rinse station
grate.

Open all CO2 valves.
Turn all CO2 valves to the
“down/on” position to open
all the pumps.

Start the cleaning cycle.
Press the NEXT key. One at a
time, the cleaning solution
will pump through each
product line.
A bar graph screen will
illustrate the cleaning
progress for each product
line.

Place free end of cleaning
tubes into bucket of rinse
water.
Press the NEXT key to start
rinse cycle.

Place free end of cleaning
tubes into bucket of KAY-5
Sanitizing solution.
Press the NEXT key to start
the sanitizing cycle.
Sanitizing solution
After the solution stops
pumping through the systems,
it will soak for 60 seconds.

Remove cleaning tubes.
Remove the cleaning tubes
from the bucket of sanitizing
solution. Lay the end of the
tubes across the rim of the
bucket.
Keep the drain adaptor
connected to the dispensing
head.
Press the NEXT key to start
the purge cycle.

Remove cleaning hose.
Place hose in an empty
bucket.

Remove the cleaning tubes
from the inlet fittings.
Place tubes in an empty
bucket.

Close CO2 valves for unused
pumps.
Turn the CO2 valves to the
“up/off” position to close the
unused pumps.

Wipe inside of cabinet door
and inlet fittings.
Wipe the inside of the cabinet
door and the inlet fittings,
using KAY-5 Sanitizing
solution and a clean, sanitized
towel.

Clean, rinse, and sanitize
dispensing head and
surrounding area.
Using the spray bottle of
APC and the spout brush,
clean the dispensing head
area.
Repeatedly dip the mix tube
brush into the bucket of APC
solution and brush clean the
dispenser head openings.
Repeat this step, using clean,
warm, water and then with
sanitizing solution.
Note: This step must be
performed every 4 hours.

Re-install ice hopper and ice
hopper cover.

Install cabinet drip pan and
product bin shelves.

Install the product.
Install the product bags into
the product bins, with the
spout facing down. Position
the rear groove of the spout
into the front slot of the
product bin. Make sure it’s
properly snapped into place.
Install the product bins.

Install ice chute and splash
guard.

Install a blender pitcher.
Place a blender pitcher in the
dispensing area.

Press the NEXT key to prime
the product lines.
After the last product line has
been primed, press the NEXT
key.
Remove the blender pitcher
and discard the product into
the back sink. Do not pour
down the rinser.
IMPORTANT! Do not
calibrate for at least two
hours after performing the
weekly cleaning. Product
must be 1-4 °C to calibrate.
36 Clean and sanitize dispensing
drain area.
Using the squeeze bottle of
APC, thoroughly flush the
dispensing area.
Repeat this step, using
sanitizing solution.

37 Remove rinse station
assembly. Clean and sanitize
rinser head and rinse station.
Using the squeeze bottle of
APC and the spout brush,
brush clean the rinse station.
Repeat this step, using
sanitizing solution.

38 Re-install rinse station
assembly and flush rinse
station area.
Using the squeeze bottle of
APC, thoroughly flush
the rinse station area.
Repeat this step, using
sanitizing solution.

39 Re-install parts.

40 Wipe machine clean.
Using clean, sanitized towels
and the spray bottle of
KAY-5 Sanitizer,wipe
down the interior of the
refrigerated cabinet including
the door gaskets, the outside
surfaces of the machine, and
the blend center.

41 Wipe exterior of machine .
Wipe down the exterior of the
machine and the blend center,
using KAY-5 Sanitizer and
clean, sanitized towels.

42 Slowly pour two full pitchers of
warm water (from the back
sink) into the rinser sink.
IMPORTANT! Wear eye
protection before
performing the next steps.
43 Open the pressure relief knob
on the top of the BIO-SHIELD®
dispenser by turning the knob
counter-clockwise.
Drain Cleaner
44 Remove the cap from the BIO-
SHIELD® dispenser.
45 Pour two full pitchers of warm
water (from the back sink) into
the dispenser.

46 Quickly pour one packet of
BIO-SHIELD® Beverage Tower
Drain Cleaner into the
dispenser.
Immediately replace and
tighten the cap.
Close the pressure relief knob
on the top of the dispenser by
turning the knob clockwise.
Shake the dispenser to
dissolve the cleaner.
Drain Cleaner
47 Carefully purge a small
amount of solution from the
dispenser into the back sink.
This helps prevent
“sputtering” of solution and
possible splashing back onto
clothing or eyes.
Drain Cleaner
48 Carefully spray 1/4 of the
solution into the blender/
dispensing area drain hole.
49 Carefully spray the remaining
solution into the rinser sink
drain hole.
50 Open the pressure relief knob
on the top of the BIO-SHIELD®
dispenser by turning the knob
counter-clockwise.
51 Remove the cap from the BIO-
SHIELD® dispenser.
52 Rinse the BIO-SHIELD®
dispenser.
Rinse the BIO-SHIELD®
dispenser with warm water
and return the dispenser to the
proper storage area.
IMPORTANT! Do not use
the drain for four hours
after performing the weekly
cleaning.
IMPORTANT! Do not
calibrate for at least two
hours after performing the
weekly cleaning.
