IMPORTANT SAFEGUARDS
When using electrical appliances, basic safety precautions should always
be followed, including the following:
1Read all instructions carefully.
2To protect against risk of electrical shock, do not put motor base,
cord or plug of the appliance in water or other liquid.
3Close supervision is necessary when any appliance is used by or near
children.
4Turn unit off and unplug from outlet when not in use, before putting
on or taking off parts, and before cleaning. Disconnect when
changing blades. To disconnect, turn unit off, grasp plug, and pull
from the wall. Never yank on cord.
5Avoid contact with moving parts. Keep hands, hair, clothing as well
as utensils, away from the cutting blade during operation to prevent
injury and/or damage.
6Blades are sharp. Handle carefully. Always handle blades with hand
away from cutting edge. Always store blades with cutting edge
away from you.
7Do not operate any appliance with a damaged cord or plug or after
the appliance malfunctions or is dropped or damaged in any manner.
Return the appliance to an authorized service facility for exami-
nation, repair, or electrical or mechanical adjustment.
8The use of attachments not recommended or sold by the appliance
manufacturer may cause fire, electric shock, or injury.
9Do not use outdoors.
10 Do not let cord hang over edge of table or counter or touch hot
surfaces, including the stove.
11 Do not use this appliance for other than intended use.
12 Do not operate in the presence of explosive and/or flammable fumes.
13 Do not operate knife in water or under running water.
Before Your First Use
Carefully unpack the electric knife and remove all packaging materials.
Be sure to handle the blade carefully; it is sharp. Wash the blades in
warm, soapy water. Rinse and dry thoroughly .
Wipe the motor housing with a clean, damp cloth. This will remove any
dust that may settle during packaging.
CAUTION: Do not immerse the motor housing, cord or plug in water or
other liquid. Do not use harsh detergents or abrasive cleansers on any
part of the electric knife.

1Be sure cord is not connected to electric outlet
when removing or inserting blades and when
knife is not in use.
2Blades are sharp. Handle carefully. Always
handle blades with hand away from cutting
edge. Always store blades with cutting edge
away from you.
3If blades are separated, slide the rivet on one
blade into the keyhole slot in the other blade
until they are locked together. Always use both
blades. Do not attempt to operate the knife
with only one blade.
4Hold the blades together at the blade guards
with cutting edge down. Slide into motor unit
until both blades click into place.

1Plug your electric knife into a 120 volt 60 AC
only outlet.
2To operate, first depress safety switch
by grasping knife handle. Next press On/Off
button with your thumb while sliding
it forwards.
3To stop, release on/Off button and
safety switch.
4To rotate blade, first unplug from outlet. Then
slide the lock button (located on bottom of
motor housing) back firmly while grasping
motor housing. Rotate handle to desired
cutting angle while continuing to hold lock
button. The handle will turn and lock.
5To disassemble knife, first unplug cord
from outlet.
Warning: Blades are sharp. Handle carefully.
Always handle blades with hand away from
cutting edge. Always store blades with cutting
edge away from you.
Firmly press blade release button. Grasp blade
guards and carefully pull until the blades release.
(See figure 2) Carefully separate blades by sliding
apart to disengage rivet from keyhole.

Care & Cleaning
Before cleaning, ensure the plug is disconnected from electrical outlet.
Wash blades in hot, soapy water. Uses caution when washing the blade
sets; blades are sharp. Rinse and dry thoroughly. To clean motor housing
and cord, wipe with a damp cloth. dry thoroughly.
CAUTION: Do not immerse the motor housing cord or plug in water or
place it under running water. Do not use abrasive cleansers on any part
of the knife.
Helpful Hints
• The universal blade set is suitable for cutting crusty foods,
such as bread, and for fruits, vegetables and cooked meats.
• Use the frozen food blades to cut through semi-frozen foods,
such as meats, cheeses, breads, and sausage.
• The blades are self-sharpening by friction during use. Do not attempt
to manually sharpen.
• DO NOT use a back and forth sawing motion while using
the universal blade set. Just guide the knife through the food with
light pressure.
• DO use a back and forth sawing motion while using the frozen
food blade set.
• When cutting meat, slice down to and around bones.
Do not attempt to slice through bones.
• Always carve on a cutting board. As with any sharp knife, your electric
knife may scratch china or metal plates.
• If cutting very thin slices, tilt the cutting edge slightly in toward
the food.

White Bread
Makes 2 Loaves
INGREDIENTS
6 cups all-purpose flour
1 package dry yeast
2 1/4 cups milk
2 tablespoons sugar
1 tablespoon shortening
2 teaspoons kosher salt
melted butter
METHOD
1In a stand mixer bowl with the dough hook attached, place 2 1/2
cups of the flour and the yeast. Set to speed 1 and blend for 1 minute
until well blended.
2In a saucepan over medium heat, heat the milk, sugar, shortening
and salt to 115 - 120°. The shortening should be just melted,
stirring constantly.
3Add the milk mixture to the mixer bowl. Beat on speed 1 for 30
seconds, then for 3 minutes on medium speed.
4Turn off the mixer and add the remaining flour. Mix on low for
1 minute then on medium speed for 5 minutes.
5Turn out onto a lightly floured board and form a ball. Dough should
be smooth and elastic. Place in a greased bowl and cover with a
clean tea towel. Let rise until doubled, about 1 1/4 hours.
6When doubled in size, punch down and place on a lightly floured
board. Cut dough in half and let rest 10 minutes more.
7Grease two bread pans. Trucking sides of bread dough under to
form a smooth log, place dough into loaf pans. Brush with melted
butter and let rise again until doubled, about an hour.
8Preheat oven to 375°.
9Bake for 45 minutes or until done. Remove from pans and cool on
wire rack.

Banana Nut Quick Bread
One great way to use your electric knife is to cut through hot,
fresh bread quickly and evenly. Here are a few homemade bread
recipes to get you started.
INGREDIENTS
3 ripe bananas
1 cup walnuts
1/4 cup shortening
1/2 cup sugar
1/2 cup light brown sugar
2 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1/2 cup milk
1 large egg
1 teaspoon grated orange peel
1 tablespoon banana liqueur, optional
METHOD
1Preheat oven to 350°
2Place nuts in a baking tray and toast for 15 minutes,
then chop coarsely.
3In a stand mixer bowl with the flat beater attached,
place the bananas, nuts and shortening. Cream until smooth
on medium speed.
4Add all remaining ingredients and mix on speed 1 just until blended,
about 30 seconds.
5Spray two 8-inch bread pans with nonstick spray, (or you may use
a Wolfgang Puck 2-quart saucepan). Pour batter into prepared pans.
Bake for 55 - 60 minutes or until cooked through.
6Cool slightly. Remove from pan. Allow to cool fully before slicing.

Olive-French Bread
INGREDIENTS
5 cups plus 2 teaspoons bread flour, divided
2 cups cold water
1 1/2 packages yeast
4 ounces nicoise olives, pitted and sliced
2 teaspoons salt
METHOD
1Insert dough hook attachment into stand mixer; put 5 cups flour
and water into mixer bowl. Beat on lowest speed for 4 minutes.
2Sprinkle yeast over dough, increase speed to 2 and beat for 4
minutes longer.
3Toss the olives with the 2 teaspoons of flour, add to the dough with
the salt and mix 2 minutes longer.
4Remove bowl from stand and cover with a clean tea towel; let rest
for 15 minutes.
5Turn the dough out onto a lightly floured surface. Lightly knead into
a ball and let rest, covered, for 45 minutes.
6Punch out the air, cut dough in half (about 21 ounces each half),
and shape into two baguettes. Place the loaves on one or two
baking trays and sprinkle with flour. Cover with towel and let rest
for 45 minutes.
7Preheat the oven to 400°.
8With a single-edge razor blade or a very sharp knife, make a slash
down the center of each loaf. Carefully slide the breads onto a
baking stone and bake for 10 minutes. Spray with water and
continue baking until the bread is well browned, about 1 hour 10
minutes longer.
9Cool on wire rack before slicing.
