IMPORTANT SAFEGUARDS
When using electrical appliances, basic safety precautions should always be followed including the following:
1. READ ALL INSTRUCTIONS.
2. Do not touch hot surfaces; use handles or knobs.
3. To protect against risk of electrical shock, do not immerse cord, plugs, or temperature control in water or any
other liquid.
4. To avoid possible accidental injury, close supervision is necessary when any appliance is used by or near children.
5. Unplug from outlet when not in use and before cleaning. Allow to cool before putting on or taking o parts.
6. Do not operate any appliance with a damaged cord or plug or after the appliance has malfunctioned or has
been dropped or damaged in any way or is not operating properly. Return the appliance to the nearest All-Clad
Repair Center for examination, repair or mechanical or electrical adjustment.
7. e use of accessory attachments not recommended by All-Cald may cause injuries.
8. Do not use outdoors.
9. Do not let cord hang over edge of table or counter, or touch hot surfaces.
10. Do not place on or near a hot gas or electric burner, or in a heated oven.
11. Extreme caution must be used when moving an appliance containing hot oil or other hot liquids.
12. Always attach plug to appliance rst, then plug cord into the wall outlet. To disconnect, turn any control to
“o”, then remove plug from wall outlet.
13. Do not use appliance for other than its intended use.
14. e skillet is not intended for deep frying.
15. When oil is heated to high temperature in any vessel, ammable gases are created. Do not expose a ame to
these gases as it could be dangerous. Never put the lid on the skillet when heating oil.

SHORT CORD INSTRUCTIONS
• A short power-supply cord (or detachable power-supply cord) should be used to reduce the risk resulting from
becoming entangled in or tripping over a longer cord.
• Longer detachable power-supply cords or extension cords are available and may be used if care is exercised in
their use.
• If a longer detachable power-supply cord or extension cord is used:
- e marked electrical rating of the cord set or extension cord should be at least as great as the electrical rating
of the appliance;
- e cord should be arranged so that it will not drape over the countertop or tabletop where it can be pulled on
by children or tripped over unintentionally;
- If the appliance is of the grounded type, the cord set or extension cord should be a grounding-type 3-wire cord.

BEFORE FIRST USE
• Carefully unpack the skillet.
• Rinse both the skillet base and glass lid in warm, soapy water. Rinse well and dry thoroughly.
Note: e glass lid is immersible and top-shelf dishwasher safe.
Make sure temperature control probe is removed before cleaning.
GENERAL USAGE
1. Place your Electric Skillet on a clean, dry surface.
2. Make sure the temperature control dial is facing upward and is on the OFF position. Insert the probe into the
receptacle located on the side of the unit.
3. Plug cord into an electrical outlet.
4. Turn temperature control dial to desired setting (see recommendation for temperature settings in the chart on
page 9). e indicator light will go on.
5. Your Electric Skillet will preheat for approximately 3 to 10 minutes, depending on the desired temperature
setting. For faster heat-up, you can place the glass lid on top of the skillet.
6. Once the indicator light goes o, you are ready to cook.
7. Place food in the skillet.
Note: After preheating, do not leave the skillet on without any food inside. Over time, this can damage the pan.
Note: e indicator light will icker between on and o while cooking, as the heater cycles throught to maintain
a consistant temperature.
8. Cook food as directed or until desired results are achieved.
9. After use, turn the temperature control dial to the OFF position and unplug your skillet. Wait for your appliance
to completely cool down before cleaning it.

RECOMMENDED HEAT CONTROL PROBE SETTINGS
e temperature probe provides a dual read-out. Set your desired temperature using the specic numerical dial
settings, or the temperature ranges. If you typically use a medium heat on the stove, you should select one of the
medium heat settings on the electric skillet

CLEANING AND MAINTENANCE
CAUTION: To prevent personal injury or electric shock, always remove the temperature control probe before
immersing your skillet in water. Do not immerse the probe, cord or plug in water or any other liquid.
1. Turn the temperature control dial to the OFF position and unplug unit from the outlet.
2. Allow unit to cool down before cleaning.
3. Once unit has cooled down, remove the temperature control probe from the appliance.
4. e temperature control probe is not immersible. Simply wipe it down with a damp cloth.
5. To clean the skillet, remove the probe and wipe o any excess food and oil from the skillet with a damp cloth.
Washskillet and glass lid with warm soapy water using a non-abrasive cloth or simply place it in the dishwasher.
6. Dry thoroughly when cleaned.
IMPORTANT: TAKING CARE OF YOUR NONSTICK COATING TO PREVENT SCRATCHING
ON THE NON-STICK SURFACE OF THIS PRODUCT, DO NOT USE METAL UTENSILS.

RECIPES
Biscuits and Gravy
Serves: 8-10
Ingreedients:
1lb pork sausage, without casing
⅔ cup grape seed oil
2 bay leaves
¾ cup all purpose our
6 cups of milk, warm
Salt - to taste
Cracked black pepper – to taste
Cayenne pepper – to taste
12 biscuits, home made or store bought
• Set temperature to 300°F and let preheat. Once the indicator light goes o, you can start cooking.
• Add the grape seed oil, pork sausage and bay leaves to the pan and let render for 15 minutes with the lid on.
• Once the sausage has rendered, remove the sausage from the pan using a slotted spoon.
• Add the our and using a wooden spoon stir until a roux has been made. Keep stirring for 5 minutes to toast
the roux and cook the our.
• Add the milk and stir until the mix has combined then add salt, black pepper and cayenne pepper.
• Bring the mix to a simmer and add the sausage back to the pan then allow to simmer for 15 minutes with the
lid on.
• Once the sauce has cooked for 15 minutes, check for seasoning and lower the temperature to warm. With the
lid on, the sauce will hold until it is time to eat.
• Serve with biscuits.
NOTE: is is the breakfast recipe. e gravy can be kept in the skillet on warm so people can scoop gravy from it as
they please.

Pad ai
Serves 10-12
Ingreedients:
10 shrimp, peeled and deveined
Oil for cooking
3 cups marinated tofu, cut into cubes (marinated in 1 ½ cups soy sauce, ¾
cup mirin, ¾ cup sh sauce)
½ cup scallion bottoms, chopped
¾ cup shallots, chopped
⅓ cup garlic, minced
8 eggs
12 oz rice noodles, cooked - follow cooking instructions on box
2 cups julienned napa cabbage
¾ cup scallion greens, chopped
2 cups chopped peanuts
2 cups bean sprouts
Lime wedges
Sauce Ingredients:
¼ cup tamarind paste
⅓ cup sh sauce
¼ cup rice wine vinegar
⅓ cup palm sugar, grated
Juice of one lime
• Prepare the sauce by combining all of the ingredients and stir until the palm sugar is dissolved. Set aside.
• With the temperature set to sear, add some oil to the pan and sear the shrimp just until they are cooked, then
remove.
• Sear the tofu until dark brown on all sides and then remove.
• Add the scallion whites, shallot and garlic and cook until the garlic starts to get color. Add the eggs and scramble
until they are cooked, and then add the noodles and mix thoroughly.
• Add the cabbage, shrimp, tofu and sauce and mix until ingredients are spread evenly. e noodles should absorb
most of the sauce so very little should be in the bottom of the pan.
• Finish with the fresh scallion greens, peanuts, bean sprouts and lime wedges.
NOTE: is dish can be served in the skillet or served in a bowl so everybody can garnish their plate as they wish.

Paella
Serves 8-10
Ingreedients:
1lb boneless, skinless chicken thigh, cut into strips
10 shrimp, peeled and deveined
Oil for searing
10 oz dried chorizo, cut into coins
1 red bell pepper, medium dice
1 small onion, small dice
4 garlic cloves, minced
3 bay leaves
1 teaspoon smoked paprika
1 pinch saron
3 tomatoes, chopped
7 cups chicken broth
2 ½ cups short grain rice
1 cup frozen peas
10 mussels
• Have the temperature set to sear. Your skillet will start preheating. Once the indicator light goes o, you can
start cooking.
• Start by seasoning the chicken and shrimp with salt. Sear the shrimp with some oil on both sides to get color,
then remove.
• Add the chicken and the chorizo and sear until the chicken is golden brown.
• Add the peppers, onion, garlic and a large pinch of salt. Cook and occasionally stir until vegetables are soft,
about 10 minutes.
• Add the bay leaves, paprika, saron and tomatoes and cook for 5 minutes.
• Add the broth to the skillet and then add the rice once it comes to a boil.
• Put the lid on and cook for 15 minutes, most of the broth should be absorbed by the rice.
• Once the rice is cooked add the peas, mussels and shrimp. Cook with the lid on until the mussels open.
• Once the mussels are open and the shrimp is hot, the paella is ready.
NOTE: is dish is meant to be served in the skillet. It’s great for large groups and entertaining.

Pot Roast
Serves 5 or double for 10
Ingreedients:
3lbs Flat Iron Steak
Oil for cooking
1 ½ cups carrot, cut into rounds
2 cups onion, large dice
1 ½ cups celery, large dice
2 tomatoes, chopped
1 head garlic, split
½ cup tomato paste
1 cup red wine
2 quarts beef broth
2 cups Yukon gold potatoes
2 cups shitake mushrooms, cleaned
3 bay leaves
1 bunch of thyme
4 sprigs rosemary
• Make a sachet using the bay leaves, thyme and rosemary.
• Season the meat thoroughly with salt and black pepper.
• With the temperature setting on sear, sear the meat with some oil on all sides until caramelized, remove from
the pan.
• Add the carrots, onion, celery, and a pinch of salt. Cook until onions are translucent, about 6 minutes.
• Add tomatoes and garlic and continue cooking until the tomato water has evaporated.
• Add tomato paste and continue cooking until a fond has formed on the bottom of the pan.
• Deglaze with the red wine and cook until almost dry.
• Add the broth and a pinch of salt then bring to a boil.
• Return the beef to the skillet along with the potatoes, mushrooms and sachet. Lower temperature setting to
275°F and cook for 2 ½ hours with the lid on.
NOTE: is can be served in the skillet or in individual bowls.

French Toast Casserole
Serves 12-16 portions depending on size
Ingreedients:
8 eggs
½ cup milk
½ cup cream
1 cup honey
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
2 tablespoons vanilla extract
1 tablespoon salt
18 oz brioche, cubed and dried
• Preheat skillet to 350°F.
• Combine eggs, milk, cream, honey, spices, vanilla extract and salt in a blender and blend until smooth.
• Pour over bread and let soak for 1 hour.
• Spray the skillet with a nonstick spray and add the bread mixture, making one even layer in the pan. Any extra
base can be poured over the top.
• Close the lid and let the casserole bake for 40-45 minutes checking periodically for color doneness.
• After 40 minutes turn the skillet o and let it sit for 15 minutes.
• Best served with maple syrup and powdered sugar.
NOTE: is recipe can be served directly from the skillet or you can cut slices using a rubber spatula.

12. Toujours raccorder la che d’alimentation à l’appareil en premier, puis brancher le cordon électrique sur la prise

14. La poêle n’est pas destinée à la friture des aliments.
15. Lorsqu’une huile est chauée à haute température, elle laisse échapper des gaz inammables, peu importe le
contenant dans lequel elle se trouve. Ne pas exposer une amme à ces gaz, car cela pourrait être dangereux.
Nejamais couvrir la poêle à frire lorsqu’elle contient de l’huile en train de chauer.
