Independent testing conducted at Paci ic Gas & Electric’s Foodservice
Technology Center has just proven that Alto-Shaam’s ASF-75G gas ryer
is the industry’s highest e iciency gas ryer. FSTC is considered the
national leader in commercial ood service equipment testing, using
American Society or Testing and Materials (ASTM) test methods. Fryer
per ormance is based on preheat time and energy consumption, idle
energy consumption rate, pilot energy consumption rate, cooking-energy
e iciency and production capacity.
The Fry-Tech gas ryer o ers a unique heat exchanger system to provide
aster oil temperature recovery. In terms o e iciency, the heat exchanger
design signi icantly reduces connected gas demand. It also lowers lue
temperatures to put less demand on the HVAC system and requires a less
power ul CMF hood system.
Testing in the Fry-Tech gas ryer indicated an average oil temperature recovery
time o slightly over 10 seconds [Chart A], resulting in a per hour production
rate o 134 pounds (±07). The conclusion o testing resulted in a cooking
energy e iciency rating o 71-percent or the Fry-Tech gas ryer versus a
55- to 64-percent rating or competitor ryers o the same type. [Chart B]
In addition to its energy and production e iciencies, the ryer includes an
electronic dual control with programming to li t baskets independently or
with a synchronized li t. The programmable, solid-state control eatures
one-touch cooking operation to help address labor issues and provides a ull
range o additional programming unctions and eatures. Also o ered is the
choice o dual baskets or a single, large basket.
