provided) to t e c imney flue;
- total insulation of t e baking c amber realised wit ceramic fibre, protected on external sides by an aluminium layer;
- armoured electrical eating elements realised in accordance wit CEI tec nical standards using ig quality and long lasting material;
- t ermostats for control and regulation of t e internaI temperature, adjustable up to 450·C;
- t e electric power supply must be t ree-p ase 400 volt wit NEUTRAL, alternated current at 50/60 Hz.
- an adequate internal lig ting allows to c eck t e cooking cycle;
NOTE: the protection against over-current and the differential protection must be installed before the equipment's power supply and this is
up to the user.
INDICATIONS FOR THE APPLIANCE USE
T e main oven controls, placed as side figure, are t e followings :
1 – T ermostat knob for temperature oven control (2 t ermostats eac baking room);
2 – Detector lig ts indicating t e functioning of t e eating elements of eac baking room
(1 detector lig t per t ermostat);
3 – Switc for turning on t e lig t inside t e baking room;
4 – Pyrometer for c ecking t e temperature in t e baking room;
5 – Switc for turning on bottom and top eating elements.
PREPARE THE OVEN FOR FIRST USE
Before proceeding wit t e cooking of food, it is necessary to pre eat t e baking room.
Turn t e baking room t ermostats to set a temperature of approximately 250° C, keep t is temperature
for approximatively one our. W ile t e oven is being pre eated, it will produce steam wit an
unpleasant smell. T is is due to t e surface oxidation of t e eating elements and to t e residual
umidity of refractory stones. Open t e front door and keep it open for several minutes to c ange t e air
in t e oven more quickly, t en close t e door. After t e pre eating p ase, all components will be ready
and it will be possible to use normally t e oven.
For furt er uses of t e oven it will not be necessary to perform t e above pre eating cycle again.
NORMAL USE OF THE OVEN
Before using t e oven, carry out t e following c eck-outs and arrangements.
- Insert t e plug in t e socket located on t e s unt box
- Make sure t at t e magneto-t ermic switc and t e differential switc on t e s unt box are bot ON.
- Turn t e power socket's disconnection switc to I/ON
- Turn t e t ermostat knob and set t e desired temperature; t e temperature can be c ecked also t roug t e pyrometer (or t roug t e graded scale in
t e oven’s version wit out pyrometer).
- Wait until t e oven as reac ed t e desired temperature, t e detector lig t of t ermostat functioning will turn off ;
- W en t e desired temperature is reac ed, open t e door and pIace t e pizzas into t e oven. It is even possible to place t em directly on t e refractory
stones instead t at on containers or pans.
- It is suggested to open t e oven door only for t e time t at is strictly necessary to replace or take out t e pizzas or t e food, so to limit electric
consumption and avoid t at t e temperature inside t e baking room falls down.
PIZZA BAKING
For Pizza baking directly on t e refractory stones floor, it is suggested to set t e oven temperature from 320°C up to 330 °C, wit temperature of top
eating elements set 10% ig er t an bottom eating elements.
For baking t e pizza using t e pan, it is suggested to set t e temperature at 300°C-350°C, wit temperature of top eating elements set 10% ig er
t an bottom eating elements ( t e average values are indicative).
No difference is foreseen for double deck ovens functioning, as t e baking room are independent t e one from t e ot er, bot for panel board and for
eating system.
OVEN MAINTENANCE
Before proceeding wit oven cleaning, wait until t e baking room is completely cold. Take away t e plug from t e socket and advise t e operation on
course by a trust. T e refractory stones can be cleaned up wit a resistant clot bat ed wit water only, or wit a steel brus , excluding w ic ever kind
of detergent, dissolvent or any c emical product. T e very ig temperature reac ed by t e ovens, supplies t e aut omatic sterilization of w ic ever
t ing is inside t e oven. Resistant dirt or food crusts carbonized on t e refractory stone can be removed abrading t e surface wit suitable tools, as a
spoonbill wit steel blade and security grip, using sturdy work gloves. T e external oven surfaces can be cleaned up wit a soft water sponge bat ed
wit water, do not use detergent or dissolvents. Do not use creamy detergents containing abrasive substances t at would damage EVERY SURFACE
forever.
INFORMATION ON THE DANGERS CAUSED BY AN IMPROPER USE
Even t oug t ese ovens are equipped wit a control t ermostat, t ey must be personally supervised by t e user for t e entire lengt of t e operating
cycle.
- Alt oug t e ovens described in t is manual are extremely simple, we would like to provide you wit information on t e dangers t at cannot be
eliminated from t e safety measures adopted by t e designer and information on t e dangers t at could be caused by t e improper use of t e oven and
by t e use of certain accessories
- Keep t e following in perfect condition: t e oven power cable, t e oven plug socket, all t e power supplies and oven distribution box protection
equipment and disconnection switc equipment.
- Adequately protect t e power supply cable from becoming damaged in any way, c ange it immidiately if t ere is any problem wit it or if it does
become damaged (even if it is damaged only on surface)
- At least once every 15 days c eck t e efficiency of t e "lifesaving" differential switc located on t e oven's power supply circuit by pressing t e test
button
- Do not install t e oven outside, under a roofing or under a temporary cover
- Do not use t e oven for warming or drying animals or similars
- Do not spray water, combustible liquids, or liquids of any type inside t e oven or nearby t e oven.
- T e ovens must be used exclusively by personnel w o ave been trained in t e use of electric appliances. T ey must be informed about damages
caused by improper use or use t e oven not in accordance wit t e instructions in t is manual or wit normal diligence.
- T e user must know t e required information about t e unit and must be of t e required legal minimum working age in t e Country w ere t e oven is
installed
- Do not perform any type of cleaning or maintenance before cleaning t e oven, turn t e power supply disconnection switc to t e O/OFF position,
remove t e plug from t e power socket, and put a sign up to announce t at t is operation is taking pIace. Wait until t e oven is completely cooled down;
