1. Allfoodserviceequipmentshouldbeoperatedbytrainedpersonnel.
2. Donotallowyourcustomerstocomeincontactwithanysurfacelabeled"CAUTIONHOT."
3. Whereapplicable:Neverpourcoldwaterintodryheatedunits.
4. Whereapplicable,donotcook,warmorholdfooddirectlyinlinerpans(wellpans).Alwaysuse
steamtablepans/insets,etc.
5. Neverholdfoodbelow150°F(66°C)

1. Addhotwater120°-140°F(50°-60°C)towellpan:

2. Turn the thermostat control to "10" setting or if equipped with infinite controls to "?" or "Hi". Preheat
forapproximately30minutes.
3. Placecoveredinsetwithpreheatedproductintowell.
4. Re-adjust control after another 30 minutes of operation to the "6" setting depending on the amount
andthicknessofproduct.
5. Keepinset/steamtablepan(s)coveredtomaintainidealservingtemperature.

Dryset-upandoperationprocedures(unitswithoutdrains):
1. Turn the thermostat control to "10" setting or if equipped with infinite controls to "7" or "Hi". Preheat
forapproximately30minutes.
2. Placecoveredinsetwithpreheatedproductintowell.
3. Re-adjust control after another 30 minutes of operation to the "6" setting depending on the amount
andthicknessofproduct.
4. Keepinset/steamtablepan(s)coveredtomaintainidealservingtemperature.
