Please ensure that your power supply matches your machine
For changing the speed: Please stop machine first before changing speed in order to avoid
damage to the gear box. Also make sure that the bowl is in fully lifted position and the guard is closed.
• Slow Speed is the middle, dough hook setting. The knob will be facing forward.
• Medium Speed is the bottom, flat beater setting. The knob will be straight down.
• High Speed is the top, whisk setting. The knob will be straight up.
Mixing: Always use the correct attachment for the job.
A. Wire Whip: Suitable for mixing liquids and soft ingredients, can work in all speeds. Do not
run for more than 15 minutes.
B. Flat Beater: Suitable for mixing dry ingredients, can work in low & medium speeds only.
Do not use in high speed. Do not run for more than 15 minutes.
C. Dough Hook: Suitable for mixing dough, can work in low & medium speeds only. Do not
use in high speed, do not run for more than 20 minutes. Absorption ratio must be more than
50%. Refer to mixer capacity chart.

Pizza Dough, Thin -40% AR Dough Hook - 1st only 10 lb.
Pizza Dough, Medium -50% AR Dough Hook - 1st only 15 lb.
Pizza Dough, Thick -60% AR Dough Hook - 1st only 25 lb.
Raised Donut Dough -65% AR Dough Hook - 1st and 2nd 12.5 lb.
Mashed Potatoes Flat Beater 15 lb.
Waffle or Hot Cake Batter Flat Beater 10 qt.
Egg Whites Wire Whisk 1.5 qt.

When mixing dough ( pizza, bread or bagels), check your "AR" absorption ratio - water weight divided by flour weight.
Above capacities based on 12% flour moisture at 70°F water temperature. If high gluten flour is used, reduce above
dough batch size by 10%.
Example: If recipe calls for 5 lb. of water and 10 lb. of flour, then 5 divided by 10 = 0.50 x 100 = 50 %AR.
• 2nd Speed should never be used on mixtures with less than 50% AR.
• Do not use attachments on hub while mixing.
When calculating the correct size mixer for your application, here are some helpful weights & measures:
• 8.3 lb. = 1 gallon of water – 2.08 lb. = 1 Quart.

Bowl'S up and down
When you are mixing, turn the head handle clock-
wise and lift up the bowl to the locking location. So,
it can make the mixing effect completely.
After mixing or changing an agitator, turn the
hand handle counterclockwise and lift down the
bowl so as to take off the bowl or agitator.
When you are installing an mixer, the mixing
axle must set in the faucet of mixer in order to p-
revent from taking off the agitator.

The machine must be put in the dry and flat ground, and make sure the machine steadily.
We can use four screws to fix the bracket, so the mixer will not shake or slope.
Check the power voltage is suitable for voltage of this mixer or not before using, the gr-
ound wire is firm whether or not.
When the motor of this machine is equipped with 380V, you can ask the professional el-
ectricians to fix the electrical source. If you find that running direction is not right, you
can change the two wires, besides the ground wire.
Installation
Warning: users must install the shell ground wire.

Limited 1 Year Warranty
Avantco warrants its equipment free from manufacturer defect and workmanship for a period of 1 Year from the original
date of purchase. This limited warranty is non-transferable and valid to the original commercial purchaser only. Avantco
equipment installed in/on a food truck or trailer will be limited to a period of 30 Days from the original date of purchase.
Avantco reserves the right to approve or deny the repair or replacement of any part or repair request. Avantco does not
warrant parts or accessories purchased independently from equipment.
Avantco shall bear the standard labor charge for each approved repair or replacement, to the extent such repair or
replacement is performed within 50 miles of an authorized service agency, during regular (i.e. straight time) hours of
operation. Avantco does not assume responsibility for travel exceeding 50 miles, or any works performed outside of
regular hours of operation (i.e. overtime). Avantco reserves the right to approve or deny the repair or replacement of any
part or repair request.
Avantco Limited Warranty Does NOT Cover:
• Avantco equipment not purchased directly from an authorized dealer.
• Installation of Avantco equipment in a non-commercial or residential setting.
• Failure to install or use Avantco equipment under proper operating conditions and electrical requirements.
• Avantco equipment purchased, installed, or used outside of the Continental United States.
• Avantco equipment damage or failure due to improper installation, improper utility connection or supply,
and issues resulting from improper ventilation or airflow.
• Avantco equipment where the serial number plate has been removed or altered.
• Avantco equipment that has not been used appropriately, or subject to misuse, neglect, abuse, accident,
alteration, negligence, damage during transit, delivery or installation, fire, flood, or an act of God.
• Avantco equipment that has been altered, modified, or repaired by anyone other than an authorized
service agency. Avantco shall not be held liable for any damages to any person or property which
may result from the use of the equipment thereafter.
• Parts deemed by Avantco to be categorized as normal wear and tear parts, such as light bulbs,
gaskets, cooking grids and other wearable parts.
Prior to contacting your authorized service agency, locate the product serial number plate. See your Avantco Product
Spec Sheet for additional information.
Proper installation, initial check out, air shutter adjustments, or normal maintenance such as lubrication, adjustment, or
calibration of controls is the responsibility of the owner/user or installing contractor and is not covered by this warranty.
This states the exclusive remedy against Avantco relating to the product(s) whether in contract or in tort or under any
other legal theory, and whether arising out of warranties, representations, instruction, installation, or defects from any
cause. Avantco shall not be held liable whether in contract or in tort or under any other legal theory, for loss of revenue
or profit, or for any substitute use or performance, or for incidental, indirect, special or consequential damages,
or for any other loss or cost of similar type, including without limitation, losses or damages arising from food or
product spoilage.
