Oven De cription and Specification
Cooking in a convection oven differs from cooking
in a conventional deck or range oven since heated
air is constantly recirculated over the product by
a fan in an enclosed chamber. The moving air conĆ
tinually strips away the layer of cool air surroundĆ
ing the product, quickly allowing the heat to peneĆ
trate. The result is a high quality product, cooked
at a lower temperature in a shorter amount of time.
Blodgett convection ovens represent the latest adĆ
vancement in energy efficiency, reliability, and
ease of operation. Heat normally lost, is recircuĆ
lated within the cooking chamber before being
vented from the oven: resulting in substantial reĆ
ductions in energy consumption and enhanced
oven performance.

Oven Location
The well planned and proper placement of your
oven will result in long term operator convenience
and satisfactory performance.
The XCELĆ50EC requires 0" (0 cm) clearances beĆ
tween the oven sides and back and any combusĆ
tible or nonĆcombustible construction. However,
we recommend that adequate clearance be mainĆ
tained for proper servicing.
Keep the oven area free and clear of all combusĆ
tibles such as paper, cardboard, and flammable
liquids and solvents.
To ensure proper operation, ventilation must not
be obstructed in any way. Tripping of the blower
motor thermal overload protective device is
caused by excessive ambient temperature on the
control side of the oven resulting from insufficient
ventilation. This condition must be corrected imĆ
mediately to avoid permanent damage to the
oven.
Before making any utility connection to thi
oven, check the rating plate to be ure the oven
pecification are compatible with the electriĆ
cal ervice upplied for the oven.
NOTE: The rating plate is attached to the back of
the oven.
ADJUSTMENTS ASSOCIATED WITH INITIAL
INSTALLATION
Each oven, and its component parts, have been
thoroughly tested and inspected prior to shipĆ
ment. However, it is often necessary to further test
or adjust the oven as part of a normal and proper
installation. These adjustments are the responsiĆ
bility of the installer, or dealer. ince these adjustĆ
ments are not considered defects in material or
workmanship, they are not covered by the Original
Equipment Warranty. They include, but are not
limited to:
Dleveling
Dtightening of fasteners.
No installation should be considered complete
without proper inspection, and if necessary, adĆ
justment by qualified installation or service perĆ
sonnel.

Qualified installation personnel are individuals, a
firm, a corporation, or a company which either in
person or through a representative are engaged
in, and responsible for:
Dthe installation of electrical wiring from the elecĆ
tric meter, main control box or service outlet to
the electric appliance.
Qualified installation personnel must be experiĆ
enced in such work, familiar with all precautions
required, and have complied with all requirements
of state or local authorities having jurisdiction.
U.S. and Canadian in tallation
All ovens, when installed, must be electrically
grounded in accordance with local codes, or in the
absence of local codes, with the National Electrical
Code, ANSI/NFPA 70-Latest Edition and/or CanaĆ
dian National Electric Code C22.2 as applicable.
The ventilation of this oven should be in accorĆ
dance with local codes. In the absence of local
codes, refer to the National ventilation code titled,
Standard for the Installation of Eq ipment for the
Removal of Smoke and Grease Laden Vapors from
Commercial Cooking Eq ipment", NFPAĆ96ĆLatest
Edition.
This equipment is to be installed in compliance
with the Basic Pl mbing Code of the B ilding OffiĆ
cials and Code Administrators International Inc.
(BOCA) and the Food Service Sanitation Man al of
the Food and Dr g Administration (FDA).
This product must be installed by a licensed
Plumber or Gas Fitter when installed within the
Commonwealth of Massachusetts.
Appliance is to be installed with backflow prevenĆ
tion in accordance with applicable federal, provĆ
ince and local codes.
General export in tallation
Installation must conform with Local and National
installation standards. Local installation codes
and/or requirements may vary. If you have any
questions regarding the proper installation and/or
operation of your Blodgett oven, please contact
your local distributor. If you do not have a local disĆ

age choices, single or three phase grounded cirĆ
cuits.

The electric motor, indicator lights and related
switches are interconnected through the one powĆ
er source supplied to the oven.

Delivery and In pection
All Blodgett ovens are shipped in containers to
prevent damage. Upon delivery of your new oven:
DInspect the shipping container for external damĆ
age. Any evidence of damage should be noted
on the delivery receipt which must be signed by
the driver.
DUncrate the oven and check for internal damĆ
age. Carriers will accept claims for concealed
damage if notified within fifteen days of delivery
and the shipping container is retained for inĆ
spection.
The Blodgett Oven Company cannot a ume

for delivery in good order when the hipment
wa accepted. We are, however, prepared to
a i t you if filing a claim i nece ary.

Crate #1
The first crate contains a single XCELĆ50EC oven.

The second crate contains:

Oven A embly
OVEN ASSEMBLY TO STAND
NOTE: The oven weighs approximately 350 lbs,
we recommend sing either a fork tr ck or
genie lift to raise the oven.
1. Remove the bolts securing the oven shipping
brackets to the pallet.
2. Open the oven door. Remove the side racks
and baffle from inside the oven cavity.
3. Cut a piece of cardboard 18" (457 mm) x 26"
(660 mm) and place in the oven cavity above
the elements. This will protect the oven from
the forks of the forklift.
4. Adjust the forks on the lift to less than 16" (406
mm) apart so they will fit between the eleĆ
ments and the right side of the oven cavity.

5. Raise the oven to above the height of the
stand.
6. Remove the shipping brackets from the botĆ
tom of the oven. ave the bolts to use in TEP
8.
7. Position the stand below the oven. Be sure the
support arms on the stand are on the right
side when facing the front of the oven. Place
the oven flush with the front of the stand and
lower into place.
