Oven De cription and Specification
Cooking in a convection oven differs from cooking
in a conventional deck or range oven since heated
air is constantly recirculated over the product by
a fan in an enclosed chamber. The moving air conĆ
tinually strips away the layer of cool air surroundĆ
ing the product, quickly allowing the heat to peneĆ
trate. The result is a high quality product, cooked
at a lower temperature in a shorter amount of time.
Blodgett convection ovens represent the latest adĆ
vancement in energy efficiency, reliability, and
ease of operation. Heat normally lost, is recircuĆ
lated within the cooking chamber before being
vented from the oven: resulting in substantial reĆ
ductions in energy consumption and enhanced
oven performance.

Oven Location
The well planned and proper placement of your
oven will result in long term operator convenience
and satisfactory performance.
The XCELĆ50EC requires 0" (0 cm) clearances beĆ
tween the oven sides and back and any combusĆ
tible or nonĆcombustible construction. However,
we recommend that adequate clearance be mainĆ
tained for proper servicing.
Keep the oven area free and clear of all combusĆ
tibles such as paper, cardboard, and flammable
liquids and solvents.
To ensure proper operation, ventilation must not
be obstructed in any way. Tripping of the blower
motor thermal overload protective device is
caused by excessive ambient temperature on the
control side of the oven resulting from insufficient
ventilation. This condition must be corrected imĆ
mediately to avoid permanent damage to the
oven.
Before making any utility connection to thi
oven, check the rating plate to be ure the oven
pecification are compatible with the electriĆ
cal ervice upplied for the oven.
NOTE: The rating plate is attached to the back of
the oven.
ADJUSTMENTS ASSOCIATED WITH INITIAL
INSTALLATION
Each oven, and its component parts, have been
thoroughly tested and inspected prior to shipĆ
ment. However, it is often necessary to further test
or adjust the oven as part of a normal and proper
installation. These adjustments are the responsiĆ
bility of the installer, or dealer. ince these adjustĆ
ments are not considered defects in material or
workmanship, they are not covered by the Original
Equipment Warranty. They include, but are not
limited to:
Dleveling
Dtightening of fasteners.
No installation should be considered complete
without proper inspection, and if necessary, adĆ
justment by qualified installation or service perĆ
sonnel.

Qualified installation personnel are individuals, a
firm, a corporation, or a company which either in
person or through a representative are engaged
in, and responsible for:
Dthe installation of electrical wiring from the elecĆ
tric meter, main control box or service outlet to
the electric appliance.
Qualified installation personnel must be experiĆ
enced in such work, familiar with all precautions
required, and have complied with all requirements
of state or local authorities having jurisdiction.
U.S. and Canadian in tallation
All ovens, when installed, must be electrically
grounded in accordance with local codes, or in the
absence of local codes, with the National Electrical
Code, ANSI/NFPA 70-Latest Edition and/or CanaĆ
dian National Electric Code C22.2 as applicable.
The ventilation of this oven should be in accorĆ
dance with local codes. In the absence of local
codes, refer to the National ventilation code titled,
Standard for the Installation of Eq ipment for the
Removal of Smoke and Grease Laden Vapors from
Commercial Cooking Eq ipment", NFPAĆ96ĆLatest
Edition.
This equipment is to be installed in compliance
with the Basic Pl mbing Code of the B ilding OffiĆ
cials and Code Administrators International Inc.
(BOCA) and the Food Service Sanitation Man al of
the Food and Dr g Administration (FDA).
This product must be installed by a licensed
Plumber or Gas Fitter when installed within the
Commonwealth of Massachusetts.
Appliance is to be installed with backflow prevenĆ
tion in accordance with applicable federal, provĆ
ince and local codes.

Installation must conform with Local and National
installation standards. Local installation codes
and/or requirements may vary. If you have any
questions regarding the proper installation and/or
operation of your Blodgett oven, please contact

Delivery and In pection
All Blodgett ovens are shipped in containers to
prevent damage. Upon delivery of your new oven:
DInspect the shipping container for external damĆ
age. Any evidence of damage should be noted
on the delivery receipt which must be signed by
the driver.
DUncrate the oven and check for internal damĆ
age. Carriers will accept claims for concealed
damage if notified within fifteen days of delivery
and the shipping container is retained for inĆ
spection.
The Blodgett Oven Company cannot a ume
re pon ibility for lo or damage uffered in
tran it. The carrier a umed full re pon ibility
for delivery in good order when the hipment
wa accepted. We are, however, prepared to
a i t you if filing a claim i nece ary.

OVEN ASSEMBLY TO STAND
NOTE: The oven weighs approximately 350 lbs,
we recommend sing either a fork tr ck or
genie lift to raise the oven.
1. Remove the bolts securing the oven shipping
brackets to the pallet.
2. Open the oven door. Remove the side racks
and baffle from inside the oven cavity.
3. Cut a piece of cardboard 18" (457 mm) x 26"
(660 mm) and place in the oven cavity above
the elements. This will protect the oven from
the forks of the forklift.
4. Adjust the forks on the lift to less than 16" (406
mm) apart so they will fit between the eleĆ
ments and the right side of the oven cavity.

5. Raise the oven to above the height of the
stand.
6. Remove the shipping brackets from the botĆ
tom of the oven. ave the bolts to use in TEP
8.
7. Position the stand below the oven. Be sure the
support arms on the stand are on the right
side when facing the front of the oven. Place
the oven flush with the front of the stand and
lower into place.

OVEN LEVELING
1. Place a level on top of the oven. Loosen the
set screws on the side of each caster. Turn the
adjustment collar clockwise to raise and
counter clockwise to lower the oven.
2. When the oven is level, tighten the casters by
turning the two set screws on the side of each
caster assembly.

DRAIN ASSEMBLY
1. mear the threads of the drain pipe with pipe
dope.
2. Install the drain pipe using a pipe wrench. Be
sure to align the actuator mounting bracket
with the side of the oven.
3. Hang the drain cap assembly ring over the acĆ
tuator mounting bracket. The drain cap asĆ
sembly is used to cover the drain if the drain
hose cannot be left connected.

WATER CONNECTION
1. Prior to connecting the oven to the water
source, be sure to run the water for two minĆ
utes to flush the line. Run long enough to verify
the water is cold, not hot.
2. Connect the water hose to the water source
and the water connection on the back of the
oven.

INSTALLING DRAIN HOSE
1. If the drain cap is connected, lift up on the two
rings to remove the cap.
2. Connect the drain hose to the oven drain. Pull
down on the rings to secure.

drain. Cut the hose to length.
NOTE: Be s re the hose is no longer than
necessary. If the hose is too long, it

5. DRAIN KEY - Press to open or close the
drain.
6. CAN KEY - Press for recipe review during
idle. Also used to review time remaining durĆ
ing multiple cooks (press & hold)
7. COOL DOWN KEY - Used to enter or exit cool
down mode.
8. TEMP/TOGGLE CLEAR KEY - Press to check
actual temperature; also used to clear value
when in programming mode.
9. HOLD KEY - Holds are not sed for KFC apĆ
plications. Used to toggle between upper and
lower case letters when programming.
10. ETBACK KEY - Press to enter or exit etĆ
back mode.
11. CLEAN KEY - Press to enter or exit the cleanĆ
ing mode

OPERATIONAL TEST PROCEDURE
1Plug oven into electrical source

NOTE: This scrolling can be bypassed by pressing SCAN.
The controller will scroll through the following:
1.) Appliance Type

5.) PREHEAT"
3The oven will enter PREHEAT" mode and begin to warm up. When the set temperature
(default 450°F) is reached, the Preheat timer will count down from 30 minutes to zero.
When LOAD" is displayed, the oven is ready for use.
4Press any illuminated product key.
5The cook cycle will count down in the display.
OPERATION AND PROGRAMMING
Refer to KFC tandards Library Procedures for opĆ
eration, programming and cleaning procedures.
RECIPE REVIEW - Quickly see what is proĆ
grammed for each product key.
1. Press the CAN key.
2. elect any product key previously proĆ
grammedĆLED will be lit above the key.
3. Press the DOWN arrow key to scroll through
the list.
4. Press CAN to exit.
VIEW TEMPERATURE SETTING
1. Press the TEMP key once to view Actual TemĆ
perature

COOL DOWN
1. To enter Cool Down, press the COOL DOWN
key while the oven door is closed. When the
display reads COOL," the door can then be
opened to the first stop.
WARNING!!
THE FAN IS STILL MOVING. DO NOT
REACH INTO THE OVEN. The fan will auĆ
tomatically hut off when the actual temĆ
perature reache 105°F.
2. To exit Cool Down, press the COOL DOWN
key again. The oven will come back up to set
temperature.

(FA T"), the supplier of the CKR CommunicaĆ
tion Link oftware (the  CKR Link oftware")
which is embedded within the controller of this apĆ
pliance purchased from the BLODGETT OVEN
COMPANY (COMPANY"). The CKR Link oftĆ
ware includes computer software, the associated
media, operational instructions, and any printed
materials. The CKR Link oftware is used to esĆ
tablish communication to and from a terminal,
computer, server or another controller. By using
the CKR Link oftware you agree to be bound by
the terms of this EndĆUser License Agreement
(EULA"). If you do not agree to the terms of this
EULA, promptly contact the COMPANY or FA T,
and a controller that does not contain the CKR
Link oftware will be provided as a replacement.
Software Product Licen e
The CKR Link oftware is copyrighted and is
protected by United tates copyright laws and inĆ
ternational treaty provisions. The CKR Link oftĆ
ware is licensed, not sold. Title, ownership rights,
and intellectual property rights in the CKR Link
oftware remains with FA T. You may not remove
any copyright notice of the CKR Link oftware as
well as the identification mark  CKR CommuĆ
nication Link" located on the front panel and comĆ
munication port of the controller.
3. Licen e: FA T grants to you a nonĆtransferĆ
able, nonexclusive license to:
Duse the CKR Link oftware embedded within
the controller only if such controller is temporariĆ
ly connected to a single terminal or computer for
the exclusive purpose of configuring the operatĆ
ing parameters and testing of this appliance.
The CKR Link oftware may only be used with
the controller.
You may not, unless under a separately purĆ
chased CKR Network License from FA T:

4. Copyright: You agree that the CKR Link
oftware is the property of FA T and is propriĆ
etary to them. You agree to use your best efĆ
forts to prevent and protect, the contents of
the CKR Link oftware, or any part of, from
unauthorized use or disclosure.
5. Licen e Fee: The CKR Link oftware liĆ
cense is granted in consideration for the liĆ
cense fee which has been paid by the COMĆ
PANY. The license fee may have been charged
separately when you purchased your controlĆ
ler or included in the total purchase price of
the controller.
6. De cription of Other Right and LimitaĆ
tion : You may not:
Dmodify, network, rent, loan, distribute, subliĆ
cense or create derivative works based upon
the CKR Link oftware in whole or in part or
electronically transmit the CKR Link oftware
over a network.
Ddisassemble, reverse compile, translate or deĆ
cipher the software or protocols of the CKR
Link oftware, in whole or in part, for any purĆ
pose.
No license under any existing or future patents to
which FA T has rights, interest or title thereto is
granted by FA T to you except that which is necĆ
essary for the limited use of the CKR Link oftĆ
ware in the form provided to you and as authorized
herein.
The CKR Link oftware contains copyrighted
material, trade secrets and other proprietary mateĆ
rial and in order to protect them you may not deĆ
compile, reverse engineer, disassemble or otherĆ
wise reduce the CKR Link oftware to a
humanĆperceivable form.
All your rights under the EULA are transferred with
the controller, and the recipient agrees to abide by
the terms of the EULA. Once you have transferred
the controller all your rights under this EULA are
terminated.
7. Termination: Without prejudice to any other
rights, FA T may terminate this EULA without
refund if you fail to comply with the terms and
conditions of this EULA.
