This appliance has been CE- arked on the basis of co pliance with the Low Voltage and EMC Directives for
the voltages stated on the Data Plate
WARNING -THIS APPLIANCE MUST BE EARTHED
On co pletion of the installation these instructions should be left with the Engineer-in-Charge for reference
during servicing. Further to this, The Users Instructions should be handed over to the User, having had a
de onstration of the operation and cleaning of the appliance.
IT IS MOST IMPORTANT THAT THESE INSTRUCTIONS BE CONSULTED BEFORE INSTALLING AND
COMMISSIONING THIS APPLIANCE. FAILURE TO COMPLY WITH THE SPECIFIED PROCEDURES MAY
RESULT IN DAMAGE OR THE NEED FOR A SERVICE CALL.
PREVENTATIVE MAINTENANCE CONTRACT
In order to obtain axi u perfor ance fro this unit we would reco end that a Maintenance Contract be
arranged with SERVICELINE. Visits ay then be ade at agreed intervals to carry out adjust ents and
repairs. A quotation will be given upon request to the contact nu bers below.

At end of unit life, dispose of appliance and any replace ent parts
in a safe anner, via a licenced waste handler.
Units are designed to be dis antled easily and recycling of all
aterial is encouraged whenever practicable.

SECTION 1 - INSTALLATION
1.2 SITING
The appliance can be installed on a fir , level floor
allowing a ini u clearance of 25 at the rear
and sides. A vertical clearance of 900 is required
between top of unit and any overlying co bustible
surface. Fire regulations ust also be co plied with.
1.3 ELECTRICAL SUPPLY
These units are equipped with a cable entry in base
LH side, suitable for a 25 conduit connection.
A suitable isolating switch ust be installed with a
i i u contact separation of 3 in all poles and
wiring MUST be executed in accordance with the
regulations listed on the cover of this anual.
THESE APPLIANCES MUST BE EARTHED.
A suitable ter inal is provided within control
co part ent which should be used to earth the
appliance.
1.4 ELECTRICAL RATINGS
These fryers have veen designed for use on A.C.
supplies only. Either 3 phase/4 wire or alternatively
on a single phase supply. The loadings are as stated
on appiance data plate.
SECTION 2 - ASSEMBLY and
COMMISSIONING
2.1 ASSEMBLY
Place appliance in position. Carefully level feet
adjusters.
The appliance is supplied co plete and ready to
connect to the supply ains.
2.2 CONNECTION TO THE ELECTRICITY SUPPLY
To gain access to ter inals, proceed as follows:-
Open door(s). Re ove fixings in lower flange of
control panel.
Ease botto of panel forward slightly, then outward to
release it.
On double pan odel, it will be found convenient to
rest the panel on the opened doors.
To support facia panel on E350/36 odel, a swinging
ar is provided. This is located beneath botto panel
of control cha ber, behind door co part ent. The
panel should rest on door and the out-swung ar .
The ter inals are now accessible within controls
co part ent. The supply cables ay be fed upward,
through in-built conduit tube.

When connecting to a single phase supply, the three
line ter inals ust be connected together using the
wire links provided. It is i portant that the links and
the inco ing supply cable be connected as shown in
the following diagra .

After connecting to supply, replace facia panel and
test appliance.
2.3 COMMISSIONING
Ensure that unit is isolated fro ains supply.
Clean pan using a hot water and detergent solution.
Rinse pan and dry it thoroughly before co encing
operation.
Fill with cooking oil to the level arked on the ele ent
guard and switch on with the ther ostat at axi u
setting i.e. 190
o
C. Check that pilot la ps function and
that ther ostat operates.
Having co pleted installation, de onstrate ethod
of operation to the kitchen staff. Point out the location
of isolating switch for use in an e ergency or during
cleaning.
SECTION 3 - SERVICING
Before atte pting any aintenance task, isolate
appliance at ain switch and take steps to ensure
that it cannot be inadvertently switched on.
3.1 CONTROL PANEL - TO REMOVE
a) Open door(s) and re ove fixings in lower flange of
control panel, near the ends. Ease botto of panel
forward slightly, then outward to release it.
b) On single pan odel, a swinging ar is provided to
support control panel during aintenance.
On double pan units, rest panel upon open doors.
UNLESS OTHERWISE STATED, PARTS WHICH HAVE BEEN PROTECTED BY THE MANUFACTURER

3.2 CONTROL THERMOSTAT
Should this co ponent prove to be faulty, it is not
nor ally repairable. It ust be replaced, using the
following procedure:-
a) Drain pan.
b) Re ove control panel. (Refer to Section 3.1)
c) Identify control ther ostat and re ove push-on
connections. First note their locations.
d) Using a stubby pozidriv screwdriver, re ove
ther ostat fro control panel.
e) Re ove heating ele ent as detailed in Section
3.4.
f) Re ove cover plate on ele ent hinge block
through which capillary tube passes. Manoeuvre
capillary tube and phial through oving hinge tube.
g) Feed capillary tube and phial through hole in base
of hinge block. Re ove ther ostat.
h) Replace ther ostat in reverse order, taking care
that capillary tube is well clear of ele ent
ter inals.
Not
When fitting a new ther ostat, fit existing insulating
sleeving over capillary tubing. Ensure that no tubing
is left exposed to possible contact with live parts.
Coil the excess capillary tube by wrapping it round a
suitable andrel of approxi ately 1

" dia eter.
When fitting gland, ensure it is tightened fir ly but do
not overtighten. Always check fitting for leaks by
re-filling with oil and heating to axi u
te perature.
When fitting ther ostat to control panel, ensure that
earth bonding wire is replaced below one of the
ther ostat fixing lugs. Take care that coiled capillary
tubing is clear of any live parts when control panel is
replaced.
Re-fit the ther ostat in reverse order to re oval.
3.3 PILOT LAMPS - TO REPLACE
a) Re ove control panel. (Refer to Section 3.1)
b) Pull off la p connections.
c) Undo hex nut at rear of la p and re ove la p.
Replace in reverse order.
3.4 HEATING ELEMENT - TO REPLACE
To replace ele ent, proceed as follows:-
a) Drain pan.
b) Re ove basket support bar fro ele ent and fully
raise ele ent.
c) Re ove fixings on underside of ele ent ter inal
box.
d) Re ove ele ent ter inal box cover plate by
prising up lower edge with a screwdriver.
e) Lower ele ent and re ove guard (4 fixings).
f) Re ove ele ent push on connections. First note
their locations.
g) Re ove fixings which secure ele ent to ter inal
box. Re ove ele ent.
Replace in reverse order and ensure that oil
resistant gasket is fitted below ele ent ounting
plate.
Important
Earth bonding connections are provided with
shakeproof or spring washers. It is i portant that
these be correctly replaced during re-asse bly.
3.5 SAFETY THERMOSTAT
3.5.1 To R -s t
In event of control ther ostat failure resulting in
overheating of the oil, the safety ther ostat will
operate and will switch off all power to ele ents.
To re-establish circuit, it will be necessary to re-set
the safety ther ostat.
Allow fryer to cool and re ove control panel (refer to
Section 3.1). This will reveal safety ther ostat which
is ounted on rear of controls co part ent.
To re-set, fir ly press red button.
On double pan odels, LH and RH ther ostats are
appropriate to LH and RH pans respectively.
3.5.2 Saf ty Th rmostat - To R plac
a) Drain pan.
b) Re ove control panel. (Refer to Section 3.1)
c) Identify safety stat and re ove push-on
connections. First note their locations.
d) Using a stubby pozi screwdriver, re ove stat fro
ounting bracket.
e) Re ove heating ele ent as detailed in Section
3.4.
f) Re ove cover plate on ele ent hinge block,
through which capillary tube passes. Manoeuvre
capillary tube and phial through oving hinge
tube.
g) Feed capillary tube and phial through hole in base
of hinge block. Re ove ther ostat.
h) Replace ther ostat in reverse order. Ensure
capillary tube is well clear of ele ent ter inals.
After replacing ther ostat, press red button fir ly to
ensure contacts are in closed condition.
3.7 TILT SWITCH
Located in ele ent re inal box, this should require
no aintenance.
