c nsulted. Th se parts which have been pr tected by the manufacturer MUST NOT be adjusted by the User.
Users sh uld be c nversant with the appr priate pr visi ns f the Fire Precauti ns Act and the requirements f
the Gas Safety Regulati ns. in particular the need f r regular servicing by a c mpetent pers n t ensure the
c ntinued safe and efficient perf rmance f the Appliance.
Up n receipt f the User's Instructi n manual, the installer sh uld instruct the resp nsible pers n(s) f the
c rrect perati n and maintenance f the appliance.
This equipment is ONLY FOR PROFESSIONAL USE, and shall be perated by QUALIFIED pers ns. It is the
resp nsibility f the Supervis r r equivalent t ensure that users wear SUITABLE PROTECTIVE CLOTHING
and t draw attenti n t the fact that, s me parts will, by necessity, bec me VERY HOT and will cause burns if
t uched accidentally.
PREVENTATIVE MAINTENANCE CONTRACT
In rder t btain maximum perf rmance fr m this unit we w uld rec mmend that a Maintenance C ntract be
arranged with SERVICELINE. Visits may then be made at agreed intervals t carry ut adjustments and
repairs. A qu tati n will be given up n request t the c ntact numbers bel w.

At end f unit life, disp se f appliance and any replacement parts
in a safe manner, via a licenced waste handler.
Units are designed t be dismantled easily and recycling f all
material is enc uraged whenever practicable.

SECTION 1 - GENERAL DESCRIPTION
The units are pr vided with wire mesh basket(s)
which may be l cated up n the back screen hanging
rail f r draining etc. A rem vable dust c ver is
pr vided which sh uld be placed ver the pan(s)
when n t in use. A pan strainer is p siti ned in the
c l z ne at the pan b tt m t c llect il sediment
during the c king perati n. 380mm high screens
can be supplied if specified and may als include a
st rage/drainage tray f r fish, etc.
Oil temperature is c ntr lled by an adjustable users
therm stat and a pre-set safety therm stat.
The multifunci nal gas c ntr l has pil t, main gas and
flame failure c ntr ls built in. If pil t flame sh uld
extinguish f r any reas n r if main gas supply is
turned ff burner will shut d wn until lighting
pr cedure is repeated.
A spark igniter is fitted t light pil t and a drain valve
is l cated within c ntr ls c mpartment t empty pan
when necessary.

User T ermostat
This is an adjustable setting device which will pr vide
frying temperatures up t 190
C.
Safety T ermostat
This is pre-set at fact ry. In event f an perating
therm stat failure, the safety therm stat will shut gas
ff at pil t and main burners.
If this ccurs, the reas n f r failure must be
investigated and rectified. The device is reset by
rem ving the black cap that pr tects the reset butt n.
Push reset butt n d wn gently using a thin-shafted
screwdriver and replace cap.
Gas Control
Situated at t p side f MFC, c ntr l kn b is set
c rrectly when appr priate symb l is al ngside
p inter. (See Figure 2)
Flame Failure Device
Operated by pil t flame. If pil t bec mes
extinguished, gas will be shut ff fr m main burner.
Warning
If pil t is turned ff f r any reas n, wait a minimum f
three minutes bef re attempting t relight it.
The burner c ntr l is built in t the flame failure
device and the meth d f perati n is detailed here.
SECTION 2 - LIGHTING and OPERATION
Lig ting
A 20 sec nd delay (appr x.) will ccur between
establishing a pil t flame and burner igniti n.
Operating T e Fryer
The unit will perate aut matically with burner g ing
ut when desired temperature is reached. N further
perati n f c ntr l kn b is necessary until c king
cycle is ver

A g d quailty vegetable il is preferred. H wever,
pure edible dripping may be used pr viding that
therm stat setting d es n t exceed 180
C.
Sm ke p int will be reached ab ve such a setting
and the fat will break up and deteri rate.
Important
In rder t meet the requirements f the Fire
Precauti ns Act 1971, unit sh uld always be turned
ff when unattended.
Warning
It is danger us t use il which is t ld as it has a
reduced flash p int temperature and is pr ne t surge
b iling. Change il regularly t prevent risk t the
perat r.
Caution
T prevent surge b iling, d n t exceed
rec mmended l ads and never charge pan with
ver-wet f d items. Never leave a w rking fryer
unattended.
Caution
Overheating f il sh uld be av ided.
Replenis ing Oil W en Fryer Is Hot
Caution
- It is rec mmended that replenishment f il
sh uld take place when fryer is c l.
Recommended Filling levels
Caution
- Always maintain an il level between
maximum and minimum strips indicated n well rear.
Initial C arging Of T e Pan
Pri r t first time use, pan sh uld be th r ughly
cleaned using h t water and detergent. Rinse and dry
up n c mpleti n.
Make sure drain valve is cl sed. Fill pan with il up t
level indicated by strip n well rear. Appr ximate
capacities are :
G2830 - 13kg G2860 - 22kg G2865 - 2 x 13kg

If s lid fat is used, rem ve basket supp rts fr m pan
b tt m(s). Apply fat in small pieces and melt at
therm stat setting f 120
C. Add fat until required
level has been achieved. S lid fat sh uld always be
melted at a l w setting. Frying temperature will be set
when the s lid material has disappeared.
Lig ting T e Burner
Warning
After turning ff pil t f r any reas n, wait
at least 5
minutes
bef re attempting t relight.
Ensure pan is filled with c king il pri r t lighting.
Therm stat must be turned ff (fully anti-cl ckwise).
A 20 sec nd delay (appr x.) will ccur between
establishing pil t flame and burner igniti n.
The pil t has t be lit using the f ll wing pr cedure:
a) Push c ntr l kn b in and turn t pil t p siti n. (See
Figure 2)
b) C ntinue t h ld kn b in. Press igniter fully in and
release, the spark sh uld light pil t. If pil t d es n t
light, c ntinue t press and release igniter butt n
until pil t lights.
c) When pil t is lit, h ld c ntr l kn b in f r 20 sec nds
then release.
d) Check pil t remains lit. If the pil t is extinguished
when kn b is released, wait at least 3 minutes
bef re repeating fr m Step 1.
Main burner may n w be lit as f ll ws :
a) Light pil t as ab ve and wait 30 sec nds.
b) Set therm stat t 190
C.
c) Turn c ntr l kn b t MAIN p siti n (Figure 2) and
check burner lights.
d) Having lit burner turn therm stat t required setting
if ther than 190
C.
To Turn Main Burner OFF
Return c ntr l kn b t pil t p siti n (see Figure 2).
This will extinguish main burner whilst leaving pil t lit.
To Turn Pilot Burner OFF
Push c ntr l kn b in and turn t OFF p siti n.

Heat-Up Time
It takes 12-14 minutes t reach 190

Each basket will h ld 1.8kg (max.) f raw chips.
C k f r 4 - 6 minutes acc rding t size and type f
chip. Slightly l nger frying times are required when
using dripping. Output will be marginally less als .
Slow Blanc ing
This may be necessary when large quantities f chips
are required at peak peri ds. This pr cess c nsists f
pre-frying at a therm stat setting f 150
C.
Frying time is 3 - 5 minutes.
Fast Blanc ing
This sh uld be carried ut at a setting f 180

Finishing chips prepared by either meth d f
blanching sh uld be carried ut within 3 h urs at a
therm stat setting f 180

il. Frying time is 1 - 2 minutes. Serve immediatley f r
best results. Further st rage sh uld be av ided.
Frying Fis
Rem ve baskets and fry fish n basket supp rt grid at
a temperature f 180
C. Rem ve p rti n with a
regular hand-held fish lifter. Small quantities may be
prepared in basket(s), the f ll wing meth d achieves
best results.
Dry fish well and seas n basket by immersing in h t
fat. Place p rti n in basket and l wer this sl wly int
pan. This will reduce risk f p rti n sticking t basket.

Ot er Types of Food
F d suitable f r preparati n by deep frying has a
particular c king temperature where the best results
are btained. The f ll wing therm stat settings are
rec mmended but may be varied t suit individual
tastes. Such settings are nly valid when vegetable
il is used as the frying medium. The maximum
setting f r dripping sh uld never exceed 180
C.
The c king chart inf rmati n is simply a guide.
Culinary pini n is subjective thereby any values
sh uld be c nsidered t be appr ximate.
Cooking C arts
With the excepti n f p tat es, fried f d is generally
c ated with ne f the f ll wing :
Milk and Flour, Egg and Crumbs, Batter or Pastry
i.e. Whitebait, p tat cr quettes, fillet f fish,
sam sas.
The c ating helps t pr tect a f d item fr m h t il.
A variety f different f d can be deep fried including:
C icken, fis , vegetables, pork, egg,
pastries and fruit
C king temperatures and times are dependant up n
the f ll wing :
Class and state of t e cooking medium
Quality, size and cut of food item
Pre- eat temperature
Load

SECTION 4 - CLEANING and MAINTENANCE
S utting Down after Work
When w rk is c mpleted, gas c ntr l kn b sh uld be
returned t pil t p siti n (See Figure 2) leaving pil t lit
if required.
D n t use therm stat kn b as a gas c ntr l.
Burner will re-light when temperature dr ps bel w
dial setting. Bef re draining, all w il t c l. Burner
c ntr l sh uld be OFF t av id accidental perati n.
Daily Cleaning
Is late gas supply and all w pan c ntents t c l t a
safe temperature. Insert drain pipe suppied int drain
valve. Open valve and filter il thr ugh a strainer int
receptacle. Cl se valve and wipe d wn stainless steel
exteri r panels with a cl th, wrung ut in h t water
and detergent. Rinse with clean water and dry
th r ughly.
Weekly Cleaning
Carry ut n rmal daily cleaning pr cedure. Rem ve
false pan b tt m with strainer and clean seperately.
Fill pan with l w sudsing detergent and h t water, just
ab ve n rmal il level mark. All w pan t s ak
vernight if necessary. Drain detergent water away
and rinse pan th r ughly with clean, h t water bef re
wiping dry. Rep siti n false b tt m and strainer and
refill pan with il.
Stainless Steel Surfaces
Stainless steel can be easily marked by certain types
f sc uring pad including nyl n types theref re care
sh uld be exercised when using these. Always rub
al ng in grain directi n when rubbing stainless steel
with a cl th.
Safety Precautions
A st p valve will be fitted in the gas suppy pipe t unit.
User must be familiar with device l cati n and valve
perati n t enable is lati n in event f emergency.
Warning
D n t attempt t clean fryer with a jet f water r
steam clean. Acid r hal gen based descaling liquids
(e.g. - chl rine) and cleaning p wders sh uld similarly
never be used. If a smell f gas is evident, is late
supply and ventilate area bef re calling l cal
Gas Regi n Supplier.
The use f flammable s lvents f r cleaning must be
av ided.
Take care n t t damage therm stat b ss r tubes
which are l cated within stainless steel guards when
cleaning. These are p siti ned immediately bel w the
fishplate at fr nt f fryer pan.
NEVER SEARCH FOR A GAS ESCAPE WITH A
NAKED FLAME.
