use. This appliance can be used to sharpen steel and
ceramic kitchen knives, sporting, and pocket knives.

IMPORTANT SAFEGUARDS
When using electrical appliances, basic safety precautions
should always be taken, including the following:
• Read all instructions before using the ULTRA-EDGE Diamond
Hone Electric Knife Sharpener.
• The appliance should always be turned “OFF” before plugging
or unplugging from the outlet. Never yank the cord to discon-
nect from the outlet, instead gently pull the plug to disconnect.
• When in the “ON” position, the ULTRA-EDGE Diamond Hone
Electric Knife Sharpener should always be on a stable counter-
top or table.
• ATTENTION! This appliance has an overheat protection. The
knife sharpener will turn OFF automatically once the motor
temperature reaches 221°F / 105°C. This safety feature
CANNOT be overrun by unplugging and plugging back into the
power outlet.
• ATTENTION! DO NOT use this knife sharpener for more than
10 minutes at the time. Wait at least 90 min before the 2nd run.
Allow the motor to cool down to prevent frequent auto shut-off
due to overheating protection.
• Make sure that only clean knife blades are inserted in this
electric knife sharpener.
• Do not attempt to sharpen scissors, ax blades, or any blade
that does not fit freely in the slots.
• Do not use honing oils, water, or any other lubricant with this
knife sharpener.
• Carefully position the power supply cord to avoid damage
from the knife blades while sharpening.
• To avoid the risk of injury, do not let the cord hang over the
edge of the table or counter or touch hot surfaces.
• Unplug from the power outlet when not in use and before
cleaning.
• Do not operate the appliance with a damaged cord or plug or

after the appliance malfunctions or is dropped or damaged in
any manner.
• To protect against the risk of electrical shock, do not immerse
this electric knife sharpener in water or other liquid.
• Do not use this appliance other than for its intended use.
• For household use only.
• Do not use outdoors.
• Keep this electric sharpener in a dry and cool place.
• The appliance is not intended to be used or cleaned by
children or persons with reduced physical, sensory, or mental
capabilities or lack of experience and knowledge of the hazards
involved.
• CAUTION! This appliance has a polarized plug (one blade is
wider than the other). To reduce the risk of electric shock, this
plug will fit in a polarized outlet only one way. If the plug does
not fit fully in the outlet, reverse the plug. If it still does not fit,
contact a qualified electrician. Do not modify the plug in any
way.
• WARNING: KNIVES PROPERLY SHARPENED ON YOUR
ULTRA-EDGE KNIFE SHARPENER WILL BE SHARPER THAN
YOU EXPECT. TO AVOID INJURY, USE AND HANDLE THEM
WITH EXTREME CARE. DO NOT CUT TOWARD ANY PART OF
YOUR FINGERS, HAND OR BODY. DO NOT RUN YOUR FINGER
ALONG A NEWLY SHARPENED KNIFE. STORE IN A SAFE
MANNER.
• CAUTION! Do NOT sharpen serrated blades with this
appliance.
• Always pull the blade toward you. Never push the blade away
from you!
• ATTENTION! In order to avoid motor overheating, do not
continuously use it for more than 10 minutes.

GENERAL USE
CAUTION
• Before using, make sure that
the voltage indicated on the
rating plate of the appliance
corresponds to your outlet
voltage.
• Always use the sharpener with
the power ON/OFF button
facing you.
• Do NOT sharpen serrated
blades with this electric knife
sharpener.
• Never insert the tip of the knife
into the blade guide first and
push through. This could
damage the knife sharpener and
your knife.
• After sharpening is completed,
always wipe the knife blade with
a damp cloth to remove any
metal filings that may remain
from the sharpening process.
• Do not run fingers along the
edge of the knife to check sharp-
ness. To avoid injury, handle
knives with extreme care.

This electric sharpener has 2 stages of sharpening,
labeled with numbers 1 and 2:
Stage 1 - Coarse sharpening: used for repairing blunt
knives or seriously damaged knives.
Stage 2 - Fine honing: used for knife maintenance.
Each stage has 2 slots,
one slot for each side
of the blade, left and
right.
HOW TO USE
1. Clean all food or residue off
your blade. Never sharpen a
dirty knife blade as this could
cause the sharpener to
malfunction or damage to the
sharpening wheel.
2. Insert the plug on the end of
the power cord into a standard
120-volt electrical outlet.

3. Place the sharpener on
the table gripping it secure-
ly with your left hand.
4. Push “l” on the Power
Switch.
5. Insert the heel of the
blade into the slot, then
slowly pull the knife back
towards you. Slightly lift
the blade handle as the
curved end of the knife is
drawn through the slot.
6. For even sharpening,
make sure to run each side
of the blade an equal
number of times through
the left and right slot for
each stage.
7. Draw the knife through
the Stage 1 and/or Stage 2
slots (alternating between
the two slots), until the
edge is sharp.

A dull knife: you will need to
draw each side of a blade
7-9 times through Stage 1,
and then 2-4 times through
Stage 2.
A semi-dull knife: you will
need to draw each side of
the blade 4-6 times through
Stage 1, and then 2-4 times
through Stage 2.
Note: Each draw should last
3-5 sec for a steel knife, and
6-8 sec for a ceramic knife.
8. When sharpening is
completed, turn the unit off
by pressing the symbol “O”
on the Power Switch.

ATTENTION! This appliance has an overheat protection.

CLEANING AND MAINTENANCE
· Before cleaning, turn the
unit off by pressing the
symbol “O” on the Power
Switch, and unplug the
cord from the power outlet.
· The exterior of the sharp-
ener can be cleaned with a
soft damp cloth.
· After each use, empty the
Metal Dust Compartment
located at the bottom of
your sharpener. Flip the
sharpener on the side,
detach the cover of the
Metal Dust Compartment,
then wipe the inside of the
compartment and the
Magnetic Plate attached to
the cover with a soft dry
cloth or paper towel.
· No oils or other lubricant
liquids should be used with
this knife sharpener.
