Introduction
Performance of the unit
the heating top with heating presentation display is designed to keep food warm at a temperature
above 63°C, according to hygiene requirements, for 90 minutes, using GN1/1 65 mm deep gastronorme
trays.
The temperature of the food provided should be between 70°C and 80°C.
These units comply with applicable EC norms and should be installed and used following the
instructions in this manual to ensure good performance and to be covered by the warranty.

Installation / Controls

Installation:

Before connecting to the mains, you must check that the existing voltage is suitable for the
one mentioned on the unit's identity plaque.
Connect to the mains on the cabling fuse holder or connect the plug to the mains in the
case of a mobile unit.
The line should be protected by a differential circuit breaker on the general electricity panel.

Overhang adjustment
The unit’s overhangs should be positioned as shown below.
The unit should be level.

Commissioning / Use
•
Commissioning:
Pre-heating of toughened glass plates 30 minutes before use.
The heating display should be switched on at the start of service.
•
Use:
Toughened glass
Turn the energy doser button to the right, set it to the maximum position. This position maintains
the temperature of food above 63°C which is the minimum temperature defined by the hygiene
department.
To maintain this temperature, it is indispensable to heat food to a temperature between
+70°C and +80°C.
GN A/A gastronorme trays should be 65 mm deep.
The temperature of the heating tops may be set from 40 to 110 °C.
Lighting
Press the switch:
Position 0: Off
Position 1: On.
IMPORTANT / WARNING
•It is imperative not to add containers with a temperature above 160°C to avoid
weakening and breaking the plate.
•If the surface of the toughened glass plate is cracked or has just broken, immediately
switch off the electricity supply to the energy doser that controls the plate
•Toughened glass heating plates are shock-sensitive.

Cleaning
Always take care to switch off the appliance with energy doser before cleaning. This unit is not
impermeable to water. Do not use a high pressure water jet to clean it inside or out.
Every day:
•Metal surfaces:
Stainless steel should be cleaned with soapy warm water or a special product for high quality
metal surfaces. Never use abrasive sponges or scourers to avoid scratching the surface.
•Glass:
All glass displays must be cleaned using a high quality glass cleaning product and clean cloth.
Never use abrasive sponges or scourers to avoid scratching the surface.

•
Bulbs should be replaced with bulbs of equivalent power. (see the Spare Parts section)
•Fuses should be replaced by gG fuses of the same calibre.

Maintenance
Always remember to switch off the appliance by opening the fuse holder before any
maintenance operations.
•Toughened glass:
The electrical part of the toughened glass
plates is accessible by dismantling the riveted
lid under the plate.
•Built-in lighting:
Water-resistant lighting to be built-in is
clipped into the support sheet.
•Electric cabling:
Electric cabling is fixed behind the built-in control panel. To access this, remove the 4 screws
holding the panel.
The installer should check electric connections when commissioning the unit then once a year.
Any maintenance operation should be done by an electrician.
